Foods are not simply a delivery vehicle for nutrients; they consist of a matrix in which nutrients and non-nutrient compounds are presented that induce physiologic effects different from isolated nutrients. Dietary guidance is often based on effects of single nutrients that are considered unhealthy, such as saturated fat in beef. The purpose of this paper is to propose a working definition of the whole food beef matrix whose consumption has health effects distinct from those of isolated nutrients. The beef matrix can be defined as: the collective nutritive and non-nutritive components of the beef food structure and their unique chemical and physical interactions that may be important for human health which are distinguishable from those of the single components in isolation. Background information supporting this approach is summarized on multiple components provided by beef, temporal changes in beef consumption, dietary guidance that restricts beef, and how the background diet determines healthfulness rather than a single food. Examples of research are provided on other whole foods that differ from their constitutive nutrients and lay the groundwork for studies of beef as part of a healthy dietary pattern. Context: A challenge for the livestock sector is to improve the production and nutritive value of forage grasses through sustainable management strategies. Aims: This study evaluated the impact of management on the productive and nutritive value of five pasture-based production systems: irrigated pasture with 600 kg nitrogen (N) ha−1 (IP600); rainfed pasture with 400 kg N ha−1 (RP400); rainfed pasture with 200 kg N ha−1 (RP200); silvopastoral with 200 kg N ha−1 (SP200); and degraded pasture without N fertilisation (DP0). Methods: During two experimental years, samples were collected pre- and post-grazing to determine forage and nutritional parameters. Land-saving effects and efficiencies of N fertilisation and water use were calculated. Key results: For C4 grasses, forage mass accumulation was greater for IP600 and RP400. IP600 also presented the greatest leaf area index and crude protein concentration, whereas DP0 presented the lowest values of both. For C3 grasses in the IP600 treatment, greater forage mass accumulation and leaf area index were found in winter than in autumn; all nutritional characteristics were not affected by season of the year. For land-saving effect, and N- and water-use efficiencies, IP600, RP400 and RP200 presented higher values than DP0 and SP200. Conclusions: More intensified systems with proper management allowed better productive and nutritional characteristics than degraded pasture or silvopasture, especially during seasons with greater precipitation or when irrigated. Implications: Intensification practices make better use of natural resources (water and land) and agricultural inputs (N fertiliser) to ameliorate the effects of seasonality and improve quality and productivity of tropical grasses in pasture-based livestock production systems. Simple Summary: Cattle welfare is a critical component of sustainable beef production systems. The objective of this pilot study was to investigate how a specific group of beef industry stakeholders perceived and integrated animal welfare into sustainability programs using an online survey. Individuals represented owners, managers, and chief sustainability officers from a variety of stakeholder groups. Respondents recognized cattle welfare as a critical component to ensuring the overall sustainability of a production system and integrated animal welfare outcomes within their sustainability programs. It was evident that respondents felt animal care and providing basic needs to animals was a critical component of cattle welfare. The motivation of respondents to include cattle welfare in sustainability programming was related to cattle health and performance as well as consumer perception. Additionally, respondents often mentioned following best management practices and often referenced industry guidelines, assessment tools, and sometimes regulations where relevant. Respondents shared that the three pillars of sustainability (e.g., environmental, social, and economic) were interconnected, highlighting the need for balanced approaches to integrating sustainable animal welfare solutions in beef systems. This study aimed to investigate how stakeholders in the United States beef industry incorporate animal welfare into their sustainability programs. A survey was administered online to the U.S. Roundtable for Sustainable Beef membership. Twenty-seven surveys were analyzed. Most respondents (n = 26, 96%) had sustainability programs that incorporated animal welfare. Most respondents believed that welfare positively impacted environmental (n = 25/26, 96%), economic (n = 25/26, 96%), and social (n = 26/26, 100%) sustainability. The thematic analysis of five free response questions identified ten themes: Animal Care, Regulations and Guidelines, Responsibility, Consumers and Stakeholders, Performance and Efficiency, Financial Impact, Connectedness, Critical Component, Animal-based Outcomes, and Employees. When asked to define welfare, the most common themes were Animal Care and Regulations and Guidelines. When asked why welfare was a component of their sustainability program, the top factors from a provided list were: cattle health (n = 20, 74%), cattle performance (n = 12, 44%), and consumer perceptions (n = 12, 44%). Simple Summary: Beef cattle farming is an extremely important economic activity in Brazil, mainly in the northern region. Bovine hoof disorders impair the beef production chain; however, there are few studies on the subject, especially on the incidence of Bovine Dewclaw Dermatitis (BDCD). Thus, this is a pioneering investigative study to highlight the main factors predisposing animals to BDCD in beef cattle herds in the Amazon Biome. This study shows that risk factors related to climate, pasture conditions, and the physical structure of bovine management facilities are directly linked to BDCD onset in herds, affecting the beef production sector. Bovine Dewclaw Dermatitis (BDCD) is a hoof disease characterized by inflammation of the second and fifth accessory digits and the skin in this region. This pathology is poorly described in the literature; however, it has recently been observed in beef cattle in the Amazon Biome, Brazil. The objective of this study was to perform a clinical diagnosis and identify the risk factors associated with BDCD onset in cattle in the studied biome. Samples were collected from eight farms with extensive breeding systems located in Xinguara, Rondon do Pará, Curionópolis, and Ipixuna do Pará in the state of Pará, Brazil. A total of 706 Nellore and Nellore crossbred with taurine bovine of both sexes were evaluated, with males aged between 2 and 4 years and a mean weight of 650 kg, and females aged between 2 and 11 years and a mean weight of 400 kg. Distal extremities were inspected during cattle management, and in cases of dewclaw lesions, a specific examination was carried out after proper restraint. Cattle were diagnosed with BDCD on all farms analyzed. Of the 706 cattle inspected, 49 (6.94%) showed BDCD, of which 19 (38.77%) were Nellore and 30 (61.22%) were crossbred. This was the first study to determine BDCD's occurrence in extensive farming systems in the Amazon region, also showing that pastures with large amounts of stumps and stones, the physical structure of pens, and trauma and injury incidence during animal management are the most important predisposing factors for the onset of BDCD. Simple Summary: Soybean meal is one of the main high-quality protein feedstuffs and deficient in China, and the sustainability of the beef cattle industry is facing more and more challenges. It is essential to seek efficient alternative N sources to ensure a steady increase in beef production. The in vitro and in vivo experiments were conducted to test if dietary isobutyramide and slow-release urea could benefit animal performance, rumen fermentation, nutrient digestibility, and blood parameters and develop a new strategy for substituting soybean meal in beef cattle. We suggest the optimal strategy is the isonitrogenous substitution of soybean meal with 0.3% slow-release urea and 0.6% isobutyramide of the diet. Two experiments were conducted to investigate the effects of isobutyramide (IBA) and slow-release urea (SRU) as substitutes for soybean meal (SBM) in the finishing diet of beef cattle. The completely randomized design in vitro experiment with five treatments, i.e., control, 0.9% SRU group, 0.6% SRU + 0.3% IBA group (SRU-I), 0.3% SRU + 0.6% IBA group (IBA-S), 0.9% IBA group was conducted. The results showed that the IBA-S and IBA increased (p ≤ 0.05) substrate disappearance of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF), total gas, and total volatile fatty acids (TVFA). The SRU group had the highest (p < 0.01) crude protein disappearance and ammonia nitrogen concentration, but the IBA contrarily decreased (p < 0.01) them compared with the control. Inclusion of IBA increased isobutyrate concentrations (p = 0.01) with the highest value for the IBA group. Then, an 84-day replicate 4 × 4 Latin square design with 8 Angus steers and four treatments, i.e., control, SRU, SRU-I, IBA-S was performed. The results showed that the treatments did not affect DM intake (p > 0.05) but tended (p = 0.09) to increase average daily gain. The inclusion of IBA increased (p < 0.05) the apparent digestibility of DM, organic matter, NDF, ADF, TVFA, and microbial crude protein with the highest values for the IBA-S group. The IBA-contained groups also increased (p ≤ 0.01) isobutyrate concentration, activities of carboxymethyl cellulase and xylanase, and the relative abundance of Butyrivibrio fibrisolvens with the highest values for the IBA-S group. The SRU had no effect on animal growth and nutrient apparent digestibility. In conclusion, IBA was developed as a new substitute for SBM in the finishing diet of beef cattle, and the optimal strategy was the isonitrogenous substitution of SBM with 0.3% SRU and 0.6% IBA of the diet. Background: In the beef industry, bull calves are usually castrated to improve flavor and meat quality; however, this can reduce their growth and slaughter performance. The gut microbiota is known to exert a significant influence on growth and slaughter performance. However, there is a paucity of research investigating the impact of castration on gut microbiota composition and its subsequent effects on slaughter performance and meat flavor. Result: The objective of this study was to examine the processes via which castration hinders slaughter productivity and enhances meat quality. Bull and castrated calves were maintained under the same management conditions, and at slaughter, meat quality was assessed, and ileum and epithelial tissue samples were obtained. The research employed metagenomic sequencing and non-targeted metabolomics techniques to investigate the makeup of the microbiota and identify differential metabolites. The findings of this study revealed the Carcass weight and eye muscle area /carcass weight in the bull group were significantly higher than those in the steer group. There were no significant differences in the length, width, and crypt depth of the ileum villi between the two groups. A total of 53 flavor compounds were identified in the two groups of beef, of which 16 were significantly higher in the steer group than in the bull group, and 5 were significantly higher in the bull group than in the steer group. In addition, bacteria, Eukaryota, and virus species were significantly separated between the two groups. The lipid metabolism pathways of α-linolenic acid, linoleic acid, and unsaturated fatty acids were significantly enriched in the Steers group. Compared with the steer group, the organic system pathway is significantly enriched in the bull group. The study also found that five metabolites (LPC (0:0/20:3), LPC (20:3/0:0), LPE (0:0/22:5), LPE (22:5/0:0), D-Mannosamine), and three species (s_Cloning_vector_Hsp70_LexA-HP1, s_Bacteroides_Coprophilus_CAG: 333, and s_Clostridium_nexile-CAG: 348) interfere with each other and collectively have a positive impact on the flavor compounds of beef. Conclusions: These findings provide a basic understanding that under the same management conditions, castration does indeed reduce the slaughter performance of bulls and improve the flavor of beef. Background: Toxoplasma gondii and Neospora caninum are closely related protozoan parasites that are considered important causes of abortion in livestock, causing huge economic losses. Hunan Province ranks 12th in the production of beef and mutton in China. However, limited data are available on the seroprevalence, risk factors and molecular characterization of T. gondii and N. caninum in beef cattle and goats in Hunan province, China. Methods: Sera of 985 beef cattle and 1147 goats were examined for the presence of specific antibodies against T. gondii using indirect hemagglutination test (IHAT) and anti-N. caninum IgG using competitive-inhibition enzyme-linked immunoassay assay (cELISA). Statistical analysis of possible risk factors was performed using PASW Statistics. Muscle samples of 160 beef cattle and 160 goats were examined for the presence of T. gondii DNA (B1 gene) and N. caninum DNA (Nc-5 gene) by nested PCR. The B1 gene-positive samples were genotyped at 10 genetic markers using the multilocus nested PCR-RFLP (Mn-PCR-RFLP). Results: Specific IgG against T. gondii were detected in 8.3% (82/985) and 13.3% (153/1147) and against N. caninum in 2.1% (21/985) and 2.0% (23/1147) of the beef cattle and goats, respectively. Based on statistical analysis, the presence of cats, semi-intensive management mode and gender were identified as significant risk factors for T. gondii infection in beef cattle. Age was a significant risk factor for T. gondii infection in goats (P < 0.05), and age > 3 years was a significant risk factor for N. caninum infection in beef cattle (P < 0.05). PCR positivity for T. gondii was observed in three beef samples (1.9%; 3/160) and seven chevon samples (4.4%; 7/160). Genotyping of PCR positive samples identified one to be ToxoDB#10. The N. caninum DNA was observed in one beef sample (0.6%; 1/160) but was negative in all chevon samples. Conclusions: To our knowledge, this is the first large-scale serological and molecular investigation of T. gondii and N. caninum and assessment of related risk factors in beef cattle and goats in Hunan Province, China. Italy has a long history in beef production, with local breeds such as Marchigiana, Chianina, Romagnola, Maremmana, and Podolica which produce high-quality meat. Selection has improved meat production, precocity, growth ability and muscle development, but the genetic determinism of such traits is mostly unknown. Using 33K SNPs-data from young bulls (N = 4064) belonging to these five Italian breeds, we demonstrated that the Maremmana and Podolica rustic breeds are closely related, while the specialised Marchigiana, Chianina, and Romagnola breeds are more differentiated. A genome-wide association study for growth and muscle development traits (average daily gain during the performance test, weight at 1 year old, muscularity) was conducted in the five Italian breeds. Results indicated a region on chromosome 2, containing the myostatin gene (MSTN), which displayed significant genome-wide associations with muscularity in Marchigiana cattle, a breed in which the muscle hypertrophy phenotype is segregating. Moreover, a significant SNP on chromosome 14 was associated, in the Chianina breed, to muscularity. The identification of diverse genomic regions associated with conformation traits might increase our knowledge about the genomic basis of such traits in Italian beef cattle and, eventually, such information could be used to implement marker-assisted selection of young bulls tested in the performance test. In North America, surplus dairy calves are sold soon after birth and often marketed through a third party (e.g., live auction, livestock dealer) before entering veal or dairy beef production. Previous work has demonstrated that a percentage of calves have failed transfer of passive immunity (FTPI) and clinical signs of disease on arrival at calf-raising facilities, but little is known regarding calf condition during marketing. The objectives of this cross-sectional study were to (1) estimate the prevalence of FTPI and poor health outcomes in surplus calves on arrival at livestock dealers, and (2) investigate the association between calf-level variables (body weight, sex, source) and health outcomes. Two livestock dealers in Ohio were visited 2 to 3 times per week, with approximately 28 calves enrolled in the study per visit for a total of 1,119 calves. One blood sample per calf was obtained to evaluate FTPI by measuring serum total protein concentrations (using a cutoff <5.1 g/dL). Calves were clinically evaluated for signs of arthritis, broken ribs or tail, dehydration, depression, diarrhea, fever, navel inflammation, and respiratory disease by 2 observers; health outcomes were dichotomized using clinically relevant cut points. Descriptive statistics were used to estimate the prevalence of calves with poor health outcomes. Multivariable logistic regression models were built to investigate the effect of body weight, sex, and source on health outcomes. Nineteen percent (206/1,091) of calves had FTPI. South Africa recently (2017-18) experienced the largest outbreak of human listeriosis in the world caused by L. monocytogenes following the consumption of "polony," a ready-to-eat meat product. Most (59%) cases originated from Gauteng province, South Africa. As a follow-up study to the outbreak, we used standard bacteriological and molecular methods to determine the prevalence of pathogenic and virulent serogroups of L. monocytogenes in various beef and beef products retailed in Gauteng province, South Africa. The overall prevalence of Listeria spp. was 28% (112/400), comprising Listeria monocytogenes (9.3%), Listeria innocua (16.3%), and Listeria welshimeri (2.5%) (p < 0.001). It is crucial to have detected that the region (p = 0.036), type of product (p = 0.032), and temperature at storage (p = 0.011) significantly affected the occurrence of L. monocytogenes in beef products. It is alarming that pathogenic serogroups 4b-4d-4e (51.4%) and 1/2a-3a (43.2%) were detected among the isolates of L. monocytogenes. Importantly, they were all carriers of seven virulence-associated genes (hlyA, inlB, plcA, iap, inlA, inlC, and inlJ). Our study also demonstrated that 16.7% of "polony" samples investigated were contaminated with L. monocytogenes. Considering that pathogenic and virulent L. monocytogenes contaminated beef and beef products retailed in South Africa, the food safety risk posed to consumers remains and cannot be ignored. Therefore, it is imperative to reduce the contamination of these products with L. monocytogenes during beef production, processing, and retailing to avoid future outbreaks of human listeriosis in the country. The world has entered a new era of globalization and industrialization, which pose several challenges to ensuring food security. Beef cattle production is one of the fastest-growing subsectors that has the capacity to meet protein demand. Due to growing demand of meat and protein and a market-oriented production system, small-scale beef cattle production contribute most to marginal farmers as a means of rising income in many developing nations like Bangladesh. Though production and commercialization are not easier for households' due to various factors and a lack of market efficiency. To determine beef cattle commercialization and market inefficiency, the current study focused on the determinants of beef cattle commercialization and the challenges to the of market efficiency. Heckman's two-stage model used to determine the factors that influence households' commercialization decisions, and the two-stage least squares method is used to examine the constraints of market inefficiencies. However, commercialization decisions offer twofold decision of commercialization and degree of commercialization. The result showed that commercialization decisions are significantly influenced by households' age, extension services, and production costs. The degree of commercialization was affected by education, marketing costs, income from dairy, transportation costs, and training access. On the other hand, market inefficiency was influenced by formal market access, distance, extension services, and earning from cattle. As extension services worsen both commercialization decisions and market efficiency, the government should focus on extension services and offer farmers opportunities to increase their understanding and knowledge of marketing. Background: Provision of feed is a major determinant of overall profitability in beef production systems, accounting for up to 75% of the variable costs. Thus, improving cattle feed efficiency, by way of determining the underlying genomic control and subsequently selecting for feed efficient cattle, provides a method through which feed input costs may be reduced. The objective of this study was to undertake gene co-expression network analysis using RNA-Sequence data generated from Longissimus dorsi and liver tissue samples collected from steers of two contrasting breeds (Charolais and Holstein-Friesian) divergent for residual feed intake (RFI), across two consecutive distinct dietary phases (zero-grazed grass and high-concentrate). Categories including differentially expressed genes (DEGs) based on the contrasts of RFI phenotype, breed and dietary source, as well as key transcription factors and proteins secreted in plasma were utilised as nodes of the gene co-expression network. Results: Of the 2,929 DEGs within the network analysis, 1,604 were reported to have statistically significant correlations (≥ 0.80), resulting in a total of 43,876 significant connections between genes. Pathway analysis of clusters of co-expressed genes revealed enrichment of processes related to lipid metabolism (fatty acid biosynthesis, fatty acid β-oxidation, cholesterol biosynthesis), immune function, (complement cascade, coagulation system, acute phase response signalling), and energy production (oxidative phosphorylation, mitochondrial L-carnitine shuttle pathway) based on genes related to RFI, breed and dietary source contrasts. Conclusions: Although similar biological processes were evident across the three factors examined, no one gene node was evident across RFI, breed and diet contrasts in both liver and muscle tissues. However within the liver tissue, the IRX4, NR1H3, HOXA13 and ZNF648 gene nodes, which all encode transcription factors displayed significant connections across the RFI, diet and breed comparisons, indicating a role for these transcription factors towards the RFI phenotype irrespective of diet and breed. Moreover, the NR1H3 gene encodes a protein secreted into plasma from the hepatocytes of the liver, highlighting the potential for this gene to be explored as a robust biomarker for the RFI trait in beef cattle. Bali cattle (Bos javanicus) are a local breed from Indonesia with the potential for beef production, but its meat has been reported to be tough. This indicates that there is a need to develop various methods that can be used for assessment to improve the quality of the meat. One such method is muscle scoring (MS), which is often used to predict the amount of meat in the carcass from live animals, but the muscle microstructure contributing to the quality is often neglected. Therefore, this study aims to evaluate the correlation between the muscle score of Bali cattle and the quality of muscle microstructure in terms of myofibril morphometric and connective tissue composition using a histochemistry approach. The population consisted of 31 Bali cattle, and MS was performed by evaluating the muscle line using a range of 1 to 15. The three individuals with the highest scores (Hi) and the three with the lowest (Lo) were sampled for semitendinosus muscle microstructural observation. The results showed that cattle in the Hi group had a higher surface area of myofibril and sarcomere length, but had a significantly lower relative percentage of intramuscular collagen compared to others in the Lo group (p < 0.05). Generally, muscle score had a positive correlation with body weight, surface area of myofibril and sarcomere length. In all cattle, the fibres identified were similar, where the thick types were dominant in the epimysium and perimysium, followed by the thin variants. Furthermore, the endomysium prominently contained non‐fibrous or other types of fibre. Simple Summary: Early weaning is a practice that holds the potential to enhance beef cattle production systems. It aims to improve the reproductive performance of cows in the subsequent breeding season while minimizing the impact on weaned calves when they are appropriately nutritionally managed. This study aimed to compare the effects of early weaning (weaning at 150 days; EW) and conventional weaning (weaning at 240 days; CW) on the growth, carcass characteristics, and meat quality of Nellore bulls. A total of 74 non-castrated calves were assigned to an EW (n = 37) or CW (n = 37) strategy. During approximately 400 days in the growth phase, both groups received supplementation during grazing, followed by a finishing period in a feedlot for 87 days. The results showed that calves in the EW group were lighter than the CW group at the time of conventional weaning, yet this weight difference did not impact their growth or meat quality during the fattening phase. This study suggests that early weaning, combined with adequate supplementation, can be a viable and sustainable approach in beef cattle production without compromising the animals' productive development or meat quality. During the growth phase, which lasted 454 ± 14 d for EW calves and 359 ± 16 d for CW calves, animals received a protein-energy supplement at a ratio of 5 g per kg of body weight while grazing Brachiaria brizantha cv. Marandu. The animals were managed for an 87d finishing phase in three collective feedlot pens, with a 3-week adaptation protocol, starting with corn silage to a concentrate ratio of 55:45 and reaching a ratio of 30:70 in the final diet. Body weight, average daily gain (ADG), dry matter intake (DMI), feed efficiency (FE), carcass characteristics, and meat quality were evaluated. The EW group was approximately 44 kg lighter than the CW at the time of conventional weaning (p < 0.001). However, this weight difference did not influence ADG, DMI, and FE in the finishing phase. No significant differences were observed in carcass characteristics such as yield percentage, loin area, subcutaneous fat thickness, and meat quality, except for the weight of primal cuts, which was greater in the CW group (p < 0.001). Thus, although calves weaned early are lighter throughout subsequent production phases than those weaned conventionally, performance, efficiency, carcass yield, and meat quality are not affected. To improve animal performance and modify growth by increasing lean tissue accretion, beef cattle production has relied on use of growth promoting technologies such as beta-adrenergic agonists. These synthetic catecholamines, combined with the variable inclusion of rumen degradable (RDP) and undegradable protein (RUP), improve feed efficiency and rate of gain in finishing beef cattle. However, research regarding the impact of beta-adrenergic agonists, protein level, and source on the ruminal microbiome is limited. The objective of this study was to determine the effect of different protein concentrations and beta-adrenergic agonist (ractopamine hydrochloride; RAC) on ruminal bacterial communities in finishing beef heifers. Heifers (n = 140) were ranked according to body weight and assigned to pens in a generalized complete block design with a 3 × 2 factorial arrangement of treatments of 6 different treatment combinations, containing 3 protein treatments (Control: 13.9% CP, 8.9% RDP, and 5.0% RUP; High RDP: 20.9% CP, 14.4% RDP, 6.5% RUP; or High RUP: 20.9% CP, 9.7% RDP, 11.2% RUP) and 2 RAC treatments (0 and 400 mg/day). Rumen samples were collected via orogastric tubing 7 days before harvest. DNA from rumen samples were sequenced to identify bacteria based on the V1-V3 hypervariable regions of the 16S rRNA gene. Reads from treatments were analyzed using the packages 'phyloseq' and 'dada2' within the R environment. Beta diversity was analyzed based on Bray-Curtis distances and was significantly different among protein and RAC treatments (P < 0.05). Alpha diversity metrics, such as Chao1 and Shannon diversity indices, were not significantly different (P > 0.05). Bacterial differences among treatments after analyses using PROC MIXED in SAS 9 were identified for the main effects of protein concentration (P < 0.05), rather than their interaction. These results suggest possible effects on microbial communities with different concentrations of protein but limited impact with RAC. This paper aims to measure the relationship existing between these two variables within the production of beef cattle in the Coto-Coto Chilca Livestock Fair in Peru. To do this, we selected 141 ranchers from the area to give their opinions regarding the behavior of these two variables. The data were represented with the help of an Indeterminate Likert Scale, to capture the uncertainty and indeterminacy of the respondents' opinion. Advanced and innovative breeding and management of meat-producing animals are needed to address the global food security and sustainability challenges. Beef production is an important industry for securing animal protein resources in the world and meat quality significantly contributes to the economic values and human needs. Improvement of cattle feed efficiency has become an urgent task as it can lower the environmental burden of methane gas emissions and the reduce the consumption of human edible cereal grains. Cattle depend on their symbiotic microbiome and its activity in the rumen and gut to maintain growth and health. Recent developments in high-throughput omics analysis (metagenome, metatranscriptome, metabolome, metaproteome and so on) have made it possible to comprehensively analyze microbiome, hosts and their interactions and to define their roles in affecting cattle biology. In this review, we focus on the relationships among gut microbiome and beef meat quality, feed efficiency, methane emission as well as host genetics in beef cattle, aiming to determine the current knowledge gaps for the development of the strategies to improve the sustainability of beef production. This research explores the interaction between Shiga toxin‐producing Escherichia coli (STEC) O157:H7 and bacteria species commonly found in beef processing environments, specifically Carnobacterium, Lactobacillus, Comamonas, Raoultella, and Pseudomonas. The study investigated how various environmental conditions impact the formation of biofilms and the ability of O157:H7 to transfer from multispecies biofilm onto beef surfaces. For this purpose, a mixture of lactic acid bacteria (LAB), spoilage bacteria (106 CFU/mL), and E. coli O157 (103 CFU/mL) were combined as follows: LAB (T1): Carnobacterium piscicola + Lactobacillus bulgaricus + O157:H7, an spoilage bacteria (T2): Comamonas koreensis + Raoultella terrigena + O157:H7, an spoilage bacteria (T3): Pseudomonas aeruginosa + C. koreensis strain + O157:H7 and only O157:H7 as control (T4). Multispecies biofilms were developed on thermoplastic polyurethane (TPU) and stainless steel (SS) coupons at 10 and 25°C for 6 days, washed and stored for 6, 30, and 60 days at wet (60%–90% RH) and dry (20%–50%, RH) conditions. To evaluate O157:H7 transfer, beef cubes (3 × 3 × 1 cm) were placed on the coupons, followed by a 50‐g weight (7.35 kPa). The experiment was repeated three times in triplicate for each strain combination. Results demonstrate that biofilms formed at 10°C were generally weaker (less biomass) than those at 25°C. Regardless of temperature, more viable O157:H7 cells were transferred to beef from moist biofilms on TPU surfaces. At 25°C, T3 biofilm exhibited the lowest O157:H7 transfer to beef by 1.44 log10 CFU/cm2 (p < 0.01). At 10°C, none of the multispecies biofilm (T1–T3) affected the number of O157:H7 transfers to beef (p > 0.05). Notably, O157:H7 was not detected on food contact surfaces with 30 and 60‐day‐old dry biofilms (T1–T4). Through enrichment, E. coli O157:H7 was recovered from multispecies biofilms T1, T2, and T3. Findings from this study imply that multispecies biofilms contribute to the persistence of O157:H7 under dry conditions, regardless of temperature. These results underscore the intricate influence of multiple environmental factors—including surface type, biofilm age, humidity, temperature, and the presence of other bacterial species—on the risk of beef contamination facilitated by biofilms. Simple Summary: With the increase in the number of people, there is also an increase in the demand for livestock products, including good-quality beef. However, beef production is faced with the challenges of climate change while it also contributes to climate change. Although several strategies have been in place to address this synergy, they have constraints that do not enable them to be used resourcefully and by all types of farmers. There is a need, therefore, for new strategies that will address this synergy while ensuring that beef production will be sustainable, and quality will be preserved and/or improved. Fossil shell flour (FSF) is a natural additive with the potential to supplement traditional crops in beef cattle rations in response to this complex global challenge as it is cheap, readily available, and eco-friendly. However, it has not gained much attention from scientists, researchers, and farmers, and its use has not yet been adopted in most countries. Background: Brucellosis poses a significant public health concern. This study explores the spatial and temporal dynamic evolution of human brucellosis in China and analyses the spatial heterogeneity of the influencing factors related to the incidence of human brucellosis at the provincial level. Methods: The Join-point model, centre of gravity migration model and spatial autocorrelation analysis were employed to evaluate potential changes in the spatial and temporal distribution of human brucellosis in mainland China from 2005 to 2021. Ordinary Least Squares (OLS), Geographically Weighted Regression (GWR), and Multi-scale Geographically Weighted Regression (MGWR) models were constructed to analyze the spatial and temporal correlation between the incidence rate of human brucellosis and meteorological and social factors. Results: From 2005 to 2021, human brucellosis in China showed a consistent upward trend. The incidence rate rose more rapidly in South, Central, and Southwest China, leading to a shift in the center of gravity from the North to the Southwest, as illustrated in the migration trajectory diagram. Strong spatial aggregation was observed. The MGWR model outperformed others. Spatio-temporal plots indicated that lower mean annual temperatures and increased beef, mutton, and milk production significantly correlated with higher brucellosis incidence. Cities like Guangxi and Guangdong were more affected by low temperatures, while Xinjiang and Tibet were influenced more by beef and milk production. Inner Mongolia and Heilongjiang were more affected by mutton production. Importantly, an increase in regional GDP and health expenditure exerted a notable protective effect against human brucellosis incidence. Conclusions: Human brucellosis remains a pervasive challenge. Meteorological and social factors significantly influence its incidence in a spatiotemporally specific manner. Simple Summary: Historically, Korea has been an agrarian society where cattle played a significant role in Korean culture as working animals. However, in recent decades, there has been an increase in meat demand and the expansion of the Korean economy. This shift has led to the predominant use of native Korean Hanwoo cattle for beef production since the 1960s. Genetic improvement programs for Hanwoo cattle traditionally focused on carcass and growth qualities due to the accessibility of trait information and the simplicity of analysis techniques, rather than reproductive traits. However, there has been a recent surge of interest in genetic analyses of the reproductive traits of Hanwoo cattle because these traits significantly impact calf productivity. To enhance beef production and the overall profitability of Hanwoo farming, it is imperative to implement genomic predictions for age at first calving (AFC), calving interval (CI), gestation length (GL), and number of artificial inseminations per conception (NAIPC) to better understand and improve their response to selection. This study aimed to estimate heritability and the accuracy of genomic estimated breeding values (GEBVs) using genomic best linear unbiased prediction (GBLUP) and Bayesian methods (BayesB, BayesLASSO, and BayesR) for traits under study. Our analysis revealed relatively lower heritability values for these traits and indicated that the accuracy of genomic prediction across all methods applied was similarly reduced, likely due to the inherent lower heritability of reproductive traits. As a result, the findings of this study provide valuable insights into the genetic breeding programs of the beef cattle industry. This study aimed to predict the accuracy of genomic estimated breeding values (GEBVs) for reproductive traits in Hanwoo cows using the GBLUP, BayesB, BayesLASSO, and BayesR methods. Accuracy estimates of GEBVs for reproductive traits were derived through fivefold cross-validation, analyzing a dataset comprising 11,348 animals and employing an Illumina Bovine 50K SNP chip. GBLUP showed an accuracy of 0.26 for AFC, while BayesB, BayesLASSO, and BayesR demonstrated values of 0.28, 0.29, and 0.29, respectively. For CI, GBLUP attained an accuracy of 0.19, whereas BayesB, BayesLASSO, and BayesR scored 0.21, 0.24, and 0.25, respectively. The accuracy for GL was uniform across GBLUP, BayesB, and BayesR at 0.31, whereas BayesLASSO showed a slightly higher accuracy of 0.33. For NAIPC, GBLUP showed an accuracy of 0.24, while BayesB, BayesLASSO, and BayesR recorded 0.22, 0.27, and 0.30, respectively. The variation in genomic prediction accuracy among methods indicated Bayesian approaches slightly outperformed GBLUP. The findings suggest that Bayesian methods, notably BayesLASSO and BayesR, offer improved predictive capabilities for reproductive traits. miR-129 plays a crucial role in regulating various cellular processes, including adipogenesis; however, its downstream molecular mechanisms remain unclear. In this study, we demonstrated that miR-129 promotes yak adipogenesis in vitro via the PI3K/AKT pathway. Overexpression and interference of miR-129 in yak intramuscular preadipocytes (YIMAs) enhanced and inhibited cell differentiation, respectively, with corresponding changes in cell proliferation. Further investigation revealed that miR-129 enhances AKT and p-AKT activity in the AKT pathway without affecting cell apoptosis, and a specific inhibitor (LY294002) was used to confirm that miR-129 regulates YIMAs proliferation and differentiation through the PI3K/AKT pathway. Our findings suggest that miR-129 promotes yak adipogenesis by enhancing PI3K/AKT pathway activity. This study provides the foundation to precisely elucidate the molecular mechanism of miR-129 in YIMAs adipogenesis and develop advanced miRNA-based strategies to improve meat nutrition and obesity-related ailments in beef production. Context. The Western Australian (WA) Government has set ambitious emission reduction targets and is developing strategies to reduce emissions across the state economy, including agriculture. Aims. This study determined the product carbon footprint (CF) and total emissions of the WA beef industry, to establish a baseline for emission reduction planning. Methods. A cradle-togate attributional life-cycle assessment with a reconciled livestock inventory of herd numbers and turnoff, was used. Emission reduction strategies were examined and included herd management, enteric-methane mitigation, and removals via carbon sequestration in vegetation and soils. Key results. Modelled livestock numbers were found to be 36% higher than reported in the Australian Bureau of Statistics (ABS), resulting in an emission profile of 4.7 million tonnes (Mt) of carbon dioxide equivalent (CO2-e) (excluding land use (LU) and direct LU change (dLUC)). This profile was 26% higher than emissions reported in state inventories. LU and dLUC were estimated to be a greenhouse-gas removal of -2.6 Mt CO2-e, although with high uncertainty. The mean CF for WA was 15.3 kg CO2-e per kg liveweight (LW) (excluding LU and dLUC). State-wide removals from LU and dLUC were estimated to be -8.5 kg CO2-e/kg LW. The CF was 11.7, 19.2 and 18.2 kg CO2-e/kg LW for the Agricultural, Kimberley and Arid regions respectively. The implementation of herd-management strategies and anti-methanogenic supplements resulted in a maximum 25% reduction. Conclusions. Herd productivity and market specifications were key drivers of regional differences in CF. Opportunities exist to reduce the CF in northern herds through diverting cattle to Australian backgrounding and feedlot supply chains to reach slaughter weight at a younger age. Adoption of anti-methanogenic feed supplements were important; however, achieving major reductions in the next decade will rely on removals via carbon sequestration in soil and vegetation. Implications. Considering the magnitude of removals and elevated uncertainty in this result, further research and new datasets are needed to refine this analysis. New datasets are required to accurately report livestock numbers and track and reduce future GHG emissions from this higher baseline. Beef production accounts for the largest share of global livestock greenhouse gas emissions and is an important target for climate mitigation efforts. Most life-cycle assessments comparing the carbon footprint of beef production systems have been limited to production emissions. None also consider potential carbon sequestration due to grazing and alternate uses of land used for production. We assess the carbon footprint of 100 beef production systems in 16 countries, including production emissions, soil carbon sequestration from grazing, and carbon opportunity cost—the potential carbon sequestration that could occur on land if it were not used for production. We conduct a pairwise comparison of pasture-finished operations in which cattle almost exclusively consume grasses and forage, and grain-finished operations in which cattle are first grazed and then fed a grain-based diet. We find that pasture-finished operations have 20% higher production emissions and 42% higher carbon footprint than grain-finished systems. We also find that more land-intensive operations generally have higher carbon footprints. Regression analysis indicates that a 10% increase in land-use intensity is associated with a 4.8% increase in production emissions, but a 9.0% increase in carbon footprint, including production emissions, soil carbon sequestration and carbon opportunity cost. The carbon opportunity cost of operations was, on average, 130% larger than production emissions. These results point to the importance of accounting for carbon opportunity cost in assessing the sustainability of beef production systems and developing climate mitigation strategies. 4-Nonylphenol belongs to the alkylphenol group of chemicals, and its high occurrence in the environment can cause an adverse effect on human health. Breast milk can serve as a marker to take measure of human exposure to these chemicals through different routes of exposure. In this work, the influence of selected factors (the kind of water drank by the mothers; the consumption of fish, pork, and beef; wearing gloves; using nail polish, gel nails, vitamins, and medication) on the concentration on 4-nonylphenol in 89 breast milk samples was studied. The concentrations of nonylphenol in breast milk were determined by HPLC with fluorescence detection. The lowest and highest concentrations of 4-nonylphenol in breast milk were 0.97 ng/mL and 4.37 ng/mL, respectively. Statistical significance was observed for the consumption of pork (p = 0.048) and fish (0.041) in relation to the 4-nonylphenol concentration. Certain parameters (use of gel nails, beef consumption, and vitamin supplementation) were at the border of statistical significance (p = 0.06). Other parameters did not show any statistical significance. The results showed that breast milk in Slovakia does not contain a harmful dose of 4-nonylphenol and does not cause health problems. Objective: Mixed evidence exists on the impact of beef consumption on cognition. The goal was to create an evidence map capturing studies assessing beef consumption and cognition to reveal gaps and opportunities in the body of literature. Design: A scoping review was conducted to locate studies up to March 2022 using PubMed and backwards citation screening. Data were extracted by two independent reviewers with conflict resolution, and a database was created and made publicly available. Setting: Intervention and observational studies. Participants: Humans of any age, sex and/or health status, without moderate to severe cognitive impairment and/or abnormalities. Results: Twenty-two studies were identified that quantified beef or red meat intake and assessed cognition. Six studies assessed beef intake, with the remaining studies describing intake of red meat that may or may not include beef. Nine articles described randomised controlled trials (RCT), mostly conducted in children. Thirteen described observational studies, primarily conducted on adults and seniors. The most common cognitive domains measured included intelligence and general cognition, and memory. The majority of controlled studies were rated with high risk of bias, with the majority of observational trials rated with serious or greater risk of bias. Conclusions: Red meat and beef intake and cognition is largely understudied. There is a significant lack of replication across study designs, populations, exposures and outcomes measured. The quality of the research would be considerably enhanced by focused assessments of beef intake (and not red meat in general) and specific cognitive domains, along with improved adherence to reporting standards. Intramuscular fat (IMF) content is an important economic factor in beef production. However, knowledge on the key factors controlling bovine IMF is limited. In this study, using weighted gene co-expression network analysis (WGCNA), nine modules were identified and the number of transcripts in these modules ranged from 36 to 3191. Two modules were found to be significantly associated with fat deposition and three genes (TCAP, MYH7, and TNNC1) were further identified by Protein–protein interaction (PPI), which may be the hub genes regulating bovine IMF deposition. In addition, considering the genetic variation, the PCK1 gene was found by functional enrichment analysis of overlapping genes, which was previously reported to be involved in IMF deposition. We noted that the core promoter region of buffalo PCK1 binds to transcription factors involved in lipid metabolism while cattle PCK1 binds transcription factors involved in muscle development. The results suggest that PCK1 participated in IMF deposition of buffalo and cattle in different ways. In summary, gene expression networks and new candidate genes associated with IMF deposition identified in this study. Beef production is closely related to the national economy and the attention has been paid to the improvement of beef cattle by molecular markers associated. Copy number variations (CNVs) recently have been gained many researches and recognized as an important source of genetic variation. Extensive studies have indicated that CNVs have effects on a large range of economic traits by a wide range of gene copy number alteration. S100A7 is a member of S100 family which is a famous family of Ca2+-binding proteins. S100A7 plays a crucial role in many important phenotypes (progress) including inflammatory diseases, psoriasis, obesity, etc. The aim of our study was to explore the phenotypic effects of CNV located in the S100A7 gene of bovine chromosome 3. We detected S100A7 CNV by qPCR in different cattle breeds, including Qinchuan cattle, Yunling cattle, Xianan cattle and a crossbred group Pinan. The copy number was identified as gain, normal and loss type, our results showed that the gain type was the main type in three types of S100A7 CNV of the whole tested breeds. After CNV detection, association analysis between S100A7 CNV and growth traits was carried out in four cattle breeds. We found significant effects of the CNV on cattle growth traits with differently preferred CNV types such as gain type with better chest depth (p = 0.043) in QC, loss type with better body length (p = 0.008) and rump width (p = 0.014) in YL, normal with better chest girth (p = 0.001), gain with better waist width (p = 0.001) and rump width (p = 0.044) in PN. Simple Summary: The environmental impacts and greenhouse gas (GHG) emissions have been evaluated across studies due to global climate change. Livestock production systems may be responsible in part for the increase in GHGs and, consequently, the environmental impacts. This study analyzed the environmental inputs and outputs and economic factors of a beef cattle feedlot system. Using a partial Life Cycle Assessment approach, we provide more information for consumers, researchers, scientists, and government officials about the environmental impacts arising from the production of premium and super-premium beef. We found that feed production is the most important source of GHGs, and diesel fuel plays a minor role in the environmental impacts. Finally, increased marbling degree in meat can lead to an increase in environmental impacts. When individual purchasing power increases in society, there is a trend toward a quantitative and qualitative increase in the consumption of products. Considering the magnitude of beef production in Brazil, environmental impacts are important factors for the domestic and international markets. This study assessed a Brazilian feedlot system characterized by high animal welfare standards that produces high-quality beef that is more marbled than that produced in grass-fed systems. We assessed the environmental impacts and compared premium and super-premium beef produced in a feedlot system using a partial Life Cycle Assessment (LCA). Data were collected directly on the property analyzed, considering environmental inputs and outputs and economic factors associated with the production stages of each line (premium versus super-premium). The results show that high-quality beef has, beyond a greater financial cost, an environmental cost, with the super-premium line producing a 286% higher carbon footprint, 297% more eutrophication, and three times higher acidification potential and land use than the premium line. The results of the environmental impacts agree with the results of production costs, reflecting a 282.82% higher production cost in super-premium than in premium animals. Reproductive efficiency stands as a critical determinant of profitability within beef production systems. The incorporation of molecular markers can expedite advancements in reproductive performance. While the use of SNPs in association analysis is prevalent, approaches centered on haplotypes can offer a more comprehensive insight. The study used registered Simmental and Simbrah cattle genotyped with the GGP Bovine 150 k panel. Phenotypes included scrotal circumference (SC), heifer fertility (HF), stayability (STAY), and frame score (FS). After quality control, 105,129 autosomal SNPs from 967 animals were used. Haplotype blocks were defined based on linkage disequilibrium. Comparison between haplotypes and SNPs for reproductive traits and FS was conducted using Bayesian and frequentist models. 23, 13, 7, and 2 SNPs exhibited associations with FS, SC, HF, and STAY, respectively. In addition, seven, eight, seven, and one haplotypes displayed associations with FS, SC, HF, and STAY, respectively. Simple Summary: Agriculture accounts for 92% of the global freshwater footprint (WF), of which more than a quarter is used in livestock production for feed, mixing feed, watering animals and agricultural activities. This study shows that replacing maize silage with triticale silage in the diet of beef calves results in a relevant reduction in water consumption per cattle per day, without changing growth performance. It also shows how feed choice can help improve the water balance of livestock production, and thus reduce the pressure that the sector puts on water resources. In this study, we have included the water footprint (WF) in the process of optimizing animal feed rations. The global footprint of cattle production accounts for the largest share (33%) of the global water footprint of livestock production. Using two homogeneous groups of Limousine × Podolian young bulls, two different diets were compared: corn silage feeding (CSF), with a corn silage-based diet; and triticale silage feeding (TSF), with a triticale silage-based diet. Silage constituted about 41% and 46% of the feed composition (for CSF and TSF, respectively). Diets were characterised by the same energy and protein content. Despite the lower WF in the TSF group than in the CSF group (7726 vs. 8571 L/day/calf respectively), no significant differences were found in animal performances (i.e., daily weight gain and final weight), feed conversion or income over feed costs. These results show that simple production decisions can have a significant impact on water resource. Therefore, the use of triticale silage should be further promoted, especially in world regions with limited water resources where low WF feed formulation is more strategic than elsewhere. Almond is rich in vitamins, minerals, and dietary fiber and contains high fat and protein. For this reason, almond flour can be used as an additive in the production of various foods to increase nutritional value, improve texture and flavor, and produce healthier products. The purpose of this study is to determine the availability of almond flour as an animal fat replacer in the production of beef patties. For this purpose, beef patties were produced in five different formulations containing animal fat and/or almond flour, and pH, moisture content, color, and TBARS values were detected in both raw and cooked samples. In addition, cooking yield and shrinkage were calculated and fatty acid composition, texture profile, and sensory analyses were performed on cooked samples. Replacing animal fat with almond flour increased pH in raw and cooked beef patties but decreased moisture content, b* value, and TBARS in cooked samples compared to the control. While cooking yield increased in beef patties containing almond flour, shrinkage decreased. In addition, the cooking process caused decreases in L*, a*, and b* values. Using almond flour in beef patties decreased the SFAs and increased the amounts of oleic and linoleic acids. Hardness, cohesiveness, resilience, and chewiness were significantly affected by the use of almond flour (p <.01), and higher hardness and chewiness, and lower cohesiveness and resilience were determined in the samples containing almond flour compared to the control. This review aimed to (1) summarize the results from fixed-timed artificial insemination (TAI) fertility studies performed during the last 27 years; (2) compile and evaluate, as examples from the literature base, the direct comparisons made of specific manipulations to synchronization protocols; (3) evaluate the impact of the TAI programs on the reproductive performance during the breeding season, and (4) provide perspective on the future of TAI programs in beef cattle. A search of the literature published from 1995 to 2021 was conducted to identify experiments in which synchronization of ovulation and TAI in beef cattle was performed. The primary outcome of interest was fertility expressed as pregnancies per TAI. The literature included two search engines, the SIS Web of Science and the US National Library of Medicine Institutes of Health through PubMed. After the initial search and screening, a total of 228 manuscripts were selected containing a total of 272,668 TAI. A dramatic increase in the number of publications and TAIs occurred throughout the years. Most of them were from Brazil and United States, followed by Canada, Argentina, Uruguay, and Australia. Two main types of TAI programs were identified: GnRH-based and E2/P4-based protocols. In terms of GnRH-based programs, two variations were evaluated in the present manuscript. First, we evaluated the effect of the progesterone implant during the protocol. The progesterone implant increased pregnancy/TAI (P/TAI) from 44.3 to 54.3%. Second, the use of a second prostaglandin F2α treatment in 5-d CO-synch program increased the P/TAI from 53.2 to 60.9%. In E2/P4-based programs, use of GnRH at TAI increased P/TAI from 54.7 to 59.2% in cows. However, no increase was detected in heifers. Other research showed that use of TAI can increase the overall proportion of the cows pregnant at end of the breeding season and produce earlier calvings compared with bulls. In conclusion, there have been a large number of excellent research studies that have been performed during the last 27 years on TAI in beef cattle. This technology is being utilized successfully in the beef cattle industry. Simple Summary: Cow–calf production is the foundation of the U.S. beef industry. However, infertility and sub-fertility limit its sustainability. In this review, we discuss the progress made as a result of the implementation of genomics and transcriptomics technologies to understand the genetic basis underlying fertility-related traits in cattle. We highlight the opportunities and limitations of using such technologies to discover genes and regulatory mechanisms and discuss the importance of translating research findings from bench to on-farm applications. Female fertility is the foundation of the cow–calf industry, impacting both efficiency and profitability. Reproductive failure is the primary reason why beef cows are sold in the U.S. and the cause of an estimated annual gross loss of USD 2.8 billion. In this review, we discuss the status of the genomics, transcriptomics, and systems genomics approaches currently applied to female fertility and the tools available to cow–calf producers to maximize genetic progress. We highlight the opportunities and limitations associated with using genomic and transcriptomic approaches to discover genes and regulatory mechanisms related to beef fertility. Considering the complex nature of fertility, significant advances in precision breeding will rely on holistic, multidisciplinary approaches to further advance our ability to understand, predict, and improve reproductive performance. Simple Summary: In many countries, dairy bulls in beef production are used. The main flaw in their rearing is the difficulty in obtaining the optimal intramuscular fat content, affecting the quality properties consumers appreciate. In the present study, a 4-month finishing phase was applied to improve the meat quality of Holstein–Friesian bulls. Two levels of energy concentration in the feed portion and two types of silages were used. The silage type did not affect the carcass or meat quality, whereas the concentration of energy did. The intensive feeding beneficially affected performance, carcass value and the quality of Holstein–Friesian bulls' meat. The study aimed at evaluating the influence of silage type (grass silage—GS, and maize silage—MS) and energy level in the feed portion on animals' performance, carcass value and the quality of Holstein–Friesian bull meat. The animals were reared using intensive (I) feeding, 1.02 feed units for meat production (UFV)/kg dry matter (DM), and semi-intensive (SI) feeding, 0.94 UFV/kg DM. Thirty-two HF bulls with an average live weight of 530 kg were assigned to four feeding groups. The proportions (g/kg DM) of feed in the diets were as follows: group GS-I, GS 500, concentrate 500; group GS-SI, GS 700, concentrate 300; group MS-I, MS 500, concentrate 500; and group MS-SI, MS 700, concentrate 300. After 4 months of the finishing phase, bulls were slaughtered and samples of the longissimus lumborum muscle were collected. The silage type did not affect performance, carcass value or meat quality. However, in the intensive feeding, a 33% increase (p < 0.01) in daily weight gain and a reduction in the feed conversion ratio compared to semi-intensive feeding were noted. The carcasses of bulls fed intensively received higher scores for conformation and fatness than the carcasses of bulls fed semi-intensively. Simple Summary: Dactylopius opuntiae, known as wild cochineal, is an insect pest of cactus crops in several countries, which produces important economic losses in this agricultural sector. The objective of our study was to use an agricultural pest as a preservative source for the beef meat industry, which is in search of a natural preservative to replace the approved synthetic additives, such as butylated hydroxytoluene. Our study showed the usefulness of a D. opuntiae extract, which was obtained using an accessible procedure, to preserve the color and reduce the oxidation process on beef patties stored under refrigeration. The beneficial actions on meat parameters were caused by the presence of carminic acid, which is a metabolite found in this insect with antioxidant properties, where that ability was supported by using two synthetic free radicals scavenging assays. Our study provides a feasible, solid–liquid extraction to obtain an antioxidant preservative with direct application on beef patties and supports their use by the improvement of meat acceptability criteria. The importance of our study lies in the fact that beef meat has a crucial role in human nutrition, and ground beef constitutes 64% of the meat consumed by humans. Dactylopius opuntiae is an insect pest that contains at least carminic acid, which has antioxidant properties. Since there is a relationship between the antioxidant ability and preservative action of compounds applied to meat products, the purpose of this study was to evaluate the antioxidant activity and usefulness of a D. opuntiae extract for beef patty preservation. The insects were bred and processed to obtain a liquid extract. For the extract, its carminic acid content, antioxidant activity against two free radicals, and actions on food quality parameters were determined. The D. opuntiae dry powder contained 2.91% w/w carminic acid, while the liquid extract exhibited an IC50 value of 3437.8 ± 67.8 and 19633.0 ± 674.5 µg/mL against the DPPH and ABTS radicals. Nevertheless, these antioxidant actions were lower than those found in a D. coccus extract. The D. opuntiae extract improved in a short time the redness and yellowness, eliminated the unfavorable effect of their vehicle on the MetMb level, and greatly reduced the TBARS formation. For the first time, an extract of D. opuntiae was applied to beef patties, and its beneficial antioxidant action on meat acceptance parameters was confirmed, which has potential commercial applications. Context. Providing feed is the largest cost in beef production. Genetic variation exists in feed efficiency traits in young cattle but the genetic associations with feed efficiency traits in cows are poorly understood, but if strong and favourable, they might be used to improve feed efficiency of cows. Aim. To examine the phenotypic and genetic relationships among feed intake, feed efficiency, body composition and cow milk yield measured in young cattle and in cows. Methods. Data on 1783 young Angus, Hereford, Polled Hereford and Shorthorn bulls and heifers, and for 751 of the females as cows, were used to calculate the phenotypic and genetic relationships among feed efficiency traits, body composition and cow milk yield measured postweaning and in mature cows. The young cattle were tested for feed intake and feed efficiency at approximately 9 months of age and the females, after two calvings, were tested again as non-pregnant, non-lactating cows at approximately 4 years of age. Key results. At the postweaning test, the heritability estimates for feed intake, average daily gain, test weight, residual feed intake (RFI), feed conversion ratio, rump fat depth and eye-muscle area were 0.47, 0.32, 0.46, 0.42, 0.28, 0.47 and 0.20 respectively. Corresponding heritability estimates in the cow test were 0.27, 0.35, 0.74, 0.22, 0.30, 0.47 and 0.12. Heritability estimates for 400-day weight, cow 4-year weight and cow milk yield were 0.47, 0.62 and 0.15 respectively. Genetic correlations between traits measured postweaning and the same traits measured in the cow were moderate to high, and for the feed efficiency trait, RFI, was very high (0.95), close to unity. Conclusions. Inclusion of postweaning RFI as a selection criterion in beef cattle breeding can be expected to lead to improvementin cow feed efficiency. Implications. Most breeding decisionsin beef cattle are based on traits measured early in life and forreplacement heifers are made with an aim to improve their productivity and profitability as cows. The strong and favourable associations measured between postweaning RFI and cow RFI mean that feed efficiency measured in young cattle can be used as a selection trait to improve cow feed efficiency. Feed efficiency is a major constraint in the beef industry and has a significant negative correlation with residual feed intake (RFI). RFI is widely used as a measure of feed efficiency in beef cattle and is independent of economic traits such as body weight and average daily gain. However, key traits with commonality or specificity among beef cattle breeds at the same level of RFI have not been reported. Accordingly, the present study hypothesized that signatures associated with feed efficiency would have commonality or specificity in the liver of cattle breeds at the same RFI level. By comparing and integrating liver transcriptome data, we investigated the critical signatures closely associated with RFI in beef cattle using weighted co-expression network analysis, consensus module analysis, functional enrichment analysis and protein network interaction analysis. The results showed that the consensus modules in Angus and Charolais cattle were negatively correlated, and four (turquoise, red, tan, yellow) were significantly positively correlated in Angus liver, while (turquoise, red) were significantly negatively correlated in Charolais liver. These consensus modules were found to be primarily involved in biological processes such as substance metabolism, energy metabolism and gene transcription, which may be one of the possible explanations for the difference in feed efficiency between the two beef breeds. This research also identified five key candidate genes, PLA2G12B, LCAT, MTTP, LCAT, ABCA1 and FADS1, which are closely associated with hepatic lipid metabolism. The present study has identified some modules, genes and pathways that may be the major contributors to the variation in feed efficiency among different cattle breeds, providing a new perspective on the molecular mechanisms of feed efficiency in beef cattle and a research basis for investigating molecular markers associated with feed efficiency in beef cattle. Simple Summary: In Uruguay and some other countries in the region, where pasture grazing has always been predominant in beef production, steers are now increasingly fed grains to shorten the production time. This has implications for meat quality, so meat from both systems (pasture and concentrate) was compared under refrigerated retail conditions in this study. Meat from pasture-fed steers exhibited lower levels of lipid and protein oxidation during the display period, likely due to the higher levels of antioxidants, such as β-carotene and α-tocopherol, found in this investigation. In addition, meat from pasture-raised steers was healthier for consumers in terms of its fatty acid composition and lower intramuscular fat content. In conclusion, meat from pasture-fed steers was more stable during retail refrigeration, possibly allowing for a longer shelf-life, and was healthier for consumers compared to meat from concentrate-fed steers. Beef production in Uruguay is based on pasture (~85%) or concentrate (~15%), resulting in differences in meat quality. The objective of this study was to compare the oxidative stability and color of beef from these two systems during refrigerated retail display. For these purposes, the Semimembranosus muscle was removed from ten Aberdeen Angus steers raised and fed on pasture (130 days prior to slaughter) and from another ten steers fed concentrate (100 days prior to slaughter), sliced. The muscles were placed in a refrigerated showcase for 3, 6, and 9 days. The contents of β-carotene, α-tocopherol, and fatty acids were determined before the meat was placed on display. Lipid and protein oxidation, color, and heme iron content were determined before and during display. The meat from pasture-fed steers had a lower intramuscular fat content (1.78 ± 0.15 vs. 4.52 ± 0.46), lower levels of monounsaturated fatty acids, a lower n-6/n-3 ratio, less lipid and protein oxidation, lower L* and a* values, and higher levels of α-linolenic acid, DHA, total n-3, β-carotene, and α-tocopherol. In conclusion, the meat from pasture-fed steers was more stable during retail display from an oxidative point of view, which may be due to its higher levels of antioxidant compounds such as β-carotene and α-tocopherol and had a healthier fatty acid profile for consumers. Simple Summary: As the beef industry continues to become more efficient and profitable, structural soundness will be important for the longevity of forage-based beef cattle. This study characterized the effects of age, sex, and sire line on mean foot angle and claw set scores of registered Angus cattle in Montana, USA. In our study, yearling bulls had greater mean foot angle and claw set scores than yearling heifers. Likewise, a greater proportion of yearling bulls had foot scores that were not ideal compared to yearling heifers. In addition, mean foot angle and claw set scores increased with increasing cow age, as well as the proportion of cattle with nonideal foot scores. The location of the combined worst foot was also influenced by cow age, with yearling cattle having predominantly front foot issues whereas mature cows often experienced hind foot issues. These data could potentially be used to improve the current American Angus Association (AAA) models and protocols for foot scoring. The objective of this study was to characterize foot angle and claw set scores of Montana's (USA) registered Angus cattle using a total of 4723 cattle scored: 1475 yearling bulls, 992 yearling heifers, 1044 2- and 3-year-old cows, and 1212 cows ≥ 4 years old. Yearling bulls had a 0.12 and 0.20 greater mean foot angle and claw set score, respectively, compared to yearling heifers (p < 0.01). Foot angle and claw set scores increased (p < 0.01) with advancing cow age. The combined worst foot changed quadratically with age (p < 0.01) with the majority of problem feet in cows aged 2 to 3 years and older being hind feet issues. The proportion of foot angle and claw set scores not equal to 5 increased quadratically with age (p < 0.01), with heifers having the lowest proportion of scores not equal to 5 (15.8 and 31.7%, respectively) compared to cows aged 4 years and older. Sire lines had an effect on progeny claw set (p < 0.05) and foot angle scores (p < 0.05), as well as variation of progeny foot scores. Context. Identification earlier in life of beef cattle with capacity for increased marbling, improved carcase yield and/or reduced subcutaneous fatness can facilitate more rapid genetic improvement and identification of cattle more appropriate forfeedlot or pasture finishing. Earlierin life, ultrasound predictions have potential for significant improvements in compliance with market specifications and overall efficiency of beef production systems. Aims. To assess the relationships just prior to slaughter and earlier in life between measurements of intramuscular fat, subcutaneous fat and eye-muscle (Longissimus thoracis et lumborum) cross-sectional area made using ultrasound, and carcase fatness, muscling and yield measurements following slaughter of Bos taurus steers that differed genetically in potential for subcutaneous fatness and marbling. Methods. Ultrasound measurements of intramuscularfat (IMF), rib fat (RFT), P8 rump fat (P8FAT), eye-muscle area (EMA) and retail beef yield (RBY) of cattle heterogeneous for marbling and fat distribution were made at six stages of growth from weaning to long-feedlotting. Carcase measurements of the same traits were made at five stages of growth from weaning through to long-feedlotting. Key results. IMF ultrasound scans 168 days post-weaning were more strongly correlated (r = 0.79) with marbling in the carcase following long-feedlotting than were IMF ultrasound scans at the end of backgrounding (r = 0.71, 326 days post-weaning), short-feedlotting (r = 0.69, 431 days) and during (r = 0.59, 521 days) and at the end of long-feedlotting (r = 0.53, 585 days). P8FAT was the trait with the highest and most consistent accuracy across all stages of life (r = 0.80) between ultrasound and carcase measurements of P8FAT. Conclusions. The results of the present study showed that ultrasound-scanned measures of carcase IMF, subcutaneous fat and EMA can be used to predict carcase characteristics with good accuracy earlier in life. Implications. The finding that prediction of marbling in the carcase of long-feedlot-fed cattle was stronger by using ultrasound measurement of IMF in younger post-weaned cattle than in older post-weaned cattle warrants further investigation for genetic improvement and management applications, including using newer scanning technologies. Beef production systems primarily use natural service (NS) for breeding. However, a significant number of bulls used for NS are subfertile, limiting the profitability of the cow‐calf operations. Therefore, producers should select bulls based on breeding soundness evolutions (BSE) to ensure higher pregnancy rates. Several factors can affect the bull ability to pass a BSE. We hypothesize that calving date would be a factor that affects the bull probability of approval at the first BSE. For this purpose, a multivariate logistic regression in a dataset of 14,737 BSEs from young Nellore bulls was used. Correlations between calving date, biometrics, and semen traits were evaluated using Pearson's correlation coefficient. Our results demonstrated that the calving date affected the probability of approval at the first BSE (p <.05). Indeed, the variable that added more information to our model was the calving date, far more than the age group of the bulls according to Akaike's information criterion. Hence, bulls born on day 0 of the calving season have 1.26 more chances to be approved at the first BSE than bulls born 21 days later. This result highlights the importance of getting the dams of future bulls pregnant as soon as possible in the breeding season. In addition, the calving season should be no longer than 47 days to achieve 80% BSE approval in 20–22 months old Nellore bulls. The strongest correlation was with SC, which decreased as the calving date increased. Therefore, the calving date may be used as a predictor of the outcome of the first BSE in young bulls. In that way, the calving date can help seedstock producers to maximize efficiency in making crucial management decisions during the breeding and calving season including nutrition, reproductive, and culling. The aim of this study was to perform a quantitative microbial risk assessment (QMRA) of Shiga toxin-producing Escherichia coli hemolytic uremic syndrome (STEC-HUS) linked to the consumption of Kosher beef produced in Argentina and consumed in Israel in children under 14 years. A probabilistic risk assessment model was developed to characterize STEC prevalence and contamination levels in the beef supply chain (cattle primary production, cattle transport, processing and storage in the abattoir, for export and at retail, and home preparation and consumption). The model was implemented in Microsoft Excel 2016 with the @Risk add-on package. Results of 302 surveys with data collected in Israel were as follows: 92.3% of people consumed beef, mostly at home, and 98.2% preferred levels of cooking that ensured STEC removal from the surface of beef cuts. The preferred degree of ground beef doneness was "well-done" (48.2%). Cooking preference ranged from red to "medium-well done" (51.8%). Median HUS probability from Argentinean beef cut and ground beef consumption in children under 14 years old was <10−15 and 8.57x10-10, respectively. The expected average annual number of HUS cases and deaths due to beef cut and ground beef consumption was zero. Risk of infection and HUS probability correlated with salting effect on E. coli count, processing raw beef before vegetables, ways of storage and refrigeration temperature at home, joint consumption of salad and beef cuts, degree of beef doneness and cutting board washing with detergent after each use with beef and vegetables. The STEC-HUS risk in Israel from consumption of bovine beef produced in Argentina was negligible. The current QMRA results were similar to those of previous beef cut consumption QMRA in Argentina and lower than any of the QMRA performed worldwide in other STEC-HUS linked to ground beef consumption. This study confirms the importance of QMRA to estimate and manage the risk of STEC-HUS from beef consumption. The impact variables identified in the sensitivity analysis allowed us to optimize resources and time management, to focus on accurate actions and to avoid taking measures that would not have an impact on the risk of STEC-HUS.
