1. Effect of Addition of Glutathione-Enriched Inactive Dry Yeast at Different Stages of Brewing on the Quality of Pear Wine

Abstract

The present study was conducted in order to investigate the effects of adding different concentrations of glutathione-enriched inactive dry yeast (g-IDY) at different stages of brewing on the quality of pear wine. Wine was prepared from Korla fragrant pears. g-IDY was added at 10, 20 and 30 mg/L before alcoholic fermentation, malolactic fermentation or aging. After aging for two months, the contents of total and individual phenols, antioxidant activity, organic acid contents, aroma components and sensory evaluation of pear wine were analyzed. The results showed that adding g-IDY before alcoholic fermentation or aging significantly increased the content of total phenols and antioxidant capacity and decreased the color index of pear wine (P < 0.05). Besides, adding g-IDY increased the contents of malic acid, lactic acid and citric acid as well as total the content of flavor substances in pear wine. Adding g-IDY before alcohol fermentation or aging was beneficial to the formation of aromatic compounds and contributed to reducing the generation of some undesirable gas, but it led to the generation of more H2S. Together, these findings showed that pear wine prepared with the addition of 20 mg/L of g-IDY before alcoholic fermentation showed the best quality, with total phenol content of 282 mg/L, total flavor substance content of 13 453.22 mg/L and sensory evaluation score of 88.7 out of 100 points.

This article posits that such a collaborative and systemic endeavor is not merely beneficial but imperative for engendering informed dietary choices, mitigating the tide of nutrition-related diseases, and ultimately sculpting a framework for sustained public health advancement. Our findings illuminate the potential for significant public health outcomes through concerted action and suggest that the path to a healthier society is paved by the collective efforts of policymakers, educators, and community advocates working in tandem to combat the complexities of the contemporary food environment.

Abstract

The blockchain provides an immutable, transparent, and decentralized method for data storage. However, as the volume of data gradually increases, the public blockchain system requires significant storage space. The bitcoin block's structure was analyzed. A method was introduced to compress the size of transactions in the bitcoin blockchain by encoding specific fields. Experiment shows that the proposed method can reduce the storage space of the bitcoin blockchain by 18.13%.

Abstract

Since the last IAEA-FEC in 2021, significant progress on the development of long pulse steady state scenario and its related key physics and technologies have been achieved, including the reproducible 403 s long-pulse steady-state H-mode plasma with pure radio frequency (RF) power heating. A thousand-second time scale (∼1056 s) fully non-inductive plasma with high injected energy up to 1.73 GJ has also been achieved. The EAST operational regime of high βP has been significantly extended (H98y2 > 1.3, βP ∼ 4.0, βN ∼ 2.4 and ne/nGW ∼ 1.0) using RF and neutral beam injection (NBI). The full edge localized mode suppression using the n = 4 resonant magnetic perturbations has been achieved in ITER-like standard type-I ELMy H-mode plasmas with q95 ≈ 3.1 on EAST, extrapolating favorably to the ITER baseline scenario. The sustained large ELM control and stable partial detachment have been achieved with Ne seeding. The underlying physics of plasma-beta effect for error field penetration, where toroidal effect dominates, is disclosed by comparing the results in cylindrical theory and MARS-Q simulation in EAST. 8. GhostVec: A New Threat to Speaker Privacy of End-to-End Speech Recognition System

Abstract

Speaker adaptation systems face privacy concerns, for such systems are trained on private datasets and often overfitting. This paper demonstrates that an attacker can extract speaker information by querying speaker-adapted speech recognition (ASR) systems. We focus on the speaker information of a transformer-based ASR and propose GhostVec, a simple and efficient attack method to extract the speaker information from an encoder-decoder-based ASR system without any external speaker verification system or natural human voice as a reference. To make our results quantitative, we pre-process GhostVec using singular value decomposition (SVD) and synthesize it into waveform. Experiment results show that the synthesized audio of GhostVec reaches 10.83\% EER and 0.47 minDCF with target speakers, which suggests the effectiveness of the proposed method. 9. Reprogramming Self-supervised Learning-based Speech Representations for Speaker Anonymization

Abstract

Current speaker anonymization methods, especially with self-supervised learning (SSL) models, require massive computational resources when hiding speaker identity. This paper proposes an effective and parameter-efficient speaker anonymization method based on recent End-to-End model reprogramming technology. To improve the anonymization performance, we first extract speaker representation from large SSL models as the speaker identifies. To hide the speaker's identity, we reprogram the speaker representation by adapting the speaker to a pseudo domain. Extensive experiments are carried out on the VoicePrivacy Challenge (VPC) 2022 datasets to demonstrate the effectiveness of our proposed parameter-efficient learning anonymization methods. 50. Simplified Finite-Set Model Predictive Control for Full-Frequency Operation of Five-Level Nested Neutral-Point-Clamped Inverters

Abstract

This article proposes a simplified finite-set model predictive control (FS-MPC) algorithm for full-frequency operation of five-level nested neutral-point-clamped (5L-NNPC) inverters. Compared to the existing FS-MPC of 5L-NNPC inverters, the proposed algorithm substantially reduces the computational burden and simplifies the tuning of the weighting factor while ensuring low current harmonics and full-frequency capacitor voltage balance. The full-frequency operating conditions that the candidate sets should satisfy are first acquired considering the periodic characteristics of the capacitor voltages. On this basis, a computationally efficient varying candidate set selection method is proposed for high-frequency operation, while a simple compensation set is introduced for low-frequency operation. Besides, an online approach is proposed to calculate available switching states for different candidate sets, eliminating tedious offline preprocessing. Furthermore, a staged cost function evaluation method is presented to further simplify the computation. Experimental results validate the proposed algorithm.
