Marul ve domateste hasat sonrası süreçlerdeki iyi ve yanlış uygulamalar, sonucu oluşan kayıpların miktarı reel tedarik zinciri koşullarında belirlenmiştir. Çalışmada ticari kayıpların yanı sıra, ürünlerin besin içerikleri ve mikrobiyolojik kalitesindeki değişimler de ölçülmüştür. Sonuçlar, marul ve domateste hasat sonrası süreçlerdeki iyi uygulamaların ağırlık kaybında, sırasıyla, üç ve dokuz kat azalmayla sonuçlandığını göstermiştir. Hasat sonrası süreçte, ürünün perakende-teşhiri ve nakliyesinin, kaliteyi etkileyen en kritik tedarik zinciri aşamaları olduğu belirlenmiştir. Hasat sonrası süreçte yapılan yanlış uygulamaların ürünlerin besin kalitesi üzerine etkisi ise ürüne ve bileşiğe bağlı olarak farklılıklar göstermiştir. Buna karşın, hasat sonrasındaki yanlış uygulamaların ürünlerin mikrobiyal kalitesini olumsuz etkilediği de belirlenmiştir. Sonuç olarak, hâlihazırda bilinen hasat sonrası süreçlerdeki iyi uygulamaların, ürün tedarik zincirlerinde bütünsel bir bakış açısıyla kullanılması durumunda hasat sonrası kayıpların büyük ölçüde engellenebileceği belirlenmiştir., The amount of losses caused by good (GHP) and poor (PHP) practices in the post-harvest processes of lettuce and tomato was determined under real supply chain conditions. Along with the commercial losses, changes in the nutritional and microbiological quality of crops were also quantified. The results showed that the weight loss of lettuce and tomato was reduced three and nine-fold, respectively by GHP during supply chains. The retail-display and transportation of the product in the postharvest process were determined to be the most critical supply chain stages affecting quality. The nutritional quality of crops exposed to PHP has shown differences by both crop and compound. The microbial quality of the produces, however, was adversely affected by the poor postharvest handling practices. In conclusion, still huge amounts of postharvest losses can be avoided if already known good postharvest handling practices are employed with a holistic perspective in produce supply chains.

Golden Delicious) dilimlerinin ve mantarın (Agaricus bisporus) anaerobik katabolizması ve kalite kriterleri üzerindeki etkileri araştırılmıştır.Bu çalışmayı gerçekleştirmek için, hazırlanmış elma dilimleri ve mantarlar hava geçirgenliği olmayan 1.5 litrelik cam kavanozlara konarak içleri 100 kPa kısmi basınçta test edilecek gazla doldurulup 10 °C de muhafaza edilmiştir. Oluşan anaerobik koşullar altında, CO2 üretimi, artık (dokularda tutulan) oksijen tüketimi, solunum hızlan, fermantatif indeks (Fi), etanol üretimi, renk ve sertlik değerleri ölçülmüştür. Ayrıca, elma dilimlerinin toplam şeker muhteviyatındaki (TSC) değişiklikler analiz edilmiştir. Sonuç olarak, soy gazların, nitrus oksitin ve azotun uygulanan koşullar altında elma dilimlerinin ve mantarın solunumunu, fermantasyonunu ve çalışılan kalite kriterleri (renk, sertlik, doku etanol üretimi ve şeker muhteviyatı) üzerinde yavaşlatıcı bir etkisi olmadığı anlaşılmıştır. Diğer bir değişle, bu gazlar her iki ürünün de anaerobik katabolizma hızlarım değiştirmemiştir. Buna karşın, elma dokusunda meydana gelen hafif kararma, sertlik kaybı ve TSC 'deki değişikliklere doku tarafından tutulan oksijenin sebeb olduğu düşünülmüştür. VI ABSTRACT EFFECT OF NOBLE GASES ON THE ANAEROBIC CATABOLISM AND QUALITY ATTRIBUTES OF APPLE SLICES AND MUSHROOMS ÖZDEMİR, Ibrahim Sard M.Sc, Department of Food Engineering Supervisor: Prof. Dr. Fatih YILDIZ Co-Supervisor: Prof. Dr. Faruk BOZO?LU September 2001, 61 pages In this research, effects of noble gases, He, Ar, Ne (only for mushrooms), and N2O on the anaerobic catabolism and quality attributes of the apple slices (Malus sylvestris Mil, cv. Golden Delicious) and mushroom (Agaricus bisporns) were investigated and compared with the effect of N2. To achieve this goal, prepared apple slices and mushrooms were put into 1.5 litre airtight glass jars and headspace of the jars were filled with 100 kPa partial iiipressures of tested gases and stored at 10 °C. Under attained anaerobic conditions, CO2 production and residual oxygen (kept in the tissues) utilization, respiration rates, fermentative index (FI), ethanol production (headspace and tissue), color and firmness of both products were measured. Also changes in total sugar content (TSC) in apple tissues were analyzed. It was found that, noble gases, nitrous oxide and nitrogen do not inhibit respiration, fermentation and displayed no in vivo effect on the quality attributes studied; color, firmness, tissue ethanol production and sugar content (only for apple slices) of mushroom and apple slices under the applied conditions, and so they do not change the rate of anaerobic catabolism in either product. Residual oxygen kept in the tissues caused slight browning, loss in texture and variation in the change of TSC of the apple tissues. FI and tissue ethanol production rates of mushrooms much more varied in duplicate experiment than in apple slices due to heterogeneity of this plant model, thus preventing comparisons. Increasing amounts of CO2 were thought to be responsible for the yellow discoloration and firmness retention. A mathematical model based on Michaelian respiration rate and an empirical fermentative index equation has been developed to predict the changes in headspace gas concentration within glass jars.
