Studies of post-harvest storage and drying in macauba fruit (Acrocomia aculeata (Jacq.) Lodd. Mart) are still in the early stages. The aim of this work was to investigate the effect of drying on the quality of macauba kernel oil during storage. Drying was carried out under three different air temperatures: 40°C, 50°C and 60°C. Four replications were used for each temperature. After drying, the kernels were stored for 0, 60, 120, 240 and 360 days, and the following physico-chemical analyses were carried out for each period: kernel oil content, acidity index, oxidative stability, water activity and oil colour. An increase in storage time resulted in an increase in the acidity index and a reduction in the oxidative stability of the oil in all treatments. The mean value for water activity in the oil ranged from 0.56 to 0.68. The mean values of the L* and b* coordinates did not differ from the control, except for the storage times of 0 and 60 days. There was a difference in the a* coordinate between the drying processes when compared to the control. No significant differences were seen for oil content. It was concluded that drying can be efficient tool in controlling the quality of kernel oil during storage. RESUMO Investigações sobre as etapas de armazenamento e secagem na pós-colheita de frutos de macaúba (Acrocomia aculeata (Jacq.) Lodd. Mart) ainda são incipientes. Desta forma, objetivou-se estudar o efeito da secagem na qualidade do óleo de amêndoas de macaúba durante o armazenamento. A secagem foi realizada em três condições de ar: 40; 50 e 60 ºC. Foram utilizadas quatro repetições para cada temperatura. Após a secagem, as amêndoas foram armazenadas durante 0; 60; 120; 240 e 360 dias, e em cada período, foram realizadas as seguintes análises físico-químicas: teor de óleo da amêndoa; índice de acidez; estabilidade oxidativa; atividade de água e cor do óleo. O aumento no período de armazenamento ocasionou elevação no índice de acidez e redução na estabilidade oxidativa do óleo para todos os tratamentos. Os valores médios de atividade de água no óleo variaram de 0.56 - 0.68. Os valores médios das coordenadas L* e b*, não diferiram do controle, com exceção dos períodos de armazenamento de 0 e 60 dias. Com relação à coordenada a*, houve diferença entre os processos de secagem, quando comparados ao controle. Não foram observadas diferenças significativas para o teor de óleo. Conclui-se que a secagem pode ser tornar ferramenta eficiente no controle da qualidade do óleo de amêndoa ao longo do armazenamento.

RESUMO Este trabalho teve por objetivo ajustar modelos matemáticos aos dados experimentais da secagem dos frutos de amendoim em camada delgada, submetidos a diferentes temperaturas do ar de secagem. Foram utilizados frutos de amendoim da cultivar IAC 505. Os frutos de amendoim foram submetidos à secagem em estufa de ventilação forçada com diferentes níveis de temperatura (40; 50; 60 e 70 ºC). Aos dados experimentais foram ajustados dez modelos matemáticos tradicionalmente utilizados para representação da cinética de secagem em camada delgada. Baseado nos resultados encontrados, conclui-se que dentre os modelos ajustados aos dados experimentais, o modelo de Page foi o escolhido para representar o fenômeno de secagem em camada delgada dos frutos de amendoim. O coeficiente de difusão efetivo aumenta com a elevação da temperatura, e a sua relação com a temperatura de secagem pode ser descrita pela equação de Arrhenius. As propriedades termodinâmicas entalpia e entropia tiveram seus valores reduzidos com aumento da temperatura do ar de secagem, enquanto que os valores da energia livre de Gibbs aumentam com o aumento da temperatura. ABSTRACT The aim of this study was to fit mathematical models to the experimental data from the thin-layer drying of peanut fruit subjected to different drying-air temperatures. Peanut fruit from the IAC 505 cultivar were used. The peanut fruit were subjected to drying in a forced ventilation oven at different temperature levels (40, 50, 60 and 70 ºC). Ten mathematical models, traditionally used to represent the kinetics of thin-layer drying, were fit to the experimental data. Based on the results, it can be concluded that among the models adjusted to the experimental data, the Page model was chosen to represent the phenomenon of thin-layer drying in peanut fruit. The effective diffusion coefficient increases with the rise in temperature, and its relation to the drying temperature can be described by the Arrhenius equation. The values for the thermodynamic properties, enthalpy and entropy, were reduced with the increasing temperature of the drying air, while the values for Gibbs free energy increased with the increase in temperature.

Coffee is an agricultural product that has its adjusted market value according to the final quality of the drink, which can be influenced by many factors, such as environmental factors and variety. Therefore, the objective of this research was to evaluate the effects of the mountain side orientation and coffee variety on the potential quality of the coffee produced in the region of “Matas de Minas” (within altitudes ranging from 600 to 1200 m above the sea level). Coffee fruits of “Catuaí Vermelho” and “Catuaí Amarelo” (Coffea arabica) varieties from 14 municipalities in the region were hand harvested at physiological maturity phase, which were processed and then stored. Then qualitative descriptive analyzes were made by official graders by cup test according to the Brazil Specialty Coffee Association criteria. Through the sensorial analysis, the coffee drink quality attributes were graded according to the influence of environmental factors and the variety. The highest average score was obtained by a combination of factors, “Catuaí Amarelo” variety, altitude extract below 700 m and slope of the mountain Norway, showing great potential for expression of the sensory quality of the beverage. O café é um produto agrícola que tem seu valor de mercado ajustado de acordo com a qualidade final da bebida, que pode ser influenciada por vários fatores, tais como: fatores ambientais e variedade. Diante disso, objetivou-se com este trabalho avaliar os efeitos da orientação da encosta da montanha, altitude e variedade da planta, sobre a qualidade potencial dos cafés produzidos na região das Matas de Minas (entre altitudes que variam de 600 a 1200 m). Frutos de café (Coffea arabica) das variedades “Catuaí Vermelho” e “Catuaí Amarelo”, provenientes de 14 municípios da região, foram colhidos manualmente no ponto de maturação fisiológica, os quais foram processados, beneficiados e armazenados. Em seguida foram feitas análises descritivas qualitativas por Juízes Certificadores, pelo teste de degustação segundo critérios da Brazil Specialty Coffee Association. Por meio da análise sensorial da bebida, foram atribuídas notas aos atributos de qualidade dos cafés objetivando classificá-los de acordo com a influência dos fatores do ambiente e da variedade. Para análise das notas foi adotada a “Estatística Descritiva” e o “Método de Tocher”. A partir dos resultados obtidos, pode-se observar que os fatores ambientais e a variedade não exercem influência sobre a qualidade da bebida de forma isolada, todavia, contribuem de forma conjunta para formar as características da bebida produzida na região. A maior pontuação média foi obtida pela combinação de fatores, variedade “Catuaí Amarelo” estrato de altitude abaixo de 700 m e encosta Noruega da montanha, mostrando grande potencial de expressão da qualidade sensorial da bebida.

This work aimed to evaluate alterations on the water sorption of coffee due toroast, grind, and storage. Crude grain coffee (Coffea arabica) was roasted at twolevels: medium light and moderately dark. Grain was grinded in fine (0.59 mm ),medium (0.84 mm), and coarse (1.19 mm) particle sizes, besides the whole coffeelot. Samples were then stored at polypropylene bags and kept at biochem ical oxy-gen demand type chambers in two storage temperatures (10 and 30C). Thesewere analyzed at 0, 30, 60, 120, and 180 days, regarding water content and wate ractivity. Mathematical modeling and thermodynamic properties of coffee mois-ture adsorption process were accomplished. It was concluded that particle size didnot significantly affect water content of coffee, independently of roast degree.Sigma-Copace model best represented hygroscopic equilibrium of roasted coffee.Water content reduction increases the differential enthalpy and entropy of sorp-tion and Gibbs free energy. Water properties and its relation with agricultural compounds affect post-harvest procedures, being correlated to sorption isotherms. Guggenheim–Anderson–de Boer (GAB) model is usually used to describe isotherms due to the physical aspects of its parameters. Thus, this work aimed to acquire desorption isotherms of tobacco leaves (Nicotiana tabacum L.) with initial moisture content of 87 % (w.b.), and to determine thermodynamic properties of this process. Equilibrium moisture content (Xeq) of tobacco leaves was obtained by dynamic method in different temperatures (15, 25, 35, 45 and 55 ºC) and relative humidities (10, 20, 40, 60 and 75 %) of the air. Experimental data of Xeq was fitted to GAB model, in which adequately represented the isotherms. Xeq increased with relative humidity increment and decreased with temperature increase at a constant value of relative humidity. Monolayer moisture content increased and remaining parameter values of GAB model decreased with temperature increase, indicating that air condition affect the interaction between multilayer and free moisture. Thermodynamic properties calculated were activation energy, enthalpy, entropy and Gibbs free energy. Activation energy was 0.3172 kJ kg-1. Remaining properties decreased with equilibrium moisture content increase. As propriedades da água e sua relação com os componentes dos produtos agrícolas afetam os procedimentos pós-colheita, sendo estas relacionadas pelas isotermas de sorção. O modelo de Guggenheim–Anderson–de Boer (GAB) é usualmente utilizado para descrever as isotermas devido aos seus parâmetros relacionarem aspectos físicos do processo. Assim, objetivou-se com este trabalho obter as isotermas de dessorção de folhas de fumo (Nicotiana tabacum L.), bem como determinar as propriedades termodinâmicas deste processo. O teor de água de equilíbrio (Xeq) das folhas de fumo foi obtido por meio do método dinâmico em diferentes temperaturas (15, 25, 35, 45 e 55 °C) e umidades relativas (10, 20, 40, 60 e 75%) do ar. Os dados experimentais de Xeq foram ajustados ao modelo de GAB, no qual representou adequadamente as isotermas. Para uma isoterma, o Xeqaumentou com o incremento de umidade relativa e diminuiu com o aumento da temperatura do ar a um valor de umidade relativa constante. O teor de água da monocamada aumentou e os valores dos parâmetros restantes do modelo de GAB decresceram com o aumento da temperatura, indicando que a condição do ar afetou a interação entre a multicamada e a água livre. As propriedades termodinâmicas calculadas foram a energia de ativação, a entalpia, a entropia e a energia livre de Gibbs. A energia de ativação foi de 0,3172 kJ kg–1. As propriedades remanescentes decresceram com o aumento do teor de água de equilíbrio.

The determination of physical properties is an important factor in the design of machinery and the scaling of post-harvest operations. The present study evaluates the influence of the level of roasting and the size of grinding on the physical properties of coffee during storage. The following physical properties were evaluated: true and bulk density, and intergranular porosity. Raw coffee beans (Coffea canephora and Coffea arabica), hulled and dried, were roasted to two different levels: medium light (SCAA#65) and moderately dark (SCAA#45). The beans were then grinded into three different sizes: fine (0.59 mm), medium (0.84 mm) and coarse (1.19 mm). An additional coffee lot was kept whole. Following grinding, samples were stored at two different temperatures (10 and 30 ºC) and analyzed after five different storage durations (0, 30, 60, 120 and 180 days). The medium light roast had higher values for each of the measured physical properties. Finely ground samples had higher true and bulk densities, and porosities. It is concluded that the size of grinding, level of roasting and duration of storage significantly affect the physical properties of coffee. A determinação das propriedades físicas é fator importante na formulação de projetos de maquinários e dimensionamento de operações pós-colheita. De forma a permitir o dimensionamento correto e o uso desses maquinários, objetivou-se avaliar e determinar, durante o armazenamento, as propriedades físicas: massa específica unitária e aparente e porosidade intergranular, além de avaliar a influência dos níveis de torrefação e moagem sobre essas propriedades. Grãos de café cru (Coffea canephora e Coffea arabica) foram utilizados, descascados e secados e só então torrados em dois níveis: média clara (SCAA#65) e moderadamente escura (SCAA#45). Os grãos foram moídos em três granulometrias: fina (0,59 mm), média (0,84 mm) e grossa (1,19 mm), além do lote de café inteiro. Realizada a moagem as amostras foram armazenadas em duas temperaturas (10 e 30 ºC) e analisadas em cinco tempos distintos de armazenamento (0, 30, 60, 120 e 180 dias). A torra média clara permitiu maiores valores das propriedades físicas; já as amostras de granulometria fina apresentaram aumento das massas específica unitária e aparente e porosidade. Conclui-se que a granulometria, o nível de torrefação e o tempo de armazenamento, afetaram as propriedades físicas do café.
