Crop straw resources are abundant in China, but the low nutritional value, poor palatability and other problems limit its application in feed. Microbial fermentation provides an effective way to reduce the cost and increase the efficiency of straw utilization. Saccharomyces cerevisiae, as the core component of fermentation compound, plays an important role in improving protein content, optimizing amino acid composition, improving palatability and increasing utilization rate of fermented feed. In the paper, the development of enabling feed saccharomyces cerevisiae, the effect of Saccharomyces cerevisiae on the quality of straw fermented feed and its application in ruminants were summarized, in order to provide reference for further research and application of straw fermented feed.
