The production of non-alcoholic beer requires brewing wort with a low degree of digestion. That is possible with the use of non-traditional raw materials in production. The research object presented below is grain sorghum varieties Kazakhstan-16 and Kazakhstan-20. Nowadays, the production of non-alcoholic beer with technological methods is not studied enough. Therefore, plants with small capacities cannot produce it. This study justifies the use of grain sorghum to produce low-digestion wort. In addition, we justify that Kazakhstan-16 had the best indicators for producing non-alcoholic beer. The following ratio of malt for wort preparation to sorghum 60:40 and hydro module 1:6 are proposed. The prepared wort had an extractivity of 6.62 % and digestible carbohydrates of 25.89 % of the total. The ratio of digestible sugars to non-fermentable substances in the wort was 1:1.79, so 79 % constituted mainly non-fermentable sugars. Mathematical experiment planning has been used to study the effect of malt and sorghum filling ratio and hydro module on the brewing wort's extractive matter yield. Based on the results of this study, the brewing wort has a low digestion rate. However, the carbohydrate composition of the wort is due to the presence of mono- and disaccharides. This wort will produce a beer with an ethanol content of up to 0.5 % of alcohol and the organoleptic characteristics set. High extractivity in the raw materials and their high gelling temperature account for these results. These factors made it possible to select a jumping mashing regime, which resulted in deep hydrolysis of the sugars into dextrins. This study will allow using non-traditional grain raw materials and producing non-alcoholic beer in breweries of any capacity. Нині виробництво безалкогольного пива технологічними методами вивчено недостатньо. Тому заводи з невеликими потужностями не можуть його виробляти. У дослідженні обґрунтовується використання зернового сорго для отримання сусла з низьким ступенем зброджування. Крім того, ми стверджуємо, що Казахстан-16 має кращі показники з виробництва безалкогольного пива. Пропонується наступне співвідношення солоду для приготування сусла до сорго 60:40 і гідромодуль 1:6. Отримане сусло має екстрактивність 6,62 % та вміст легкозасвоюваних вуглеводів 25,89 % від загальної кількості. Співвідношення легкозасвоюваних цукрів до незброджуваних речовин в суслі склало 1:1,79, таким чином, 79 % становили в основному незброджувані цукри. За допомогою математичного планування експерименту вивчено вплив співвідношення солоду і сорго та гідромодуля на вихід екстрактивних речовин пивоварного сусла. За результатами дослідження, пивоварне сусло має низький ступінь зброджування. Однак вуглеводний склад сусла зумовлений присутністю моно- і дисахаридів. З такого сусла можливо отримати пиво з вмістом етанолу до 0,5 % спирту і заданими органолептичними характеристиками. Дані результати пояснюються високою екстрактивністю сировини та високою температурою його гелеутворення. Ці фактори дозволили обрати режим затирання зі стрибкоподібним нагріванням затору, в результаті якого відбувається глибокий гідроліз цукрів до декстринів. Дане дослідження дозволить використовувати нетрадиційну зернову сировину та виробляти безалкогольне пиво на пивоварнях будь-якої потужності. Представлены и обсуждаются зависимости основных показателей качества зерна пивоваренного ячменя от возрастающих уровней минерального питания и гидротермических условий, складывающихся в весенне-летний период вегетации и, в частности, его межфазные периоды. Данные зависимости имеют сложный нелинейный характер и наиболее точно их отражают уравнения полинома половинной степени и второго порядка. В максимальной степени (по величине коэффициента детерминации – R2) содержание белка и экстрактивных веществ в зерне ячменя, а также масса 1000 зерен и натура связаны с гидротермическими условиями в вегетативный (посев – колошение) и репродуктивный период (колошение – полная спелость). Гидротермический коэффициент (ГТК по Г.Т. Селянинову) за весь период вегетации (посев – полная спелость), в отличие от величины урожайности зерна, не всегда более точно отражает зависимость основных показателей качества ячменя от гидротермических условий, складывающихся в данный период., The dependences of the main indicators of the quality of brewing barley grain on increasing levels of mineral nutrition and hydrothermal conditions that develop in the spring-summer period of vegetation and, in particular, its interphase periods are presented and discussed. These dependences have a complex non-linear view and most accurately described by the equations of the polynomial half degree and second order. To the maximum degree (at largest of the coefficient of determination – R2) the content of protein and extractivity of brewing barley grain, as well the 1000 grains weight and test weight, are associated with hydrothermal conditions in the vegetative (sowing – earning) and reproductive period (earning – full ripeness). Selyaninov) for the entire growing season (sowing – full ripeness), in contrast to the grain yield, does not always more accurately describes the dependence of the main indicators of the quality of barley on the hydrothermal conditions that develop during this growing.

La presente investigación indaga acerca de la comunicación en el buen vivir o Suma Kawsay, siendo este el punto de partida como un proceso que tiene que interactuar entre sujetos constructores de discursos y prácticas colectivas situadas en una cultura y una historia. El objetivo de este estudio es determinar ¿Cuál es el grado de incidencia de la radionovela “Killaricocha, la maldición de la abundancia” en los niveles de reflexión de la población del municipio de Guasca, Cundinamarca entorno a los conceptos del buen vivir? Por ello, al plantear la importancia de la otra comunicación y el papel de la radio desde una perspectiva crítica que nos lleve a repensar el mundo que habitamos, en torno a las realidades que afronta la sociedad y el territorio; nos lleva a analizar la radionovela, que se convierte en un elemento cultural que ha generado por años un reconocimiento social, y que aún sigue generando espacios de encuentro e identificación. A partir de allí se recrea un imaginario social que con lleva al empoderamiento de las comunidades participes, como es el caso de Killaricocha, la maldición de la abundancia, una serie radiofónica y pieza de investigación, coproducida por la fundación Rosa Luxemburgo y Radialistas Apasionadas y Apasionados en el 2013 en Quito, Ecuador. О повышении экстрактивности пивоваренного ячменя в процессе солодоращения. The purpose of the study is to increase the extractivityof brewing barley in the process of malting.

The research was aimed at determining the effect of malting time of grain of selected varieties of brewing barley cultivated in Poland on the quality of Pilsner type malts, with consideration given to their extractivity and natural losses. The experimental material was barley grain of the following varieties: Class, Blask, Riviera, Lailla, Hanka, Sebastian, Bolina, Philadelphia, Tolar, and Stratus. Grain fractions of >2.5 mm were used to produce 4, 5 and 6-day Pilsner type malts under laboratory conditions. The grain, malt and the resultant worts were evaluated and determined for the malting usability acc. to Molina-Cano. Analyses demonstrated that the 4, 5 and 6-day malting of barley grain enabled obtaining malts with functional parameters corresponding to standard values. Elongation of the malting time from 4 to 6 days does not elicit any significant changes in the extractivity of malt, nor in the malting usability of grain, however it increases natural losses of the malted matter., Celem pracy było określenie wpływu czasu słodowania ziarna wybranych odmian jęczmienia browarnego uprawianego w Polsce na jakość słodów typu pilzneńskiego, ze szczególnym uwzględnieniem ich ekstraktywności i ubytków naturalnych. Materiałem badawczym było ziarno jęczmienia odmian: Class, Blask, Riviera, Lailla, Hanka, Sebastian, Bolina, Philadelphia, Tolar, Stratus. Z frakcji ziarna o grubości >2,5 mm wyprodukowano w warunkach laboratoryjnych 4, 5 i 6-dniowe słody typu pilzneńskiego. Ziarno, słód i uzyskane z nich brzeczki laboratoryjne poddano ocenie. Określono przydatność słodowniczą ziarna metodą Molina-Cano. Stwierdzono, że 4, 5 i 6-dniowe słodowanie ziarna jęczmienia pozwala na pozyskiwanie słodów o parametrach użytkowych mieszczących się w przedziałach wartości normatywnych. Wydłużanie czasu słodowania z 4 do 6 dni nie powoduje istotnych zmian ekstraktywności słodów, ani przydatności słodowniczej ziarna, zwiększa natomiast ubytki naturalne słodowanej masy.
