1. A COMPARATIVE ANALYSIS OF MILK QUALITY ON SELECTED FARMS OF KOROŠKA REGION IN REGARD TO NATURAL CONDITIONS FOR FARMING

V nalogi smo preučevali tehnološko kakovost mleka glede na različne možnosti za kmetovanje (območja z omejenimi dejavniki (OMD) in nižinska območja, ki ne sodijo v OMD). V raziskavo smo vključili 18 kmetij iz koroške regije: 6 iz gričevnato hribovskega, 7 iz gorsko višinskega in 5 iz nižinskega območja. Z anketo smo pridobili informacije o staležu živali, načinu reje in molže, krmnem obroku ipd. Kakovost mleka (sestava, zmrziščna točka in skupno število mikroorganizmov ter somatskih celic) smo določili s pomočjo podatkov AT kontrole (mesečne kontrole), standardnih laktacij ter analiz bazenskih vzorcev Mlekarne Celeia. Rezultati analiz mleka niso pokazali bistvenih razlik v sestavi in kakovosti mleka med preučevanimi območji. Z anketo smo ugotovili, da razvrstitev kmetij v preučevana območja ni nujno povezana z drugačnim načinom kmetovanja in prehranske oskrbe krav. Raziskava je nadalje pokazala, da rezultati AT kontrole niso neposredno primerljivi z analizami bazenskih vzorcev. Potrebno je ločiti med kakovostjo oddanega in prirejenega mleka. Do največjih razlik med obema analizama prihaja v vsebnosti somatskih celic (SC), saj kmetje mleka krav, ki imajo ob kontroli povečano število SC, najverjetneje ne oddajo v mlekarno. Informacije AT kontrole omogočajo rejcu prilagajanje rejskega dela, nadzor zdravstvenega stanja in izločanje manj kakovostnega mleka, zaradi česar dobi mlekarna mleko boljše kakovosti. In the present study, milk technological quality was studied in relation to different natural conditions for agricultural production (less favoured areas (LFA) and the lowland areas, which does not fall within the LFA). The study included 18 farms from the Koroška region: 6 from hill, 7 from mountain and 5 from lowland areas. The questionnaire was used to gather information on livestock, housing, milking, feeding, etc. Milk quality (milk composition, freezing point, total number of microorganisms and somatic cell count) was assessed using the AT control data (monthly checks), standard lactation data and pool milk samples data provided by dairy Celeia. Results of milk analyses did not show any significant difference as regards milk composition and quality among the studied areas. Classification of farms into LFA and not LFA is not necessarily related to different farming and feeding practices. It was further demonstrated that AT control and pool milk analyses do not yield directly comparable results. It is thus necessary to distinguish between the quality produced and delivered milk. Considerable differences between both analyses were observed in the somatic cell count as milk with increased somatic cell count within the AT control is probably not delivered to the dairy. Information provided by AT control is important for the farmers to adjust breeding work, monitor health and eliminate lower quality milk this way the dairies obtain milk of higher quality.
