10. Assessment of element concentrations in widely consumed cultured fish in Turkey

Abstract

Balık çiftlikleri, insanların tüketmesi için yüksek miktarlarda besin üretmektedir. Fakat sucul ekosistemlerde ağır metal kirliliği, ciddi bir problem olabilir. Bu çalışmada, Aralık 2011 ve Ocak 2013 tarihleri arasında Kocaeli ilinde bulunan balık hallerinden alınan üç kültür balığı türünün (Oncoryhynicus mykiss (gökkuşağı alabalığı), Dicentrarchus labrax (levrek) ve Sparus aurata (çipura)), yenilebilir dokularında bulunan mikronütrient ve esansiyel olmayan element konsantrasyonları izlenmiştir. Ca, K, Mg, Na, As, Cd, Co, Cr, Cu, Fe, Hg, Mn, Pb, Se, ve Zn konsantrasyonları ICP-MS kullanılarak analiz edilmiş ve bölge halkı için bu balıkların tüketimi sonucu bu elementlerin yıllık alım miktarları hesaplanmıştır. Balık kas dokusunda bulunan element konsantrasyonlarının hiç biri, Birleşmiş Milletler Gıda ve Tarım Örgütü ve Türk Gıda Kodeksi tarafından belirlenen limitleri aşmamıştır. Hesaplanan element alım miktarları, bu çiftlik balıklarının insanlar tarafından tüketilmesinin risk oluşturmadığını göstermiştir. Temel bileşenler analizi, deniz çiftlik balıklarının kas dokusundaki elementlerin üç bileşen altında gruplanabileceğini göstermiştir

11. Evaluation of non-essential element and micronutrient concentrations in seafood from the Marmara and Black Seas

Abstract

Determining the presence of potentially toxic elements in the marine organisms inhabiting contaminated environments is important for human health. The present study assessed concentrations of As, Cd, Co, Cr, Cu, Fe, Hg, Ni, Pb, Se, and Zn measured by ICP-MS in fish muscle and liver, as well as in the edible invertebrate parts harvested from the Marmara and Black Seas. Arsenic in 14 out of 18 fish species (i.e. Mullus barbatus, Mullus surmuletus, Psetta maxima, Solea solea, Sciaena umbra, Auxis thazard, Engraulis encrasicolus, Merlangius merlangus, Diplodus puntazzo, Sardina pilchardus, Scomber scombrus, Trachurus meditaraneus, and Trigla lyra) and 4 invertebrate species (i.e. Mytilus galloprovincialis, Palaemon serratus, Penaeus sp., and Ommastrephes sagittatus) and the Cu concentration in Palaemon serratus were determined to exceed values recommended by the Food and Agriculture Organization and by the Turkish Food Codex. Non-essential elements are accumulated consistently in the fish muscle tissue, however liver represents dietary alterations. When comparing the present results with other studies, As and Se concentrations in the muscle tissue of Marmara sea fish were found higher than previous study results. Also Fe and Hg concentrations in the muscle tissue of Black Sea fish were found higher than previous study results. Other element concentrations were determined generally comparable or lower with some exceptions.

Abstract

ÖZETEkim ve Aralık 2011 tarihleri arasında Kocaeli ilinde bulunan balık hallerinden, Karadeniz ve Marmara Denizi'nden yakalanan ve besin olarak tüketilen 3 omurgasız türü ve 20 balık türü alındı. Tüm örneklerin yenilebilir dokularında ve 15 örneğin karaciğer dokusunda ICP-MS kullanılarak As, Cd, Co, Cr, Cu, Fe, Hg, Mn, Ni, Pb, Se, ve Zn miktarları ölçüldü. Ölçümler sonucunda elementlerin ortalama miktarlarının sıralaması yenilebilir dokuda, Fe>Zn>As>Cu>Mn>Se>Cr>Hg>Pb> Ni>Cd>Co, karaciğer dokusunda Fe>Zn>Cu>As>Se>Mn>Co>Cr>Cd>Ni>Hg>Pb olarak belirlendi. As için 3 türde, Cu ve Zn için birer türde Türk gıda kodeksi (TGK, 2011) ve FAO (1983) nun belirlediği kabul edilebilir limitlerin üzerinde değerler belirlendi. Bölgede yaşayan bireyler için deniz ürünlerinden yıllık alınan ağır metal miktarı 235,04 mg olarak hesaplandı.Anahtar kelimeler: Ağır metal, Deniz ürünü, Karadeniz, Kocaeli, Marmara Denizi ABSTRACT3 invertebrate and 20 fish species were taken from primary fish markets of Kocaeli district, between October and December of 2011. Edible tissue of all samples and liver tissue of 15 samples were analyzed for As, Cd, Co, Cr, Cu, Fe, Hg, Mn, Ni, Pb, Se, and Zn using ICP-MS. Order of average element concentration in edible tissue is Fe>Zn>As>Cu>Mn>Se>Cr>Hg>Pb>Ni>Cd>Co, and in liver tissue is Fe>Zn> Cu>As>Se>Mn>Co>Cr>Cd>Ni>Hg>Pb. Maximum allowed values by Turkish food codex (TGK, 2011) and FAO (1983) were exceeded in 3 species for As and 1 species for Cu and Zn. 15. The early stage of mucilage formation in the Marmara Sea during spring 2021.

Abstract

In the present study, phytoplankton composition in relation to mucilage and accompanied physicochemical conditions were investigated in the sea water samples collected from four stations in İzmit-Kocaeli, Fatih-İstanbul, Biga-Çanakkale (in the Marmara Sea), and Rivaİstanbul (in the Black Sea). Samplings were carried out before (i.e., during September 2020) and at the beginning stage of the mucilage formations (i.e., during April 2021) which was observed in the Marmara Sea during spring and summer months of 2021. Seawater temperature, salinity, pH, and dissolved oxygen levels were measured in situ. Inorganic nitrogen, orthophosphate, and chlorophyll-a concentrations were analyzed spectrophotometrically. In total 83 phytoplankton species (44 Bacillariophyceae-BAC, 36 Dinophyceae-DIN, 2 Dictyochophyceae-DIC, and 1 Chlorophyceae-CHL) were identified during the study. BAC species were generally dominant. Among the 83 phytoplankton taxa identified, Cerataulina pelagica, Cylindrotheca closterium, Pseudo-nitzschia sp., Skeletonema costatum, Thalassiosira rotula, Alexandrium tamarense, Dinophysis acuminata, Dinophysis caudata, Dinophysis fortii, Gonyaulax fragilis, Gonyaulax spinifera, Gymnodinium sp., Gyrodinium sp., and Prorocentrum micans are known as the species associated with mucilage formation. The highest number of species was determined at the Biga-Çanakkale station (MDG25) with 38 taxa in September 2020. [ABSTRACT FROM AUTHOR]
