Abstract

This chapter on the rheology of active fluids is an attempt to correlate theoretical and experimental work. A considerable amount of theoretical work and most of the experimental data focus on the rheology of active fluids in a Newtonian matrix, which displays uncommon macroscopic rheological behaviors, such as the apparent superfluid-like state of the pusher suspensions. The failure of the "scallop theorem" for reciprocal swimmers in a non-Newtonian matrix is highlighted. Abstract

Mechanical properties are intrinsically related to the structures and dynamics of systems. The main tools to investigate mechanical properties are rheology and microrheology. Those techniques can focus on the macroscopic and microscopic mechanical properties of any kind of colloidal system and/or nanostructures. Several kinds of experiments can be conducted to study the mechanical properties of colloidal systems; however, their interpretation might not be always straightforward. Here, our purpose is to provide a simple guide for beginners on most common rheological experiments.

Abstract

The protein-polysaccharide combinations that lead to electrostatic complex and coacervates formation are the object of extensive research using both layer-by-layer and mixed emulsion approaches. The protein-polysaccharide conjugates demonstrated interesting physico-chemical properties as stabilizers and emulsifiers as well as texture modifiers in food products. Furthermore, they are potential optimal nutrient delivery systems. Their complex behavior due to several factors such as pH, ionic strength, concentration, heat, and mechanical treatments is the main reason behind the continuous growth of the research field. The review is reporting same recent advances on the topic, along with an overview on the possible interactions between protein and polysaccharide, from Maillard reaction to enzymatic crosslinking passing through coacervates.

7. Micellar crowding and branching in a versatile catanionic system

Abstract

The catanionic system didodecyldimethylammonium bromide (DDAB)- sodium taurodeoxycholate (STDC)-D2O is characterized by an exceptionally extended L1 region. The comparison of self-diffusion coefficient of the solvent and the DDAB embedded in the micelles provided information about hydration of the aggregates. Moreover, correlating self-diffusion and 14N NMR relaxation measurements new insight could be obtained regarding the translational and rotational micellar motions in the crowded solutions of systems with 0.2 DDABSTDC molar ratio. 1H 2D NMR spectra gave some hints about the mutual arrangement of DDAB and STDC within the aggregates. For samples with 1.8 and 2.6 DDAB/STD molar ratios the 14N data were in agreement with the presence of somewhat branched, interconnected micelles. 23Na and 81Br dynamic parameters resulted particularly sensitive to the surrounding environment. The peculiar rheological behaviour of the, highly concentrated, branched micelles samples, namely the steady oscillations in the step tests, was found to be an example of instability originated by the combined effect of material elasticity and slippage at the fixed wall.

Abstract

Hypothesis Ferrihydrite (Fh) nanoparticles are receiving considerable scientific interest due to their large reactive surface areas, crystalline structures, and nanoparticle morphology. They are of great importance in biogeochemical processes and have the ability to sequester hazardous and toxic substances. Here, the working hypothesis was to entrap fractal-like Fh nanoparticles, with a radius of gyration of 6.2 nm and a primary building block of polydisperse spheres with a radius of 0.8 nm, in a shear-induced multilamellar vesicle (MLV) state using a 40 wt.% polyethylene glycol dodecyl ether surfactant. Experiments Small- and Wide- Angle X-ray scattering revealed the equilibrium state of the non-ionic planar lamellar phase, the Fh dispersion, and their mixture. The MLV state was induced by using a shear flow in a Taylor-Couette geometry of a rheometer. Findings The nonionic surfactant initially exhibited a lamellar gel phase with two distinct d-spacings of 11.0 and 9.7 nm, which collapsed into the MLV state under shear flow. The Fh nanoparticles induced bilayer attraction by suppressing lamellar layer undulations, decreasing the d-spacing. These results are helpful in the understanding of the relationship between nanoparticle size and nanoparticle-bilayers interactions and provides insight on Fh encapsulations in a kinetically stable MLVs state.

25. Insights into the Hierarchical Assembly of a Chemically Diverse Peptide Hydrogel Derived from Human Semenogelin I

Abstract

A peptide corresponding to a 13-residue segment of the human protein semenogelin I has been shown to generate a hydrogel consisting of amyloid-like fibrils. The relative chemical diversity (compared to synthetic de novosequences) with 11 distinct amino acids makes this peptide (P0) an ideal candidate for investigating the role of individual residues in gelation. Herein, the N-terminal residues have been sequentially removed to furnish a series of truncated peptides, P1–P10, ranging from 12 to 3 residues in length. FTIR spectroscopy investigations reveal that P0–P6 forms a β-sheet secondary structure while shorter sequences do not self-assemble. Site-specific isotope labeling of the amide backbone of P0–P2 with the IR-sensitive vibrational probe 13C═O yields FTIR spectra indicative of the initial formation of a kinetic product that slowly transforms into a structurally different thermodynamic product. The effects of the isotopic labels on the IR spectra facilitate the assignment of parallel and antiparallel structures, which are sometimes coexistent. Additional IR studies of three PheCN-labeled P0 sequences are consistent with an H-bonded β-sheet amide core, spanning the 7 central residues. The macromolecular assembly of peptides that form β-sheets was assessed by cryo-TEM, SAXS/WAXS, and rheology. Cryo-TEM images of peptides P1–P6 display μm-long nanofibrils. Peptides P0–P3 generate homogeneous hydrogels composed of colloidally stable nanofibrils, and P4–P6 undergo phase separation due to the accumulation of attractive interfibrillar interactions. Three amino acid residues, Ser39, Phe40, and Gln43, were identified to be of particular interest in the truncated peptide series as the removal of any one of them, as the sequence shortens, leads to a major change in material properties.

Abstract

Following our previous studies aimed at the valorization of cellulose waste and glycerol, biobased polyols-polyesters were synthesized using both a "green approach" and a novel heterogeneous catalyst based on scandium silicate thortveitite. The latter showed an enhanced linear selectivity compared with most of the analogous catalysts reported in recent studies. Polymers obtained were tested in two important reactions with potential industrial applications: as co-monomers for the synthesis of polyurethanes and as binders for 3D printers. The polyols-polyesters were obtained, with the average molecular weight ranging from 440 to 1050 Da. It is worth noting that the typical polyol polyester used in coatings is branched and has an average molecular weight of 2000–4000 Da. [ABSTRACT FROM AUTHOR]
