Hygienic design and cleaning are closely connected. This chapter discusses the basic principles of hygienic design for equipment and factories and the appropriate processes for ensuring its successful implementation. The second part of the chapter deals with the basics of cleaning and the determination of appropriate cleaning regimes for the removal of food allergens from processing equipment. It closes with specific requirements regarding cleaning validation and verification.
