The article presents the results of the investigation of the quality indicators of flour from chickpeas, corn and rice. Gluten-free foods literally become a panacea to a healthy and happy life for people suffering from celiac disease, given that patients in the acute phase of the disease have a high risk of death compared to the general population. Complex therapy involves both drug treatment and a strict gluten-free diet. In addition, the popularity of gluten-free products has increased among people leading a healthy lifestyle, watching their diet, seeking to either reduce excess body weight or keep weight under control. Creating gluten-free products is a global trend. Bread is statistically the most consumed food product and the gluten-free bakery products market development industry has great potential.The market analysis has shown that gluten-free bakery products are mainly produced from buckwheat, rice, oat or potato flour. Chickpea, rice and corn flour do not contain gluten and as a result can be used for dietary nutrition both for those suffering from celiac disease and for other categories of citizens.The biochemical and physicochemical parameters of the studied types of flour have been considered. Taking into account that all the types of flour considered in the research are gluten-free, they can be recommended for the production of gluten-free bakery and flour confectionery products.

The article presents data on the study of the influence of fermentation conditions on the content of biologically active substances of the phenolic complex in young red wines.Red wines, due to the high content of phenolic substances in them, have P-vitamin activity, antiglycemic, antihepatoxic and antimutagenic effects, as well as antimicrobial and other types of biological activity. Many of the phenolic substances act as natural antioxidants, have a radical-cleansing ability, and help reduce blood cholesterol levels. Thanks to these properties, red wines contribute to the prevention of many diseases and correct the antioxidant status of a person.The objects of the research are wine materials obtained from grapes of the Moldova variety by the method of carbon dioxide maceration, with a process duration of 4 days or 7 days. In the second case, additional introduction of carbon dioxide of exogenous origin hasa been used. As a control one, wine material obtained by traditional technology has been used, as a result of must fermentation on pulp with a floating cap.The influence of fermentation conditions on the total content of monomeric and polymeric phenolic compounds, as well as on the mass concentration of individual phenolic acids and flavonoids, has been studied.It has been established that an increase in the duration of maceration of a bunch of grapes up to 7 days, as well as the additional introduction of CO2 of exogenous origin, have contributed to the intensification of extraction processes and led to a natural increase in the concentration of substances of the phenolic complex.Thus, the possibility of using carbon dioxide maceration, which ensures the optimal accumulation of substances of the phenolic complex, has been established for the production of young red table wines, especially when processing high-acid grape varieties with a high content of anthocyanins and tannin. Carrying out carbon dioxide maceration of whole bunches of grapes under conditions of anaerobiosis has contributed to the preservation of biologically active substances in wine, including vitamins, stilbenes, phenolcarboxylic acids.

The aim of the research is the technological assessment and selection of highly effective preparations of active dry yeast for the production of white sparkling wines, based on a study of their influence on the physical and chemical indicators that form typical properties of this group of wines. Active dry yeast (ADY) preparations recommended for the production of sparkling wines, produced in France have been selected as the objects of the research. The effect of new ADY races on the content of the substances of a high-molecular complex: lipids, proteins and phenolic compounds that act as surface-active substances responsible for the formation of sparkling and foamy properties have been studied. The amount of SAA and such physical and chemical indicators of typical properties of sparkling wines, such as the coefficient of resistance to carbon dioxide (K), foaming ability (F), and pressure of CO2 have been determined. Higher technological properties of one of the studied yeast races have been established, providing the best formation of sparkling and foaming properties of this group of wines.

The relevance of the researched problem is determined by the fact that dog-rose fruits contain vitamin C in high concentrations, which has a number of unique beneficial properties, it is a natural antioxidant and detoxicant capable of removing practically all known harmful and toxic compounds from the body, including heavy metals. To assess nutritional properties and values as a vegetable food additive syrup, particular attention was paid to the high content of such nutrients as ascorbic acid (vitamin C) - 3.79-3.84%, citric acid - 1, 58-1.64% pectin substances - 14.10-14.65% and crude fiber - 12.52-12.67 in the fruit pulp of this variety.
