3. Quality Assessment of Tomato Paste Products on the Ghanaian Market: An Insight Into Their Possible Adulteration.

Abstract

Tomato paste is the most consumed tomato product on the Ghanaian market, the majority of which are imported into the country. This food product is easily adulterated, and thus, routine quality checks are necessary. Therefore, the current study is aimed at assessing the quality of eight tomato paste products on the Ghanaian market and checking for the presence of starch and artificial colourant erythrosine as possible adulterants. Routine quality metrics such as the pH, titratable acidity, total solids, and total soluble solids were assessed using standard methods. An HPLC method was employed to detect the presence of the colourant erythrosine, whereas starch content was determined by an enzymatic method using α‐amylase and then amyloglucosidase. Fifty percent of the products did not qualify to be called tomato paste based on total solid estimation. All the sampled products contained some amount of starch, with three having more than 10 g/100 g of this thickener. Additionally, the banned colourant erythrosine was detected in two of the products. All other parameters were consistent with regulatory standards. The present study has shown that some tomato paste products on the Ghanaian market contain additives that are not permitted under any circumstance and fall short of regulatory standards. Abstract

The economic return for peanut (Arachis hypogaea L.) in Ghana is often low due to limitations in the availability of inputs or their adoption, which are needed to optimize yield. Six experiments were conducted in Ghana in 2020 and 2021 to determine the impact of planting date, cultivar, fertilization, pest management practices, and harvest date on peanut yield, financial return, and pest reaction. A wide range of interactions among these treatment factors were often observed for infestations of aphids (Aphis gossypii Glover); groundnut rosette disease (Umbravirus: Tombusviridaee); millipedes (Peridontopyge spp.); white grubs (Schyzonicha spp.); wireworms (Conoderus spp.); termites (Microtermes and Odontotermes spp.); canopy defoliation as a result of early leaf spot disease caused by Passalora arachidicola (Hori) and late leaf spot caused by Nothopassalora personata (Berk. and M. A. Curtis); and the scarification and boring of pods caused by arthropod feeding. Pod yield and economic return increased for the cultivar Chitaochi and Sarinut 2 when fertilizer was applied and when fertilizer was applied at early, mid-, and late planting dates. Pod yield and economic return increased when a combination of locally derived potassium soaps was used for aphid suppression and one additional hand weeding was used in the improved pest management practice compared with the traditional practice without these inputs. Pearson correlations for yield and economic return were negatively correlated for all pests and damage caused by pests. The results from these experiments can be used by farmers and their advisors to develop production packages for peanut production in Ghana.

Abstract

This study assessed the extent to which cold store operators and table-top meat and fish sellers in Kumasi, employed safe meat and fish handling practices. The meat and fish safety knowledge and attitudes of food vendors and household consumers were also assessed. Data was collected from 155 respondents comprising 53 cold store operators, 42 table-top vendors and 60 consumers using semi-structured questionnaires. The majority of respondents were females aged between 20 – 40 years. Cold store operators were generally more educated than the table-top meat and fish sellers who had only basic or no formal education. However, formal education had little effect on respondents’ knowledge and adoption of meat handling and safety practices. Neither meat and fish vendors nor consumers considered hygiene as necessary in their selection of suppliers and purchase of products. Although most claimed to be aware of meat and fish contaminants, they could not mention specific pathogens that contaminated either products. While most table-top vendors wore overalls, the purpose was not to reduce contamination of meat and fish but to promote personal cleanliness. The findings indicate the need for further studies and interventions to bridge the existing gap between knowledge and practice in the frozen meat and fish industry. We propose a conceptual framework for an integrated approach involving all key stakeholders for safe vending of frozen fish and meat. Other urban cities in developing nations could adopt the framework to promote safe and hygienic practices in the frozen meat and fish industry.
