Simple Summary: Utilizing food industry by-products for animal feed is challenging due to their low nutrient content. Citric acid by-products have potential as feed, but their high fiber content limits their use. In this study, we used Bacillus subtilis I9 to improve citric acid by-product quality. Fermentation reduced fiber, increased protein by 21.89%, and improved amino acid ratios. Structural changes were observed using scanning electron microscopy. Citric acid by-products in animal feed pose a sustainability challenge. Bacillus species are commonly used for fermenting and improving the nutritional quality of feedstuffs or by-products. An experiment was conducted to enhance the nutritional value of citric acid by-products through fermentation with Bacillus subtilis I9 for animal feed. The experiment was carried out in 500 mL Erlenmeyer flasks with 50 g of substrate and 200 mL of sterile water. Groups were either uninoculated or inoculated with B. subtilis I9 at 107 CFU/mL. Incubation occurred at 37 °C with automatic shaking at 150 rpm under aerobic conditions for 0, 24, 48, 72, and 96 h. Inoculation with B. subtilis I9 significantly increased Bacillus density to 9.3 log CFU/mL at 24 h (p < 0.05). CMCase activity gradually increased, reaching a maximum of 9.77 U/mL at 72 h. After 96 h of fermentation with inoculated B. subtilis I9, the citric acid by-product exhibited a significant decrease (p < 0.05) in crude fiber by 10.86%, hemicellulose by 20.23%, and cellulose by 5.98%, but an increase in crude protein by 21.89%. Gross energy decreased by 4% after inoculation with B. subtilis in comparison to the uninoculated control (p < 0.05). Additionally, the non-starch polysaccharide (NSP) degradation due to inoculation with B. subtilis I9 significantly reduced (p < 0.05) NSP by 24.37%, while galactose, glucose, and uronic acid decreased by 22.53%, 32.21%, and 18.11%, respectively. Amino acid profile content increased significantly by more than 12% (p < 0.05), including indispensable amino acids such as histidine, isoleucine, lysine, methionine, phenylalanine, tryptophan, and valine and dispensable amino acids like alanine, aspartic acid, glutamic acid, glutamine, glycine, proline, and tyrosine. Furthermore, citric acid by-products inoculated with B. subtilis I9 exhibited changes in the cell wall structure under scanning electron microscopy, including fragmentation and cracking. These results suggest that fermenting citric acid by-products with B. subtilis I9 effectively reduces dietary fiber content and improves the nutritional characteristics of citric acid by-products for use in animal feed. Objective: This experiment aimed to evaluate the effects of replacing concentrates with cassava root-top silage (CARTOS) on feed intake, digestibility, rumen fermentation, blood parameters, and growth performance of beef cattle. Methods: Twenty crossbred bulls with a body weight (BW) of 226±56 kg were randomly assigned to one of five treatments for 90 d in a randomized complete block design having four blocks based on BW. The concentrates were replaced by CARTOS at levels of 0%, 25%, 50%, 75%, and 100% dry matter (DM). Animals were fed dietary treatments at 1.8% BW, with rice straw offered ad libitum. Results: The DM and crude protein (CP) intake were decreased (p<0.01, p = 0.04) when the diet’s CARTOS level was increased. The digestibility of DM, OM, and CP were not different among treatments, while fiber digestibility was increased with the inclusion of CARTOS (p = 0.03). The addition of CARTOS to replace concentrates did not change ruminal pH or volatile fatty acid proportions except for acetic acid, which increased with the addition of CARTOS (p = 0.03). The ruminal ammonia-nitrogen (NH3-N) was decreased (p<0.01) with increasing levels of CARTOS. The blood glucose and blood urea nitrogen decreased (p = 0.01) with the addition of CARTOS at 100%, whereas total protein and hematological parameters did not change with increasing levels of CARTOS. The use of CARTOS to substitute concentrates at 75% and 100% decreased average daily gain (ADG) and gain to feed ratio (G:F) (p<0.01); therefore, the addition of CARTOS up to 50% maintained ADG and G:F in beef cattle. Conclusion: CARTOS can replace concentrates up to 50% in beef cattle diets without adversely affecting feed intake, nutrient digestibility, rumen fermentation characteristics, blood parameters, or growth performance of beef cattle. Objective: This study examined the effects of substituting winged bean tuber steam (WBTS) modified starches for cassava chips (CSC) in the concentrate diet on rumen fermentation, nutrient utilization, and blood metabolites in Thai-native beef cattle. Methods: Four Thai-native bulls were assigned randomly as a 4×4 Latin square design, which represents the amount of CSC replaced with WBTS in the concentrate mixture diets at 0%, 10%, 20%, and 30%. Results: Increasing levels of WBTS replacement for CSC in the concentrate diets had a quadratic effect on total dry matter (DM) intake (p<0.05). Replacement of WBTS at 20% and 30% for CSC did not alter total DM intake compared to 0% WBTS, whereas 10% WBTS replacement could significantly increase total DM intake by 0.41 kg DM/d compared to the control group. In addition, neutral detergent fiber (NDF) digestibility showed a quadratic increase (p<0.05) when CSC was substituted at various levels of WBTS in the concentrate diet (p<0.05). Replacement of CSC with WBTS at 10% and 20% showed higher NDF digestibility when compared to 0% replacement. There was a quadratic increase in blood glucose at 4 h post-feeding, and the average blood glucose value was significantly lower (p<0.01) when substituting CSC with WBTS. Substituting WBTS for CSC at 10% in the concentrate diet showed the highest blood glucose concentration when compared to other treatments. Replacing CSC with WBTS at 10% and 20% shows a higher concentration of C3 than those of other treatments (0% or 30%). The nitrogen (N) intake increased linearly (p<0.05) when substituting WBTS for CSC at all levels in the diet. Additionally, N retention and the ratio of N retention to N intake increased (p<0.05) when substituting WBTS for CSC at 10%, 20%, and 30% compared to 0%. The gross energy intake (GEI), digestible energy intake (DEI), and energy efficiency (DEI/GEI) were quadratically increased when substituted with various levels of WBTS for CSC in the concentrate diet. Conclusion: The findings indicate that substituting 10% of CSC in the concentrate diet with WBTS may be sufficient as an alternative feed resource for improving nutrient utilization and metabolic efficiency in beef cattle diets. Recent research on the gastrointestinal microbiota of small ruminants, such as goats and sheep, has provided insights into their microbial ecology and its impact on health and productivity. The microbiota of small ruminants is diverse and includes bacteria, fungi, protozoa, and archaea, which play important roles in nutrient digestion, immune modulation, and overall gut health. The composition and functionality of the microbiota are influenced by diet, and changes in diet can affect animal performance and health. Understanding the microbiota-host interaction can shed light on how microbial dysbiosis contributes to diseases in small ruminants, while beneficial microbes can enhance resilience against pathogens and improve overall animal wellbeing. High-throughput sequencing technologies have revolutionized microbiota research in small ruminants, allowing for a comprehensive understanding of microbial communities and their responses to physiological and environmental changes. Probiotics and prebiotics are increasingly used to manipulate the gut microbiota composition in small ruminants, with the aim of improving nutrient utilization, immune responses, and overall gut health. The quantity and quality of animal feed are important factors for efficient and profitable animal farming. Feed ingredients and supplementation with high-density energy and nitrogen would be potentially useful on the farm. The new approach to feeding has shifted from animal-based diets to more readily fermentable feedstuffs in ruminants to meet the increased production of high-yielding animals. These methods encourage the use of fermented total mixed ration (FTMR). An advantage of feeding FTMR as opposed to total mixed ration (TMR) is the opportunity for a development alternative to efficiently handle ruminant diets. FTMR is a method to promote progressive nutrient utilization, extend the preservation of feed by preventing spoilage, and reduce anti-nutritive substances in feeds. Ruminal protein and starch degradability were increased due to proteolysis during storage by ruminants fed ensiled rations. The results found that FTMR can reduce the pH level and increase the lactic acid content of ensiled materials, which results in better quality feed and longer storage times. In addition, it can increase dry matter intake, growth rate, and milk production when compared with TMR. It was shown that the use of FTMR diet was effective for animal production. However, FTMR was rapidly spoiled when exposed to air or feed-out, particularly in hot and humid climates, resulting in a decrease in lactic acid concentration, an increase in pH, and the loss of nutrients.
