Safflower is currently primarily cultivated as an industrial crop for its oil, which is used for food and industrial purposes, while the by-products can be used for animal feeding. Traditionally cultivated in the Mediterranean area, it was abandoned in the past for other oil crops, such as sunflower. However, it is now returning to be interesting due to its adaptability to low-input cultivation practices, especially when sown in autumn. The main aim of this study is to present a Life Cycle Inventory of safflower grown in a Southern European country, i.e. Italy, based on primary data on agricultural practices used in this country. The study was carried out following ISO 14040 and ISO 14044. Data were collected from experimental fields of the University of Perugia, to ensure a specific and accurate data collection for the definition of the complete supply chain. The reference unit of this study was defined as 1 ha. The stages from raw materials production to seed harvesting were considered. The data presented will be useful to increase the existing knowledge of safflower production in other Mediterranean countries.

This work aimed to study the effect of some light spectra on the growth, oxidative state, and stress of einkorn wheatgrass (Triticum monococcum L. ssp. monococcum). To this end, six light treatments, having the same total incident photon flux density (PFD) of 200 μmol m–2 s–1, were applied to einkorn and compared: only blue light; only red; three blue:red combinations, at different proportions of total PFD (75:25%, 50:50%, and 25:75%, respectively); and a wide spectrum, taken as a control treatment, composed of blue (18% of PFD), red (18%), and intermediate wavelengths (64%). Light treatments affected the contents of pigments (chlorophylls and carotenes), hydrogen peroxide (H2O2), and malondialdehyde (MDA). These results revealed the changes in the oxidative status of wheatgrass, in response to the different light treatments. However, the dichromatic light with blue ≥50% of the total PFD appeared to be the best combination, guarantying good wheatgrass yield, increasing pigment content, and reducing H2O2 and MDA when compared to the other light treatments. Our findings also contribute to explaining the available literature on the effect of these kinds of light on the increase in phenolic compounds and antioxidant activity in einkorn wheatgrass.

The use of Light Emitting Diode (LED) lights in microscale vegetable production is more and more widespread. In this context, the effect of light spectrum on photosynthesis, growth, shoot yield, pigment content, and nutritional status of einkorn seedlings (Triticum monococcum L. ssp. monococcum), germinated and grown in a nutrient solution, was investigated. Plants were subjected to six different LED light treatments, all having a photon flux density (PFD) of 200 &mu, mol m&minus, 2 s&minus, 1. Two light treatments were monochromatic (red or blue), three dichromatic (blue and red in the proportion), and one of a wider spectrum (selected as a control). All the light treatments affected the morphological, biochemical, and nutritional status of einkorn seedlings. Overall, the dichromatic treatments were the most effective in stimulating biomass production, CO2 assimilation, and evapotranspiration, as well as contents in chlorophyll a and b and carotenoids, and additionally nitrogen, phosphorous, manganese, iron, and zinc. These results are of relevance for the beneficial effects of dichromatic LED treatments in maximizing einkorn shoot yield and nutritional values, and in limiting energy consumption in indoor cultivation.

Salt stress and selenium are known to elicitate the production of plant secondary metabolites with antioxidant properties. On this basis, maize grains obtained from mother plants fertilized or not fertilized with selenium were sprouted at different levels of salinity (0, 25, and 50 mM NaCl) to evaluate the effects on the sprout yield, inorganic and organic Se species, minerals, and secondary metabolites, as revealed by a metabolomics analysis. Grain endogenous selenium (135 mg kg-1 vs. 0.19 mg kg-1 of the non-enriched grain) and salinity affected the sprout yield and composition, with salinity having the greatest effect on secondary metabolites. Most of the Se in sprouts was in an inorganic form, despite Se-enriched grains only containing organic Se. Some synergic effect was observed between Se and salinity. The best combination was obtained with Se-enriched grains sprouted at 25 mM NaCl, since this provided a good yield (not lower than in the untreated control), while sprout shoots were enriched in selenocystine and pro-nutritional semipolar compounds with antioxidant properties. Therefore, using grains from Se-fertilized crops and sprouting them under mild salt stress might represent a promising technique for improving the nutritional value of sprouts.

Selenium (Se) is an important micronutrient for living organisms, since it is involved in several physiological and metabolic processes. Se intake in humans is often low and very seldom excessive, and its bioavailability depends also on its chemical form, with organic Se as the most available after ingestion. The main dietary source of Se for humans is represented by plants, since many species are able to metabolize and accumulate organic Se in edible parts to be consumed directly (leaves, flowers, fruits, seeds, and sprouts) or after processing (oil, wine, etc.). Countless studies have recently investigated the Se biofortification of plants to produce Se-enriched foods and elicit the production of secondary metabolites, which may benefit human health when incorporated into the diet. Moreover, feeding animals Se-rich diets may provide Se-enriched meat. This work reviews the most recent literature on the nutraceutical profile of Se-enriched foods from plant and animal sources. Seeds from Citrus species represent a relevant by-product of the juice industry and a potential source of bioactive compounds such as phenols and other antioxidants. Sprouting could be an intriguing idea to enhance the content of these compounds, as explored for other fruittree species. In this experiment, the sprouting performance, the concentration of total phenols and phenolic acids, and the antioxidant activity of seeds and sprouts were evaluated for bitter orange (Citrus aurantium L. seedlings), blonde orange (Citrus sinensis (L.) Osbeck cv.Biondocomune), sweet orange (Citrus sinensis (L.) Osbeck seedlings), lemon (Citrus limon (L.) Osbeck cv.Femminello), and mandarin (Citrus reticulata Blanco cv.Tardivo di Ciaculli). The germination was high for all genotypes except for mandarin, but it took 4&ndash, 8 weeks. Sprouts did not differ among genotypes for size and generally had hard consistency of cotyledons and a bitter taste. The concentrations of total phenols and phenolic acids of seeds and sprouts varied with the genotype, while the antioxidant activity was not statistically different among treatments. Sprouting increased both the concentration of phenolic compounds and antioxidant activity but no correlation was found between them, suggesting that other antioxidants, besides phenols, are present. Given the slow germination and the bitter taste, Citrus sprouts appear unsuitable for homemade production aimed at direct consumption, while they may have perspectives for extraction of food additives, cosmetics, and pharmaceutics.

Sprouted seeds represent intriguing ready-to-eat micro-scale vegetables for the healthy food market, since they are tasty and rich in bioactive compounds. However, sprouts have been recently proposed as a source for the extraction and purification of several phytochemicals to be used in food supplementation or pharmaceutics. Recently, there has been an industrialization of sprout production, carried out indoor, often with use of artificial light, which have implications on biomass yield and composition, and on energetic and economic costs. This work investigates the effects of different radiation wavelengths from light emitting diodes (LED) on free and bound phenolics and antioxidant activity of sprouts and wheatgrass of einkorn (Triticum monococcum L. ssp. monococcum) and emmer ([(Triticum turgidum L. spp. dicoccum, (Schrank ex Schubler) Thell.)]). After 3 days of grain incubation in the dark, three light treatments were applied, labelled as BLUE (447 and 470 nm), RED (627 and 655 nm), and SUN (447, 470, 505, 530, 590, 627, 655 nm), for a same total photon flux density (PFD) of 200 μmol m−2 s−1. Sprouts were harvested at 5 days after sowing (DAS) and wheatgrass at 9 DAS. The effect of light was generally not significant for sprouts, much greater and species-specific for wheatgrass: BLUE in einkorn and RED in emmer generally increased free and total content of polyphenol (PC), tannins (TC), flavonoid (FC) and phenolic acids (PAs). The antioxidant activity was increased by BLUE in einkorn and decreased by RED in both species. BLUE and RED resulted energy saving compared to SUN.

Pomegranate (Punica granatum L.) fruits are used mainly by the juice industry, for which seeds are a by-product to be disposed of, though they could potentially be a source of bioactive compounds. In this work, germination (total germination percentage, G; mean germination time, MGT; time to reach 80% of germination, TG80; seedling shoot length, fresh weight and dry matter), and nutritional value (total phenolics, TP; total flavonoids, TF; total non-tannins, TNT; antioxidant activities) of pomegranate seeds and sprouts were determined on four commercial pomegranate cultivars (Akko, Dente di Cavallo, Mollar de Elche and Wonderful). Seeds were removed from ripe fruits and incubated in plastic trays containing sterile cotton wetted with distilled water. Sprout shoots were harvested when they reached the complete cotyledon expansion, i.e., the ready-to-eat stage. Akko showed the best germination performance (G = 98%; MGT = 14 days after sowing, DAS; TG80 = 16 DAS), followed by Mollar de Elche. Sprouting dramatically increased TP, TF, TNT and antioxidant activity in all genotypes, with the highest values recorded in Mollar de Elche and Dente di Cavallo. Overall, based on germination performance, Akko and Mollar de Elche would be the best cultivars for sprouting. Sprouting pomegranate seeds appears to be a suitable way of utilizing by-products of the juice industry to obtain bioactive compounds.

Total phenolic content (TPC) and antioxidant activity (AOXA) of olive (Olea europaea L.) sprouts were measured in three cultivars (Arbequina, Moraiolo and Leccino). Olive seeds, obtained by manually breaking whole stones derived from de-stoning ripe fruits, were sown in plastic trays and subjected to cold stratification for 30 days. The trays were then moved to 25 °C and 16:8 light:dark regime. Total germination was 27% in Arbequina, 18% in Leccino, 14% in Moraiolo. Mean germination time (MGT) was 10 days in Leccino and Moraiolo and 14 days in Arbequina. Shoots were progressively harvested once the cotyledons were completely unfolded, i.e., between 8 and 16 days after germination. Sprouting dramatically increased TPC and AOXA in all cultivars (on average, 14 and 30 times higher, respectively, compared to seeds), with Moraiolo and Leccino showing higher values than Arbequina. Sprouting olive seeds appears to be a valid way to obtain antioxidants for food supplementation or pharmaceutical purposes.

BACKGROUND: Fresh sprouts are healthy foods, low in fats and high in phytochemicals, but have a short shelf‐life, hence the need for processing methods that preserve their nutritional value. This work was aimed at evaluating the effect of heat‐drying (HD) and freeze‐drying (FD) on the phytochemical and fatty acid profiles of alfalfa and flax sprouts, as compared to fresh material. RESULTS: Both FD and HD reduced the phytochemical contents compared to fresh sprouts. FD better preserved phytoestrogens, phytosterols and total tocols compared to HD. However, phytoestrogen and tocol content remained quite high also in HD. The fatty acid profile was affected only by sprouts species, with higher amounts of α‐linolenic acid in flax and linoleic acid in alfalfa sprouts. CONCLUSIONS: This work demonstrates that drying does not severely compromise the nutritional value of sprouts and provides a valid support for the choice of the drying method depending on the compound to be preserved, and taking into consideration the different cost of the methods. In addition, sprout powder is easy to handle and, due to its low volume, does not imply a decrease of feed consumption and energy intake, which is relevant in its use as a supplement in human and animal feeding. © 2019 Society of Chemical Industry

In the last decade, there has been an increase in the use of sprouted grains in human diet and a parallel increase in the scientific literature dealing with their nutritional traits and phytochemical contents. This review examines the physiological and biochemical changes during the germination process, and the effects on final sprout composition in terms of macro- and micro-nutrients and bioactive compounds. The main factors affecting sprout composition are taken into consideration: genotype, environmental conditions experimented by the mother plant, germination conditions. In particular, the review deepens the recent knowledge on the possible elicitation factors useful for increasing the phytochemical contents. Microbiological risks and post-harvest technologies are also evaluated, and a brief summary is given of some important in vivo studies matching with the use of grain sprouts in the diet. All the species belonging to Poaceae (Gramineae) family as well as pseudocereals species are included.

Wheat sprouts and wheatgrass represent a sort of fresh vegetable for the ready-to-eat market and are acknowledged for their bioactive compounds content. Besides nutritional properties, sensory quality is a crucial issue for consumers' satisfaction. This work reports several sensory traits of sprouts and wheatgrass from five genotypes of Triticum species. Sprouts showed higher soluble solids content (SSC) and SSC/TA (titratable acidity) ratio than wheatgrass. The prevalent volatile compounds of both sprouts and wheatgrass were 1-penten-3-ol, 1-penten-3-one, E-2-hexenal, and 1-octen-3-ol, responsible for green, solvent, earthy, and mushroom odors. Differences among samples were affected more by the growing stage than by the genotype. PRACTICAL APPLICATIONS: Results indicate sprouts and wheatgrass have a strong flavor, which might not be acceptable to consumers. This suggests the addition of sprouts to vegetable-based products, such as salads, in order to enhance the taste complexity while providing valuable phytochemicals. Similarly, the strong flavor of wheatgrass, which is mainly used alone to make juices, could be mitigated by mixing it with other vegetable products or by using it as a garnishment. Overall, the observed sensory traits and volatile compounds represent a tool for a tailored choice of the sprout stage and genotype depending on the desired food specialty (e.g., salad, course garnishment, juice).

In this work, the biological activity of emmer (Triticum turgidum L. spp. dicoccum (Schrank ex Shubler) Thell.) wheatgrass extracts obtained from grains sprouted with distilled water, or salinity (50 mM) or selenium (45 mg L−1 of Na2SeO3), was tested through an experimental biological model based on the germination and cytosolic Ca2+ homeostasis of maize pollen grains. The effects of thapsigargin (TG) and of four phenolic acids (PAs: ferulic, coumaric, salicylic and 3-HO benzoic) on maize pollen were also tested as controls. Wheatgrass extracts influenced both pollen cytosolic Ca2+ and germination. The Ca2+ agonist activity of emmer wheatgrass was transient, different from that of TG, which caused a depletion of the stored Ca2+ and a permanent alteration of Ca2+ homeostasis. The results obtained with extracts compared to those obtained with pure PAs suggest that PAs in unconjugated forms, which are known to be well represent in emmer wheatgrass, contribute to the biological activity of extracts. The extent of the biological response of emmer wheatgrass extracts was influenced by emmer sprouting conditions (i.e., distilled water, or salinity or selenium). Maize pollen treated with Se-enriched wheatgrass extracts showed a less perturbed cytosolic Ca2+ and a higher germination rate.

The effect of dietary supplementation with flax and alfalfa sprouts (40 g/d) on bioactive compounds and cholesterol contents of hen's egg was examined. Thirty White Leghorn hens, 26 weeks of age, were fed, for 66 days, three diets that included control (standard diet – C), standard diet + alfalfa sprouts (A), and standard diet + flax sprouts (F). Productive performance of hens was recorded daily. The cholesterol content of plasma and yolk, and the presence of bioactive compounds in the egg, were also analysed. Supplementation of flax and alfalfa sprouts reduced plasma and egg cholesterol probably due to the synergy between different compounds of the sprouts (polyunsaturated fatty acids - PUFAs, lignans, isoflavones and sterols). Eggs from A and F groups also had higher contents of n-3 PUFA, vitamins (α-tocopherol, α-, γ-tocotrienol, retinol), carotenes (β-carotene, lutein, zeaxanthin) and phytoestrogens (daidzein, equol, isolariciresinol) than eggs from the C group.

The contents of total Se and of inorganic and organic Se species, as well as the contents of proteins, chlorophylls, carotenoids, and phenolic acids, were measured in 10-day old sprouts of rice (Oryza sativa L.) obtained with increasing levels (15, 45, 135, and 405 mg Se L–1) of sodium selenite and sodium selenate and with distilled water as control. Increasing Se levels increased organic and inorganic Se contents of sprouts, as well as the content of phenolic acids, especially in their soluble conjugated forms. Moderate levels of sodium selenite (i.e., not higher that 45 mg L–1) appeared the best compromise to obtain high Se and phenolic acid yields together with high proportion of organic Se while limiting residual Se in the germination substrate waste. Se biofortification of rice sprouts appears a feasible and efficient way to promote Se and phenolic acid intake in human diet, with well-known health benefits.

International audience; AbstractWheat-legume temporary intercropping with legume devitalization in late winter can increase the N self-sufficiency of cropping systems and improve the N nutrition of wheat as a cash crop. However, this practice has been scarcely investigated. In this study, carried out in a Mediterranean environment with cold winters, we compared 14 treatments over 3 years with different weather patterns: (A) pure stands of common wheat (Triticum aestivum L.) grown at 0, 40, 80, 120, 160 kg N ha−1; (B) pure stands of faba bean (Vicia faba L. minor), pea (Pisum sativum L.), and squarrose clover (Trifolium squarrosum L.); (C) temporary intercrops of wheat and faba bean, pea, or clover; and (D) permanent intercrops of wheat and the same legumes. In the temporary intercrops, all legumes improved the wheat N availability compared with the unfertilized control. The “N effect” of legumes for wheat was consistent across years and proportional to the competitive ability of the legumes, i.e., faba bean > pea > clover. The higher the legume competitive ability, the higher was its N accumulation before devitalization, and the higher/earlier was the N supplied to wheat. Our findings demonstrate that the date of legume devitalization represents a key factor to be managed each year in order to maximize legume N supply while preventing excessive legume competition, which could undermine wheat growth and yield. Such a modulation was not possible in permanent intercrops, where legume competition depressed wheat grain yield. The N supplied with legume devitalization increased wheat grain N accumulation during grain filling. This is the first work comparing temporary and permanent intercrops of wheat with different legumes and over different seasons. Overall, temporary intercropping appears to be a feasible and efficient tool for the sustainable management of N nutrition in winter wheat.

Light-Emitting Diodes (LEDs) technology offers vast possibilities in plant lighting due to its ability to mix different light frequencies, high energy use efficiency and low heat production combined to long lifespan. In particular, the combined effect of the Blue:Red (B:R) ratio and other frequencies in the central part of the PAR spectrum (CGA, i.e. cyan, green and amber) may be very important, though literature information is scarce. In this paper, the effects of six light spectra from LED technology were tested, i.e.: (i) B:R=0.82 (i.e. similar to sunlight) with CGA (treatment T0), (ii) B:R=0.82 without CGA (T1), (iii) red prevalence (B:R=0.25) without CGA (T2), (iv) blue prevalence (B:R=4) without CGA (T3), (v) red prevalence with CGA (T4) and (vi) blue prevalence with CGA (T5). The experiment was carried out in a walk-in climatic chamber with controlled temperature and relative humidity and an incident PAR photon flux density (PFD) of 300 μmol m–2 s–1 (14/10 light/dark photoperiod), generated by multispectral LED lamps with adjustable light intensity. Smooth leaved lettuce (Lactuca sativa L. cv Gentilina) was used as the test plant and biomass yield (DW, g m–2), LAI, soil coverage proportion (SC%), energy-biomass conversion efficiency (E-BCE, kWh g–1) and Radiation Use Efficiency (RUE, g mol–1 photons) were determined. Treatments with red predominance (T2 and T4) showed the highest SC% rates, while those with blue predominance (T3 and T5) showed the lowest. Light spectrum also affected leaf size (i.e. mean leaf area). The highest DW and RUE were observed in T2 and T4, followed by T0, while biomass in T3 and T5 was significantly lower (similar to T1). LAI values were generally high, but treatments with blue predominance showed the lowest LAI values (both with or without CGA). The introduction of intermediate wavelengths (green, cyan and amber) did not bring about significant improvement in DW or RUE, but resulted in reduced energy-biomass conversion efficiency, mainly due to lower architectural efficiency of the CGA LEDs. Future research should clarify how to optimise the light spectra according to the crop growth phases. The adoption of spectra promoting fast growth is fundamental in the early growth, while the use of spectra maximising yield quality may be more important later on.

Sprouted seeds of many plant species represent a kind of vegetable often produced at home. Their consumption have been increasing in recent years because they are considered a healthy food for their high content in bioactive compounds and antioxidants [1]. Many Brassica species are used for sprouting since they are known to contain vitamins (i.e., ascorbic acid), minerals, phenolics and glucosinolates (GLS), whichmay have health-promoting effects like antioxidant and anticancer activity [2–4]. On the other hand, most Brassica species, rapeseed included, may contain erucic acid (EA), which may cause heart lesions [5], and progoitrin, a glucosinolate having goitrogenic effects [6]. However, the rapeseed cultivars labelled as 00 (double zero) have close to nil EA and GLS contents and can thus be used with no restrictions for human feeding [7], while maintaining a high supply of phenolics. Phenolic compounds are important components of many fruits and vegetables where they contribute to flavor, color, and sensory properties and may have important effects on the oxidative stability. The phenolic compounds are divided into different classes: flavonoids (i.e., anthocyanins, flavan-3-ols, flavones, flavanones, flavonols, etc) and non-flavonoids (phenolic acids, stilbens, lignans).

Germination is related with improvements of nutritional value of seeds, since it promotes accumulation of health-promoting phytochemicals. However, only few studies have investigated on phytochemicals accumulation during sprouting under sub-optimal conditions. Thus, we investigated the effect of salinity during germination of an einkorn (TMoM), an emmer (TDiZ) and a durum wheat (TDuC) genotype on the total polyphenols (TPC), free- and bound-phenolic acids [PAs; i.e. caffeic acid, syringic acid, Pcoumaric acid, trans-ferulic acid, and salicylic acid] contents and antiradical activity (Trolox equivalent antioxidant capacity; TEAC) of sprouts and wheatgrass. The following NaCl treatments were applied: 0 (control), 25, 50 and 100 mM NaCl concentration throughout the whole experiment, or 50 and 100 mM NaCl until sprout stage and then 0 mM until wheatgrass stage (recovery treatments). TMoM showed higher total bound-PAs both in sprouts and wheatgrass with respect to the other Triticum genotypes (+25% and 24%, respectively) as well as of total bound-PAs and bound-SA in the recovery treatments. Moderate salt stress significantly increased all the investigated variables in TDiZ. Salt stress induced higher TPC and TEAC as well as total free-PAs values till 50 mM NaCl in TDuC, whilst significantly lowered total bound-PAs due to the negative variation of both P-CA (-84%) and trans-FA (-81%) acids. Results indicate that salinity during germination could be efficiently modulated to improve the nutritional quality of sprouts, wheatgrass and cereal-based products.

Grain size correlates with ovary size at anthesis, across cultivars, spike position, temperature changes, and source-sink manipulations, and it has been suggested that this correlation may be a functional (i.e. causal) one. To investigate possible causality, this relationship was studied across different agronomical/environmental conditions, such as nitrogen fertilization levels, plant densities, and growing seasons (i.e. 2014 and 2015), in two wheat cultivars with different grain size. Grain volume correlated with ovary volume within cultivars, across the whole dataset. However, ovary volume varied more than 10-fold, while grain volume varied only about 0.5-fold. In 2014, grains were only slightly smaller or, in the most fertilized treatments, not statistically different than in 2015, despite 3–4-fold smaller ovaries. Even within 2015 data, the various treatments resulted in large variations in ovary volume, but grain volume was unaffected. The results indicated that ovary size varies significantly with agronomical/environmental conditions (i.e., nitrogen and density treatments, and season), while grain size is more conservative within cultivars. The cultivar's typical grain size can be achieved, if resources are not limiting, independent of large variations in ovary size.

Total phenolic content (TPC), reducing power (RP), superoxide radical scavenging (RS), and thiobarbituric acid reactive substances (TBARS) production inhibition were measured in raw and denatured aqueous extracts from sprouts and wheatgrass of einkorn and emmer obtained at increasing salinity. Grains were incubated and kept at 0, 25, 50, and 100 mM NaCl until either sprout or wheatgrass stage. Additionally, a recovery treatment was included, in which sprouts obtained at 100 mM NaCl were then transferred at 0 mM NaCl until wheatgrass stage. All parameters (TPC, RP, RS, and TBARS production inhibition) increased with sprouting and were highest in wheatgrass. Salinity increased all parameters, but the effect varied with NaCl concentration, genotype, developmental stage, and plant material processing (raw or denatured). Overall, given the delay and limitation of growth at high NaCl concentration, the best compromise appears to be the application of a moderate salinity (25 to 50 mM NaCl). In denatured extracts, TPC, RP, and RS slightly decreased, and TBARS was not affected, which means that antioxidant activity was mainly related to compounds other than enzymes and peptides, and thus it can be assumed to remain after digestion. Thus, supplementing the human diet with einkorn or emmer sprouts and wheatgrass can actually benefit health.
