At Hamilton, Victoria, the effects of grazing pressure and amount of single superphosphate (SSP) applied, on the productivity and soil resource status of grazing systems based on sheep, have been assessed since 1979. Early work showed that marginal and absolute responses in DM production to SSP were greater when assessed by measuring the net growth of grazed pastures compared with mowing, and that largest response occurred in spring. The botanical composition of the pasture has been dramatically influenced by the amount of SSP applied. Ryegrass and subterranean clover now constitute only 2.3% and 11.0% where an average of 1-4 kg P/ha has been applied each year. In addition, the digestibility of herbage from wellfertilised treatments was 4-9 units higher than from low-fertility treatments. The combination of these effects has allowed achievable annual gross margins to increase from $100/ha at low-fertility treatments to about $400/ha with 18 kg P/ha applied annually. Indicators of sustainability show that so far there have been no major environmental consequences of applying SSP in amounts well above that used by district farmers. Achieving higher lamb weaning percentages by reducing lamb mortality can improve the profitability of sheep enterprises. In this paper we estimated the financial benefits from providing shelter to reduce the mortality of twin lambs in self-replacing Merino or dual-purpose Merino flock enterprises in south-west Victoria. A whole-farm bio-economic model (MIDAS) was initially used to estimate the increase in profit from reducing mortality of twin lambs and a second analysis included the costs of using perennial grass hedges to provide the shelter during lambing. The economic value of providing shelter was tested at three rates of twinning (10, 30 and 50%), three rates of mortality without shelter (70, 50 and 30%) and two levels of reduction in lamb mortality by providing shelter (25 and 50% reduction). A sensitivity analysis to wool and lamb prices, costs of establishing the grass hedges and stocking rates in the shelter area were also tested. Overall, more than 2500 scenarios were tested. Across the range of twinning rates and levels of twin mortality tested, at standard wool and meat prices, providing shelter to the dual-purpose Merino ewe flock was always profitable ($0.05 to 11.35/ewe) and the profits from providing shelter to the self-replacing Merino ewe flock were generally lower ($0.15 to $6.35/ewe). The impacts of changing wool and lamb prices depended on enterprise type, whereas the costs of establishment of the hedges or stocking rate of ewes in the hedge area during lambing had little impact on profitability. The main factor that determined the economic return from shelter was the reduction in mortality provided by the shelter but the proportion of twin-bearing ewes in the flock and the base rate of lamb mortality without shelter was also important. Overall, based on the assumptions used, we conclude that the profitability of many sheep enterprises lambing during frequent high chill weather conditions in temperate areas of south-eastern Australia could be improved by providing low cost shelter for twin-bearing Merino ewes lambing from July to September.

Soil salinity of non-irrigated farmlands in Australia has been largely attributed to tree clearing and their replacement by annual pasture and crop species. This paper deals with the effects of sowing perennial ryegrass and greater inputs of fertiliser, and the effect of grazing management, on water use and the potential to improve recharge control on a gravelly soil derived from basalt.In 1991, neutron access tubes were inserted into plots on a project established in 1989 to examine the impact of upgrading the pasture on sheep productivity. These plots were subdivided in 1996 to examine the impact of grazing management (tactical v. set-stocking) and pasture type (pastures dominated by annual species v. upgraded pastures) on productivity. Neutron probe readings were taken periodically from tubes in each plot, at depth intervals of 25 cm (December 1991–March 1995) or 20 cm (August 1995–April 1999) to 170 cm. There was no effect of treatment on soil moisture. Data for 2 wet years (1995 and 1996) indicate that the effective soil-water storage capacity to 170 cm depth for these pastures was a mean of 125 mm of water. This represents the potential buffer before winter rainfall exceeds the water use by the pasture, fills the soil profile to capacity and then either runs off or allows deep drainage to occur.We did not achieve a significant reduction in soil-water storage, and therefore potential recharge of groundwater, by re-sowing the pasture with perennial ryegrass and applying more fertiliser, or by altering the grazing management to a form of rotational grazing. Compared with set-stocked annual pasture, the impact of such treatments was to reduce soil-water storage to a depth of 170 cm in autumn by less than 20 mm/year. There was no association between total herbage production and soil-water storage, however an increased percentage of perennial ryegrass in the pasture was associated with a small reduction in soil-water storage in 1 year. Greater use of soil-water may depend upon using deeper-rooted perennials or maintaining a higher proportion of perennial species in the sward (the perennial ryegrass in the re-sown pastures declined from 53% in October 1996 to 4% in October 1998).

The effects of combinations of different fertiliser rates and grazing methods applied to phalaris-based pastures on an acid, saline, yellow sodosol on the Dundas Tablelands of western Victoria (mean annual rainfall 623�mm) were measured from 1997 to 2000. The objective was to help identify management systems that improve phalaris growth and persistence, water use, and animal production, and thereby the productivity and sustainability of grazing systems. Pastures were either set stocked with low [mean 6.4 kg phosphorus (P)/ha.year] or high (mean 25 kg P/ha.year) fertiliser rates, or rotationally grazed with high fertiliser (mean 25 kg P/ha.year). Rotational grazing was implemented as either a simple '4-paddock' system (fixed rotation length), or a more intensive system where rotation length varied with pasture growth rate. Unreplicated paddocks of volunteer pasture (dominated by onion grass and annual grass weeds) receiving an average of 8 kg P/ha.year were also monitored. All treatments were stocked with spring-lambing Merino ewes. Stocking rate was an emergent property of each treatment, and was driven by pasture quality and availability. Total pasture herbage accumulation ranged from 7150 to 9750 kg DM/ha.year and was significantly lower on the set-stocked, low-fertility treatment than on all other treatments. A significant treatment.day effect in the spline analysis of herbage mass was explained by a trend toward higher pasture mass in the rotationally grazed treatments than set-stocked treatments from the break of season until mid-spring. Rotational grazing led to significantly higher phalaris herbage accumulation than set stocking (mean 3680 v. 2120 kg DM/ha.year), but significantly lower subterranean clover herbage accumulation (1440 v. 2490 kg DM/ha.year). Despite the stronger growth of deep-rooted phalaris in the rotationally grazed treatments, maximum soil water deficits at the end of summer differed only slightly between treatments, with the difference between driest and wettest treatments amounting to only 14 mm. Summer growth of phalaris was apparently insufficient to generate significant differences in soil water extraction at depth, even when phalaris content was increased by rotational grazing, and re-wetting of the soil profile occurred at a similar rate for all treatments. Rotationally grazed treatments supported higher stocking rates than set-stocked treatments at high fertiliser rates (mean 14.9 v. 13.7 ewes/ha), but apparent losses in pasture feeding value due to lower legume content under rotational grazing meant that there were few significant differences between treatments in lamb production per hectare. The experiment showed that grazing method can have a substantial and rapid effect on pasture botanical composition. There are clear opportunities for producers to use temporal and spatial combinations of set stocking and rotational grazing to manipulate herbage mass and pasture composition within broad target ranges for achieving both animal production (e.g. high per-head animal performance) and sustainability (e.g. persistence of perennial grasses) objectives. Rigid application of either set stocking or rotational grazing imposes limitations on both pasture and animal production, and neither grazing method will optimise system performance under all conditions. The experiment also demonstrated that management and land-use changes that have much greater potential to increase water use than those examined here will be needed to ensure the sustainability of pasture systems in the high rainfall zone of western Victoria.

The survival of perennial ryegrass (Lolium perenne L.) plants was studied in sheep pastures in south-western Victoria during the dry summer of 1996–97. Recruitment of perennial ryegrass seedlings into the pasture sward was also monitored in the autumn–winter periods in 1997 and 1998. The objective was to investigate whether a tactical stocking strategy, consisting of variable length summer, autumn and winter rotations and continuous stocking in spring, might increase perennial ryegrass tiller survival and seedling recruitment in the autumn, compared with continuous stocking all year. The grazing strategies were compared on 2 contrasting pastures: an upgraded pasture [sown with newer cultivars of perennial ryegrass and subterranean clover (Trifolium subterraneum L.) with 26 kg phosphorus/ha.year as applied fertiliser] and a naturalised perennial ryegrass pasture receiving 6 kg P/ha.year. Paddocks were grazed by Border Leicester × Merino ewes, mated to a terminal sire so as to lamb in September. Perennial ryegrass tiller density was higher on the upgraded pasture with a mean density of 7750 tillers/m2 in early summer which declined to zero live tillers by mid summer. Live tillers began to reappear before the opening rains and then increased after the rain. Mean tiller density in the upgraded pasture declined over the 2 summers, with only 2050 tillers/m2 being present 2 months after the opening rains in 1998. There were no effects (P>0.05) of pasture type or grazing strategy on the number of tagged tillers that survived the summer period. Only 12% of the vegetative tillers, randomly tagged in December 1996, survived to May 1997. The effect of superphosphate fertiliser on digestible dry matter (DDM) and crude protein (CP) percentages of perennial ryegrass and subterranean clover was assessed on a long-term, grazed experiment in western Victoria. CP of both species increased significantly (3–6 units) where long-term average phosphorus (P) applications were 33 kg/ha.year compared with 1 kg/ha.year. CP of herbage was also greater on paddocks grazed at higher (9–23 ewes/ha) than lower (5–13 ewes/ha) stocking rates (1–3 units). DDM of subterranean clover significantly increased (8–10 units) with higher superphosphate applications but there was little effect on the DDM of perennial ryegrass. Long-term applications of superphosphate were associated with larger increases in both DDM and CP than if the same rate was applied in autumn of the year of measurement. For subterranean clover, 30 kg/ha of P applied to infertile soils (Olsen P 5 mg/kg) in autumn increased the DDM of herbage collected in September by only 4–6 units. The nutritive value of most volunteer pasture species also increased with higher superphosphate applications but the DDM of these species was usually inferior to perennial ryegrass. The results highlight the importance of monitoring nutritive value, pasture composition, and herbage production to quantify fully the likely effect of fertiliser applications on animal production.

The productivity of spring-lambing fine wool Merino sheep grazing pastures sown in 1977 to perennial ryegrass and subterranean clover was assessed from 1989 to 1998. The pastures were fertilised each autumn with single superphosphate at 6 levels, and were stocked at a low, medium, or high stocking rate (SR) at each level of fertiliser. The average phosphorus (P) applied annually since sowing (P ) ranged from 1.6 to 32.9 kg/ha. The SRs used varied with fertiliser level in that they were higher where more fertiliser had been applied, so that the highest SR at each level of fertiliser ensured that the pastures were well utilised. Each ewe raised 1 lamb, which was removed at weaning. The influence of fertiliser on the productivity of the sheep at 4 classes (1–4) of SR (mean SR = 7.1, 10.1, 12.6, and 18.2 ewes/ha for classes 1–4, respectively) was described by: y = A−BCP, where y represents production per sheep (kg), and A, B, and C are constants. For greasy fleece weight, estimates of B and C were 1.59 and 0.84; and for SR classes 1–4, the estimates of A were 5.06, 4.89, 4.78, and 4.46, respectively. For weaning weight of lambs, estimates of B and C were 8.4 and 0.82, and estimates of A were 23.5, 22.7, 21.5, and 20.9 for SR classes 1–4. The mean fibre diameter (µm) of the wool was described by: D = 14.18+1.48 GW, where GW is the mean greasy wool produced annually per sheep (kg) averaged over all sheep and years for each of the 18 treatments. The price (cents/kg) of wool with a fibre diameter D (P D) was given by: P D = 12197+4.94P2 + 688D−0.1945P20D − 5810√D, where 20 µm wool is P20 cents/kg. Supplements were fed if the body condition of ewes fell to a predetermined level. The supplement fed per ewe each year (S), expressed as metabolisable energy (in MJ) was described by: S = −602 − 44.1S R + 178.5P + 8.71S R P +539 √SR− 338.5√P−70.8P√SR, where S R and P represent the mean stocking rate (ewes/ha) and mean P applied annually. When a current set of costs and prices was applied to these equations, the maximum gross margin for a SR of 7.1 ewes/ha was $AU119/ha with 8.6 kg P/ha applied annually, and $AU262/ha for SR of 18.2 ewes/ha with 17.6 kg P/ha applied annually. If income derived from sheep is maintained constant, intensifying the sheep enterprise from the low to the high SR system would involve increasing sheep numbers by about 17%, but would release about 55% of the farm’s area for another purpose.

Summary. A detailed survey was undertaken in the spring of 1995 with 20 wool producers in south-west Victoria and the south-east of South Australia to determine the impact of their participation for 18 months in a program called the Grassland’s Productivity Program. This program involved groups of producers establishing paired-paddock comparisons on their own farms with guidance from an experienced facilitator. Productive pasture practices (increased fertiliser rates, responsive pasture species and high stocking rates) were used in one paddock, while the remaining paddock was managed with existing practices. A second group of 15 producers from the same districts who did not participate in the Grassland’s Productivity Program were selected at random and also surveyed. An experiment at the Pastoral Research Institute, Hamilton, compared the carcass composition and yield of one group of 14 Hereford steers, and four groups of 14 heifers, either spayed, fitted with an intravaginal device, pregnant or entire. The animals were slaughtered at 18 or 22 months when average fat depths and carcass weights were 5.8 mm and 188.0 kg, or 7.5 mm and 219 kg, respectively. When compared at a constant carcass weight, the steers generally had heavier boneless primary cuts, with less fat than the heifers (P0. 05) but trends similar to those described above were apparent. Estimated yield of carcass beef (muscle plus saleable fat) was affected by sex, fat depth and level of fat specified in the carcass beef. When lean carcass beef (1 5% fat) was specified, steers yielded about 3.8% more than heifers at the same weight and fat depth, but when fatter carcass beef (20% fat) was specified, this difference was reduced to about 3.2%. Removal of channel and kidney fat from the carcass brought the yield of steer and heifer carcasses to within about 3.0% of each other.

Four separate experiments were conducted at three localities in Victoria to compare the growth and carcase characteristics of steers and heifers either as entire (not pregnant), spayed, fitted with a HEIGRO intravaginal device, or pregnant. All treatments were compared in the major experiment of the series with two or more of the treatments compared in the other experiments. A total of 212 yearling cattle was used in the experiments, which were conducted mainly at pasture for periods of 4-11 months. The differences between the growth rate of steers and entire heifers (3.5%) and entire and spayed heifers (5.0%) were not significant. Pregnant heifers gained weight faster during mid-pregnancy (P < 0.05) but their dressing percentage and carcase weight were lower (P < 0.05) than all other groups. There were few significant differences in fat depth and only small differences in any of the carcase characteristics measured. We conclude that entire heifers grew and fattened as well as steers and that neither spraying nor the use of the HEIGRO device improved carcase weight gain but that pregnancy reduce it.
