2. Biofortified Yellow-Fleshed Potatoes Provide More Absorbable Zinc than a Commonly Consumed Variety: A Randomized Trial Using Stable Isotopes in Women in the Peruvian Highlands.

Abstract

BACKGROUND: Zinc-biofortified potatoes have considerable potential to reduce zinc deficiency because of their low levels of phytate, an inhibitor of zinc absorption, and their high consumption, especially in the Andean region of Peru. OBJECTIVES: The purpose of this study was to measure fractional and total zinc absorption from a test meal of biofortified compared with regular potatoes. METHODS: We undertook a single-blinded randomized crossover study (using 67Zn and 70Zn stable isotopes) in which 37 women consumed 500-g biofortified or regular potatoes twice a day. Urine samples were collected to determine fractional and total zinc absorption. RESULTS: The zinc content of the biofortified potato and regular potato was 0.48 (standard deviation [SD]: 0.02) and 0.32 (SD: 0.03) mg/100 g fresh weight, respectively. Mean fractional zinc absorption (FZA) from the biofortified potatoes was lower than from the regular potatoes, 20.8% (SD: 5.4%) and 25.5% (SD: 7.0%), respectively (P < 0.01). However, total zinc absorbed was significantly higher (0.49; SD: 0.13 and 0.40; SD: 0.11 mg/500 g, P < 0.01, respectively). CONCLUSIONS: The results of this study demonstrate that biofortified potatoes provide more absorbable zinc than regular potatoes. Zinc-biofortified potatoes could contribute toward reducing zinc deficiency in populations where potatoes are a staple food. This trial was registered at clinicaltrials.gov as NCT05154500.

Abstract

High temperatures affect potato production in the tropics, putting tuber yield and quality at risk and leading to increased glycoalkaloid concentration the cause of the bitter taste in potatoes and a cause for concern for human health. The International Potato Center (CIP), has developed new heat tolerant clones which are heat tolerant and also resistant to late blight. These clones offer an opportunity to evaluate yield and glycoalkaloid levels after growth under high temperature environments. We evaluated four sets of 16 full-sib families and 20 clones for tuber yield and glycoalkaloid content in order to estimate narrow-sense and broad-sense heritability respectively. We used a randomized complete block design replicated in three locations in Peru; San Ramon, La Molina and Majes At harvest, the number and weight of marketable and nonmarketable tubers were recorded. We analyzed samples of tubers from each clone for glycoalkaloid content using spectrophotometry. Narrow-sense heritability for tuber yield, tuber number and average tuber weight were 0.41, 0.50 and 0.83, respectively, indicating that further gains in breeding for heat tolerance will be possible. These were collected from different CIP sweet potatoe genetic trials (GT) located in different agroecological zones (AEZ); West nile AEZ (Abii GT; L. Albert AEZ (Hoima and Buling GTs); Southern highlands (Kabale GT); Lake Victoria Crescent (Namulonge MDP); Western highlands (Rwebitaba MDP); and L.Kyoga basin (Serere GT). The samples were collected in two different seasons of 2021 and 2022. Harvests took place in the second season of 2021 (94 genotypes) (and the first season of 2022 (123 genotypes). Calibrations were done using reference data collected by a sensory panel as well as texture parameters assessed using a texture analyser. Up to twelve cooked roots per genotype were used for sensory evaluation of traits per session. High performances were observed of the calibration for orange color intensity (R2 = 0.92) and dry matter (R2 = 0.71), suggesting that the model is sufficient for field application. The moderate performances of models for sweetpotato aroma, pumpkin aroma and flavor, hardness by hand, fracturability, moisture in mass and mealiness by hand (R2 > 0.50) could be used for initial screening purposes. Most of the calibrations still need improvement.

Abstract

The objective of this study was to demonstrate the usefulness of neutrosophic logic to determine the relationship between student competencies and certain personality traits in law students at the National University of Chimborazo. For this, the study was carried out on a sample of 20 students in the last year of their degree. The Analytic Hierarchy Process method was used to support the decision-making process. Using this method, the most desirable competencies in the distance learning process and those personality traits of interest to the researchers were selected. The results obtained made it possible to determine that, on average, there is indeterminacy in some of the pairs of personality traits in students with average or low performance. The students who, on average, presented high levels of performance in the competencies analyzed, showed greater tendencies towards the trait than towards the anti-trait or indeterminacy

La falta de organización de los horarios y el deficiente servicio brindado por causa de la baja frecuencia de las unidades de transporte público de la Empresa Piribebuy S.A. hace que los usuarios desconozcan el tiempo que le llevará a la unidad más próxima a ellos llegar al sitio en el que éstos se encuentran. En los últimos tiempos, el servicio de la Empresa Piribebuy S.A. se ve afectado negativamente por el deficiente sistema de organización de horarios lo que genera prolongadas esperas y provoca en los usuarios una desagradable experiencia a la hora de utilizar el servicio de la citada empresa. Por lo expuesto, la necesidad de la formulación de esta investigación, nace teniendo en cuenta las innumerables quejas de los usuarios. Con el desarrollo e implementación de esta investigación, se pretende brindar a los usuarios de la Empresa Piribebuy S.A., una herramienta que permita a éstos, conocer la posición de las unidades de transporte, en tiempo real, para así poder realizar un cálculo aproximado del tiempo en que dicha unidad llegará a la parada en la cual se encuentran. Pregunta de investigación: ¿Es factible el desarrollo de una aplicación móvil/web de geolocalización de unidades del transporte público de la Empresa Piribebuy S. A. Año 2016? Diseño: El artículo se basa en el desarrollo e implementación de una aplicación móvil y sistema web para brindar a los usuarios de la Empresa Piribebuy S.A., una herramienta que permita a éstos, conocer la posición de las unidades de transporte, en tiempo real, utilizando la tecnología GPS. Resultado: La aplicación móvil destinada a las unidades de transporte facilita la transmisión de los datos de posicionamiento de las mismas; mientras que la aplicación móvil dispuesta para los usuarios de la Empresa Piribebuy S.A. brinda la posibilidad de conocer de manera precisa y en tiempo real, la ubicación geográfica en las cuales se encuentran las unidades de transporte público activas, plasmando las mismas en un mapa virtual mediante el empleo de un gmaker (marcador). Conclusión: En respuesta a la situación planteada y mediante la elaboración de la presente investigación se pudo desarrollar una solución informática integral, la cual abarca todas las variables del problema, ya que durante el desarrollo de la labor se evidenció la necesidad de contar con una herramienta software adicional que se encargue de la gestión interna de las informaciones necesarias para el funcionamiento de las aplicaciones encargadas de la emisión de los datos de posicionamiento y de la geolocalización de las unidades de transporte respectivamente.

Abstract

40. Near infrared spectroscopy models to predict sensory and texture traits of sweetpotato roots

Abstract

High-throughput phenotyping technologies successfully employed in plant breeding and precision agriculture could facilitate the screening process for developing consumer-preferred traits. The current study evaluated the potential of near infrared (NIR) spectroscopy to predict visual, aromatic, flavor, taste and texture traits of sweetpotatoes. The focus was to develop predicting models that would be cost-effective, efficient and high throughput. The roots of 207 sweetpotato genotypes from six agroecological zones of Uganda were collected from breeding trials. The spectra were collected in the wavelengths of 400 – 2500 nm at 2 nm intervals. Using the plsR package, the calibrations were carried out using external validation models. The best calibration equation between the sensory and texture reference values (10-point scales) and spectral data was identified based on the highest coefficient of determination (R2) and smallest RMSE in calibration and validation. Of the visual traits, orange color intensity was well calibrated using NIR spectroscopy (R2val = 0.92, SEP = 0.92), and the model is sufficient for field application. Pumpkin aroma (R2val = 0.67, SEP = 0.33) was the highest predicted among the aromas. The pumpkin flavour model exhibited the highest coefficient of determination in the calibration (R2val = 0.52, SEP = 0.45) for the traits considered under flavor and taste. Different models for textural traits exhibited moderate calibration coefficients: mealiness (chalky/floury) by hand (R2val = 0.75; SEP = 1.31), crumbliness (R2val = 0.73, SEP = 1.21), moisture in mass (R2val = 0.73, SEP = 1.26), fracturability (R2val = 0.60, SEP = 1.52), hardness by hand (R2val = 0.61, SEP = 1.27) and dry matter (R2val = 0.70, SEP = 3.10). The range error ratio (RER) values were mostly >6.0. These models could be used for preliminary screening. The predictability of the traits varied among different modes of samples. Models could be improved with an increased range of reference values and/or exploiting the correlations between chemical compounds and sensory traits.

46. The Nutritional Contribution of Potato Varietal Diversity in Andean Food Systems: a Case Study

Abstract

Potato is the backbone of agriculture and diets in high-altitude food systems of Peru, where farmers grow diverse varietal portfolios. Here we report on the role of diverse landraces and modern potato varieties in the Andean diet. The dry matter, energy, protein, iron and zinc content of 12 floury and 9 bitter landraces was determined. The contribution of varietal diversity to the dietary intake of energy, protein, iron and zinc was established during two contrasting periods of overall food availability. Results show that the potato and intraspecific diversity make an important contribution to nutrition. Most floury landraces contain higher concentrations of protein and iron compared to the reference value reported in the 2009 Peruvian food composition table for a boiled and peeled floury landrace. Traditional freeze-drying of bitter landraces doesn’t affect energy or iron concentrations, but reduces protein and zinc content considerably. Protein and iron contents in boiled chuñoderived from the bitter landraces are lower compared to the mean value reported in the food composition table. The contribution of varietal diversity ideally needs to be taken into account when conducting nutrition studies in diversity hotspots like the Andes where potato is a main staple. The potato adds positively to the nutritional balance and the recommended requirements for energy, protein, iron and zinc of women and children. Floury landraces and modern varieties complement each other in light of seasonality, providing valuable nutrients during contrasting periods of the year. The potato thus contributes positively to food security. However, the overall diversity of the diet was found to be poor, resulting in micronutrient deficiencies. Options to strengthen food based approaches to attend undernutrition are discussed. La papa es la parte medular de la agricultura y en la dieta en sistemas alimenticios de gran altura en Perú, donde los agricultores cultivan una gran diversidad varietal. Aquí reportamos sobre el papel de diversas variedades nativas y variedades modernas de papa en la dieta andina. Se determinó el contenido de materia seca, energía, proteína, fierro y zinc de 12 variedades nativas harinosas  y 9 nativas amargas. Se estableció la contribución de la diversidad varietal al suministro de la dieta en energía, proteína, hierro y zinc, durante dos períodos contrastantes de la disponibilidad de alimentos en general. Los resultados muestran que la papa y la diversidad intraespecífica hacen una contribución importante a la nutrición. La mayoría de las variedades nativas harinosas contienen más altas concentraciones de proteína y hierro en comparación con el valor de referencia reportado en la tabla peruana de la composición alimenticia de 2009 para una variedad nativa harinosa hervida y pelada. El tradicional congelado-secado de variedades nativas amargas no afecta las concentraciones de energía o hierro, pero reduce los contenidos de proteína y zinc considerablemente. Los contenidos de proteína y hierro en chuño hervido derivado de las variedades nativas amargas son más bajos comparados con el valor medio reportado en la tabla de la composición alimenticia. La contribución de la diversidad varietal necesita tomarse idealmente en cuenta cuando se conduzcan estudios de nutrición en regiones que son centros de diversidad, como son los Andes, donde la papa es un alimento principal. La papa contribuye positivamente al balance nutricional y a los requerimientos recomendados para energía, proteína, hierro y zinc de mujeres y niños. Las variedades nativas harinosas y las modernas se complementan entre ellas respecto a la estacionalidad, proporcionando nutrientes valiosos durante períodos contrastantes del año. De esta manera la papa contribuye positivamente a la seguridad alimentaria. No obstante, la diversidad general de la dieta se encontró pobre, resultando en deficiencias de micronutrientes. Se discuten las opciones para reforzar los enfoques con base a los alimentos para atender la desnutrición.
