Giriş ve Çalışmanın Amacı: Gastronomi tarihi insanoğlunun beslenme gereksinimleri ile şekillenmiş olup yemek ise biyolojik, sosyal, kültürel, dini, politik ve ekonomik dinamik değişkenlerle bağlantılıdır. Bu çalışma ile Babür Devletinin kurucusu ve tarih sahnesinde önemli bir şahsiyet olan Gazi Muhammed Zahireddin Babür Şah’ın anılarını içeren ve tarihe ışık tutan Babür-nâme eserinde yer almakta olan gastronomi unsurlarının belirlenmesi ve değerlendirilmesi amaçlanmıştır. Kavramsal/Kuramsal Çerçeve: Gastronomi açısından kavramsal çerçevenin oluşturulmasında döneminin sosyal, hiyerarşik, siyasi ve kültürel olayları ve yapısı dikkate alınarak tarihi belge niteliğindeki Babür-nâme’den yararlanılmıştır. Yöntem: Çalışmanın araştırma deseni nitel olmak üzere, veri toplama yöntemi olarak belge tarama yöntemi, ayrıca verilerin analizinde ise içerik analizi yöntemi kullanılmıştır. Belge tarama yöntemi kullanılarak belirlenen gastronomi unsurları dikkate alınarak esere içerik analizi uygulanmış, unsurlar ana ve alt temalar haline getirilmiş, frekans ve yüzde oranları hesaplanmıştır. Babür-nâme ’deki sözcük, terim ve ifadeler üzerinden gastronomi unsurların teorik ve kavramsal çerçeveye göre ana ve alt temaları belirlenmiştir. Bulgular: Babür’ün Babür-nâme eserine uygulanan doküman incelemesi sonucu toplam 90 farklı gastronomi unsuru tespit edilmiştir. Unsurlara içerik analiz uyulanmış ve hayvansal yiyeceklere ilişkin unsurlar (17 unsur), bitkisel yiyeceklere ilişkin unsurlar (31 unsur) ve mutfağa ilişkin unsurlar (42 unsur) olmak üzere üç ana tema belirlenmiştir. Sonuç: Babür neşet ettiği Orta Asya’dan, getirdiği yemek kültürünün yanı sıra İran mutfağından etkilenen Afgan ve Hint yemek kültürlerini bir araya getirdiği, yeni ve zengin bir mutfak oluşturmuştur. Sonuç olarak Babür-nâme ’de ifade bulan gastronomi unsurları dönemin gastronomisi ve yemek kültürüne dair zengin bulgular içermektedir., Purpose of the study: The history of gastronomy has been shaped by the nutritional needs of human beings, and food is related to biological, social, cultural, religious, political, and economic dynamic variables. This research aims to identify and evaluate the gastronomic elements in Babur-name's work, which contains the memories of Ghazi Zahīr ud-Dīn Muhammad Babur Shah, the founder of the Mughal State and a historical figure, and sheds light on history. Literature Background: In the creation of the conceptual framework in terms of gastronomy, the historical document Babur-name was used, taking into account the social, hierarchical, political, and cultural events and structures of the period. Method: As the research design of the study is qualitative, document scanning was used as the data collection method, and content analysis was used in the analysis of the data. Content analysis was applied to the work, taking into account the gastronomic elements determined using the document scanning method. The elements were divided into main and sub-themes, and the frequency and percentage rates were calculated. The main and sub-themes were determined according to the theoretical and conceptual framework of gastronomy elements through the words, terms, and expressions in Babür-nâme. Result: As a result of the document analysis applied to Babür's Babür-nâme, a total of 90 different gastronomy elements were determined. Content analysis was applied to the elements, and three main themes were determined: elements related to animal food (17 elements), elements related to plant foods (31 elements), and elements related to cuisine (42 elements). Conclusion: In addition to the food culture he brought from Central Asia, where he originated, Babur created a new and rich cuisine that brought together Afghan and Indian food cultures influenced by Iranian cuisine. Overall, the gastronomic elements expressed in Babür-nâme contain rich findings about the gastronomy and food culture of the period.

Amaç: Çalışma, gastronomi kültürünün vazgeçilmez bir unsuru olan esnaf lokantalarında gerçekleşmesi olası kritik halk sağlığı ve gıda güvenliği risklerinin başında gelen kesme/doğrama tahtalarından kaynaklı mikrobiyal risklerin belirlenmesi amaçlanmıştır. Yöntem: Çalışma kapsamında İstanbul’un ilçeleri Büyükçekmece, Çatalca ve Silivri’de faaliyet gösteren esnaf lokantalarının mutfaklarında kullanılan kesme/doğrama tahtaların yüzeylerinden steril swap ile mikrobiyolojik numuneler alınmıştır. Numuneler uygun sıcaklık ve sürede inkübasyona bırakılarak, toplam mezofilik aerobik bakteri, Staphylococcus aureus, Escherichia coli ve küf-maya sayımı yapılmıştır. Bulgular: Kesme/doğrama tahtalarının yüzeylerinden alınan mikrobiyolojik numunelerde Staphylococcus aureus, Escherichia coli, toplam mezofil aerob bakteri sayısı ve küf - maya sayısının ortalamaları sırasıyla 0,74; 0,61; 1,53 ve 1,21 logkob/10 cm2 tespit edilmiştir. Numunelerde değişik sayılarda Staphylococcus aureus tespit edilmesi personel kaynaklı bir kontaminasyona ve yine değişik sayılarda Escherichia coli tespit edilmesi ise fekal kaynaklı bir kontaminasyona işaret etmektedir. Sonuç: Esnaf lokantalarının gıda güvenliği uygulamalarından biri olan iyi üretim uygulamalarına yeterince uyulmadığı tespit edilmiştir. Esnaf lokantalarında gıda güvenliğinin tamamen sağlanabilmesi için Hazard Analysis and Critical Control Point - Tehlike Analizleri ve Kritik Kontrol Noktaları (HACCP) gibi gıda güvenliği kontrol sistemlerinin de etkin şekilde uygulanması gerektiğini ifade etmek mümkündür., Aim: The study aimed to determine the microbial risks originating from cutting/chopping boards, which is one of the critical public health and food safety risks that may occur in artisan restaurants, which is an essential element of gastronomic culture. Method: Within the scope of the study, microbiological samples were taken with the sterile swap from the surfaces of the cutting/chopping boards used in the kitchens of the artisan restaurants operating in the districts of Istanbul, Büyükçekmece, Çatalca, and Silivri. The samples were left to incubate at the appropriate temperature and time. Total mesophilic aerobic bacteria, Staphylococcus aureus, Escherichia coli, and moldyeast were counted. Results: In microbiological samples taken from the surfaces of cutting and chopping boards, Staphylococcus aureus, Escherichia coli, total mesophyll aerobic bacteria count, and the average of moldyeast counts were determined as 0,74; 0,61; 1,53 and 1,21 logcfu/10 cm2 , respectively, in microbiological samples. The detection of Staphylococcus aureus in different numbers in the samples indicates contamination originating from personnel, and the detection of Escherichia coli in different numbers indicates contamination of fecal origin. Conclusion: Overall, it has been determined that good manufacturing practices, one of the food safety practices of artisan restaurants, are not adequately complied with. It is possible to state that food safety control systems such as Hazard Analysis and Critical Control Point (HACCP) should be implemented effectively to ensure food safety in artisan restaurants.

Amaç: Toplum kökenli pnömoni (TKP), çocukları etkileyen önemli bir hastalıktır. Her yıl beş yaş altı yüz elli beş milyon çocuğa zatürre teşhisi konmakta, 20 milyonu hastaneye kaldırılmakta ve 2 milyonu ölmektedir. Erken tanı ve şiddet değerlendirmesi mortalite ve morbiditeyi azaltır. Bu çalışmada temel hemogram parametreleri, nötrofil-lenfosit oranı, immatür granülosit, immatür granülosit yüzdesi, CRP ve oksijen satürasyonunun hastalık şiddetine etkisinin belirlenmesi amaçlanmıştır.Gereç ve Yöntem: Bu vaka-kontrol çalışması, Kasım 2018-Mayıs 2019 tarihleri arasında Erciyes Üniversitesi Tıp Fakültesi Çocuk Göğüs Hastalıkları Anabilim Dalı’nda yürütülmüştür. Klinik ve radyolojik bulgulara göre TKP tanısı konan altmış dokuz hasta çalışmaya dahil edildi. Hastalar hafif-orta pnömoni ve şiddetli pnömoni olmak üzere iki alt gruba ayrıldı.Bulgular: Hafif-orta pnömonisi (%32/46,3) ve şiddetli pnömonisi (%37/53,6) olan hastaların lökosit, nötrofil, IGn, IG% ve satürasyonu karşılaştırıldı. İki grup arasında istatistiksel olarak anlamlı fark vardı (p 0,05). Ancak lenfosit sayısı, nötrofil lenfosit oranı (NLO) veya CRP’de istatistiksel olarak anlamlı bir fark yoktu (p>0,05). One hundred fifty-five million children under five years are diagnosed with pneumonia yearly, 20 million are hospitalized, and 2 million die. Early diagnosis and severity assessment reduce mortality and morbidity. This study aimed to determine the effect of basic hemogram parameters, neutrophil-lymphocyte ratio (NLR), immature (IG) granulocyte, immature granulocyte percentage (IG%), C-reactive protein (CRP), and oxygen saturation.Material and Method: This case-control study was conducted between November 2018 and May 2019 at Erciyes University School of Medicine in the Department of Paediatric Pulmonology. Sixty-nine patients diagnosed with CAP had enrolled in the study by clinical and radiological findings. The patients were classified into two subgroups: mild-to-moderate pneumonia and severe pneumonia. The CAP severity of the disease was determined using the criteria indicated for children by the British Thoracic Society. Univariate analysis was used to identify independent factors that affect the severity of pneumonia.Results: Pneumonia was mild-moderate in 46.3% (n=32/69) patients. Pneumonia was severe in 63% (n=37/69) of patients. Leukocytes, neutrophils, IGn, IG%, and saturations of these two groups were compared. There was a statistically significant difference between the two groups (p 0.05). However, there was no statistically significant difference in lymphocyte count, NLR, or CRP (p>0.05). Nutrition, which is a physiological need, is directly related to gastronomy and is affected by many factors, including geographical, cultural, environmental, climatic, and socio-economic factors. Today, there are many popular diets and veganism, which has become a lifestyle and philosophy by spreading all over the world, is one of the best examples of these diets. With the spread of veganism, vegan cuisine has started to emerge it is not possible to use animal products in this kitchen. For this reason, food groups shall be well positioned in the menus or recipes created. The purpose of this research was to ascertain the role and significance of veganism and vegan cuisine in gastronomy, as well as their effects and relationship to it. The descriptive analysis method, one of the qualitative research designs, was used in the study, and the results were categorized and interpreted based on their themes. As a result of the descriptive analysis applied to the findings, the importance, role, and effect of veganism in gastronomy were divided into two main themes: (1) vegan cuisine; (2) vegan culture. In addition, four subthemes were identified: (1) the vegan restaurant; (2) the relationship of vegan cuisine with health; (3) the relationship of veganism with art; and (4) the relationship and effect of veganism on gastronomy. Although veganism is a concept derived from vegetarianism, it has taken a long way in a very short time and started to create new cuisines with vegan culture.

Objective: The aim of this study was to evaluate the relationship of circulating B-type natriuretic peptide (BNP) with osteoporosis in type 2 diabetes mellitus (T2DM) patients.Material and Method: 95 patients with T2DM were included in the study. Patients with circulating BNP levels in their patient file systems and whose BMD were measured within 15 days were included in the study. The patients were divided into three groups according to their BMD scores as normal, osteopenia and osteoporosis. The relationship between circulating BNP and diabetic osteoporosis and other parameters was investigated.Results: A total of 95 patients, 75 female and 20 male, were included in our study. The mean age of the patients was 66.09±5.96 years. Gender, age and BMI were similar between the groups.
