Eustrongylides spp. are the nematodes from the Dioctophymatidae family which are potentially dangerous for the mammal’s heath. The first aim of the present research is to describe the biology, developmental characteristics and epizootology of the Eustrongylides spp. nematode. Eustrongylidosis is a parasitic disease commonly occurring in the countries with temperate continental, tropical and subtropical climate. The Eustrongylides spp. parasites are biohelmints with a complex life cycle. The development of the nematodes takes place in the aquatic environment and includes a vast range of intermediate, accidental and definitive hosts. It has also been reported in humans. The second aim of the research is to describe the clinical and pathomorphological changes in organs and tissues of the infected animals, and influence of biotic and abiotic factors on formation of the natural centers of spreading of eustrongylidosis; diagnostics of eustrongylidosis.

The entry of domestic products into European markets has set Ukrainian entrepreneurs the task - to increase their production, ensure safety, quality and competitiveness. The purpose of the study is to assess the safety and quality of sweet butter obtained from various domestic producers, and to determine its falsification by the generally accepted method and the developed patented express method. The object of the study was the assessment of organoleptic, physicochemical, microbiological parameters and falsification of sweet butter obtained from various milk processing enterprises of Ukraine: Lustdorf LLC and Fooddevelopment LLC, Vinnytsia region; TDV "Yagotinsky butter factory"; PE "SIMOL", Kyiv region; State Enterprise "Starokostiantyniv Dairy Plant", Khmelnytsky region. Analytical, organoleptic (appearance, color, consistency, smell, taste) were used to achieve the research goal; physicochemical (mass fraction of moisture, mass fraction of fat, titrated acidity of plasma oil and acidity of fatty phase of oil, mass fraction of sodium chloride, determination of margarine and vegetable fats), microbiological (KMAFАNM, the presence of Escherichia coli bacteria, pathogenic microorganisms, in particular genus Salmonella, species Listeria monocytogenes; molds) and variation-statistical research methods. Developed patented express method for detecting adulteration of sweet cream oil using resorcinol solution in benzene with a mass fraction of 5.0% and concentrated hydrochloric acid can be used in production laboratories at milk and dairy products, supermarkets, wholesale bases, shops and public laboratories. in laboratories of veterinary and sanitary examination in agro-industrial markets. The oil produced by different manufacturers according to organoleptic parameters: appearance, color, texture, smell and taste met the requirements of DSTU 4399: 2005. According to physical and chemical parameters, the samples of sweet butter also met DSTU 4399: 2005, except for sample № 5 (SE "Starokostiantyniv Dairy Plant" of Khmelnytsky region), which showed an increase of + 0.6% by weight of sodium chloride. Research has established the falsification of sweet cream oil according to the developed patented method, according to which the probability in the indicators was 99.9%, produced: TDV "Yagotinsky butter factory" - up to 1.5% (light purple color) oil and "Farm Peasant", manufacturer LLC Food Development "- from 1.6 to 5.0% (bright purple color). Microbiological parameters of sweet butter: KMAFANM, bacteria of the Escherichia coli group, bacteria of the genus Salmonella, species Listeria monocytogenes, as well as molds met the requirements of DSTU 4399: 2005.

The unresolved problem of quail is feed stress and high sensitivity of poultry of this species to feed quality. To eliminate such consequences it is possible with the use of various biologically active feed additives. However, their introduction into the diet automatically raises questions about the quality and safety of the products for the consumer. The purpose of the research is to conduct a veterinary and sanitary assessment of the quality of quail meat for feeding NDC. The purpose of the research is to conduct a veterinary and sanitary assessment of the quality of quail meat for feeding NDC. The object of study were the quails of the Pharaoh breed, at the age of 24 were divided into two groups: experimental and control 30 heads each. The birds were kept in cages with free access to food and water. Quails of the experimental group were added to drinking water feed additive "Nanocerium" at a dose of 8.6 mg per liter of drinking water. Nanocerium feed additive is an aqueous dispersion of NDC with average nanoparticle sizes of 2–7 nm. Antemortem examination of quails of both groups revealed a satisfactory clinical condition of birds. The average weight of the gut carcass of quails of the experimental group was higher by 8.3% compared to the control. Examination of 20 carcasses of quails showed that they can be classified as first class. According to organoleptic parameters, quail meat is of good quality in veterinary and sanitary terms. Microbiological studies of quail meat indicate no effect of NDC in the applied doses on its bacterial contamination. Chemical parameters of meat (pH, aminoammonia nitrogen, volatile fatty acids during storage in the refrigerator) (5 days, t = 4–5 ° C) tended to increase and were within the normal range for fresh product. Tissue in quails of both groups was not detected. The biological value of quail meat in both groups was identical and no toxicity. Tasting evaluation of the broth and meat showed that NDC did not affect the studied taste. The obtained results show that the quails that received the feed additive "Nanocerium" with water according to the indicators of veterinary and sanitary examination are of good quality, which allows to use it in human food without restrictions.

The territory of Ukraine is unique area in terms of iodine, which indicates the need for daily additional consumption of iodine along with the foodstuff. The major products applied for iodine deficiency prevention include salt and water optimized in terms of iodine and another microelements content. The thesis objective is to study influence of Iodis-Concentrate® preparation on rabbit meat quality parameters. Our aim was to find out the amino acid composition, the fatty-acid composition and mineral composition, as well as the iodine content in rabbit meat. There were two groups of two months old laboratory rabbits formed: the stud and control group (5 rabbits in each group). The rabbits of the control group were watered with the water taken from the well located in Obukhiv, Kyiv Oblast, while the rabbits of the study group were watered with the same water, although adding Iodis-Concentrate Preparation in the dosage of 0.35 mg/kg. In terms of organoleptic, physical and chemical indices, the rabbit meat corresponded to the fresh meat. The amino acid composition of the rabbit meat in the study and control group was slightly different. Subject to watering the rabbits with potable water with Iodis-Concentrate preparation added, the contents of certain indispensable and dispensable amino acids, and the aggregate contents thereof slightly increased, however, no trustworthy difference was recorded. No abnormal ratio of indispensable and dispensable amino acids was recorded. The biological value of the rabbit meat is preserved. As regards the fatty acids content, the meat of rabbits treated with Iodis- Concentrate preparation contained more fatty acids, as follows: lauric acid, myristic acid, Cys-10 heptadecenoic acid, elaidic acid, oleine acid, linolic acid, linolenic acid, Cys-11- eicosenic acid, Cys-8, 11,14- eicosatrienoic acid, Eicosatetraenoic acid, as compared to the control parameters, which indicates stimulation of lipid metabolism. During studying the influence of Iodis- Concentrate preparation on rabbit meat composition, the trustworthy high contents of the following microelements and microelements was ascertained: aluminum, calcium, chrome, ferrum, magnesium, manganese, natrium, strontium, and zinc. In the meat of rabbits treated with Iodis-Concentrate preparation, the researcher unveiled twice higher contents of iodine as compared to the performance in the control group of rabbits.
