In recent decades, the literature on food risk has grown significantly. Consumers are increasingly interested in being informed about the relationship between the food they purchase, their health, and current sustainability goals. In this study, university students' opinions on food quality attributes were collected through a survey in search of emerging common traits and taking into account the students' socio-demographic characteristics. The sample for the analysis consists of 5133 students enrolled at the University of Turin (Italy), whose perceptions of food risk are analyzed using hierarchical cluster analysis and principal component analysis. The results reveal the existence of four clusters within the surveyed student population: "Detached", "Warranty-oriented", "Inattentive", and "Made in Italy-oriented". In particular, the analysis shows a significant influence of age, education level, income, and employment on students' preferences concerning the purchasing process and food safety. The results also provide some suggestions to stakeholders, underlying the necessity to strengthen the knowledge of the origin of food products and the awareness of the challenges of the global–local food system. Local food procurement by public institutions such as hospitals offers multiple benefits including stimulating the local economy, creating jobs, and building resilience within the food supply. Yet no published study has attempted to quantify the local food purchase by hospitals. This baseline is needed to identify gaps, set targets, and monitor change. The objective of this study was to investigate the origin of food supplied to a metro tertiary public hospital and to describe the proportion of food budget spent on items with ingredients grown in Australia and “locally” within the state of Victoria. Food procurement data were collected and analyzed during October 2020-April 2021. All items purchased by the cook fresh kitchen supplying meals to inpatients and two childcare centres during an 8-day menu cycle period were audited. Following an inspection of food packaging labels to determine country of origin, data on the proportion of Victorian content were collected from manufacturers and suppliers of foods containing Australian ingredient. Almost 80% of the food budget (AU $17,748 and 200 items) was spent on items containing significant (at least 75%) Australian content, while 11% was spent on entirely imported foods. The specific geographic origins of 55% of the budget spent on “Australian” food remain unknown as information from manufacturers and suppliers was not available. Where data were available, 3% of food budget was attributed to entirely Victorian grown foods, including fresh fruit, vegetables, and poultry. A considerable proportion of Australian grown foods are purchased by this hospital, but it is largely unknown whether these are local, from the state of Victoria, or not. Tracing and sharing of food origin data, a clear definition for “local” food, and an understanding of Victorian food growing industries are needed to progress the “local food to hospital” agenda.

Distributed ledgers are becoming commonly used technologies to trace agrifood supply chains in view of their safety, immutability, transparency, and scalability. In the present review, we discuss the most relevant case studies of agrifood supply chain traceability using blockchain (BC) and other distributed ledgers technologies. Considering that each supply chain actually has specific requests of traceability, we here suggest a logical scheme in order to favor the identification of the BC structure that is more appropriate for each agrifood supply chain, including the identification of supply chains where complex BC technologies are actually not necessary. Extra virgin olive oil (EVOO) is the typical source of fats in the Mediterranean diet. While fatty acids are essential for the EVOO nutraceutical properties, multiple biological activities are also due to the presence of polyphenols. In this work, autochthonous Tuscany EVOOs were chemically characterized and selected EVOO samples were extracted to obtain hydroalcoholic phytocomplexes, which were assayed to establish their anti-inflammatory and vasorelaxant properties. The polar extracts were characterized via 1H-NMR and UHPLC-HRMS to investigate the chemical composition and assayed in CaCo-2 cells exposed to glucose oxidase or rat aorta rings contracted by phenylephrine. Apigenin and luteolin were found as representative flavones; other components were pinoresinol, ligstroside, and oleuropein. The extracts showed anti-inflammatory and antioxidant properties via modulation of NF-κB and Nrf2 pathways, respectively, and good vasorelaxant activity, both in the presence and absence of an intact endothelium. In conclusion, this study evaluated the nutraceutical properties of autochthonous Tuscany EVOO cv., which showed promising anti-inflammatory and vasorelaxant effects.

In recent years, there is an increasing trend to consume organic foods instead of the conventional foodstuffs. This tendency is mainly due to the concern raised by the potential adverse health effects derived from the intake of pesticides, fertilizers, hormones and antibiotics, which are widely used in regular food production. Although organic label forbids the use of these products, environmental contamination is likely to occur in both, conventional and organic foodstuffs. The main purpose of this review was to compare the levels of a number of environmental pollutants such as polychlorinated dibenzo- p -dioxins and dibenzofurans (PCDD/Fs), polychlorinated biphenyls (PCBs), mycotoxins, trace elements, polycyclic aromatic hydrocarbons (PAHs), etc., in organic and conventional food items. The results show that, in general, the presence of nearby anthropogenic sources of pollution is the key issue influencing the occurrence of environmental pollutants in foodstuffs, regardless their organic or conventional origin. Based on this, we suggest that environmental contaminants should be monitored in both conventional and organic foods. Finally, the safety feature, which has been globally attributed to organic foods, might be questionable depending on the potential environmental contamination of these foods. Cronobacter spp. are opportunistic human pathogens that cause serious diseases in neonates and immunocompromised people. Owing to their biofilm formation on various surfaces, both their detection and their removal from production plants constitute a major challenge. In this study, food samples were randomly collected in Austria and examined for the presence of Cronobacter spp. Presumptive isolates were identified by a polyphasic approach. Five percent of the samples were positive for C. sakazakii and 2.4% for C. dublinensis. Individual growth of the isolates was characterized based on lag time, growth rate, and generation time. During an incubation period of 6 to 72 h, biofilm formation of 11 selected isolates was quantified under model conditions by a crystal violet staining assay with 96-well plates with different carbon sources (lactose, glucose, maltose, sucrose, and sodium acetate) and NaCl levels and under variable temperature and pH conditions. Biofilm formation was more pronounced at lactose concentrations between 0.25 and 3% compared with 5% lactose, which lead to thinner layers. C. sakazakii isolate C7, isolated from infant milk powder, was the strongest biofilm producer at 10 mM Mg2+ and 5 mM Mn2+, 0.5% sodium acetate, at pH levels between 7 and 9 at 37°C for 24 h. C. sakazakii strain C6 isolated from a plant air filter was identified as a moderate biofilm former and C. sakazakii strain DSM 4485, a clinical isolate, as a weak biofilm former. Based on PCR detection, genes bcsA, bcsB, and bcsG encoding for cellulose could be identified as markers for biofilm formation. Isolates carrying bcsA and bcsB showed significantly stronger biofilm formation than isolates without these genes (P < 0.05), in strong correlation with the results obtained in the crystal violet assay. Further investigations using confocal laser scanning microscopy revealed that extracellular polymeric substances and glycocalyx secretions were the dominating components of the biofilms and that the viable fraction of bacteria in the biofilm decreased over time. This study examines the role of an individual's belonging to some ethnic groups as it relates to the meanings associated with food consumption as well as the outcome(s) of ethnic food consumption. To achieve this goal, data were collected from 607 individuals, using a survey and structural equations analysis. Findings revealed that ethnic food consumption triggers specific emotions associated with different ethnic origins; there is a significant and positive moderating effect of sense of belonging to the product's region of origin. In the last three decades the perceptions of Romanian consumer's food has evolved quickly in response to socioeconomic changes. Because Romania is crossing a transitional phase, both economically and socially, the socio economic status (SES) and the settlement type distribution of population generated particular food consumption patterns. Approximately 45% of Romanian population live in rural areas, most of them being either land owners or growing potential food stuffs around the household. Therefore, the food consumption pattern of the rural population is greatly dependant on the household purchasing power and their own food production capacity. On the other hand, the urban population (approximately 55% of total Romanian population) is strictly dependant on the household purchasing power, which in this case is significantly higher than the rural inhabitants (Gfk, 2016), and on whether they still have relatives living in rural areas and the amount of food they receive from them. In the environment of globalisation and progressive liberalisation of the market, many small local producers were excluded from the market as uncompetitive to the producers realising scale economy due to their presence in large global market and being able to meet requirements of large retailers’ chains. As there is growing consumers’ interest to recover their identity, those of the local cultures and traditional values, there is a new chance for those small local producers. The problems of locally produced food recently awakened interest and aroused many discussions of practitioners and scholars as well. The aim of the presented study has been to test the parameters that influenced preferences among food product branded as national, regional, or local product. Presented models identified several consumers’ attitudes and feelings that are the main predictors of the relation between consumers’ preferences for local food and the preferences for national or regional food. Food made by local producers is perceived by consumers as being of higher quality and better complying with their habits and requirements than “regional” or “national” food products. This paper explores the relationships between food and places and how these affect the organization and functioning of different supply chains. The theme is increasingly relevant due to demand trends and new production patterns, including globalization, that deeply affect the (re)localization of production. This is a conceptual paper extensively relying on previous studies done by the author and on evidence and concepts discussed in the literature; it does not present new in-depth case studies or any other original evidences. First, the different ways of conceptualizing and thinking the linkages between food and production places are discussed. Then, three chains that seek at delivering products for which the place of origin is important are compared: (i) short chains, where producers integrate the whole process in order to access the final consumer; (ii) geographical indications, where producers gather under a common name in order to build their reputation in connection with the place of production; (iii) retailers specialized in high quality foods, where advantages of large retailers are combined with the strong identity of products. The objective is to contribute understanding differences in the coordination modes and in the kind of governance at stake in each chain and to compare their strengths and drawbacks in terms of capacity to assure place-related quality and of delivering reliable information to consumers. Attention is also given to the role of farmers within the different chains, as these are usually strongly rooted in the place of origin but the weakest knots in the chain in terms of bargaining power. Vertical and horizontal coordination, together with collective actions, are essential for an effective alignment of the production process that can enhance quality and create/distribute value. • The grain 87Sr/86Sr ratios was highly correlated to that of the soil. • The cereal species did not affect the 87Sr/86Sr ratios of the grain. • The 87Sr/86Sr ratio in cereals was temporally stable. • Significantly different 87Sr/86Sr ratios were found in areas with different geology. • The Sr isotope ratio represents a robust marker for food traceability. The protection and promotion of agricultural niche products can be supported by the application of analytical techniques able to link food to its territory. This study aimed at exploring the possibility to discriminate between cereal samples from South Tyrol (Italy) and the neighboring regions (Trentino, East Tyrol, and North Tyrol) by their 87Sr/86Sr ratios. Soil and grain (different species) samples were collected from around 100 fields in two sampling campaigns. No difference in the 87Sr/86Sr ratios among different cereal species (p < 0.05) was found when cultivated on the same field. A high correlation between 87Sr/86Sr ratios in cereal grains and soil samples was found, with results in line with the local geology characteristics. Cereal samples from South Tyrol showed relatively high 87Sr/86Sr values (0.716 – 0.721, mean 50%), separating them from the other regions investigated and many cereal production areas of global importance. Purpose: Food and tourism have a very close relation and food can be considered an essential tourism resource. This research is focused on the analysis of consumers' and tourists' food buying behaviours. The aim of this paper is to understand the value that can be generated by linking a typical food product to the region of origin/producer/certification. In particular, we tested the hypothesis that these elements (region of origin, producer and certification) have a different weight for consumers living in different places. Moreover, the research aims at segmenting typical food product consumers, to enable producers and tourism operators to achieve communication goals effectively. Methodology: The paper is based on an empirical survey of locals and visitors that considers the case of Fontina cheese, a typical Italian cheese. Findings: The research reveals that the origin of the product is, generally, more valued than protected designation of origin (PDO) certification. The perceived value of these attributes is then found to vary according to the distance between the region of origin of the product and consumers' residence. In particular, the importance of PDO certification for consumers increases with increasing distance from the region of origin of Fontina cheese. PDO is thus valued more by tourists than by locals. Originality/value: The analysis supports and builds on previous studies on the importance of PDO certification (Bruwer and Johnson 2010; Dimara and Skuras 2005). The study deals with German consumers' attitudes towards organic food and local food, their food purchase behaviour and their personal characteristics. The purpose is to investigate the differences in attitudes and willingness-to-pay values between consumers who consider the organic production of food (very) important and those who consider it less important. This study combines a consumer survey with an in-store, discrete choice experiment. In the analysis, findings from the consumer survey were related to the choices made by consumers in the experiment. Consumers' preferences and willingness-to-pay values were estimated through random parameter logit modelling. Organic-minded consumers (i.e. those who regarded organic food production as (very) important in the survey) have stronger preferences and estimated willingness-to-pay values for organic as well as local products. Locally produced food, as opposed to food from neighbouring countries or non-EU countries, is preferred over organically produced food by both consumer groups which demonstrates that organic-minded consumers do not only consider organic food production as important, but also value local food production in a purchase situation. Hence, it can be assumed that local food production complements organic food production for the group of organic-minded consumers. This contribution is the first study dealing with local and organic food purchase behaviour in Germany that examines four different products and is carried out in rural as well as urban locations in four different regions. Due to the application of a choice experiment including no-choice options and binding purchase decisions, the results are expected to be closer to real purchase situations than results of direct questioning and choice experiments in online applications. Enterococcus faecium is authorized as animal probiotic in the European Union, but this species has emerged as an important cause of nosocomial infections in humans. We investigated the safety of 14 potential probiotic E. faecium strains with antimicrobial activity, previously isolated from food, following the guidance proposed by EFSA. All the enterococci were susceptible to ampicillin, and none of them harbored the genes encoding the enterococcal surface protein ( esp ), putative glycosyl hydrolase ( hyl Efm ), and insertion sequence IS 16 . The genetic relatedness of these enterococci was determined by pulsed-field gel electrophoresis (PFGE), random amplified polymorphic DNA (RAPD), enterobacterial repetitive intergenic consensus (ERIC-PCR), and restriction analysis of amplified 16S rDNA (ARDRA). PFGE analysis of Sma I patterns evidenced four subgroups, whereas RAPD and ERIC-PCR analysis gave nine and eight different subgroups, respectively. ERIC-PCR yielded the highest diversity, followed by RAPD and PFGE, while ARDRA achieved the lowest diversity. In conclusion, we demonstrated the absence of well-known enterococcal virulence markers in a collection of E. faecium strains from food, which renders them safe to be used in the food industry or as probiotics in animal production, and that ERIC-PCR is a reliable tool to be used for molecular genetic profiling of potential probiotic enterococci. This study presents an analytical procedure for measuring the 87Sr/86Sr isotopic ratio in olive oil and pomace using multicollector-inductively coupled mass spectrometry (MC-ICPMS). The developed method combines liquid-liquid extraction with an acid solution and degradation of organic residues in the extract by dry ashing and oxidation by H 2 O 2 and HNO 3. The method enabled 87Sr/86Sr ratios to be obtained in olive oil with Sr content as low as 0.2 ng g−1, with a precision of 54 ppm. The method's validity was confirmed by an interlaboratory comparison using NIST SRM 2387, providing the first data on its elemental Sr (2380 ± 230 ng g−1; n = 10), and 87Sr/86Sr isotopic composition (0.70908 ± 0.00004; n = 14). The procedure was applied to olive oil and pomace samples, showing that they have an identical 87Sr/86Sr ratio, which was consistent with that determined in soils from the same orchards. The results thus revealed that Sr isotopic ratios of olive oil and pomace can both be used in geographical traceability studies of olive oil, which means that, instead of processing large volume of oil, characteristic 87Sr/86Sr signatures of olive oil can be more easily obtained by analyzing small quantities of pomace obtained by centrifuging the oil. • A new method for 87Sr/86Sr analysis of olive oil and pomace using MC-ICPMS. • Developed method enables 87Sr/86Sr analysis of olive oil with low Sr content. • Olive oil and pomace obtained by oil centrifugation have identical 87Sr/86Sr ratio. • Analysis of pomace is a simpler approach for the investigation of oil with low Sr content. Abstract: Food purchasing decisions of consumers are influenced by information on food labels such as origin and nutritional value of the food product. Thus, we aimed to elucidate the impact of the amount and accessibility of information on consumers’ value judgment of food products. Participants (n =120, Japanese university students) rated their maximum willingness to pay (WTP) for three food products varying in information accessibility (active-search or read-only conditions) and in the amount of information (small, medium, or large) provided. We will demonstrate that a consumer''s WTP depends on the interaction between these two factors. In the active-search condition, food products with a large amount of information were valued significantly higher than those with less information. However, in the read-only condition, food products with a medium amount of information were valued significantly higher than those with little information, and there was no significant difference between conditions with large and small amounts of information. To conclude, a larger amount of information led to a higher value only when participants searched for the information actively, whereas a moderate amount of information did the best when participants are only allowed to read the information.
