This study investigated the antimicrobial and antioxidant effects of garlic and chitosan on hummus. Hummus was prepared by using 0.5% or 1% ( w / w ) chitosan, with or without 1% ( w / w ) garlic, and samples were stored at 4, 10, or 25 °C for 28, 21, or 7 d, respectively. The behavior of lactic acid bacteria (LAB), Pseudomonas spp., aerobic bacteria, and yeasts and molds was then investigated. Color, pH, TBARS, and rheological properties were also measured. In hummus, both with and without garlic, chitosan added at 0.5% and 1% w / w significantly ( p < 0.05) decreased LAB, aerobic bacteria, yeasts, and molds, and Pseudomonas spp., at 4 °C. However, at 10 °C, adding chitosan at 1% w / w significantly reduced only aerobic bacteria (2.2 log cfu/g) and Pseudomonas spp. (1.0 log cfu/g). The pH values (regardless of treatment) decreased upon storage. The addition of garlic or chitosan did not significantly affect the lightness (L*) or yellowness (b*). However, garlic, regardless of chitosan concentration, notably reduced lipid oxidation (0.8-1.4 MDA Eq/kg of sample) and had a greater impact on the sensory properties compared to chitosan. The results of this study will encourage producers to produce hummus that has a better flavor due to garlic with enhanced microbial quality.

Cereal crops have been integral to human sustenance since the Neolithic era which have earned significant attention as staple foods. The year-round cultivation and consumption of cereal-based products have led to the escalating global production of cereals and a rise in industrial processing which results in significant waste generation. These wastes contain high-value nutrients such as carbohydrates, proteins, and lipids. Due to their dense nutritional values, there is a need to link the diverse array of nutrients in major cereal wastes and by-products to their functionalities and relevant industrial applications. This will not only promote sustainable waste management but also economic stability. Existing studies on cereal research were investigated using informetric analysis to provide a quantitative outlook and identify key trends, research priorities, and gaps in cereal studies. Polysaccharides are abundant macromolecules. The study extracted date seed polysaccharides (UPS) using ultrasound-assisted deep eutectic solvent extraction to valorize date seeds. UPS were subjected to comprehensive characterization and evaluation of their bioactivity, prebiotic properties, and their potential to modulate the gut microbiome. Characterization revealed UPS's heteropolysaccharide composition with galactose, mannose, fructose, glucose, and galacturonic acid respectively in 66.1, 13.3, 9.9, 5.4, and 5.1%. UPS showed a concentration-dependent increase of radical scavenging and antioxidant activities, evidenced by FRAP, TAC, and RP assays. They also displayed antimicrobial efficacy against E. coli O157:H7, S. typhimurium , S. aureus , and L. monocytogenes . Rheological analysis showed UPS's elastic-dominant nature with thixotropic tendencies. UPS inhibited α-glycosidase, α-amylase, and ACE up to 86%, and reduced Caco-2 and MCF-7 cell viability by 70% and 46%, respectively. This study investigated the characteristics of polysaccharides from date pomace using microwave-assisted deep eutectic solvents. The impact on the gut microbiota and probiotics growth was examined in vitro. The study also examined its antioxidant properties, ability to inhibit enzymes linked to diabetes and high blood pressure, impact on cell growth, and physical properties. The isolated MPS had an average molecular weight of 8073.38 kDa and contained mannose, galacturonic acid, galactose, glucose, and fructose in specific proportions. At a concentration of 1000 mg/L, MPS showed strong antioxidant activity, with significant scavenging rates in various tests such as DPPH (57.0 ± 1.05 %) and ABTS (66.4 ± 2.48 %). MPS displayed 77 %, 80 %, and 43 % inhibition for α-amylase, α-glucosidase, and ACE-inhibition, respectively. MPS displayed significant antiproliferative effects, achieving 100 % and 99 % inhibition against Caco-2 and MCF-7 cells at 2500 mg/L, respectively. MPS showed broad-spectrum antibacterial properties against both Gram-positive and Gram-negative foodborne bacteria. Gemmiger formicilis, Blautia species, Collinsella aerofaciens, and Bifidobacterium longum showed strong positive correlations, suggesting increased SCFA production. Network analysis indicated species correlations, with 86 % showing negative correlations with Escherichia and Enterococcus saccharolyticus. MPS was abundant in Firmicutes, Actinobacteria, and Proteobacteria phyla. Tumor progression and eradication have long piqued the scientific community's interest. Recent discoveries about the role of chemokines and cytokines in these processes have fueled renewed interest in related research. These roles are frequently viewed as contentious due to their ability to both suppress and promote cancer progression. As a result, this review critically appraised existing literature to discuss the unique roles of cytokines and chemokines in the tumor microenvironment, as well as the existing challenges and future opportunities for exploiting these roles to develop novel and targeted treatments. While these modulatory molecules play an important role in tumor suppression via enhanced cancer-cell identification by cytotoxic effector cells and directly recruiting immunological effector cells and stromal cells in the TME, we observed that they also promote tumor proliferation. Many cytokines, including GM-CSF, IL-7, IL-12, IL-15, IL-18, and IL-21, have entered clinical trials for people with advanced cancer, while the FDA has approved interferon-alpha and IL-2. Nonetheless, low efficacy and dose-limiting toxicity limit these agents' full potential. Conversely, Chemokines have tremendous potential for increasing cancer immune-cell penetration of the tumor microenvironment and promoting beneficial immunological interactions. When chemokines are combined with cytokines, they activate lymphocytes, producing IL-2, CD80, and IL-12, all of which have a strong anticancer effect. Introduction: Africa bears the largest burden of communicable and non-communicable diseases globally, yet it contributes only about 1 % of global research output, partly because of inaccessibility and low maintenance of medical data. Data is widely recognized as a crucial tool for improvement of population health. Despite the introduction of electronic health data systems in low-and middle-income countries (LMICs) to improve data quality, some LMICs still lack an efficient system to collect and archive data. This study aims to examine the underlying causes of data archive inaccessibility and poor maintenance in LMICS, and to highlight sustainable mitigation measures., Method: Authors conducted a comprehensive search on PubMed, Google scholar, organization websites using the search string "data archive" or "medical data" or "public health statistics" AND "challenges" AND "maintenance" AND "Low Middle Income Countries" or "LMIC". to Identify relevant studies and reports to be included in our review. All articles related data archive in low and middle income countries were considered without restrictions due to scarcity of data., Result: Medical data archives in LMICs face challenges impacting data quality. Insufficient training, organizational constraints, and limited infrastructure hinder archive maintenance. To improve, support for public datasets, digital literacy, and technology infrastructure is needed. Prebiotics are a group of biological nutrients that are capable of being degraded by microflora in the gastrointestinal tract (GIT), primarily Lactobacilli and Bifidobacteria. When prebiotics are ingested, either as a food additive or as a supplement, the colonic microflora degrade them, producing short-chain fatty acids (SCFA), which are simultaneously released in the colon and absorbed into the blood circulatory system. The two major groups of prebiotics that have been extensively studied in relation to human health are fructo-oligosaccharides (FOS) and galactooligosaccharides (GOS). The candidature of a compound to be regarded as a prebiotic is a function of how much of dietary fiber it contains. The seeds of fruits such as date palms have been reported to contain dietary fiber. An increasing awareness of the consumption of fruits and seeds as part of the daily diet, as well as poor storage systems for seeds, have generated an enormous amount of seed waste, which is traditionally discarded in landfills or incinerated. This cultural practice is hazardous to the environment because seed waste is rich in organic compounds that can produce hazardous gases. Therefore, this review discusses the potential use of seed wastes in prebiotic production, consequently reducing the environmental hazards posed by these wastes.
