Abstract

Abstract Pharmacogenetic (PGx)‐informed medication prescription is a cutting‐edge genomic application in contemporary medicine, offering the potential to overcome the conventional “trial‐and‐error” approach in drug prescription. The ability to use an individual's genetic profile to predict drug responses allows for personalized drug and dosage selection, thereby enhancing the safety and efficacy of treatments. However, despite significant scientific and clinical advancements in PGx, its integration into routine healthcare practices remains limited. To address this gap, the Qatar Genome Program (QGP) has embarked on an ambitious initiative known as QPGx‐CARES (Qatar Pharmacogenetics Clinical Applications and Research Enhancement Strategies), which aims to set a roadmap for optimizing PGx research and clinical implementation on a national scale. The goal of QPGx‐CARES initiative is to integrate PGx testing into clinical settings with the aim of improving patient health outcomes. In 2022, QGP initiated several implementation projects in various clinical settings. These projects aimed to evaluate the clinical utility of PGx testing, gather valuable insights into the effective dissemination of PGx data to healthcare professionals and patients, and identify the gaps and the challenges for wider adoption. QPGx‐CARES strategy aimed to integrate evidence‐based PGx findings into clinical practice, focusing on implementing PGx testing for cardiovascular medications, supported by robust scientific evidence. The current initiative sets a precedent for the nationwide implementation of precision medicine across diverse clinical domains.

2. Effect of sodium alginate coatings enriched with α-tocopherol on quality of fresh walnut kernels

Abstract

Lipid oxidation of unsaturated fatty acids is the main cause of quality reduction in nuts. To protect the quality of walnut kernels, edible coatings play an important role. Fresh kernels were coated with sodium alginate added with α-tocopherol at concentrations 0.25, 0.5 and 0.75% (w/v) and assessed for moisture content, weight loss percentage, firmness, oxidative stability, nutraceutical potential, color and microbial stability. The results showed that coatings significantly reduced weight loss percentage (20.17 to 11.88 %), peroxide value (2.5 to 1.84 meq o2 /kg), free fatty acid content (1.4 to 0.9 % oleic acid) and microbial count (3.2 to 1.9 log cfu/g) compared to control. In addition, coatings effectively retained total phenolic content (0.88 to 1.07 GAE g−1), DPPH radical scavenging activity (60.13 to 75.12%) and maintained firmness (1.8 to 2.5 N). Alginate enriched emulsion coatings preserved the kernel pellicle color (L* and b*) value and presented high overall acceptable score than the control. Therefore, it is determined that sodium alginate enriched with antioxidants coating could be used as a natural preservative coating material to maintain the postharvest quality of fresh walnut kernels.

Abstract

This study was carried out to conduct the geographical discrimination of various types of honey, and their utilization in development of novel functional foods where in honey could be substituted in place of white sugar. Honey based apple spread and marmalade products were developed and evaluated for quality analysis. The results showed higher water activity (aw) and moisture content in Plectranthus rugosus (PR) honey based apple spread and marmalade while, TSS was highest (p < 0.05) in Multifloral (MF) honey based apple spread and marmalade. Hydroxymethylfurfural was found to be in the ranged of 6.77–7.05 (mg/kg) for honey based apple spread products and 3.09–3.46 (mg/kg) for honey based apple marmalade products. The lightness (L*) value was significantly highest in MF honey based apple spread and marmalades (p < 0.05). Redness (a*) and yellowness (b*) values were significantly highest in PR honey based apple spreads and marmalades and lowest in Robinia pseudo acacia (RSA) honey based apple spread and marmalades. In general, all MF honey based apple spreads and marmalades has the highest score for overall acceptability in comparison to RSA and PR honey based apple spreads. The values of gel strength (Fe), rupture force (FR), energy of penetration (E) and adhesiveness (A) in the given spread products were in the range of 1.50–1.54 N, 1.70–1.73 N, 17.00–17.05 Ns and −1.11–−1.08 Ns, respectively. The values of gel strength (Fe), rupture force (FR), energy of penetration (E) and adhesiveness (A) in the investigated marmalade products were in the range of 1.65–1.69 N, 2.08–2.13 N, 16.05–16.10 Ns and −1.14–−1.10 Ns, respectively.

Abstract

With 1st case being reported in Wuhan city of China in December 2019, COVID-19 infection cases made their way to every corner of the world. Then, on January 07, 2020, laboratory results led to pneumonia being named as COVID-19. Scant data is available from Northern India, thus to reveal the trend of COVID-19 infection since last year of COVID-19 pandemic onset, this study took shape. The unit of analysis of our study was District Anantnag, Jammu and Kashmir. Till February 05, 2021, a total of 4625 cases of COVID-19 virus were reported in District Anantnag, Jammu and Kashmir. Negative history of close contact with COVID-19 patient (66.1%) constituted the most common exposure, majority (84.4%) were asymptomatic and comorbidities were present in 68 (1.5%). COVID-19 infection was more prevalent among younger age group, with higher male predominance, with comorbid being at higher risk, hence most stringent measures must be adopted.

Abstract

We investigated what proportion of the population acquired severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) infection and whether the herd immunity threshold has been reached in 10 communities in Qatar. The study included 4,970 participants during June 21–September 9, 2020. Antibodies against SARS-CoV-2 were detected by using an electrochemiluminescence immunoassay. Seropositivity ranged from 54.9% (95% CI 50.2%–59.4%) to 83.8% (95% CI 79.1%–87.7%) across communities and showed a pooled mean of 66.1% (95% CI 61.5%–70.6%). A range of other epidemiologic measures indicated that active infection is rare, with limited if any sustainable infection transmission for clusters to occur. Only 5 infections were ever severe and 1 was critical in these young communities; infection severity rate of 0.2% (95% CI 0.1%–0.4%). Specific communities in Qatar have or nearly reached herd immunity for SARS-CoV-2 infection: 65%–70% of the population has been infected.

Abstract

Objectives We designed a population-based survey in Kashmir to estimate the seroprevalence of SARS-CoV-2-specific IgG antibodies in the general population aged 18 years and above.Setting The survey was conducted among 110 villages and urban wards across 10 districts in Kashmir from 17 October 2020 to 4 November 2020.Participants Individuals aged 18 years and above were eligible to be included in the survey. Serum samples were tested for the presence of SARS-CoV-2-specific IgG antibodies using the Abbott SARS-CoV-2 IgG assay.Primary and secondary outcome measures We labelled assay results equal to or above the cut-off index value of 1.4 as positive for SARS-CoV-2-specific IgG antibodies. Seroprevalence estimates were adjusted for the sampling design and assay characteristics.Results Out of 6397 eligible individuals enumerated, 6315 (98.7%) agreed to participate. The final analysis was done on 6230 participants. Seroprevalence adjusted for the sampling design and assay characteristics was 36.7% (95% CI 34.3% to 39.2%). Seroprevalence was higher among the older population. Among seropositive individuals, 10.2% (247/2415) reported a history of COVID-19-like symptoms. Out of 474 symptomatic individuals, 233 (49.2%) reported having been tested. We estimated an infection fatality rate of 0.034%.Conclusions During the first 7 months of the COVID-19 epidemic in Kashmir Valley, approximately 37% of individuals were infected. The reported number of COVID-19 cases was only a small fraction of the estimated number of infections. A more efficient surveillance system with strengthened reporting of COVID-19 cases and deaths is warranted.

Abstract

Walnut oil is extremely nutrient dense. It has plenty of oil and is high in fatty acids, which have positive biological properties and have a favorable impact on blood lipids and lipoproteins. Walnut oil is low in saturated fatty acids and high in unsaturated fatty acids as well as being high in other vital nutrients. Walnut oil can be extracted using traditional as well as new and green technologies. It is low in saturated fatty acids and high in unsaturated fatty acids (monounsaturated and polyunsaturated fatty acids) as well as being high in other vital nutrients (e.g., selenium, phosphorus, and zinc). Walnut oil can be extracted using traditional as well as new and green technologies. The chosen extraction method has a significant impact on the lipids and other important components extracted. It is critical to select a suitable extraction process for the compounds of interest. In this study, different extraction methods are reviewed, demonstrating the significant benefits of new methods over previous approaches. New green technologies are ecologically benign and allow for shorter extraction times and yields that are comparable to those obtained using traditional methods. The new green technologies allow for higher-quality oils that are less vulnerable to oxidation processes than most of the old technologies.

Abstract

Differential cross sections of charged particles in inelastic pp collisions as a function of pT have been measured at [Formula: see text] at the LHC. The pT spectra are compared to NLO-pQCD calculations. Though the differential cross section for an individual [Formula: see text] cannot be described by NLO-pQCD, the relative increase of cross section with [Formula: see text] is in agreement with NLO-pQCD. Based on these measurements and observations, procedures are discussed to construct pp reference spectra at [Formula: see text] up to pT=50 GeV/c as required for the calculation of the nuclear modification factor in nucleus-nucleus and proton-nucleus collisions.

Abstract

Differential cross sections of charged particles in inelastic pp collisions as a function of pT have been measured at [Formula: see text] at the LHC. The pT spectra are compared to NLO-pQCD calculations. Though the differential cross section for an individual [Formula: see text] cannot be described by NLO-pQCD, the relative increase of cross section with [Formula: see text] is in agreement with NLO-pQCD. Based on these measurements and observations, procedures are discussed to construct pp reference spectra at [Formula: see text] up to pT=50 GeV/c as required for the calculation of the nuclear modification factor in nucleus-nucleus and proton-nucleus collisions.

Abstract

Two local cowpea cultivars (Red cowpea and Black cowpea) were studied for various physical, cooking and textural properties. The moisture, crude protein, fat, ash and carbohydrate content of seeds ranged from 10.0% to 10.1%, 21.29–23.90%, 0.49–1.94%, 19.8–2.81%, and 60.53–62.45%, respectively. Sphericity, 1000-seed weight and surface area were significantly higher for Red cowpea than Black cowpea. However bulk density was found significantly higher for Black cowpea than Red cowpea. Black cowpea had significantly shorter cooking time (29.77 min) than Red cowpea (64.67 min). Water uptake ratio, hydration capacity and swelling capacity were significantly higher for Red cowpea than Black cowpea. Hardness was higher for soaked Red cowpea seeds (16.37 kg) than soaked Black cowpea (7.62 kg). Adhesiveness values were observed significantly higher for soaked Black cowpea seeds (1.26 kg s) than soaked Red cowpea (0.004 kg s). Chewiness was also significantly higher for Red cowpea. Cooked seeds did not show a significant difference for the textural parameters between the two cultivars.

Abstract

Starches isolated from the rice (Jhelum and Kohsar) and corn (PS-43 and Shalimar-maize) cultivars were studied for their physico-chemical and morphological properties. Physico-chemical properties such as composition, water and oil absorption capacity, swelling power, syneresis, freeze–thaw stability and light transmittance showed significant differences among the starches. Amylose contents of starches separated from the Jhelum and Kohsar rice cultivars and PS-43 and Shalimar-maize corn cultivars were 6.33%, 4.90%, 7.52% and 8.09%, respectively. The granular size varied from 5.2 to 5.9 μm for rice starches and 11.4–12.0 μm for corn starches. Transmittance value of gelatinized pastes from all starches progressively decreased up to the 2nd day during refrigerated storage, except Kohsar rice starch which lost its clarity significantly up to 3rd day of storage. The pasting property revealed peak, breakdown and setback viscosity which were in the range of 2479–3021 cP, 962–1713 cP and 1293–2003 cP respectively.

25. Awareness, attitude and practice of COVID-19 and its vaccination in J&K, India

Abstract

COVID-19 Pandemic has severely affected the health care delivery system, economic and social progress since its inception. Although COVID-19 vaccines have given, a new hope but Vaccine hesitancy has been recognized as a serious public health problem that needs extensive research among different population groups. This study was aimed to assess awareness, attitude and practice towards COVID-19 vaccination and its association with Sociodemographicvariables among social media users in Jammu and Kashmir, India.The Department of Community Medicine, Government Medical College, Anantnag conducted this cross-sectional study in June 2021, among social media users, 18 and above years of age, using online questionnaire through Google Forms. The questionnaire comprised of four segments, sociodemographic details, awareness, attitude, and practice regarding COVID-19 vaccination, ten questions from each segment.In this study, although the calculated sample size was 423, a total of 425 respondents were included. The mean scores of awareness, regarding COVID-19 disease and its vaccination, was 3.68 ± 0.44, with overall awareness was 73.6%, positive attitude 3.53 ± 0.41, with an overall positive attitude of 70.6%, and good practice towards adopting COVID-19 appropriate behaviour and vaccination was 3.43 + 0.71 with an overall good practice of 68.6% respectively. Participants with higher awareness regarding COVID-19 disease and its vaccination were 9.1 times (95% C.I = 5.16-14.32) more likely to have a positive attitude towards using COVID-19 appropriate behaviour and its vaccination and 7.8 times (95% C.I = 4.62-13.83) adopting good practice than with the low level of awareness.In Jammu and Kashmir, social media users are having good awareness toward COVID-19 disease and its vaccination. Awareness generation seems to be a good tool for bringing behavioural changes and this platform should be used to disseminate information regarding COVID-19 appropriate behaviour and its vaccination.

Abstract

This study aimed at investigating the influence of different postharvest treatments with oxalic acid (OA) and salicylic acid (SA) on quality attributes and postharvest shelf life of temperate grown apricot varieties stored under controlled atmosphere (CA) storage conditions. After each treatment was given, the samples were stored in CA store maintained at a temperature of 0 °C, 90 ± 5% relative humidity, 5% oxygen and 15% carbon dioxide for 30 days. Results indicated that both OA and SA treatments significantly (p ≤ 0.05) retained total soluble solids, titratable acidity, color profile, ascorbic acid content and total phenolic content of apricot varieties and had a positive effect on antioxidant activity and texture of samples compared to control. However, carotenoid content was found to be higher in control. Both the treatments reduced chilling injury index, weight loss and decay percentage of samples. Moreover, it was found that SA treatment was the most effective treatment in maintaining visual color of apricots while OA maintained fruit firmness and effectively decreased the decay percentage and chilling injury index of apricot varieties. In conclusion, it was found that both OA and SA have the potential to extend storage life of apricots and maintain quality attributes of the crop during CA storage.

Abstract

Transverse momentum spectra of π±, K± and p(p¯) up to pT=20 GeV/c at mid-rapidity in pp, peripheral (60–80%) and central (0–5%) Pb–Pb collisions at sNN=2.76 TeV have been measured using the ALICE detector at the Large Hadron Collider. The proton-to-pion and the kaon-to-pion ratios both show a distinct peak at pT≈3 GeV/c in central Pb–Pb collisions. Below the peak, pT10 GeV/c particle ratios in pp and Pb–Pb collisions are in agreement and the nuclear modification factors for π±, K± and p(p¯) indicate that, within the systematic and statistical uncertainties, the suppression is the same. This suggests that the chemical composition of leading particles from jets in the medium is similar to that of vacuum jets.

Abstract

Rice flour and green gram flour (sprouted as well as unsprouted) were blended in different proportions with apple pulp, sugar, milk and water for formulation of 12 hypoallergic diets. The formulations were studied for physico-chemical properties, antinutrient content (phytate and oxalate) and in vitro protein digestibility. Blending and sprouting significantly affected all the studied parameters. Sprouting significantly (p ≤ 0.05) improved protein content and in vitro protein digestibility, while carbohydrate content and antinutrients decreased significantly. Nutrition profile of water-based diets met RDA guidelines only after addition of sprouted green gram flour and were comparable to control (commercial weaning food). Water-based formulation showed lower sensory score than milk-based diets; however, addition of sprouted green gram flour significantly (p ≤ 0.05) improved their overall acceptability. It could be concluded that by incorporating sprouted green gram flour, milk could be replaced with water for production of hypoallergic weaning foods without affecting the nutritional and sensory attributes of formulations and thereby making the production more economical, especially for underdeveloped countries.

32. Effect of preservation methods and storage period on the chemical composition and sensory properties of strawberry crush

Abstract

Fresh strawberries, analyzed for the physicochemical properties, showed average fruit length, width, weight, total soluble solids (TSS), titrable acidity, total sugar, and reducing sugar of 26.27 mm, 24.19 mm 6.33 g, 8.0°Brix, 1.28, 5.25, and 4.26%, respectively. The ascorbic acid and anthocyanin content was found to be 38.64 and 452 mg/100 g FW, respectively. Strawberries were processed into crush and divided into four treatments. T1 was stored at ambient temperature, T2 was pasteurized at 60°C for 20 min before storage at ambient temperature, T3 was stored under refrigeration, and T4 was pasteurized at 60°C for 20 min before storage under refrigeration. Among the treatments, T3 showed the lowest decrease in the acidity (1.43–1.34%), the highest anthocyanin (90.54–45.25 mg/100 g) and ascorbic acid contents (11.00–6.38 mg/100 g). The sensory attributes including color (8.25–7.75), taste (8.50–7.85), flavor (7.50–5.70), and overall acceptability (7.93–7.15) were also superior for T3 over the storage study of 120 days. T2 showed the maximum decrease in the acidity (1.40–1.12%) and corresponding increase in the pH (2.47–2.97), TSS (60.30–60.75°B), and reducing sugar (22.08–26.56%). However, its nutritional and sensory attributes were poor, showing the lowest anthocyanin (36.55–2.68 mg/100 g), ascorbic acid (8.64–0.85 mg/100 g), color (7.50–6.20), consistency (7.75–5.40), and overall acceptability (7.42–6.50) during the storage. Therefore, T3 could be explored for the best preservation and storage of strawberry crush.

Abstract

We investigated what proportion of the population acquired severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) infection and whether the herd immunity threshold has been reached in 10 communities in Qatar. The study included 4,970 participants during June 21–September 9, 2020. Antibodies against SARS-CoV-2 were detected by using an electrochemiluminescence immunoassay. Seropositivity ranged from 54.9% (95% CI 50.2%–59.4%) to 83.8% (95% CI 79.1%–87.7%) across communities and showed a pooled mean of 66.1% (95% CI 61.5%–70.6%). A range of other epidemiologic measures indicated that active infection is rare, with limited if any sustainable infection transmission for clusters to occur. Only 5 infections were ever severe and 1 was critical in these young communities; infection severity rate of 0.2% (95% CI 0.1%–0.4%). Specific communities in Qatar have or nearly reached herd immunity for SARS-CoV-2 infection: 65%–70% of the population has been infected.

PurposeThe demand for functional foods has been increasing tremendously throughout the globe and keeping in view the health beneficial properties of apricot fruit. Abstract

Ginger oleoresin is prone to destruction from air, light and high temperatures and has a limited shelf life if kept improperly. Its viscous and sticky characteristics also make it difficult to handle and utilize. These issues can be solved via microencapsulation. The goal of this research was to evaluate how different wall materials affect the properties of microencapsulated ginger oleoresin powder.Ginger oleoresin microcapsules were developed through spray drying technique using gum acacia (GA) and whey protein isolate (WPI) as wall materials. The characteristics of the obtained powder, including water activity, wettability and encapsulation efficiency, were evaluated, corresponded to values of 0.20, 90.54 s and 84.15% for whey protein isolate-based ginger oleoresin powder. Whey protein isolate microcapsules also exhibited higher phenolic content (27.26 mg gallic acid equivalents gWhey protein isolate proved to be more efficient in maintaining the physicochemical and antioxidant activity of spray-dried ginger oleoresin powder. The present study revealed whey protein-based oleoresin powder could be used as a therapeutic agent in various nutraceutical applications. © 2022 Society of Chemical Industry.

Abstract

Background: Cancer is one of the signicant causes of mortality worldwide. Cancer has been found to increase with acquisition of unhealthy dietary habits, smoking, sedentary life style etc. Objective: (1) To determine the number of cancer deaths in Mattan Block, Anantnag in the ve year period of 2015 -2020. (2)To nd out the prevalence of risk factors of cancer among the studied cases Materials and Methods:It was a descriptive analysis of the cancer related deaths in Mattan area conducted from 2015 to 2020. Whenever a cancer death occurred, a team of health inspector and an ASHAworker went to the family of the deceased where upon socio-demographic details and the details about risk factors were collected. The data was entered and analysed by using Microsoft Word 2010. Results: A total of 197 deaths were recorded. Most of the deaths were in the age group of above 60 years (40%) with male preponderance (65%). Maximum proportion of deaths was due to Gastrointestinal cancers (42%) followed by respiratory cancers (25.4%). About 56% of participants consumed dried vegetables at least twice a week. Salt tea was consumed 3-4 times a day by 35% of subjects, 45.2% of the subjects ate spicy food. About 53% of subjects were smokers. Conclusion: In this study we found that there's high intake of salt tea, dried vegetables and spicy foods among family members of the deceased persons. Smoking is also a menace in the area. Awareness generation among the people in the area needs to be created about the healthy food and life style

Abstract

Planetary ball milling of chitosan microparticles (CMP) for 8 h produced chitosan nanoparticles (CNP) having hydrodynamic diameter of 615.18 nm. The ζ-potential decreased from 56.48 mV (CMP) to 31.52 mV (CNP). High resolution transmission electron microscopy (HRTEM) revealed nanosize, irregular shape and surface roughening of CNP. CNP was whiter than CMP having higher water absorption capacity and decreased flow ability. Both CMP and CNP showed negligible swelling and no water solubility. Attenuated total reflectance-Fourier transform infrared spectroscopy (ATR-FTIR) revealed no chemical changes and X–ray diffraction (XRD) showed decreased crystallinity in CNP. In CNP, thermogravimetric analysis (TGA) revealed increased thermal degradation; differential thermogravimetric (DTG) revealed increased rate of thermal degradation; and high temperature differential scanning calorimetry (HDSC) revealed broadening of endothermic and exothermic phases and reduction in glass transition temperature as compared to CMP. In conclusion, planetary ball milling for 8 h produces bright, amorphous and rough CNP with improved functional and comparable thermal properties.

Abstract

Background:The present investigation was carried to develop amaranth based wheat flour bread. Products were developed by using different levels of amaranth flour and wheat flour in the ratio of 0:100,5:95, 10:90 and 15:85 respectively.Methods:Physico-chemical, antioxidant activity, total phenolic content and physical properties of amaranth supplemented bread were evaluated.Results:Results revealed an increase in moisture content from31.41 -33.35%, ash content 0.95- 1.52%, protein content 12.19% -13.23%, fat content 2.21% -2.81% and crude fiber 1.13-1.74%, and decrease in nitrogen free extract, alkali water retention capacity 52.11-47.35% and 137.66-112.00% respectively. Also it was observed that amaranth flour supplemented bread showed decrease in total phenolic content, antioxidant activity and FRAP assay with increase in substitution level. Color evaluation showed increase in L* and a* value of bread crust, while as bread crumb shows decrease in b* and L* value respectively. Nutritional evaluation revealed that among the samples tested 85% wheat flour and 15% amaranth flour supplemented bread was rated best as it was also evident from nutritional analysis.Conclusion:Maximum substitution of wheat flour with amaranth flour were 10% in terms of desirable bread quality attributes. The composite breads would serve as functional food, because of its high nutritional value than whole-wheat bread.

Abstract

This study was carried out to evaluate the effect of different pre treatments, drying methods, and storage period on physicochemical and nutraceutical properties of tomato powder. The results revealed that freeze-dried tomato powder showed significantly (p .05) between hot-air- and freeze-dried samples. Comparing the different pretreatments sodium metabisulphite 1% treated sample (T2) showed highest total sugar, reducing sugar, rehydration ratio, TSS (oBx), lightness (L*), redness (a*) and yellowness (b*) values than non-pretreated samples (T0) and 0.5% ascorbic acid + 0.5% citric acid-treated samples (T1). While T1 showed the highest ascorbic acid, lycopene, and β-carotene contents than T2 and T0. The results obtained indicated that TSS (oBx), pH, total sugar, reducing sugar, rehydration ratio, ascorbic acid, β-carotene, lycopene, and color parameters (L*, a,* and b*) of both freeze-dried and hot-air dried powdered samples showed decreasing trend, while moisture and titratable acidity showed an increasing trend with the advancement of storage period from 0 to 30 days.

Abstract

Pulp from locally grown Apple variety was given different treatments (chemical and thermal) and its various quality parameters were studied during a storage period of 90 days. All the quality parameters viz. pH, titrable acidity, total soluble solids, reducing sugars and non-reducing sugars, color and antioxidants activity were significantly affected by treatments employed as well as storage period. As a result of chemical and thermal treatments, antioxidant activity and total phenolic content of samples decreased, while color and consumer acceptability significantly improved. Color and antioxidant activity were highly correlated and the type of preservation method used affected the correlation coefficient between color and antioxidant activity. Among different treatments, a combination of pasteurization and chemical preservation was found to be most effective in increasing the shelf life of apple pulp.

Abstract

Flours of two local cowpea cultivars namely Red cowpea and Black cowpea were analysed for proximate composition, pasting and functional properties. The crude protein and fat contents were higher for Black cultivar than the Red cultivar. The apparent amylose content was significantly higher for Red cowpea (25.54%) than Black cowpea (15.09%). Polyphenols were significantly higher for Red cowpea than Black cowpea. The pasting profile of two cultivars revealed significantly higher values of peak viscosity (1873 cP), setback viscosity (701.00 cP), breakdown viscosity (705.33 cP) and final viscosity (1868.67 cP) for Red cowpea than Black cowpea. Water absorption capacity and oil absorption capacity were found in the range of 1.22–1.39 g/g and 0.71–0.72 g/g, respectively, for the two cultivars. Emulsifying properties varied significantly between the two cultivars. Foaming capacity (198.67%) and foaming stability (84.85%) were significantly higher for Red cowpea than Black cowpea (73.81% and 75.43%). Swelling power was observed significantly higher for Black cowpea than Red cowpea at 90°C. Solubility index was also significantly higher for Black cowpea than Red cowpea throughout the temperature range.

Abstract

Objective: Objective of our study was to assess the prevalence and risk factors for diabetes mellitus in the age group of 20 years and above in one of the semi-urban areas of Kashmir. Methods: A cross sectional study was carried out in Hazratbal, an administrative block of central Kashmir. A total of 1040 subjects (500 males and 540 females) aged ≥ 20 years were screened for Diabetes Mellitus. Body mass index, waist to hip ratio, personal history and family history were recorded at baseline through pretested questionnaire. After an overweight fast, blood samples were drawn for determination of fasting plasma glucose. In the case fasting plasma glucose ≥ 126mg/dL, a second determination was performed one week later. Diagnosis of diabetes mellitus was based on the American Diabetes Association criteria 2004. The statistical analysis of the data was performed by using statistical package SPSS version 10.0. Results: The prevalence of diabetes mellitus was 6.05%, with known diabetes mellitus being 4.03% of the study population and undiagnosed diabetes mellitus being 2.02% subjects.
