The antimicrobial activity of essential oils (EO) is associated with the presence of secondary metabolites synthesized by plants. Its mechanism of action involves the interaction of its hydrophobic components with the lipids present in the cell membrane of microorganism, resulting in metabolic damages and cell death. Spoilage and pathogenic microorganisms are contaminants in meat and meat products with considerable impacts on food quality and safety. Research shows the potential of applying essential oils in the preservation of meat food systems as compounds of low toxicity, extracted from a natural source, and as an alternative to consumer demand for healthy foods with a more natural appeal. In addition, there is a great diversity of plants from which essential oils can be extracted, whose antimicrobial activity in vitro and in meat and meat products has been proven.

RESUMO A adição, em iogurtes, de polpa de Juçara como fonte de compostos fenólicos pode modificar as características físico-químicas, contribuir para atividade antioxidante, e interferir na viabilidade de bactérias probióticas e na aceitação sensorial. Com o objetivo de verificar o efeito da adição de polpa de Juçara em iogurte, foi realizado um experimento, em delineamento inteiramente casualizado, em parcelas subdivididas. A parcela principal foi o teor de polpa, com seis níveis (0, 5, 10, 15, 20 e 25%) e, como subparcela, o tempo de armazenamento, a 5 oC, com cinco níveis (1, 7, 14, 21 e 28 dias). Os teores percentuais médios de gordura, cinzas, extrato seco total e acidez dos iogurtes não diferiram (P ≥ 0,05). O teor de proteína diminuiu com o aumento do teor de polpa, variando de 4,07% (F0) a 2,9% (F25%). O conteúdo fenólico total e a atividade antioxidante foram maiores no iogurte com 25% de polpa, atingindo valores de 117,84 mg de AGE/100g e 6,95 µmol Trolox/g, respectivamente, assim como a contagem de bactérias probióticas, que variou de 3,17 log UFC.g-1 (F0) a 6,34 log UFC.g-1 (F25%), nos iogurtes, após 28 dias de armazenamento. A adição da polpa de Juçara favoreceu a multiplicação e a viabilidade de bactérias probióticas, contribuiu para o aumento do conteúdo fenólico total e para maior atividade antioxidante dos iogurtes, que apresentaram boa aceitação sensorial pelo consumidor. ABSTRACT The addition of juçara pulp as source of phenolic compounds in yogurt can modify the physico-chemical characteristics, contribute to antioxidant activity and interfere on the viability of probiotic bacteria and sensory acceptance. To evaluation the effect of the addition of juçara pulp in yogurt, was conducted an experiment in completely randomized design in subdivided parcels. The main plot was the pulp content (0, 5, 10, 15, 20 and 25%) and as sub-plot storage time 5 oC (1, 7, 14, 21 and 28 days). The average percentage of fat, ash, total dry extract and acidity of yogurt did not differ (P ≥ 0.05). The protein content decreased with the increase in pulp content, ranging from 4.07% (F0) 2.9% (F25%). The total phenolic content and antioxidant activity were higher in yogurt with 25% of pulp, reaching 117.84 mg values of AGE/100 g and 6.95 Trolox µmol/g, respectively. As well as the count of probiotic bacteria, which ranged from 3.17 log CFU g-1 (F0) 6.34 log CFU g-1 (F25%) in yogurts after 28 days of storage. Adding the Juçara pulp favored the multiplication and viability of probiotic bacteria, contributed to increase the total phenolic content and antioxidant activity in yogurts that have good sensory acceptance by the consumer.

This study aimed to characterize the proteases from the crude ginger extract and evaluate its effect on myofibrils fragmentation and tenderness of the Pectoralis major muscle in broiler. Results of an economic study associated with the implementation and maintenance of HACCP in a pasteurized milk plant are presented. The GMP/SSOP pre-requisites were evaluated in the plant. Two HACCP plans were proposed: a first plan was developed under the actual operating conditions, without previous compliance of GMP/SSOP pre-requisites, and a second plan was developed considering compliance of GMP/SSOP. The cost estimation for implementation and maintenance of HACCP, with or without previous adoption of the pre-requisite programs, was performed and a comparative analysis of the estimated values was carried out. The results suggest that a previous compliance of GMP/SSOP pre-requisites is essential for developing an effective HACCP plan with a small number of critical control points, leading to lower costs and investments for implementation and maintenance of HACCP.

O objetivo deste trabalho foi avaliar a aceitação sensorial de bebida não fermentada, com adição de inulina e polpa de acerola. Seis formulações foram desenvolvidas, com adição de 0, 20, 40, 60, 80 e 100% de soro. O pH do soro foi 6,59, e a acidez de 0,103% de ácido lático. Utilizou-se a escala hedônica de nove pontos no teste de aceitação. As médias hedônicas das amostras com 0, 20 e 40% de soro não diferiram significativamente e variaram entre 6 e 8 pontos. As bebidas desenvolvidas com até 60% de soro são alternativas interessantes para o aproveitamento desse subproduto em laticínios.
