Abstract

Electrical Impedance Spectroscopy (EIS) technique is found to be an excellent candidate for bio-sensing and food quality monitoring applications due to its rapid, robust, cost-effective and point-of-care approach. The present research work investigates the implementation of EIS technique supported by several optical spectroscopic techniques such as Ultraviolet-Visible (UV-Vis) and Fourier Transform Mid Infrared (FT-MIR) to detect and quantify several toxic adulterants in foods and bio-consumables. A comprehensive understanding on the background theory related to the study has been developed to analyze the overall polarization of the system and the effect of frequency on complex permittivity of such system have been observed. In the current work, the technique is applied to adulterated saccharides, honey and turmeric samples through a prototype sensing device. All the corresponding measurements have been performed by dipping a custom-made parallel plate conductivity cell with unity cell constant inside the solution under test. EIS study exhibited a steady variation of electrical parameters such as impedance, capacitance, conductance and current values with increasing adulterant percentage in the solution. Variation in such properties due to adulteration provides a systematic sensor plot through which one can determine their percentage of adulteration in unknown adulterated samples. Co-efficient of sensitivity has been extracted from the EIS data for adulteration study in terms of one of the measured parameters. The results of UV-Vis and FT-MIR studies have been used for comparative analyses which corroborate with the EIS results, wherever applicable., Comment: This is my PhD thesis, around 164 pages

Abstract

This work investigates the capabilities of a platform for nonenzymatic glucose sensing employing a novel 3D printed three‐electrode mask‐embedded design. A reservoir‐on‐mask has been fabricated for smart sample insertion to avoid spillage. Working and counter silver electrodes are modified with three different material combinations such as graphene oxide (GO), poly(3,4‐ethylenedioxythiophene):poly(styrenesulfonate) (PEDOT:PSS), and GO + PEDOT:PSS, and their performance comparison is demonstrated. It is observed that the GO + PEDOT:PSS modification shows 94.57 and 71.01% higher sensitivity than GO and PEDOT:PSS, respectively, including a higher linearity compared to its counterparts. Glucose concentrations ranging from 50 to 300 mg dL−1 are detected by employing cyclic voltammetry and electrical impedance spectroscopic technique. Herein, a significantly high sensitivity of 18.8 μAmM−1 cm−2 and low limit of detection ≈ 0.4 mM has been achieved for the proposed sensor. The 3D printed mask structure provides 75% higher sample retention ability, greater reliability in terms of sample placement in the sensor and improved test performances. 8. Flexible Electrochemical Sensing Label for the Detection of Glucose Adulteration in Honey

Abstract

Adulteration of honey is a widespread issue that puts the health of consumers at stake. Therefore, it is important to develop affordable and large-scale deployable sensors for quick screening to detect contamination in honey. In this article, a flexible electrochemical biosensor modified with graphene oxide + poly (3,4-ethylene-dioxythiophene) polystyrene sulfonate (GO+PEDOT:PSS) for detecting glucose adulteration in honey has been demonstrated. The contemplated sensor has been examined for synthetic glucose samples in the range of 1–30 mM and for honey samples spiked with glucose with an equivalent adulteration range of 0.05%–10% (w/w). The electrodes are modified by adding GO with PEDOT:PSS (1:1 v/v) on silver electrodes over the flexible polyethylene terephthalate (PET) substrate. A 0.08-mM limit of detection (LOD) for glucose is achieved with a considerably high linearity of ( ${R}^{{2}}$ = 0.99165) in synthetic glucose and honey samples spiked with glucose ( ${R}^{{2}}$ = 0.973) with a sensitivity value of $117.6~\mu \text{A}$ Cm $^{-{2}}$ mM $^{-{1}}$ . The dynamic range was calculated to be 0.29–26.06 mM/L. Moreover, the flexibility of the sensor was tested and it was found to be stable for more than 250 bending cycles. The method described in this work is facile, quick, and label-free. The overall findings show that the proposed electrochemical sensor has immense potential for analyzing honey adulteration.

Abstract

The impedance, capacitance and conductance of deionized water-glucose polar solution is measured by employing impedance spectroscopy and a quasi-oscillatory nature of variation with glucose content in the solution is observed. Such quasi-oscillatory nature is attributed to the randomly distributed water-water, water-glucose and glucose-glucose dipole interactions at the molecular level in the solution. A relevant analytical model is developed on the basis of such random distribution of the molecular dipoles and the experimental data agree well with those obtained from the theoretical model. The electrical parameters are measured in the frequency range of 100Hz to 4MHz for the volume fractions of glucose with respect to water in the range of 0.1 to 0.5. The impedance, capacitance and conductance are obtained to be in the range of 1.03 kΩ – 112 kΩ, 34.9 pF – 1.66 nF, and 8.95 μS – 52.9 μS respectively for the glucose volume fraction range considered.
