Reduction and/or control of biogenic amine formation in sausage is an important subject due to its undesirable effects on human health and quality of foods. There has been no research regarding the effect of proteolytic enzymes on biogenic amines in foods. Reduction of biogenic amine formation in sucuk (Turkish dry fermented sausage) by proteolytic enzymes (trypsin and chymotrypsin) is a novel study. Besides biogenic amine, some quality (pH, colour and texture) and safety (thiobarbituric acid reactive substances (TBARS)) parameters of sucuk were investigated. Trypsin and chymotrypsin enzymes reduced (P≤0.05) biogenic amine formation significantly. However, in most times use of trypsin and chymotrypsin enzymes together result in the highest reduction effect on biogenic amine formation. Approximately 70% reduction in histamine and 47% reduction in tyramine were observed at the end of the storage period. It was observed that trypsin and chymotrypsin enzymes have significant effect (P≤0.05) on pH, thiobarbituric acid reactive substances, colour and texture. These findings emphasized that application of trypsin and chymotrypsin enzymes in sucuk was found to be effective in reducing biogenic amines formation.

Biyojen aminler amino asitlerin dekarboksilasyonuyla oluşan bileşiklerdir. Histamin, kadaverin, putresin, tiramin, triptamin, serotonin, spermin ve spermidin amino asit dekarboksilasyon reaksiyonuyla oluşan ürünlerdir. İşlenmemiş gıdalar (meyve ve sebzeler) düşük konsantrasyonda biyojen amin içerirler. Ancak, proteince zengin işlenmiş gıdalar (et ve et ürünleri, balık ve balık ürünleri, peynir, şarap) önemli miktarda biyojen amin içerebilirler. Biyojen aminler iki sebepten dolayı önemlidirler. Bunlar: (1) alerjik ve kanserojenik etkiye sahip olmaları, (2) gıdalarda kalite indikatörü olarak kullanılmalarıdır. Halk sağlığı perspektifinden dolayı, biyojen aminlerin konsantrasyonlarını ve oluşumlarını azaltma yollarını belirlemek önemlidir. Türkiye’de gıdalarda (balık dışında) biyojen aminler hakkında belirlenmiş yasal limitler bulunmamaktadır. Biyojen aminlerin insan sağlığı üzerine olumsuz etkilerini ortadan kaldırmak ve/veya azaltmak için yasal düzenlemeler yapılmalıdır. Bu derlemenin amacı, gıdalardaki biyojen aminleri ve insan sağlığı üzerine etkilerini açıklamaktır.

Olgun kerevitler (A. leptodactylus) üreme sezonunda Keban Baraj Gölü'nden pinterlerle avlanmıştır. Laboratuvara getirilen kerevitlerin karapas uzunlukları kumpasla ölçülmüş ve ağırlıkları tartılmıştır. Kerevitler −20°C'de 20 dakika boyunca bekletilerek anestezi edilmişlerdir. Daha sonra, kerevitlere diseksiyon uygulanmış ve karapasları uzaklaştırılmıştır.Üreme sisteminde makroskobik gözlemler yapılmıştır. Bütün üreme sistemi ve testisler tartılmıştır. Vasa deferens (VD) ağırlığı, Gonado-somatik indeks (GSI) ve Testiküler indeks (TI) belirlenmiştir. Dişi bireylerde yumurta sayıları ile yumurta çapı-ağırlığı belirlenmiştir. Hepatopankreas tartıldıktan sonra hepatosomatik indeks belirlenmiştir. Ayrıca, antioksidan parametreleri dişi ve erkek bireylerin gonadlarında belirlenmiş ve karşılaştırılmıştır. Glutatyon (GSH) ve katalaz (CAT) seviyeleri dişi ve erken bireylerde birbirine çok yakın değerlerde bulunmuş (p>0,05), Malondialdehyde (MDA) seviyeleri ise dişi bireylerde erkek bireylere oranla daha yüksek bulunmuştur (p 0.05), while malondialdehyde (MDA) levels were higher in female subjects than male subjects (p

Amaç: Bu çalışmamızda parçalı proksimal humerus kırığı sonrasındahemiartroplasti yapılan ileri yaş hastalarda çimentolu ve çimentosuzuygulamalarımızın sonuçlarını karşılaştırmayı amaçladık.Gereç ve Yöntem: 2008 ile 2014 yılları arasında, parçalıproksimal humerus kırığı nedeniyle hemiartroplasti yapılan hastalar ikiüniversite hastanesinin bilgi sistemi kullanılarak retrospektif olarakaraştırıldı ve en az 2 yıllık takibi olan hastalar çalışmaya alındı. Sontakiplerinde muayene bilgileri olmayan, telefon ile ulaşılamayan ve patolojikveya açık kırığı olan hastalar değerlendirmeye alınmadı. Hastaların demografikbilgileri, kırık tipi, son takipte fonksiyonel sonuç, son takipte vizüel analogskala skoru ve ameliyatından memnuniyeti, son takipte radyolojik değerlendirme,ortalama takip süresi ve komplikasyonlar çimentolu ile çimentosuz uygulamalardakarşılaştırılarak not edildi.Bulgular: Çalışmamızın kriterlerini karşılayan toplam 22 hasta (12 erkek, 10kadın)(ortalama yaş: 76,4 yıl, aralık: 67-88) çalışmaya dahil edildi. 8 hastada çimentosuz, 14 hastada ise çimentoluhemiartroplasti yapılmış ve ortalama takip süresi 38 ay idi. Ortalama öneelevasyon, eksternal rotasyon ve internal rotasyon derecesi çimentosuzhemiartroplasti yapılan hastalarda daha iyi olmakla beraber her iki gruparasında fonksiyonel açıdan anlamlı fark bulunamadı. Yine çimentosuzhemiartroplasti gurubunda ortama vizüel analog skala skoru 0,87±1,12 ikençimentolu grupta ortalama vizüel analog skala skoru 1,28±0,91 idi ve anlamlıbir fark bulunamadı (p=0,33). Radyolojik değerlendirmede gruplar arasındaanlamlı fark yoktu. Çimentolu ve çimentosuz hemiartroplasti yapılan hastagruplarında 1’er hastada periprostetik kırık görülürken, çimentosuz grubunda 1hastanın omuzunda sıkılık, çimentolu grubunda ise yine 1 hastada derin dokuenfeksiyonu saptandı.Sonuç: Proksimal humerus kırığı sonrası hemiartroplasti yapılanhastalarımızda çimentolu ve çimentosuz uygulamalarımızın fonksiyonel veradyolojik sonuçları en az 2 yıllık takiplerinde benzer olarakbulunmuştur., Aim: In this study, we aimed to compare the resultsof cemented and uncemented hemiarthroplasty results in elderly patients for thetreatment of comminuted proximal humerus fractures.Materialand Method: Between 2008 and 2014, patients whounderwent hemiarthroplasty due to comminutedproximal humerus fracture were retrospectively investigated using the datasystem of two university hospitals. Patients who were followed for at least 2years were included. Demographic information of the patients, fracture type, functionalresults at final follow-up, visual analog scale score and satisfaction status,radiological results, mean follow-up time and complications were noted.Results:A total of 22 patients (12 males, 10 females) (mean age: 76.4 years, range:67-88)(8 cemented hemiarthroplasty, 14 uncemented hemiarthroplasty) wereincluded. The mean follow-up time was 38 months. Although the mean forwardelevation, external rotation and internal rotation were better in patients whounderwent uncemented hemiarthroplasty, no significant difference was foundbetween the two groups. The mean visual analog scale score in uncemented hemiarthroplastygroup was 0.87 ± 1.12, whereas the mean visual analog scale score in cementedgroup was 1.28 ± 0.91 and no significant difference was found (p = 0.33). At radiologicevaluation, no significant difference was found. Periprosthetic fracture wasseen in 1 patient of both groups. We have seen 1 shoulder stiffness inuncemented group and 1 deep tissue infection in cemented hemiarthroplasty group. Conclusion:The functional and radiological results of our cemented and uncemented HA patientswere similar for the treatment of comminuted proximal humerus fractures in atleast 2 years follow-up.

Cadaverine and tyramine are biogenic amines that are commenly found in fermented foods. This study focused on the reduction of cadaverine and tyramine formation by a new method using proteolytic enzymes (trypsin and chymotrypsin). Cadaverine and tyramine were synthesized from lysine and tyrosine in the presence of their decarboxylase enzymes, respectively. In this study, trypsin and chymotrypsin were used separately or in combination to reduce formation of cadaverine and tyramine in model system. Tyramine synthesis was reduced by trypsin and chymotrypsin as 57.2 and 52.1%, respectively. Moreover, the reduction of cadaverine was 80.4 and 83.0% by trypsin and chymotrypsin, respectively. Maximum reduction values were obtained when trypsin and chymotrypsin were used together for the reduction of tyramine (59.1%) and cadaverine formation (84.8%). İki farklı proteolitik enzim (tripsin ve kimotripsin) ve beş farklı esansiyel yağ (biberiye, kekik, zencefil, tarçın ve karanfil yağı) sucukta biyojen amin oluşumunu azaltmak için kullanıldı. Biyojenik aminlerin yanı sıra, olgunlaşma ve depolama dönemlerinde sucuğun bazı kalite (pH, Hunter renk değerleri, doku ve genel duyusal kalite) ve oksidatif (TBARS değeri) özellikleri de takip edildi. Tripsin ve kimotripsinin biyojenik amin oluşumu üzerine etkileri ilk önce model sistemde incelendi ve biyojenik aminlerin oluşumunda önemli (p ≤ 0,05) azalmalar gözlendi. Dolayısıyla, biyojen amin oluşumunu azaltmak için enzimlerin sucuk yapımında kullanılmasına karar verildi. Tripsin ve kimotripsinin sucukta önemli (p ≤ 0.05) ölçüde kadaverin, tiramin ve histamin oluşumunu azalttığı tespit edildi. Esansiyel yağlar, sucuk hamurunda 0,1, 0,5 ve %1,0 oranlarında kullanıldı ve ölçülen kalite ve oksidatif özelliklerini önemli ölçüde artırdıkları (p ≤ 0,05) bulundu. Esansiyel yağ kullanımı, biyojenik amin oluşumunu azalttı (p ≤ 0,05). Esansiyel yağların kullanımı ile histamin, tiramin ve putresin önemli (p ≤ 0,05) ölçüde azaldı. Ayrıca, TBARS değeri esansiyel yağlar ile önemli (p ≤ 0,05) ölçüde düşdü. Sucukta biyojen amin oluşumunu azaltmak için enzimlerin (tripsin ve kimotripsin) ve esansiyel yağların (biberiye, kekik, zencefil, tarçın ve karanfil yağı) kullanılabileceği sonucuna varıldı. Use of essential oil decreased (p ≤ 0.05) the biogenic amine formation. Histamine, tyramine and putrescine significantly (p ≤ 0.05) reduced by use of essential oils. TBARS value also decreased significantly (p ≤ 0.05) in sucuk by essential oils. Satoyoshi syndrome, is a rare neuromuscular syndrome with postnatal onset and multisystemic involvement. Musculoskeletal disorders caused by painful and uncontrolled muscle spasms are important components of this syndrome. In this report, we summarize a case of Satoyoshi syndrome in a 12 year old girl with diagnosis of acquired patellar instability caused by distal femoral physeal injury caused by repetitive muscle spasms., Satoyoshi sendromu, postnatal başlangıçlı nadir görülen multisitemik tutulumu olan bir nöromusküler hastalıktır. Ağrılı kas spazmları ile karakterize bu sendromda, kas spazmlarına sekonder ortopedik bozukluklar gözlenebilmektedir. Bu olgu sunumunda, Satoyoshi sendromu tanısı olan 12 yaşında kız olguda gözlenen distal femur büyüme plağında meydana gelen değişiklikler ve buna sekonder gelişen patellar instabilite durumu özetlenmektedir.

Raw foods (fruit and vegetables) have biogenic aminein low concentrations. However, protein rich processed foods (meat and meatproducts, fish and fish products, cheese, wine) could have significant amountof biogenic amine. Biogenic amines are important due to the two reasons. Theseare: (1) they have allergic and carcinogenic effects, (2) used as qualityindicator in foods. It is important to determine biogenic amine concentrationand ways to decrease formation of them due to the public health perspective.Determined legal limits about biogenic amine in foods (except fish) are absentin Turkey. Legal regulations have to be done to remove and/or reduce theadverse effects of biogenic amines on human health. Kashar is one of the most consumed traditional cheeses in Turkey. It is produced as fresh or mature, which differ in ripening periods. Safe consumption period of kashar was investigated during refrigerated storage. Five samples of fresh and five samples of mature kashar cheeses collected from local supermarkets in Turkey were analyzed. Changes in biogenic amines, pH and thiobarbituric acid reactive substance of fresh and mature kashar cheeses were investigated during storage. Aim: Osteoid osteomais a benign bone tumor that can be located throughout the entire skeletonexcept the skull. Osteoid osteoma can be a cause of painful foot even though itis rarely seen at foot. With this paper we intend to elucidate our clinicalexpertise at such cases at foot while highlighting osteoid osteoma as adistinct cause of foot pain.Material and Method: Data were extracted retrospectively from files of ten patients withosteoid osteoma at foot.Results: There were6 (60%) lesions at metatarsal bones, 2 (20%) at talus, 1 (%10) at calcaneus and1 (%10) at distal phalange. Mean time to diagnosis was 30 months at thiscohort, while mean follow-up was 2.9 years. Conclusion: Osteoid osteomashould be considered as a distinct cause of foot pain when plain x-rays were nosufficient for diagnosis and advanced imaging modalities should be considered., Amaç: Osteoid osteoma benign bir kemik tümörü olup kafatası kemikleri hariçvücuttaki tüm kemiklerde izlenebilir. Bu çalışmanın amacı ayakyerleşimli osteoid osteoma vakalarında klinik tecrübemizi ve lezyonun ayırıcıtanıdaki yerini ortaya koymaktır.Gereç ve Yöntem: Toplamda ayakta osteoid osteoma ile takip edilen 10 hasta retrospektifolarak lokalizasyon, tedavi seçenekleri ve sonuçları açısından değerlendirildi.Bulgular: Lezyonların yerleşimlerine bakıldığında 6 hastada metatarsta (%60), 2 hastadatalusta (%20), 1 hastada kalkaneusta (%10) ve 1 hastada distal falanksta (%10) olduğuizlendi. Hastalarda tanı alma sürelerinin ortalama 30 ay iken tedavi sonrası ortalama takip süresinin 2,9 yıl olduğugörüldü.Sonuç: Osteoid osteoma ayakta yerleşimi sık olmasada direk grafilerle tanı konulamayan ayak ağrısı olgularının ayırıcı tanısındaosteoid osteoma da akla getirilmeli ve şüpheli olgularda ileri görüntülemeyöntemlerine başvurulmalıdır.

Ultrasound is versatile and innovative technology due to its wide range of application and increase in knowledge and research studies. It is used in food industry for many purposes including analysis methods and food processings such as freezing, cutting, drying, tempering, homogenization, degassing, antifoaming, filtration and extraction. Ultrasound can be used as a promoter or alternative to food processing. There may be numereous advantages of using ultrasound for food processing such as effective mixing, increased mass transfer, reduced energy, reduced temperature and increased production rate. Due to the elimination of microorganisms and enzymes without destroying nutrients of foods, ultrasound can be used as an alternative method to thermal treatments in the food preservation. Additionally, low power ultrasound is thought to be an attractive nonthermal method due to overcome problems which occur during heat treatments such as physical and chemical changes, nutritional loss and change in organoleptic properties. This review summarizes mechanism, operation and latest potential applications of ultrasound in the food preservation.

Tomato peroxidase (POD) was inactivated by heat and ultrasound. Thermal inactivation of tomato POD was performed at temperatures of 63, 64, 65, 66 and 67 °C. Thermal inactivation of POD in tomato showed apparent first-order kinetics. Ea was calculated from the slopes of Arrhenius plot and found as 14.9 × 104 J/mol. The effect of ultrasound on tomato peroxidase inactivation was investigated at 15%, 25%, 40%, 50% and 75% ultrasonic powers for 20–150 s. It was observed that as the ultrasonic power increased, inactivation rate increased. 100% POD inactivation was observed at 50% power for 150 s and at 75% power for 90 s of ultrasonication. Regeneration of POD activity was investigated for the samples exposed to ultrasound at different ultrasonic powers. It was observed that at 15% and 25% ultrasonic powers, residual enzyme activity increased linearly, whereas at powers of 40%, 50% and 75% residual enzyme activity increased nonlinearly. There was no regeneration in the samples which 100% enzyme inactivation obtained by ultrasound. A significant decrease in vitamin C content of tomato extract was observed as a function of temperature and treatment time, whereas ultrasonic treatment had no significant effect on vitamin C content of tomato extract.

Amaç: Kalça çevresi kırıklarda tespit veya kalça replasmanı kararı vermek bazen kolay olmayabilir. Tespit sonrası implant yetmezliği ihtimalini azaltmak adına femur başında tespit materyallerinin yerleştirildiği bölgelerin kemik mineral yoğunluğunun bilinmesi faydalı olabilir. Bu çalışmada rutin DEXA ölçümü ile ölçülemeyen femur başı primer kompresif trabekül bölgesinin kemik yoğunluğunu belirlemeyi ve proksimal femurun diğer bölgeleri ile olan ilişkisini belirlemeyi amaçladık. Yöntemler: Kalça kırığı nedeniyle hemiartroplasti uygulanan 29 hastadan çıkarılan femur başlarının kemik mineral yoğunlukları DEXA yöntemi ile değerlendirildi. Elde edilen ölçümler hastanın sağlam olan diğer kalça DEXA değerleri ile karşılaştırıldı. Bulgular: Ortalama femur başı primer kompresif trabekül bölgesine ait kemik mineral yoğunluğu (PK-KMY) 0.610 ± 11 (g/cm²) olarak belirlendi. Beklendiği üzere elde edilen KMD değerleri proksimal femurda rutin DEXA ölçümü ile değerlendirilen diğer bölgeler (boyun, Ward's ve toplam proksimal femur) ile uyum gözlenirken, en güçlü ilişki boyun bölgesi KMY yoğunlukları ile gözlendi. Kemik mineral yoğunluklarında cinsiyet açısından herhangi bir fark gözlenmedi. Sonuç: Beklendiği üzere primer kompresif trabekül bölgesi kemik mineral yoğunluğu ile en kuvvetlisi boyun ile olmak üzere, Ward's ve toplam proksimal femur kemik mineral yoğunluğu arasında olumlu ilişki gözlendi. Ameliyat öncesi özellikle boyun bölgesi olmak üzere, sağlam kalçanın kemik mineral yoğunluğunun ölçülmesi tespit yapılması planlanan hastalarda erken mekanik yetmezliğin önlenmesi adına faydalı olabilir., Objective: It is usually challenging to decide which hip fractures should be fixed and which should be replaced to avoid fixation failure and revision. Therefore, it may be of benefit to evaluate the bone mineral density of the fixation point of the femoral head preoperatively. In this study we tried to investigate the relationship between the bone mineral density (BMD) of the fixation point of femoral head, which is the primary compressive trabeculation area, and other parts of the proximal femur evaluated routinely during Dual-Energy X-ray absorptiometry (DXA) measurements. Methods: Retrieved femoral heads of 29 patients during hemiarthroplasty for hip fracture were evaluated using DXA. These results were correlated with the DXA measurements of proximal femora of uninvolved hips of patients. Results: Mean BMD values of retrieved femoral head primary compressive trabecular region (PC-BMD) values were 0.610 ± 11 (g/cm²). Although there were significant positive correlation of PC-BMD with neck, Ward's and total proximal femoral region as expected, highest correlation coefficient was calculated at femoral neck region. These results did not differ when patients were regrouped according to uninvolved side BMD values as osteoporotic and osteopenic. There were no difference in both sexes in this relationship between values of PC-BMD, neck BMD, Ward's BMD and total BMD. Conclusion: As expected, a positive relationship was found between PC-BMD values and neck BMD, ward's BMD and total BMD values with neck BMD revealing the highest correlation. Preoperative bone mineral densitometric evaluation of the uninvolved hip, especially the neck region seems to be helpful to evaluate the densitometric status of femoral head to predict early failure when fixation was attempted.

Objective: Bone protein extract (BPE) usually requires a carrier or a scaffold for implantation. We aimed to compare the effect of equine-derived BPE, an osteoinductive agent composed of a high amount of type-I collagen and other bone proteins (Colloss-E), with that of human demineralized bone matrix (DBM) for treating cavitary bone defects not requiring scaffold use. Methods: Rabbit distal femoral condyle was used as a stable cavitary bone defect model. Bone defects of 6-mm diameter and 10–12-mm depth were created in the femoral condyles. Rabbits were assigned into the equine-derived BPE (BPE) , human-derived DBM (DBM), and control (C) groups. Approximately 20 mg of BPE was implanted into the defect in the equine-derived BPE group (n=6), whereas 0.3 cc of DBM was implanted in the DBM group (n=6). Defects were left empty in the C group (n=6). The defect area was histologically examined after 6 weeks. Results: There were no instances of macroscopic defect collapse or failure. Histopathological examination revealed that the BPE group had better scores (statistically significant) than both the other groups in terms of quality of union. The BPE group also had higher scores than the DBM group in terms of graft incorporation and new-bone formation. Conclusion: The current study revealed results consistent with those of the previous studies concerning BPEs. Equine-derived BPE was found to be successful for treating cavitary bone defects not requiring scaffold use.

Objective: Delaying the treatment of bone and tendon injuries may cause unmanageable complications. Bonesetters continue to cause delays in treatment. The purpose of this study was to analyze the medical outcomes of delay due to bonesetter intervention and factors affecting patient treatment preference.Methods: Among outpatients treated at our clinic between January 2010–December 2012, bonesetter-intervened patients were included, and patient demographics, clinical outcomes, and possible social factors were retrospectively analyzed. Clinical examinations and radiological screening measurements were used to evaluate outcomes.Results: Of the 162 patients, 97 (59.8%) were male, and mean age was 27.5±9.4 years. Eighty-nine (54.9%) of the patients lived in a rural area, and 108 (66.7%) underwent surgery. Bonesetter preference was dictated primarily by elderly relatives (47.6%) or neighbors (33.3%).
