Abstract Tuberculosis like lesions (TBL) in free-range pigs are characterised by presenting a marked heterogeneity in pathology and microbiology features, with a notorious role of Mycobacterium tuberculosis complex (MTC), Trueperella pyogenes and different Streptococcus species. However, the capacity of these microorganism to spread to different organic cavities leading to a generalised disease is unknown. Therefore, this study evaluated the organic distribution of these agents in free-range pig carcasses whole condemned due to generalised TBL. A total of 37 totally condemned animals were analysed, and samples of lymph nodes and organs were obtained (n = 262) and subjected to histopathological and microbiological examination. In addition, T. pyogenes and streptococci species were further characterised by PFGE analysis. Two different patterns were evidenced with lack or occasional lesions in superficial inguinal (SILN) and popliteal (PLN) lymph nodes and advanced lesions in submandibular (SLN) (35/36) and gastrohepatic (GHLN) (33/35) lymph nodes (stages III and IV). Early stage granulomas (stage I and II) prevailed in lungs (16/20), liver (14/31) and spleen (7/18). The microbiological analysis revealed that MTC, detected by qPCR, was present in 31 out of 37 animals and 90 (90/262) samples. In 26 out of the 31 pigs, MTC was detected from two or more organs. SLN (24/31) and GHLN (19/31) were the MTC+ organs most frequently detected, with 29 out of 31 MTC+ pigs detected as positive in one or both samples, which points out that both lymph nodes must be included in the sampling of surveillance programs. Other pathogens, such as T. pyogenes and Streptococcus spp., were also involved in generalised lymphadenitis, being frequently isolated from SLN and other organs, such as liver (T. pyogenes), tonsils or lung (Streptococcus spp.). A wide genetic diversity among streptococci was observed, showing the ubiquitous character of these pathogens, however, the isolation of a single clone of T. pyogenes from different organic locations from animals with generalised TBL was a common finding of this study, highlighting that the role of this pathogen in porcine lymphadenitis may be underestimated. These results should be considered in future studies on the pathogenesis and control of porcine lymphadenitis.

In the Danish diet, the share of 25(OH)D3 is 24% for children (4–17 years) and 18% for adults (18‐75 years). Changes in animal‐feeding strategy in the agriculture sector could change the share of 25(OH)D3 to 11% and 12% if extra vitamin D3 is added to the feed, and the animals are exposed to sunlight or UVB lightlight. Replacing vitamin D3 by 25(OH)D3 in the feed may result in a share of 25(OH)D3 of 52% and 40%, respectively, in children and adults. Extensive pig systems are gaining importance as quality production systems and as the standard for sustainable rural development and animal welfare. However, the effects of natural foods on Salmonella epidemiology remain unknown. Herein, we assessed the presence of Salmonella and the composition of the gut microbiota in pigs from both Salmonella-free and high Salmonella prevalence farms. In addition, risk factors associated with the presence of Salmonella were investigated. The pathogen was found in 32.2% of animals and 83.3% of farms, showing large differences in prevalence between farms. Most isolates were serovars Typhimurium monophasic (79.3%) and Bovismorbificans (10.3%), and exhibited a multi-drug resistance profile (58.6%). Risk factor analysis identified feed composition, type/variety of vegetation available, and silos’ cleaning/disinfection as the main factors associated with Salmonella prevalence. Clear differences in the intestinal microbiota were found between Salmonella-positive and Salmonella-negative populations, showing the former with increasing Proteobacteria and decreasing Bacteroides populations. Butyrate and propionate producers including Clostridium, Turicibacter, Bacteroidaceae_uc, and Lactobacillus were more abundant in the Salmonella-negative group, whereas acetate producers like Sporobacter, Escherichia or Enterobacter were more abundant in the Salmonella-positive group. Overall, our results suggest that the presence of Salmonella in free-range pigs is directly related to the natural vegetation accessible, determining the composition of the intestinal microbiota.

Innovative strategies in free-range pig production are needed to improve the environmental performance of the system. Based on previous studies, inclusion of trees was hypothesized to improve the system's nitrogen efficiency. We investigated sow elimination behavior, feces load, and localization as well as soil mineral nitrogen load in pasture-based individual paddocks with and without access to two rows of poplar (Populus sp.) trees. In contrast to what was expected, sows showed no preference for eliminating in the zone with poplars but clearly avoided defecating near the hut, feed, and water. Soil mineral nitrogen load showed a heterogeneous pattern as also found in previous studies. Toxoplasma gondii is considered one of the most successful parasites of humans and animals. The ingestion of viable cysts through the consumption of undercooked pork is recognized as a significant route of human infection with T. gondii. The aim of this study was to investigate the presence of viable parasite in tissues of free-range pigs from the Zasavica Special Nature Reserve. All pigs were of the Mangulica breed, raised in a traditional way. The serological screening was performed using a modified agglutination test (MAT). The isolation of viable T. gondii was attempted by a bioassay of pig heart tissue in mice, while the real-time polymerase chain reaction (qPCR) targeted at the 529 bp repetitive element of T. gondii was used to detect parasitic DNA in digested hearts. Specific antibodies were detected in 12 out of 18 pigs examined. The bioassay was performed for five MAT-positive and one MAT-negative pig, and a total of three isolates were obtained. qPCR was performed for all samples, including one MAT-negative sample that was not bioassayed. The presence of T. gondii DNA was confirmed in all hearts with a positive bioassay as well as in one originating from seropositive and one from seronegative pig whose hearts were not bioassayed. The successful isolation of viable cysts, presence of risk factors (such as older age at the time of slaughter) and increased contact with the environment, along with the great appreciation of Serbian consumers towards home-cured Mangulica’s meat, make this breed worthy of consideration as a potentially important reservoir of human infection.

Understanding the natural behaviour of pigs in free-range conditions facilitates interpretation of their behaviour in intensive conditions. Studying six different farms over two years at different seasons, with climatic and management variations, allowed for a general description of Iberian pig behaviour and which factors have an influence on it. The main activity found was resting (56.5% of the time observed), followed by exploratory behaviour. However, this exploratory behaviour was higher when animals were fed only with natural resources than when fed with concentrates (50% versus 17.8%, respectively). In addition, pigs used bathing areas in summer that were not visited in winter. Negative social behaviour was seen more frequently than positive social behaviour, accounting, in total, for 1% of the total activity of animals. Pigs situated at the centre of the groups tended to remain more relaxed, while the peripheral animals remained more alert and vigilant. Our results indicate that foraging behaviour accounts for a significant proportion of pigs’ active time, but this proportion is much more reduced when pigs are fed concentrates. Therefore, behavioural needs in pigs reared in intensive conditions should consider that exploratory behaviour is reduced when pigs are fed with concentrates.

Free-range pig production is typically associated with high risks of nitrogen (N) leaching due to the pigs excretory behaviour creating nitrogen ‘hotspots’ and rooting behaviour destroying the grass sward. This challenge is reinforced at high animal densities causing high nitrogen deposition. A combined production of pigs and perennial energy crops was hypothesized to benefit the environment because crops like miscanthus (Miscanthus), willow (Salix) and poplar (Populus) may persist despite pig rooting, take up nutrients and thereby minimise N-losses. Thus, the aim was to assess the risk of nitrate leaching by investigating the distribution of soil mineral N as influenced by stocking density in a system with zones of perennial energy crops and grass. For each of two seasons 36 growing pigs with an initial mean live weight of 55 kg (spring) and 48 kg (autumn), respectively, were separated into 6 paddocks of two stocking densities (117 and 367 m2 pig−1), respectively. Soil mineral N was measured in 0-25 and 25-75 cm depth at three occasions. N balances showed that N inputs exceeded N outputs by 626 and 185 kg N ha−1 for high and low stocking density. The pigs caused an uneven distribution of mineral N across the paddocks with highest contents in zones with willow & poplar. Stocking density had a significant effect on soil mineral N. Immediately after the second batch of pigs, average mineral N in the 0-75 cm soil layer was on average 227 and 83 kg N ha−1 at high and low stocking density, respectively. During winter period with no pigs, soil mineral N content in the 0-75 cm soil layer was reduced by almost 100 kg N ha−1 in paddocks with high stocking density against only 4 kg in paddocks with low stocking density. It is concluded that risk of elevated nitrate leaching compared to other cropping systems was low at the low stocking density, which therefore represents a promising pathway for a combined production of energy crops and free-range pigs. Due to its distinct properties, wild boar meat is considered a highly desirable consumer product, in a market that is expanding. Outdoor production is also favoured by consumers who value animal welfare and environmental sustainability when choosing meat products. There is evidence that farms that include pasture for grazing typically have reduced feeding costs. Such production systems can also be more environmentally sustainable as the input (pasture) is inedible to humans, compared to conventional indoor systems, which use human-edible feeds (e.g., soya). However, some wild boar farms have performed poorly compared to those rearing other swine such as hybrid wild boar and domestic pigs. Diet is central to all livestock production and is likely a significant influencing factor of wild boar performance, both in terms of forage consumption and nutritional composition. Other factors may also influence performance, such as weather, behaviour and grazing management. Wild boar production systems hold their own intrinsic value in a growing marketplace. However, information gathered through the study of wild boar has external applications in informing outdoor domestic pig production systems to encourage the use of pasture as part of the habitat of domestic pigs.

The great public health success in prevention of human trichinellosis has resulted in a decades-long decline in the incidence and health impact of this zoonosis. The important elements of this achievement include improvement in animal husbandry practices, meat inspection, consumer education, and medical care. Most outbreaks now involve consumption of infected game. However, domestic pork still accounts for many outbreaks, mostly in Eastern Europe and Argentina, where traditional small, “backyard” rearing of pigs for household and local use often involve high risk rearing practices, especially the feeding of food waste. Although commercially produced pork under controlled management now accounts for about half of the world’s pork production the demand by consumers, especially in Europe and North America, for free-range pork is increasing. Because of the varying degrees of outdoor exposure in free-range systems, there is concern that such exposure increases the risk of spillover of Trichinella spiralis, (also Trichinella britovi and Trichinella pseudospiralis in Europe) from wild animal reservoirs. This review examines the knowledge gaps hindering the risk assessments needed to provide the producers with guidelines for achieving the food safety assurance demanded by consumers. Zoonotic agents such as Brucella spp., Salmonella spp., Toxoplasma gondii and Trichinella spp., all considered high-risk zoonotic pathogens by the European Food Safety Agency ( EFSA), may cause no symptoms of infection in free-range pigs yet still have a significant public health impact. A serological survey was therefore performed to determine the history of occurrence of these pathogens in such pigs in southern Spain. A total of 709 serum samples were collected at abattoir from pigs from 79 farms and analysed for specific antibodies against the above pathogens using commercially available ELISA kits. Encysted Trichinella spp. larvae were also sought following the artificial digestion method of diaphragm pillar muscle. The results showed Salmonella spp. to be widely distributed among the sampled herds [73.42%, 95% confidence interval ( CI95) 65.6-81.78] and Toxoplasma gondii to be present in over half (58.23%, CI95 47.33-69.07). The seroprevalence of Brucella spp. was very low (3.8%, CI95 0.18-7.42), and antibodies against Trichinella spp. were not detected. No encysted Trichinella spp. larvae were microscopically detected. The prevalence of Salmonella spp. infection was determined in 67 free-range pig herds in southern Spain. Microbiological assessment was performed on ileocolic lymph nodes collected at slaughter according to ISO 6579:2002 procedures. Overall, 33% of herds were infected and the prevalence of infection was 5.3% Salmonella spp. serovars most frequently isolated were Anatum and Typhimurium, although uncommon serovars such as Hessarek and Mikawasima were also detected. Isolates were tested against 16 antimi-crobial agents and exhibited resistance to streptomycin (46%), tetracycline (30%), sulphonamides (25g) and ampicillin (23%) by the break-point method. Abstract: For 60 years, the islands of the Mediterranean basin were considered to be Trichinella-free. In April 2005, an outbreak of human trichinellosis due to the consumption of infected pork involved 11 persons in the villages of Orgosolo and Lanusei (Nuoro province) on the island of Sardinia (Italy). We conducted an investigation to identify free-range and backyard pigs and other humans with Trichinella infection in the area of the 2005 outbreak. We also tested wild animals from various parts of Sardinia. In December 2005, eight persons were found to have been infected, and in May 2007 there was a single case of infection. The sources of all infections were domestic pigs. Artificial digestion of muscle samples from 681 pigs (325 free-range and 356 backyard pigs) revealed Trichinella sp. larvae in four sows (1.2%). All larvae, including those from the consumed pork products, were identified as Trichinella britovi. All infected pigs originated from the Orgosolo municipality. None of the 6188 wild boars (Sus scrofa) or 13 red foxes (Vulpes vulpes) examined were positive for Trichinella sp., suggesting that this parasite is restricted to free-range pigs. The origin of infected animals on Sardinia remains to be determined, although it could be related to the presence of T. britovi-infected animals on the island of Corsica (France). Simple Summary: Understanding the natural behaviour of pigs in free-range conditions facilitates the interpretation of their behaviour in intensive conditions. The present study aims to study behavioural indicators of activity in the domestic pig, reared free-range and under two feeding regimes, with some help from humans with concentrates and without help, just eating natural resources. Results confirmed that exploratory behaviour was an important behaviour for pigs, but the same animals that dedicated 50% of their time to this activity when they were not fed by humans reduced this activity to 17.8% when they were fed with concentrates. In addition, few social contacts between animals were seen in extensive conditions, with a higher incidence of negative rather than positive social behaviour. It was concluded that: (1) the need for exploring the surroundings in natural environments is of less importance for pigs when they are fed by humans, and (2) bathing areas in outdoor conditions are important for pigs in the event of warm conditions. Simple Summary: Outdoor-reared European wild boar (Sus Scrofa L.) is regarded as a delicacy by consumers due to its favourable meat properties and an association with high welfare standards. The rearing of wild boar on pasture has the potential to minimise input costs relative to conventional production systems. However, some pasture production systems have been found to perform poorly due to low growth rates. This review collates the available scientific evidence on pasture-based production of wild boar and domestic pigs, to identify factors that influence feed intake, performance, and behaviour. Factors explored include season/weather, dietary supplementation, grazing management, forage availability, herbage quality, and sward type. For example, the additional feed availability associated with pasture grazing has been shown to be a significant factor that positively correlates with dry matter intake of wild boar. This has been demonstrated to result in better feed conversion efficiency and reduced feed costs without reductions in growth rates compared to animals without access to pasture. Furthermore, the increased availability of favoured species in pasture may also promote dry matter intake. The long-term sustainability of wild boar production is dependent on the economic, social, and environmental viability of the systems. Pasture-based production systems may be one way by which this can be achieved, but only if implemented correctly.
