Abstract

The antioxidant efficacy of rice bran extract on the oxidative degradation of ghee under storage conditions of 63°C was studied by adding different concentrations of methanolic extracts to ghee. The antioxidant-treated and control samples were analysed at regular intervals to assess the extent of oxidative changes and quality markers by measuring oxidative indices (free acidity, peroxide value, p-anisidine value, TOTOX value, thiobarbituric acid and conjugated diene), fatty acid composition, FTIR spectra and sensory attributes. During storage, the oxidative indices of samples increased. The increment was faster in untreated samples as compared to the treated samples, thus confirming the slower release of oxidation products in treated samples. Ghee incorporated with bran extract displayed a stronger ability to quench DPPH radicals; this can be attributed to the antioxidant potency of bran extract. Moreover, the solvent extract showed dose-dependent efficacy and increasing the concentration of the extract led to increased effectiveness in inhibiting lipid oxidation. In FTIR, the peak intensities in the control ghee were markedly changed in comparison with the treated ghee during storage. The effects of extract addition on ghee on fatty acid composition were unremarkable during storage. The colour and flavour scores of the samples decreased up to the end of storage and the bran extract fortified ghee samples were more acceptable to the panellists than the control ghee. It can be concluded that the bran extract was found to be quite effective towards suppressing the formation of oxidation products in the tested ghee. [ABSTRACT FROM AUTHOR]

Abstract

The core objective of this research was to determine the oil characteristics and nutrient contents of Nigella sativa and Trigonella foenum-graecum seeds. Characteristics of seed oils revealed higher degree of unsaturation and as determined by gas liquid chromatography (GLC) reported herein the major unsaturated fatty acids were linoleic acid (52.6% in N. sativa and 42.5% in T. foenum-graecum), followed by oleic acid (23.5% in N. sativa and 20% in T. foenum-graecum), while the main saturated fatty acid was palmitic acid (16% in N. sativa and 10.5% in T. foenum-graecum). Triacylglycerols and neutral lipids were found to be most abounded components recorded to 78.4 and 93.2% for N. sativa and 84.8 and 93.2% for T. foenum-graecum, respectively. The seed oils, therefore, have potential for use as domestic and industrial oils. Compositional analysis revealed that both samples contained considerable amounts of protein (20% in N. sativa and 28% in T. foenum-graecum) and high amount of lipid (37%) in N. sativa seeds. The seeds are shown to be rich sources of potassium, calcium and sodium and other elements. Abstract

Studies on the physico-chemical characteristics of seed oils of Mesua ferrea collected from different districts of Bangladesh revealed specific gravity (0.9287-09312), refractive index (1.4690-1.4739), solidification point [-4.0-(-4.3)], pour point [-1.0-(-1.3)], cloud point (5.5-6.0), flash point (90-98), fire point (110-116), smoke point (44-47), iodine value (89.17-93.01), saponification value (199.03-206.40), saponification equivalent (271.80-281.86), acid value (9.64-11.87), free fatty acid (4.85-5.96), ester value (188.95-1.95.44), unsaponifiable matter (1.44-1.50), acetyl value (2.70-2.84), peroxide value (3.58-3.64), Reichert-Meissl value (5.852-6.031) and polenske number (0.7891-0.8401). Glyceride classes were estimated to be monoglycerides (1.05-1.35 %), diglycerides (2.12-2.32 %) and triglycerides (87.65-89.50 %) whereas total lipid extracts were fractionated into neutral lipid (89.83-92.18 %), glycolipid (3.65-4.15 %) and phospholipid (1.98-2.68 %). Saturated and unsaturated fatty acids present in the oils were separated and amounted to be (27.40-29.11 %) and (65.85- 68.31 %), respectively, depending upon the areas from where the seeds were collected. GLC analysis of the oil indicated the presence of palmitic acid (10.87%), linoleic acid (13.68%), oleic acid (55.93%) and stearic acid (14.19%) as major fatty acids in the oil. In addition, myristic acid (2.13%) and arachidic acid (2.921%) were also present in minor amount. In biochemical analysis, Mesua ferrea seeds contained total lipid (66.91-70.23 g %), moisture (4.02-5.05 g %), ash (1.46-1.50 g %), total protein (6.99-7.19 g %), water soluble protein (2.98-3.11 g %), starch (5.51-5.85 g %), crude fiber (1.22-1.98 g %), carbohydrate (15.88-18.68 g %) and energy value (700.55-724.15 kcal/100 g), while its leaves contained total lipid (2.32-2.44 g %), moisture (65.12-72.19 g %), ash (2.60-2.71 g %), total protein (4.23-4.85 g %), water soluble protein (1.47-2.01 g %), starch (3.06-3.27 g %), crude fiber (3.12-3.29 g %), carbohydrate (14.82-22.30 g %) and energy value (100.24-128.40 kcal/100 g ). The present investigations demonstrate that the results vary to some extent but not significantly enough with the locations from where samples were collected. 41. Effect of microwave heating with different exposure times on the degradation of corn oil.

Abstract

In the present work, the influence of microwave power and heating times on the quality degradation of corn oil was evaluated. Microwave heating test was carried out using a domestic microwave oven for different periods at low- and medium-power settings for the corn oil sample. The changes in physicochemical characteristics related to oil degradation of the samples during heating were determined by standard methods. In this study, refractive index, free fatty acid content, peroxide value, p-anisidine value, TOTOX value, viscosity and total polar compound of the oils all increased with increasing heating power and time of exposure. In GLC analysis, the percentage of linoleic acid tended to decrease, whereas the percentage of palmitic, stearic and oleic acids increased. The C18:2/C16:0 ratio decreased in all oil samples with increasing heating times. Exposing the corn oil to various microwave power settings and heating periods caused the formation of hydroperoxides and secondary oxidation products. The heating reduced the various tocopherol isomers in corn oil and highest reduction was detected in γ-tocopherol. Longer microwave heating times resulted in a greater degree of oil deterioration. Microwave heating caused the formation of comparatively lower amounts of some degradative products in the oil samples heated at low-power setting compared to medium-power setting. Abstract

PurposeInnovation in facilities management (FM) is a complex process as FM is a diverse discipline. This paper aims to use innovation trajectories to explore this complex process through the introduction of a technology innovation in two FM services of security and workspace management. It also aims to consider the discourse of individuals within their trajectory to understand their positions toward the innovation.Design/methodology/approachA two‐year case study was conducted and it was based in an in‐house FM department that was part of a financial institution. The specific methods used for the paper were semi‐structured interviews with key participants of the project. Critical discourse analysis was used to examine the data.FindingsIndividuals who were involved in introducing the technology to the FM department were both internal and external to FM as innovation in FM does not happen in isolation to the organisation. Innovation trajectories were often intertwined or occurred simultaneously during the process of a project which sometimes resulted in conflict. Tensions within the discourse of ownership of the project were particularly apparent as this discourse had a power dimension in driving the project through to implementation.Research limitations/implicationsThe research is limited by being a single case study so it is not possible to generalise findings but the findings may have resonances with other organisations.Originality/valueThe paper presents an original idea about how to understand innovation processes in FM services.

Abstract

It is contended that competitiveness is better understood as a discourse rather than as a characteristic that is supposedly possessed. The discourse of competitiveness derives its legitimacy from the enterprise culture that came to dominance during the 1980s. Current popularized theories of competitiveness are constituent parts of this broader discourse, which has had significant material implications for the UK construction sector. The dominant discourse of competitiveness amongst contracting firms is shaped by the need to achieve structural flexibility to cope with fluctuations in demand. Fashionable espoused improvement recipes such as total quality management, business process re-engineering, and lean construction legitimize and reinforce the material manifestations of the enterprise culture. Abstract

The behaviour of building occupants can have a significant impact on in-use energy performance. In these pilot studies, based on the Elaboration Likelihood Model, interactivity was incorporated in the design of behavioural interventions to assess its effectiveness in promoting energy-saving behaviours. An interactive poster and an interactive prompt were designed to ‘nudge’ occupants' behaviours towards energy-saving. The poster was installed in an office building and was intended to encourage occupants to save energy by taking the stairs, rather than the lifts, by providing them with cumulative metaphorical feedback. The prompt was installed in student halls of residence and intended to act as a reminder to the occupants to turn the lights off by providing them with an immediate playful reward. The results showed that interactivity can ‘nudge’ occupants' behaviours when it is combined with a clear message/feedback. The results also suggest that simple immediate feedback can be effective in encouraging energy-efficient behaviours. Refereed/Peer-reviewed
