El objetivo general de la presente investigación fue explorar la dimensión psicológicarelacional de un grupo de mujeres conversas al islam en la ciudad de Medellín (Antioquia, Colombia). Como metodología se eligió el paradigma de investigación cualitativo, específicamente, el diseño de la teoría fundamentada. Se aplicó un muestreo teórico del que se obtuvieron cuatro entrevistas a mujeres musulmanas conversas que se congregaron en alguna de las tres mezquitas de la ciudad de Medellín durante el año 2021. Los resultados muestran que el islam se convierte para ellas en una fuente de sentido de realidad y estilo de vida, que depende en gran medida de la percepción de sí, de las características y dinámica familiar y del ajuste social a la comunidad musulmana. Además, este permite asumir prácticas comunitarias, compromiso religioso y prácticas políticas.

Objetivo. Describir los ESAVI reportados en la inmunización realizada al personal de salud, con la vacuna Sinopharm (Vero cell) y verificar la causalidad de las sospechas de sus reacciones adversas. Material y métodos. El estudio tiene un enfoque cuantitativo y diseño transversal. Fue desarrollado en el Instituto Nacional Materno Perinatal en el año 2021, donde se evaluó a 60 trabajadores que manifestaron algún tipo de reacción posterior a la inmunización (primera y segunda dosis). Los instrumentos utilizados fueron la ficha de reporte de ESAVI y el instructivo del algoritmo de decisiones para la evaluación de causalidad de una RAM, Karch y Lasagna, propuesta por el Sistema Peruano de Farmacovigilancia de la DIGEMID. Resultados. Se verificó que el mayor porcentaje de reportes ESAVI se dio en el sexo femenino, entre las edades de 30 a 59 años. Las manifestaciones clínicas más reportadas fueron la cefalea, diarrea, mareos y debilidad. Se evidenció que las categorías asignadas como ¨probable¨, con un 84.8 %, y “definida”, con un 15.2 %, fueron el total de reportados. Además, en los ESAVI leve, el 75.8 % se ubicó en la categoría de “probable” y solo en la primera dosis se reportó un caso severo de ESAVI. Conclusiones. Los reportes más frecuentes se dieron en el sexo femenino y los ESAVI, definidos con la categoría de causalidad “probable”, fueron las más reportadas.

En la actualidad el uso de fibras es muy común ya que se busca nuevas alternativas que no perjudiquen al medio ambiente, es por ello que en la presente investigación se ha realizado un diseño de un prototipo de una maquina desmembradora que tiene como objetivo extraer una fibra más limpia, posteriormente pasa a un proceso de desfibrado donde se logre tener una fibra de mejor calidad, asimismo se toma en cuenta para la realización de dicho diseño estándares ergonómicos para que el operador no sufra daños hacia su salud, por lo tanto el diseño propuesto se plasma en programas CAD (Diseño Asistido por Computadoras). Las fibras naturales de las plantas del pseudotallo del plátano, henequén y la corona de la fruta de la piña son aprovechadas para la elaboración de diversos materiales y productos industriales puesto que las propiedades que estas contienen son perfectas para ser una alternativa de reemplazo de los materiales que comúnmente son empleados dentro de la manufactura. Y su resultado es mejorar la manufactura y minimizar el esfuerzo ergonómico por el proceso manual de desmembrado de la fibra natural.

Stenosis, fistulization, and perforation of the bowel are severe outcomes which can occur in patients with Crohn's disease. Accurate prediction of these events may enable clinicians to alter treatment strategies and avoid these outcomes.To study the correlation between longitudinal laboratory testing and subsequent intestinal complications in patients with Crohn's disease.An observational cohort of patients with Crohn's disease at a single center were analyzed between 01/01/1994 and 06/30/2016. A complication was defined as the development of an intestinal fistula, stenosis, or perforation. Exploratory analysis using Cox regression was performed to select the best statistical method to represent longitudinal laboratory data. Cox regression was used to identify laboratory variables independently associated with the development of a subsequent complication. A clinical scoring tool was designed.In 246 patients observed over a median of 5.72 years, 134 complications occurred. Minimum or maximum value in a preceding window period of one year was most strongly associated with subsequent complication. A Longitudinal Laboratory score of ≥ 2 (maximum albumin level 39 g/L = 1, maximum mean cell volume 88 fL = 1, minimum platelet count 355 × 10A consistent reduction in serum albumin and mean cell volume, and a consistent increase in platelet count and C reactive protein were associated with a subsequent complication in patients with Crohn's disease. Longitudinal laboratory tests may be used as described in this paper to provide a rational for earlier escalation of therapy.

Durante la pandemia, la tasa de mortalidad materna se ha visto incrementada, especialmente en países subdesarrollados, donde una de cada tres gestantes con COVID-19 no pudieron acceder a una unidad de cuidados intensivos (UCI); por lo que, el 35 % de embarazadas fallecieron y las medidas para prevenir la infección por COVID-19 tuvieron un impacto en la limitación del control completo de las gestantes1. Esta pandemia causó un impacto significativo en la mortalidad materna en el mundo. En algunos países hubo un incremento de la tasa de mortalidad materna como en Uganda con 6.5%, México 26.2%, India 34.4% y Kenia 8.5%2. A nivel latinoamericano, la tasa de mortalidad más alta la obtuvo Honduras; mientras que el Perú se mostró en quinto lugar, el cual se incrementó en un 50%3.

Actinobacteria embroil Gram-positive microbes with high guanine and cytosine contents in their DNA. They are the source of most antimicrobials of bacterial origin utilized in medicine today. Their genomes are among the richest in novel secondary metabolites with high biotechnological potential. Actinobacteria reveal complex patterns of evolution, responses, and adaptations to their environment, which are not yet well understood. We analyzed three novel plant isolates and explored their habitat adaptation, evolutionary patterns, and potential secondary metabolite production. The phylogenomically characterized isolates belonged to Actinoplanes sp. TFC3, Streptomyces sp. L06, and Embleya sp. NF3. Positively selected genes, relevant in strain evolution, encoded enzymes for stress resistance in all strains, including porphyrin, chlorophyll, and ubiquinone biosynthesis in Embleya sp. NF3. Streptomyces sp. L06 encoded for pantothenate and proteins for CoA biosynthesis with evidence of positive selection; furthermore, Actinoplanes sp. TFC3 encoded for a c-di-GMP synthetase, with adaptive mutations. Notably, the genomes harbored many genes involved in the biosynthesis of at least ten novel secondary metabolites, with many avenues for future new bioactive compound characterization-specifically, Streptomyces sp. L06 could make new ribosomally synthesized and post-translationally modified peptides, while Embleya sp. NF3 could produce new non-ribosomal peptide synthetases and ribosomally synthesized and post-translationally modified peptides. At the same time, TFC3 has particularly enriched in terpene and polyketide synthases. All the strains harbored conserved genes in response to diverse environmental stresses, plant growth promotion factors, and degradation of various carbohydrates, which supported their endophytic lifestyle and showed their capacity to colonize other niches. This study aims to provide a comprehensive estimation of the genomic features of novel Actinobacteria. It sets the groundwork for future research into experimental tests with new bioactive metabolites with potential application in medicine, biofertilizers, and plant biomass residue utilization, with potential application in medicine, as biofertilizers and in plant biomass residues utilization. El presente artículo es una reflexión con relación a los avances investigativos sobre el tema de la religión o lo religioso en el campo de la antropología especialmente. Igualmente, el análisis hace recurso de diferentes ramas del saber y resalta su contribución actual en la exploración interdisciplinaria de este fenómeno. Como objetivo se pretende revisar la persistencia y la importancia sobre esta temática como también los progresos alcanzados en este ámbito. En la reflexión y exposición se tratará de presentar, en primer lugar, las evidencias que muestran la persistencia o permanencia del tema de la “religión” en el mundo contemporáneo y por ende como objeto de los trabajos investigativos del campo de la antropología. En segundo lugar, se destaca la importancia de lo religioso o la religión a nivel individual y social, como lo fue en el pasado, y como resurge y lo sigue siendo en nuestros días. Y, por último, se exponen algunos enfoques, teorías y campos de investigación dados, otros aún vigentes y los nuevos en exploración. Por tal motivo, se trata de describir tanto los enfoques, sus principales representes y principales aportes, como también realizar algunos aportes de comparación y crítica constructiva.

Las redes sociales de segundo orden se vienen configurando en un escenario que ha propiciado grandes reflexiones, críticas e investigaciones, y cada día ofrecen mayor cantidad de elementos para todos aquellos que de alguna manera u otra desean abordarlos como objeto de reflexiones e investigación. Lo que se pretende en este artículo es hacer una lectura reflexiva de las redes sociales, vistas desde la arquitectura conceptual y analítica teórica desarrolla por el Sociólogo Alemán Niklas Luhmann, la cual se enfocará en la red social Facebook como campo de interpretación. Dicha reflexión se plantea a partir de un análisis tipo embudo, desde el cual se esboza una secuencia que parte de los desarrollos conceptuales y teóricos generales propuestos por el autor, para luego hacer una lectura específica del campo estableciendo de esta forma un conjunto de relaciones que configura una nueva mirada, desde lo que el autor plantea como mass media. Como reflexión abierta se puede destacar cómo la Teoría General de Sistemas Sociales de Niklas Luhmann se puede convertir en una potente arquitectura conceptual y teórica que puede apoyar el desarrollo de estudios relacionados con las redes sociales de segundo orden tanto desde el punto de vista básico como aplicado.

BACKGROUND The degree of ileal organic matter (OM) fermentation appears to be comparable to hindgut fermentation in growing pigs. OBJECTIVES This study aimed to determine if dietary fiber sources with known different total gastrointestinal tract (GIT) fermentability in humans affect ileal and hindgut microbial communities and ileal fermentation in growing pigs used as an animal model for human adults. METHODS Male pigs (21 kg bodyweight; 9 wk old; PIC Camborough 46 × PIC boar 356L; n = 8/diet) were fed for 42 d a diet containing cellulose (CEL, low fermentability) as the sole fiber source (4.5%) or diets in which half of the CEL was replaced by moderately fermentable fiber, psyllium (PSY), or kiwifruit (KF) fiber. For each diet, terminal jejunal (substrate) and ileal (inoculum) digesta were collected from euthanized animals for in vitro ileal fermentation (2 h). Terminal ileal (substrate) and cecal (inoculum) digesta were used for in vitro hindgut fermentation (24 h). After in vitro fermentations, OM fermentation and short-chain fatty acid (SCFA) production were determined. Ileal digesta and feces were collected for microbial analysis. Data were analyzed by 2-factor ANOVA (diet × GIT region). RESULTS In vitro ileal OM fermentation was on average 22% and comparable to hindgut OM fermentation. El 11 de febrero de 1982 marcó el inicio oficial de un sueño que había crecido entre el clero, las comunidades religiosas y diversas personas de la comunidad del Oriente antioqueño con el beneplácito de las administraciones municipales. Mons. Alfonso Uribe Jaramillo permitió materializar este anhelo firmando en la fecha indicada el decreto de fundación de esta universidad. Es necesario señalar también que esta obra educativa fue creada en el año de las bodas de plata de la Diócesis de Sonsón-Rionegro como una expresión de generosidad con el pueblo del Oriente antioqueño y como signo del crecimiento, empuje y compromiso con el progreso de la región. Sin duda, una oportuna iniciativa educativa para el servicio evangelizador de esta Iglesia particular que se esfuerza por leer y atender los signos de los tiempos de un territorio. “Con esta Universidad queremos glorificar al Señor y a su Madre, servir al hombre que constituye nuestra mayor riqueza y contribuir modestamente a la restauración y al progreso integral de nuestra patria”. Estas palabras de Mons. Alfonso Uribe Jaramillo, en su discurso inaugural del 4 de abril de 1983, retratan su preocupación de pastor, que ordena toda su acción a la glorificación de Dios y al servicio evangelizador de la Iglesia, en este caso, para ofrecer desde la educación una formación integral a las personas y las comunidades que permita, además, profesionales idóneos a la sociedad y a la patria.

The infection by the new coronavirus (SARS-CoV-2) has taken the dimension of a pandemic, affecting more than 160 countries in a few weeks. In Colombia, despite the implementation of the rules established by the national government, exists an elevate concern both for mortality and for the limited capacity of the health system to respond effectively to the needs of patients infected. For Colombia, assuming a case fatality rate among people infected with SARS-CoV-2 of 0.6% (average data from the information reported for Latin American countries for March 18) (Table 1), the number of deaths, in one or two weeks, could be 16 and 243, respectively. These estimates differ markedly from those documented in countries such as Spain and Italy, in which COVID-19 case fatality rates exceed 8% (case of Italy) and from the percentage of patients who have required intensive care, which has ranged from 9% to 11% of patients in Mediterranean European countries. These differences could be explained due to: a) the percentage of the population at risk (individuals older than 60 years); b) a higher epidemiological exposure to viral respiratory infections associated with more frequent exposure to them, due to geographic and climatic conditions; c) less spread of the virus by location in the tropical zone; and d) earlier preventive measures to contain the spread of SARS-CoV-2 infection. Therefore, it is possible to establish that the situation in this country will be different from in European Mediterranean and that Colombia could have different endpoints from Spain and Italy.

Kiwifruit (KF) fiber, a mixture of soluble and insoluble fibers, elicits mucosal changes in the gastrointestinal tract (GIT). This study aimed to define the nature of these changes in mucosal features throughout the GIT of the growing pig in response to semi-synthetic iso-fiber diets containing cellulose (CEL, low GIT luminal functionality) as the sole fiber source (4.5%), or diets where half of the CEL was replaced by either PSY fiber (PSY husk, high GIT luminal functionality) or KF fiber (consumed as intact fruit). Entire male growing pigs (n = 24, 21 kg bodyweight) received the three diets (n = 8) for 42 d. GIT tissues, digesta, and feces were sampled. The partial replacement of CEL increased (P ≤ 0.05) the ileal (KF 22% and PSY 33%) and colonic (PSY 86%) mucus layer thickness, whereas it decreased the rectal crypt depth (KF -26%), and small intestinal (duodenum to ileum) villus length (PSY -17%). The number of duodenal goblet cells was 77% higher (P ≤ 0.05) for KF than CEL. Pigs fed the KF-containing diet had greater (P ≤ 0.05) apparent ileal organic matter digestibility and apparent total tract organic matter digestibility compared with CEL, but the lowest amount of fermented organic matter in the large intestine. In conclusion, partial substitution of CEL with PSY or KF at a constant, practically-relevant dietary fiber intake, affected several measures of GIT functionality with effects being specific to the added fiber.

Este artículo pretende ser una reflexión que aborda el fenómeno de lo viral tan en boga en hoy en día. El fenómeno en cuestión se ha venido estructurando en las últimas tres décadas especialmente en todos los medios de comunicación masiva, gracias al uso de internet y las redes sociales. Como objetivo se pretende analizar este fenómeno con relación a la descripción de la Modernidad Líquida en la teoría de Zygmunt Bauman para comprender su origen, alcances e impactos actuales. En primer lugar, se explican algunos ejemplos de la presencia de lo viral en internet, redes sociales y en los medios de comunicación tradicional. En segundo lugar, se aborda el surgimiento y el significado de este fenómeno. En un tercer momento, se analiza el fenómeno viral desde la Modernidad Líquida. Y, por último, se indican algunas implicaciones o efectos de lo viral, además de considerar que el fenómeno responde especialmente al sensacionalismo que alimenta emociones súbitas y pasajeras.

Synthetic dyes are highly stable, offer a wide range of colors, and have easy industrial applications. Nevertheless, dyes become a problem in aqueous environments due to their long permanence and low biodegradability. White-rot fungi are useful to degrade dyes through their ligninolytic enzymes and/or biosorption. This work evaluated the effect of 2,5-dimethylaniline, glucose, ammonium tartrate, copper sulfate, pH, and temperature on the degradation of Turquoise Blue (TB) dye in aqueous solutions by Leptosphaerulina sp. (Colombian native fungus). Assays were developed applying a response surface experimental design, which found that the ammonium tartrate and pH are the most influential variables on TB removal. Leptosphaerulina sp. decolorizes aqueous solutions with TB (99%, at day 8), mainly through sorption (89%). Therefore, one of the significant findings from this study is that the Leptosphaerulina sp. biomass is a promising alternative as biosorbent, in comparison to physical-chemical traditional methods, for treating wastewaters polluted with dyes

El propósito del artículo es analizar y discutir sobre el desarrollo de un estudio bajo un enfoque mixto; considerando las etapas que lo conforman; así como las implicaciones de los recursos y técnicas empleados. La investigación se realizó bajo el enfoque de la eficacia escolar en la educación media superior; en el Estado de Aguascalientes; México. Se optó por un diseño secuencial explicativo a partir de un estudio estadístico de valor añadido. Se trabajó con una población conformada por 119 centros escolarizados; pertenecientes a los diferentes subsistemas de enseñanza del Estado. Se destaca la importancia de emplear métodos integrales que permiten obtener información más completa de la realidad; al considerar las particularidades de los métodos empleados. Se reconoce el uso de herramientas de tipo cuantitativo para la selección de escuelas eficaces y no eficaces; para luego; a partir de técnicas cualitativas; conocer la realidad de los diferentes casos que integraron el estudio. La utilización de diferentes métodos; permitió triangular la información obtenida. Se puede concluir que los métodos utilizados son útiles; acordes con el tipo de información a obtener y analizar; además de; necesariamente; complementarios; para lograr los objetivos específicos y el general; planteados en las diferentes fases de la investigación.

Dietary fibre fermentation in humans and monogastric animals is considered to occur in the hindgut, but it may also occur in the lower small intestine. This study aimed to compare ileal and hindgut fermentation in the growing pig fed a human-type diet using a combined in vivo/in vitro methodology. Five pigs (23 (sd 1·6) kg body weight) were fed a human-type diet. On day 15, pigs were euthanised. Digesta from terminal jejunum and terminal ileum were collected as substrates for fermentation. Ileal and caecal digesta were collected for preparing microbial inocula. Terminal jejunal digesta were fermented in vitro with a pooled ileal digesta inoculum for 2 h, whereas terminal ileal digesta were fermented in vitro with a pooled caecal digesta inoculum for 24 h. The ileal organic matter fermentability (28 %) was not different from hindgut fermentation (35 %). However, the organic matter fermented was 66 % greater for ileal fermentation than hindgut fermentation (P = 0·04). Total numbers of bacteria in ileal and caecal digesta did not differ (P = 0·09). Differences (P < 0·05) were observed in the taxonomic composition. For instance, ileal digesta contained 32-fold greater number of the genus Enterococcus, whereas caecal digesta had a 227-fold greater number of the genus Ruminococcus. Acetate synthesis and iso-valerate synthesis were greater (P < 0·05) for ileal fermentation than hindgut fermentation, but propionate, butyrate and valerate synthesis was lower. SCFA were absorbed in the gastrointestinal tract location where they were synthesised. In conclusion, a quantitatively important degree of fermentation occurs in the ileum of the growing pig fed a human-type diet.

Resumen El artículo pretende ser una revisión de los conceptos: metateología y megateología, los cuales son utilizados por el neurocientífico Andrew Newberg en su obra Principles of Neurotheology. Para esto, en primera instancia, se hace una revisión del término teología, desde su origen griego, y reflexionar sobre si es aplicable o no a las demás religiones. En segundo lugar, se evalúa el concepto de neuroteología como una metateología o teología universal para todas las religiones. Y, por último, se analiza el término de megateología, como una neuroteología que pueda ser utilizada conceptual y terapéuticamente por todas las religiones considerando que engloba elementos comunes de estas. En este análisis se trata de resaltar los peligros en que puede caer esta propuesta como son el sincretismo religioso y una comprensión errónea de lo que es y persigue la teología del pluralismo religioso. Abstrac This article intends to be a revision of the concepts: methatheology and megatheology used by the neuroscientist Andrew Newberg in his book Principles of Neurotheology. First, a revision of the term theology is made, from its Greek origin, to see if it is applicable or not to other religions. Secondly, the concept of neurotheology is evaluated as a methatheology or as a universal theology valid for all religions. And finally, the term megatheology is analyzed, as a neurotheology that can be used conceptual and therapeutically by all religions insofar as it includes common elements to all of them. This analysis tries to underline the dangers of this proposal such as syncretism and a misunderstanding of what really is the theology of religious pluralism.

espanolResumen Introduccion: esta reflexion investigativa surge en el marco de la situacion que vivia Colombia con miras a consolidar el acuerdo de paz, por lo cual, se hacia necesario centrar la mirada en la formacion de maestros, ya que estos son actores sociales, eticos y politicos que con su trabajo pedagogico le aportan a la construccion de una cultura de paz. En este sentido, el objetivo estuvo orientado a develar las practicas discursivas en torno a la educacion para la paz y construccion de ciudadania que circulan y se apropian en la formacion de maestros en ocho facultades de educacion y dos normales superiores en el departamento de Antioquia. Los materiales y metodos: la investigacion es cualitativa con enfoque fenomenologico y documental, las tecnicas utilizadas: entrevista, grupo focal y analisis documental; los instrumentos: guia de entrevista, guia de grupo focal y ficha para el analisis de documentos institucionales. El analisis se hizo con la informacion que arrojaba cada instrumento y posteriormente se triangulo en una matriz de cuatro cuadrantes del sentido propuesta por los investigadores. Los resultados: los sentidos de las practicas discursivas se plantearon desde cuatro perspectivas, que son subjetiva, objetiva, intersubjetiva e inter objetiva. Se Concluye que los sentidos de las practicas discursivas se situan desde lo subjetivo en el propio saber, sentir y vivencia. Lo objetivo en las experiencias, protocolos y estrategias. Lo intersubjetivo en la interrelacion y cultura discursiva y la inter objetiva se refiere a la institucionalizacion y aplicacion explicita de las politicas educativas. EnglishAbstract Introduction: This research reflection arises within the framework of the situation that Colombia was living in order to consolidate the peace agreement, so it was necessary to focus on the training of teachers, since these are social, ethical and political actors who, with their pedagogical work, contribute to the construction of a culture of peace. Objective: Unveil the discursive practices around education for peace and citizenship construction that circulate and are appropriated in the training of teachers in eight Faculties of Education and two Normal Schools in the department of Antioquia. Materials and methods: The research is qualitative with a phenomenological and documentary approach. The techniques used are: interview, focus group and documentary analysis; the instruments: interview guide, focus group guide and card for the analysis of institutional documents. The analysis was made with the information provided by each instrument and subsequently triangulated into a matrix of four meaning quadrants proposed by the researchers. Results: The meanings of the discursive practices were raised from four perspectives, namely subjective, objective, inter-subjective and inter-objective. Conclusions: The meanings of the discursive practices are placed from the subjective in one's own knowledge, feeling and experience; from the objective in experiences, protocols and strategies; from the inter-subjective in the interrelation and discursive culture; and from the inter-objective in the institutionalization and explicit application of educational policies. portuguesResumo Introducao: esta reflexao de pesquisa emerge no marco da situacao que vivia Colombia a fim de consolidar o acordo da paz, e por isso que, se fiz necessario centrar o olhar na formacao de educadores, pois estes sao atores sociais, eticos e politicos que com seu trabalho pedagogico aportam a construcao uma cultura de paz. Neste sentido, o objetivo esteve orientado para revelar as praticas discursivas em torno a educacao para a paz e construcao de cidadania que circulam e se apropriam na formacao de educadores em oito faculdades de educacao e dois normais superiores no departamento de Antioquia. Os materiais e metodos: a pesquisa e qualitativa com a abordagem fenomenologico e documental, as tecnicas utilizadas: entrevista, grupo focal e analise documental; os instrumentos: guia de entrevista, guia de grupo focal e o ficho para a analise de documentos institucionais. A analise se realizou com a informacao que emitia cada instrumento e posteriormente se triangulou em uma matriz de quatro quadrantes do sentido proposto pelos pesquisadores. Background Staple cereals and their products are important foods. Many cereals contain an important protein group, gluten, which provides structure to bakery products and pasta. Gluten proteins have an unusual amino acid composition, containing high proline and glutamine contents. These amino acids confer resistance to proteolysis by gastrointestinal tract enzymes, producing indigestible proline- and glutamine-rich peptides that can trigger immunogenic reactions responsible for gluten-related health disorders. These disorders represent a serious public health issue, affecting approximately 5% of the global population. The prescription of a gluten-free diet (GFD) is the only accepted therapy for gluten-related health disorders. Scope and approach Adherence to a GFD remains a difficult goal for many reasons. Alternative approaches have been proposed to supplement or substitute a GFD. Among them, the use of gluten-specific enzymes to degrade immunogenic peptides has shown promising results. Most of the enzymes used in this approach are of microbial origin. Identification of natural alternatives is a timely requirement. Key findings Several enzymes of microbial origin have been identified that are claimed to digest gluten in the human gastrointestinal tract. However, only a few claim to be able to digest immunogenic gluten peptides. Most of these enzyme therapies are still being developed and are not yet viable practical solutions. Fruit-borne proteases are a possible alternative solution. Notably, green kiwifruit (Actinidia deliciosa), containing the cysteine protease actinidin, degraded gluten in animal trials and could be a natural way to manage gluten-related health disorders – an example of positive food synergy.

This study investigated the structural and physicochemical changes that occur in milk, a naturally designed complex structured emulsion, during gastric digestion using the bottle-fed piglet as an animal model. The gastric digestions of cow, goat, and sheep milk were compared in male piglets euthanized at different postfeeding times to collect the stomach chyme. The cow and noncow milks separated into curd (aggregated caseins) and liquid (mostly soluble whey) phases in the piglet's stomach. For milk from all the species, the curd remained longer in the stomach because of its slow disintegration, whereas the liquid phase emptied readily. The majority of the fat globules were found to be entrapped within the protein network of the curd. The rate of release of fat globules was strongly dependent on the breakdown of the surrounding protein network of the curd. The consistency of the gastric curds changed as digestion progressed, with goat and sheep milk curds having relatively softer curd consistency and less fused protein networks, especially toward the end of digestion. This might have led to the lower protein and fat retention in the goat and sheep milk curds and relatively faster gastric emptying of these nutrients from goat and sheep milk in comparison to cow milk. This in vivo study provided new and enhanced understanding of the mechanisms of the gastric digestion of milk from different species. It may have implications for developing bioinspired structures for the controlled digestion and delivery of nutrients.
