Abstract

La ridícula idea de no volver a verte, novela de Rosa Montero (2013), cuenta la historia de Marie Curie a partir de las páginas de su diario. El libro se centra también en los descubrimientos científicos de esta célebre mujer, prestando atención a la construcción de un diálogo del que emerge, entre ella y la autora, una simetría biográfica. El objetivo del artículo es reflexionar sobre el tipo de relato que ofrece la novela; sobre cuánto el diario de Curie representa un recurso y un estímulo para el proceso de redacción de Montero. Finalmente, se hace hincapié en cómo la presencia y el significado del tema científico vertebra y apuntala la narración hasta convertirla en un libro a-genérico, que fluctúa entre la autobiografía y la dicotomía verdad-ficción.

Abstract

A single strain of yeast was isolated from industrial gluten bread (GB) purchased from a local supermarket. This strain is responsible for spoilage consisting of white powdery and filamentous colonies due to the fragmentation of hyphae into short lengths (dust-type spots), similar to the spoilage produced by chalk yeasts such as Hyphopichia burtonii, Wickerhamomyces anomalus and Saccharomycopsis fibuligera. The isolated strains were identified initially by traditional methods as Wickerhamomyces anomalus, but with genomic analysis, they were definitively identified as Cyberlindnera fabianii, a rare ascomycetous opportunistic yeast species with low virulence attributes, uncommonly implicated in bread spoilage. However, these results demonstrate that this strain is phenotypically similar to Wi. anomalus. Cy. fabianii grew in GB because of its physicochemical characteristics which included pH 5.34, Aw 0.97 and a moisture of about 50.36. This spoilage was also confirmed by the presence of various compounds typical of yeasts, derived from sugar fermentation and amino acid degradation. These compounds included alcohols (ethanol, 1-propanol, isobutyl alcohol, isoamyl alcohol and n-amyl alcohol), organic acids (acetic and pentanoic acids) and esters (Ethylacetate, n-propil acetate, Ethylbutirrate, Isoamylacetate and Ethylpentanoate), identified in higher concentrations in the spoiled samples than in the unspoiled samples. The concentration of acetic acid was lower only in the spoiled samples, but this effect may be due to the consumption of this compound to produce acetate esters, which predominate in the spoiled samples. Abstract

Bee pollen's nutritional and beneficial health properties depend on the botanical origin and storage conditions. Palynological analysis determines the botanical composition of the multiflora and colour fractions. This study aimed to characterize the phytochemical profile and antioxidant activity of Tuscan bee pollen stored at freezing temperature for 2 years to verify the preservation of nutraceutical properties of the multiflora and colour fractions. Polyphenols, flavonoids content, antioxidant activity and volatile compounds profiles were measured. Non-terpene derivatives (acids and aldehydes) represented the main class of volatile compounds in most analysed samples. Among the colour fractions, coral showed significant differences in the antioxidant compounds. In the multiflora were also determined the soluble sugar content (128.33 mg/g of fresh weight) and mineral content, with the prevalence of K, organic N and Ca. The results suggest that the freezing storage of bee pollen for a long period can be still used as food. [ABSTRACT FROM AUTHOR]

49. Effects of chestnut hydrolysable tannin enrichment in the artificial diet of forager bees, Apis mellifera.

Abstract

Hydrolysable tannins are polyphenolic molecules contained in plant foodstuffs, potentially toxic for animals. Since tannins have been found in some bee products such as bee pollen, propolis, and honey, this work aimed to test the effects of tannins dietary assumption on bees' health. Results showed that supplementation of honey bees diets with 0.05% (w/w), as naturally amount reported in the honey, and 0.5% (w/w) of tannins significantly reduced bees' survival in a dose-dependent manner. In honey bees fed with a 0.5% tannins-enrichment diet a significantly decreased phenoloxidase activity than those fed with a 0.05% tannins-enrichment diet and with only syrup was recorded. Conversely, glucose oxidase activity significantly increased in honey bees fed with 0.5% tannins-enrichment diet than those with a 0.05% tannins-enrichment diet and only syrup. No differences were detected in glutathione S-transferase activity between honey bees fed with tannins-enrichment diets and syrup. Therefore, a naturally amount of hydrolysable tannins in foods can weakly affect bee wellness, whereas high levels of tannins can have a negative impact on honey bees' immunity and metabolism leading to a reduction of lifespan. Abstract

Demand towards healthy, high-quality animal products is growing, and at the same time, more ethical animal husbandry methods which consider animal welfare and sustainability are under a high social spotlight. Culling of day-old male layer chicks is one of the main animal welfare concerns in the poultry sector, along with cage use, also in relation to changes in social demands. Political and societal disapproval towards this practice led to consider alternatives to day-old male layer chicks culling such as the rearing of male chicks, the use of dual-purpose strains and in ovo sex determination of embryos. This review summarised the available literature sources about the alternatives to the culling method and the public perspective on these approaches. Regarding in ovo sex determination several techniques were released in the last decades employing genetic, optical, biological, physicochemical, and biotechnological approaches. Animal welfare, costs, and ethical aspects, along with customers' acceptance, are the main aspects to be considered in the choice of alternative methods. Although rearing dual-propose chicken or layer-type cockerels produced very socially acceptable alternatives, their production costs are excessively expensive to be appropriate for mass markets. Based on the literature, in ovo sex determination seems to be the main potential alternative method to male chicks culling and the most preferred by consumers especially if performed during the first days of incubation. However, all the commercially available technologies are applicable only in the late stage of embryo development and are not yet ready to be used on large scales. Therefore, the development of an early, non-invasive, rapid, economical, and ethically acceptable in ovo sexing technique remains the main challenge as well as a priority.
