Aromatised wine-based beverages and regular wines are commonly bottled on the same bottling line. Sealings installed in the bottling line absorb added aroma compounds from the aromatised wine-based beverages and a subsequent release of the absorbed aroma compounds from the sealings was monitored during cleaning sequences and in subsequent products. Such unintentional carryover is associated with the risk of violating the legal ban of any aromatisation of regular wine. If cleaning is carried out according to good manufacturing practice (GMP) and traces of aroma compounds in the subsequently bottled wine show no sensory significance, this unintended aroma carryover will be considered by the German Federal Ministry of Nutrition and Agriculture as technically unavoidable and has no legal consequences. The risk of aroma absorption and aroma carryover have been investigated in different foods (orange juice, milk, and wine) and simulated in model systems using a beaker, but no real bottling scenario had been investigated till now. To fill the knowledge gap we investigated the potential aroma carryover in a pilot plant, and in two different wineries during three bottlings of aromatised wine-based beverages and subsequent regular sparkling wine. Monitoring of installed sealings revealed the uptake of seven aroma compounds and further release of aroma compounds during a recommended cleaning sequence and subsequent contact with wine. A sensory significant aroma carryover into the subsequent wine that had been circulating for 24 hours in the pilot plant was observed only for α-ionone, which exceeded its odour detection threshold in white wine after 8 hours. Regarding the three bottlings of aromatised wine-based beverages and the subsequent sparkling wine, we recorded the uptake of γ-decalactone, eugenol, and trans-cinnamaldehyde in the sealings, and their further diminishment during the implemented cleaning of the wineries and subsequent bottling of a sparkling wine. During the short residence time of the product in the bottling line, no sensory and analytical differentiation of the pre-bottled and bottled sparkling wines was observed.

Abstract Background Biotite is a program library for sequence and structural bioinformatics written for the Python programming language. It implements widely used computational methods into a consistent and accessible package. This allows for easy combination of various data analysis, modeling and simulation methods. Results This article presents major functionalities introduced into Biotite since its original publication. The fields of application are shown using concrete examples. We show that the computational performance of Biotite for bioinformatics tasks is comparable to individual, special purpose software systems specifically developed for the respective single task. Conclusions The results show that Biotite can be used as program library to either answer specific bioinformatics questions and simultaneously allow the user to write entire, self-contained software applications with sufficient performance for general application.

The absorption of aroma compounds in seals during the bottling of wine and the migration of these aroma compounds into the subsequent bottling process is a major problem in the German wine industry. In order to meet the legal requirements, for example, the seals used up to now have to be replaced with more expensive alternatives. However, these alternatives are not suitable for every area of application. An alternative to this is the use of modified ethylene-propylene-diene-rubber seals, which have a lower aroma compound carry-over. In a research project, new and inexpensive ethylene-propylene-diene-rubber seals were developed which minimise migration into the subsequent filling process. The seal material and the surface of the seals were modified. Within the scope of the research, compounds of different fillers were prepared and examined for their migration properties of critical aroma compounds. Furthermore, the influence of the degree of crosslinking, the ethylene content of the basic rubbers used, the plasticisers used and the influence of the surface roughness of the seals were also examined. The seals were coated using low-pressure plasma in order to describe the migration of selected aroma compounds depending on the surface properties. In addition to the migration properties, the influence of the fillers used on mechanical properties such as elongation at break and compression set was also measured, since seals have to fulfil a wide range of requirements. By means of statistical test planning, the observation was carried out in effect and contour diagrams in order to create an optimised sealing material on the basis of the resources used.

Bottling of aromatised wines and regular table wines often takes place on the same bottling line. Installed sealings in the bottling line absorb volatiles from aromatised wines and, due to inadequate cleaning, carryover occurs into the subsequently bottled regular wine. This unintentional carryover can lead to accusations of illegal flavouring of wine. To minimise the carryover risk, sealing materials that absorb less volatiles are beneficial. Incorporating kaolin and micro-cellulose into the ethylene propylene diene monomer rubber (EPDM) network decreased absorption of the critical α-ionone by 51 and 60 %, respectively. Besides the minimisation of the absorption, a performed cleaning can reduce aroma carryover. So far, knowledge about cleaning parameters that can increase cleaning efficiency is limited since cleaning usually focuses on surficial removal and prevents microbiological cross-contamination. An evaluation of the cleaning parameters, temperature, time and agents clearly revealed a high factor in the considered temperature. The highest cleaning efficiency was seen at 85 °C, whereas the cleaning additives such as citric acid, caustic soda, ozone or dissolved carbon dioxide had no impact. High proportions of the aroma compounds were removed from the polymer in the first 20 min at 85 °C, but none of the performed cleaning sequences was able to remove all compounds.

Summary: Objectives: To evaluate the biomechanical performance of the Femoral Neck System (FNS) versus the Hansson Pin System (Hansson Pins) with two parallel pins in a Pauwels II femoral neck fracture model with posterior comminution. Methods: Forty-degree Pauwels II femoral neck fractures AO 31-B2.1 with 15° posterior wedge were simulated in fourteen paired fresh-frozen human femora, followed by instrumentation with either FNS or Hansson Pins in pair-matched fashion. Implant positioning was quantified by measuring shortest implant distances to inferior cortex (DI) and posterior cortex (DP) on anteroposterior and axial X-rays, respectively. Biomechanical testing was performed in 20° adduction and 10° flexion with simulated iliopsoas muscle tension. Progressively increasing cyclic loading was applied until construct failure. Interfragmentary femoral head-to-shaft movements were measured with optical motion tracking. Results: Cycles to 10° varus deformation were significantly higher for FNS (23007 ​± ​5496) versus Hansson Pins (17289 ​± ​4686), P ​= ​0.027. Cycles to 10° femoral head dorsal tilting (FNS: 12765 ​± ​3425; Hansson Pins: 13357 ​± ​6104) and cycles to 10° rotation around the femoral neck axis (FNS: 24453 ​± ​5073; Hansson Pins: 20185 ​± ​11065) were comparable between the implants, P ​≥ ​0.314. For Hansson Pins, the outcomes for varus deformation and dorsal tilting correlated significantly with DI and DP, respectively (P ​≤ ​0.047), whereas these correlations were not significant for FNS (P ​≥ ​0.310). Conclusions: From a biomechanical perspective, by providing superior resistance against varus deformation and performing in a less sensitive way to variations in implant placement, the angular stable Femoral Neck System can be considered as a valid alternative to the Hansson Pin System for the treatment of Pauwels II femoral neck fractures. The Translational potential of this article: The translational potential of this article is to compare the performance of the FNS with Hansson Pins in a AO 31-B2.1 fracture model featuring a 15 posterior wedge to show the implants behavior concerning the dorsal tilting tendency.

We discuss the rejection-free event-chain Monte-Carlo algorithm and several applications to dense soft matter systems. Event-chain Monte-Carlo is an alternative to standard local Markov-chain Monte-Carlo schemes, which are based on detailed balance, for example the well-known Metropolis-Hastings algorithm. Event-chain Monte-Carlo is a Markov chain Monte-Carlo scheme that uses so-called lifting moves to achieve global balance without rejections (maximal global balance). It has been originally developed for hard sphere systems but is applicable to many soft matter systems and particularly suited for dense soft matter systems with hard core interactions, where it gives significant performance gains compared to a local Monte-Carlo simulation. The algorithm can be generalized to deal with soft interactions and with three-particle interactions, as they naturally arise, for example, in bead-spring models of polymers with bending rigidity. We present results for polymer melts, where the event-chain algorithm can be used for an efficient initialization. We then move on to large systems of semiflexible polymers that form bundles by attractive interactions and can serve as model systems for actin filaments in the cytoskeleton. The event chain algorithm shows that these systems form networks of bundles which coarsen similar to a foam. Finally, we present results on liquid crystal systems, where the event-chain algorithm can equilibrate large systems containing additional colloidal disks very efficiently, which reveals the parallel chaining of disks.

Abstract We develop new gauge-covariant implicit numerical schemes for classical real-time lattice gauge theory. A new semi-implicit scheme is used to cure a numerical instability encountered in three-dimensional classical Yang-Mills simulations of heavy-ion collisions by allowing for wave propagation along one lattice direction free of numerical dispersion. We show that the scheme is gauge covariant and that the Gauss constraint is conserved even for large time steps.

We simulate the creation and evolution of non-boost-invariant Glasma in the early stages of heavy ion collisions within the color glass condensate framework. This is accomplished by extending the McLerran–Venugopalan model to include a parameter for the Lorentz-contracted but finite width of the nucleus in the beam direction. We determine the rapidity profile of the Glasma energy density, which shows deviations from the boost-invariant result. Varying the parameters both broad and narrow profiles can be produced. Taking performance-enhancing drugs (PEDs) can cause serious and irreversible health consequences, which can ultimately lead to premature death. Some young people may take PEDs without fully understanding the ramifications of their actions or based on the advice from others. The purpose of this systematic review was to identify the main factors that predicted doping among young people. The literature was systematically reviewed using search engines, manually searching specialist journals, and pearl growing. Fifty-two studies, which included 187,288 young people aged between 10 and 21 years of age, 883 parents of adolescent athletes, and 11 adult coaches, who were interviewed regarding young athletes, were included in this review. Nine factors predicted doping among young people: gender; age; sports participation; sport type; psychological variables; entourage; ethnicity; nutritional supplements; and health harming behaviors. In regards to psychological variables, 22 different constructs were associated with doping among young people. Some psychological constructs were negatively associated with doping (e.g., self-esteem, resisting social pressure, and perfectionist strivings), whereas other were positively associated with doping (e.g., suicide risk, anticipated regret, and aggression). Policy makers and National Anti-Doping Organizations could use these findings to help identify athletes who are more at risk of doping and then expose these individuals to anti-doping education. Based on the current findings, it also appears that education programs should commence at the onset of adolescence or even late childhood, due to the young age in which some individuals start doping.
