International audience; The vitamin C content and the colour of an orange juice made from concentrate were measured during 9 months of storage at 20 degrees C in glass, standard monolayer polyethylene terephtalate (PET) and multilayer PET (PET/Nylon and oxygen scavenger/ PET) containers. In plastic packaging materials, the loss of quality was related to the oxygen permeability and glass enabled the best preservation of ascorbic acid and colour. The losses of aroma compounds by permeation through the bottle (PET) and the stopper (HDPE high density polyethylene) have also been investigated. The results showed that permeation was mainly done through the stopper. The use of a multilayer stopper (HDPE with internal joint LDPE/EvOH/LDPE) enabled to limit the permeation, whatever the PET bottle used.

The aim of this work was to study the influence of packaging and the matrix on the quality of orange juice during storage, related to its ascorbic acid content, its colour and its flavour. Orange juice made from concentrate was stored at room temperature in glass and in monolayer polyethylene terephtalate (PET). Different oxygen barrier technologies of PET and of stoppers made with polyethylene high density (PEHD) were tested. After 5 months of storage, losses of aroma compounds through transfers with the plastic packaging materials were negligible. Glass gave the best preservation of ascorbic acid, while for plastic packaging materials, ascorbic acid losses were correlated with their oxygen permeability. Changes in aroma compounds were strongly correlated to the duration of storage, but not to the packaging material and its corresponding oxygen permeability. These results suggest that changes in the aroma compounds within the juice could be attributed to the high acidity of the matrix, implying acid-catalysed reactions. The aromatic quality was improved taking into account the raw material (juice matrix and aroma compounds) and different steps of the process. A rise in the pH from 3.2 to 4.0 significantly reduced amounts of off-flavours appearing during storage and enabled the protection of ascorbic acid levels without detrimentally increasing non-enzymatic browning. The influence of both the pulp content and the thermal treatment were studied through physico-chemical and sensorial studies. Pasteurisation might be able to modify the interactions between aroma compounds and insoluble contents of juice.; L'objectif de ce travail a été d'étudier l'influence de l'emballage et de la matrice (jus) sur la qualité du jus d'orange pendant son stockage, en lien avec sa teneur en vitamine C, sa couleur et sa qualité organoleptique. Les matériaux d'emballage utilisés étaient le verre, un polyéthylène téréphtalate (PET) monocouche et des technologies barrière à l'oxygène pour les bouteilles de PET et pour les bouchons en polyéthylène haute densité (PEHD). Ces résultats ont montré que l'évolution aromatique dans le jus pouvait être attribuée à l'acidité de la matrice qui entraîne des réactions de catalyse acide. Les travaux suivants ont permis d'améliorer la qualité aromatique du produit en tenant compte de la matière première (matrice jus et arômes) et de plusieurs étapes du procédé de fabrication. En condition modèle, une augmentation du pH d'un pur jus de 3,2 à 4 a permis de diminuer la formation de composés d'arôme à impact sensoriel négatif et a protégé la vitamine C sans augmenter de manière importante le brunissement non-enzymatique. Le rôle de la pulpe et du traitement thermique sur la rétention des composés d'arôme a été étudié d'un point de vue physico-chimique et d'un point de vue sensoriel.
