4. Beneficios del uso de vitamina C en el paciente séptico: ¿qué tanto la apoya la evidencia esta indicación?

Objetivo: resumir y analizar la evidencia más reciente sobre el efecto de la administración de vitamina C en el paciente con sepsis. Métodos: revisión narrativa. Se realizó una búsqueda bibliográfica, utilizando los términos de búsqueda “Vitamina C” y “Sepsis”, además de sinónimos, los cuales fueron combinados con los operadores “AND” y “OR”, en las bases de datos PubMed, ScienceDirect, Web of Science, y MEDLINE. Resultados: basados en los últimos estudios celulares y moleculares, se ha evidenciado que la vitamina C posee propiedades antioxidantes, antiinflamatorias, y microbicidas, pudiéndose obtener cierto beneficio de su uso en sepsis. Mientras algunos ensayos controlados aleatorizados han encontrado un incremento del riesgo de hasta el 20% de morir o presentar falla orgánica persistente, otros han observado una disminución de la mortalidad de hasta un 40%, además de la estancia hospitalaria y duración de ventilación mecánica. Conclusión: a la fecha, la evidencia es heterogénea respecto al posible beneficio en el uso de vitamina C intravenosa como terapia sola o combinada en el manejo del paciente con sepsis o shock séptico. Mientras los ensayos controlados aleatorizados parecieran demostrar ausencia de beneficio, principalmente respecto a mortalidad o persistencia de falla orgánica a los 28 días, algunos meta-análisis tienden a mostrar una reducción del riesgo de muerte. Por lo tanto, sigue faltando evidencia que amplíe este panorama.

Background: Oxidative stress increases oxidizability of apolipoprotein-B containing lipoproteins and decreases paraoxonase (PON) activity in hemodialysis (HD) patients and plays an important part in the development of atherosclerotic cardiovascular diseases. In HD patients, plasma ascorbic acid (AA) levels are decreased either due to the loss by hemodialysis membranes or due to malnutrition and contribute to the imbalance of antioxidant defense mechanisms. We hypothesized that long-term ascorbic acid (AA) supplementation recovers oxidizability of lipoproteins in HD patients by reinforcing PON activity. Methods: Twenty-nine adult patients were treated with 100 mg and 500 mg AA at the end of each HD session thrice a week for two consecutive 16 weeks-periods, respectively. La enfermedad producida por el SRAS-CoV2 (COVID-19) provocó una crisis sanitaria mundial. La Organización Mundial de la Salud muestra cifras de una elevada morbilidad y mortalidad y por tal motivo es imprescindible profundizar en los aspectos epidemiológicos, clínicos del diagnóstico y el tratamiento para enfrentar y vencer esta enfermedad. Algunos investigadores han demostrado que el uso de la vitamina C, tanto de los alimentos así como de suplementos vitamínicos por vía oral o intravenosa, tiene un efecto positivo en el organismo. El efecto potencial de la vitamina C es la reducción de la inflamación pulmonar que podría desempeñar un papel clave en la lesión pulmonar causada por la infección por coronavirus.

8. O efeito do ácido ascórbico tópico na cicatrização cutânea

Introdução: A ferida cirúrgica apresenta altos níveis de radicais livres em resposta ao dano cutâneo, o que gera a hipótese de um possível benefício do uso de antioxidantes no reparo destas feridas, tal como a aplicação tópica do ácido ascórbico. No entanto, pesquisas recentes obtiveram conclusões discrepantes para este tipo de tratamento. O objetivo é avaliar o efeito do ácido ascórbico tópico na cicatrização cutânea por meio de uma revisão de escopo. Métodos: A revisão de escopo foi realizada na base de dados Medline, Lilacs e Cochrane, com os descritores: ácido ascórbico, creme para a pele e cicatrização de feridas. Foram definidos como critérios de inclusão: ensaios clínicos randomizados, observacionais e revisões sistemáticas, em humanos, com data de publicação de até 5 anos, nas línguas inglesa, portuguesa ou espanhola. Foram excluídas: revisões narrativas, dissertações, teses, editoriais, estudos in vitro e em animais. Por fim, foi realizada a classificação dos estudos através da metodologia GRADE. Resultados: Foram encontrados 83 estudos e, após triagem, seis artigos foram selecionados. Destacou-se o uso do ácido ascórbico na concentração de 5 a 20% e de seus derivados (0,075% a 9,55%). Apresentaram a qualidade GRADE moderada os desfechos: aumento da firmeza cutânea e redução da vermelhidão, e alta qualidade: melhora na hidratação, elasticidade, colorometria das manchas e melhora do fechamento das feridas. Conclusão: O ácido ascórbico promove melhor elasticidade cutânea, diminuição do eritema e melhor fechamento das feridas. Apesar destes fortes indícios, ensaios clínicos randomizados com menor risco de viés de aferição e com maior casuística ainda se fazem necessários.

The production of bioactive food is one of the goals of agriculture. Sprouts used for human consumption are an efficient way to increase the intake of essential nutrients, such as minerals, vitamins, and other bioactive compounds. The use of elicitors can increase the nutritional value of these products. Biomass production, phenolic compound content, and antioxidant activity of mung bean sprouts (Vigna radiata L.) after elicitation were examined in this study. Mung bean sprouts were treated with salicylic acid (SA), ascorbic acid (AA), and tocopherol (TOC) at different concentrations and numbers of applications. Shoot and root lengths and dry mass were measured on five-day-old sprouts. Total phenol content and antioxidant activity were determined using the DPPH assay on dried ethanolic extracts. Total soluble protein content and superoxide dismutase activity were measured in frozen hypocotyls. All elicitors stimulated the antioxidant functions of sprouts and, at the highest concentrations, reduced the biometric parameters; therefore, lower concentrations were better. For the first time, a balance between elicitor concentration and application in instalments was achieved to maintain the production of sprouts with enhanced nutritional characteristics. Se evaluó el efecto del lipopolisacárido (LPS) de Escherichia coli (2mg LPS/Kg de peso húmedo) y del amonio disuelto (5 mg/L), en las concentraciones de ácido ascórbico (AA) en el músculo y el hepatopáncreas de Litopenaeus schmitti. A las 24 horas de la inyección de LPS, las concentraciones de AA en el hepatopáncreas y el músculo fueron significativamente más bajas que en el control. Las altas concentraciones de amonio provocaron a las 169 horas un decrecimiento en los valores de AA, tanto en el músculo como en el hepatopáncreas. Los resultados obtenidos evidencian que el estrés causado por LPS y por el amonio, incrementó la demanda de AA en los tejidos analizados. Esto podría resultar en un mayor requerimiento de AA para responder a estas necesidades.

13. Degradación térmica de ácido ascórbico en jugo de limón

El limón (Citrus aurantifolia), se destaca como una de las fuentes abundantes de ácido ascórbico (vitamina C). La disponibilidad de dicha vitamina puede ser reducida significativamente durante el procesamiento industrial del limón por acción de la temperatura, entre otras variables de interés. El objetivo de este trabajo es evaluar la degradación térmica del ácido ascórbico en el jugo de limón para las relaciones temperatura-tiempo 65ºC, 75ºC, 85°C y 95°C a los 5, 10, 15 y 20 min, usando el método de titulación yodométrica. El jugo tanto fresco como tratado térmicamente, se caracterizó en términos de pH y grados Brix. Se determinó que la concentración de ácido ascórbico en el jugo de Citrus aurantifolia se redujo cerca del 40% respecto a su concentración inicial, al exponerlo a 75ºC durante 20 min. Se constató que, en todos los casos evaluados, la degradación de la vitamina C sigue una cinética de orden. Los resultados de esta investigación pueden conducir a mejorar la estabilidad del ácido ascórbico en los derivados del limón. De acuerdo con los resultados obtenidos en cuanto a concentración de ácido ascórbico, ºBrix y pH, se sugiere el uso de temperaturas de operación entre 65ºC y 75ºC con tiempos de cocción entre 15 y 20 min, de modo que se obtengan productos procesados derivados del limón donde se conserven las características de la fruta fresca y se potencie su comercialización.

Contextualization: Matrix Engineering uses the vacuum impregnation technique [IV] to confer added value to porous food structures. Knowledge gap: Is the application of antioxidant solutions effective, using the vacuum impregnation process, to control the browning on fresh hearts of Iraca palm? Purpose: The object of the investigation was to [experimentally] optimize a formulation of antioxidants, with the technique of IV, to improve the color of hearts of Iraca palm (PI) with diameters between 10 - 12 mm and length of 4 cm. Methodology: To evaluate the formulation was used a response surface methodology, with a central compound design, [α=1], considering these independent variables [VI: citric acid [CA] [100-300 mg for each 100 g of PI], ascorbic acid [AA] [12-24 mg for each 100 g of PI), sodium bisulfite [SB] [500-1500 ppm]. The dependent variables valuated were [VD]: volumetric fraction of impregnation and volumetric deformation in the vacuum stage [X1 and g1 respectively], fraction and final volumetric strain [X and g, effective porosity of IV [Ee], and color changes in the longitudinal and radial zones [ΔELongitudinal y ΔERadial respectively] after 3 days of storage under refrigeration. In addition, the formulation contained NaCl [0,6 %] and ethylenediaminetetraacetic acid [75 mg for each 1000 g PI]. Besides, the IV process was effected under these conditions: PI with diameters between 10 and 12 mm and 4 cm length, vacuum pressure [4,1 kPa], atmospheric pressure [85,3 kPa], time in vacuum [4,5 minutes] and time according to the atmospheric pressure [4,0 minutes]. Results and conclusions: The formulation of the impregnation suspension, used for the optimization, was determined as follows: CA = 165,8 mg for each 100 g of PI, AA = 16,5 mg for each 100 g of PI, and SB = 1500 ppm; The IV parameters were: X1 = 17,1%, g1 = 0,131%, X = 20,0%, g = -0,645% y Ee = 23,6%, and the effect of the impregnation solution allowed the following values: ΔELongitudinal = 4,9 y ΔERadial = 9,1. PI contains a food matrix suitable for the IV process with antioxidant solutions, allowing the control of the enzymatic browning in its structure. Additionally, the VI technique used provides alternatives for the incorporation of active compounds to PI; as flavor and texture improvers, among others, that will contribute to generate a greater value in the food production system. Las operaciones logísticas juegan un papel crucial en el comercio global, generando impacto en las operaciones a nivel internacional. Por consiguiente, el estudio se centra en evaluar la operación logística internacional para la importación desde China a Colombia del producto estabilizante Goma xantana y el producto antioxidante Ácido ascórbico, utilizados en la industria farmacéutica y de alimentos. Para ello, se presentan criterios de selección para las empresas proveedoras de los productos, su posterior transporte y recepción aduanera en Colombia, definiendo indicadores principales para la evaluación, los tiempos de operación, los costos asociados a la gestión del proceso logístico total, y la calidad del servicio. Se obtuvieron como resultados los balances de calidad, costos y tiempos para un grupo de compañías proveedoras identificadas, así como para las compañías transportadoras según los incoterms de servicios. Se concluye que la calificación presentada para las compañías proveedoras y transportadoras Graceman ofrece las características idóneas adecuadas para el proceso logístico internacional de importación a Colombia.

19. Mermelada de arándano y frambuesa: evaluación sensorial, nutricional y de aceptabilidad

El objetivo de esta investigación fue obtener una mermelada realizada con mix de arándano (Vaccinium corymbosum L.) y frambuesa (Rubus idaeus L.) orgánicos como materia prima, sellado al vacío y endulzado con azúcar granulada orgánica y/o stevia en polvo orgánica, para su posterior evaluación nutricional, sensorial y de aceptabilidad. Los análisis nutricionales realizados fueron: i) ácido ascórbico (Vitamina C); ii) azúcares totales; iii) ácido cítrico (acidez); iv) °Brix y v) pectato de calcio (pectina). Los análisis sensoriales realizados, se elaboraron a través de una cartilla de evaluación sensorial; sobre la cual, se determinó el sabor, color, textura y aroma; además de realizar la medición de aceptabilidad en conjunto con los panelistas. De acuerdo con los resultados obtenidos en las mermeladas elaboradas, se presentaron los valores promedio mayores en concentración de ácido cítrico (1.47%) y pectado de calcio (0.57%), respectivamente (T0); los valores más altos en referencia a °Brix (60.46); azucares totales (0.8%); color y textura, los aportó T1; con T3, se obtuvieron los promedios más altos en concentración de ácido ascórbico (25.7mg), sabor, aroma y aceptabilidad. De este modo, fue factible la realización de mermeladas con base en arándanos y frambuesas orgánicas selladas al vacío y en términos de composición, se logró la afectación de los valores nutricionales, organolépticos y de aceptabilidad.

21. Influencia de soluciones antioxidantes de impregnación sobre cogollos frescos de palma de iraca

Contextualización: La Ingeniería de matrices utiliza la técnica de impregnación al vacío (IV) con el objetivo de conferir valor agregado a estructuras alimentarias porosas. Vacío de conocimiento: ¿es efectiva la aplicación de soluciones antioxidantes en el proceso de impregnación al vacío para controlar el pardeamiento de los cogollos frescos de palma de iraca? Propósito: El objetivo de la investigación fue evaluar el efecto de soluciones antioxidantes sobre la dinámica del proceso de IV y el color de cogollos frescos de palma de iraca (CFPI) con diámetros entre 10 - 12 mm y longitud de 4 cm. Metodología: Se utilizó la metodología de superficie de respuesta, con un diseño central compuesto (a = 1), considerando las variables independientes: ácido cítrico (AC) (100, 200 y 300 mg/100 g CFPI), ácido ascórbico (AA) (12, 18 y 24 mg/100 g CFPI), bisulfito de sodio (BS) (500, 1000 y 1500 ppm) y las variables dependientes: fracción volumétrica de impregnación y deformación volumétrica en la etapa de vacío (X1 y g1 respectivamente), fracción y deformación volumétrica final (X y g), porosidad efectiva de IV (Ee) y los cambios de color en la zona radial y longitudinal (DELongitudial y DERadial respectivamente) con 3 días de almacenamiento bajo refrigeración. Adicionalmente, las formulaciones contenían NaCl (0,6 %) y ácido etilendiaminotetraacético (75 mg/1000 g CFPI), y las condiciones del proceso IV fueron las siguientes: presión de vacío (4,1 kPa), presión barométrica local (85,3 kPa), tiempo etapa de vacío (4,47 min) y tiempo a presión barométrica local (3,97 min). Resultados y conclusiones: La optimización experimental definió la formulación de la solución de impregnación así: AC = 165,8 mg/100 g CFPI, AA = 16,5 mg/100 g CFPI y BS = 1500 ppm, siendo los parámetros de IV: X1 = 17,1 %, g1 = 0,131 %, X = 20,0 %, g = -0,645 % y Ee = 23,6 %, donde el efecto de la solución de impregnación controló el pardeamiento enzimático que experimenta la estructura: DELongitudinal = 4,9 y DERadial = 9,1.

Objetivo: comparar a efetividade entre o uso de ácido ascórbico e solução fisiológica 0,9% na prevenção de obstrução de cateter venoso central pediátrico. Método: ensaio clínico randomizado realizado em Hospital Público do Paraná, entre os meses de junho de 2018 a outubro de 2019 com 152 participantes, dos quais, 73 do grupo experimental e 79, grupo-controle) que foram submetidos à inserção de cateter venoso central e randomizados para receber a intervenção flush com ácido ascórbico ou solução fisiológica 0,9%. Resultados: obstrução do cateter ocorreu em 17 casos (11,2%), sendo nove (11,4%) no grupo- controle e oito (10,9%) no grupo experimental. Obstrução trombótica ocorreu em 15 casos, de forma semelhante, nos dois grupos (p=0,88). A remoção do cateter ocorreu em 82 casos por questões eletivas e, em 63 casos, por complicações. Conclusão: o uso de ácido ascórbico é tão eficiente quanto a solução fisiológica a 0,9% na prevenção da obstrução de cateter venoso central. O estudo amplia as possibilidades de intervenções dentro da temática.

Vitamin C is of great importance for the body, being necessary for the formation of blood vessels, cartilage, muscle, collagen and for the healing process, so its deficiency in the body, known as hypovitaminosis C, can cause problems such as anemia, bleeding gums, bruising and poor healing. Thus, the present work, through a bibliographic review of scientific articles found on digital platforms, seeks to talk about the role and use of ascorbic acid (AA); Talking about the history of vitamin C, its effects on tissue metabolism, as well as presenting the pharmacological application of vitamin C, addressing its effects on the body, emphasizing the importance of daily use of this vitamin and its benefits for human life and health, in order to inform society about the benefits linked to its use as well as to warn of the risks of lack of this vitamin. Taking into account what was observed, it was possible to perceive the importance of the need to maintain a healthy diet rich in vitamin C, since a deficient diet of this vitamin can cause tiredness, weakness, irritation while a more severe deficiency can cause scurvy. With this, it is essential to look for a competent professional so that he can make the diagnosis, and if it is necessary to use food supplementation of this vitamin via medication. Some microorganisms are responsible for food spoilage and foodborne infections worldwide. These microorganisms are becoming increasingly resistant to degradation or inhibition due to exposure to antibiotics, antifungal, and antiparasitics, posing a growing threat to human health. The aim of this study was to describe the antimicrobial properties of compounds present in Myrciaria dubia (pulp, seed, peel, and leaves) against bacteria (Staphylococcus spp., Escherichia coli, Salmonella and others), yeasts (Candida albicans and Saccharomyces cerevisiae) and parasitic protozoa (Leishmania amazonensis and Plasmodium falciparum). Different papers published in the main databases (Scopus, ScienceDirect, PubMed, Wiley Online Library, as well as in university repositories) were reviewed. These results were analyzed and organized according to their inhibitory activity, attributable metabolic actions of this plant, mainly based on its phenolic compounds present (rhodomyrtone, isomyrtucommulone B, myrciarone B, trans-resveratrol, 2.4-dihydroxybenzoic acid, myricetin, syringic, ellagic acid and casuarictin), which can inhibit the synthesis or destabilize the microbial membrane, nucleic acids, cell walls in bacteria and mitochondrial dysfunction in protozoa. This study evaluated the effects of temperature on the pH of extracts of ascorbic acid and anthocyanins from petals of butterfly pea, as well as their in vitro digestive stability in model systems at 60, 70, and 80 °C. The pH values significantly decreased with an increase in the temperature (P < 0.05). The findings were similar for the degradation of anthocyanins and ascorbic acid, which followed first-order kinetics in all the systems. This research aims to verify the effectiveness of the topical use of vitamin C as a preventive treatment in premature skin aging. This is an integrative literature review, using existing scientific articles as a source of data. To survey the articles, searches were carried out in the following databases: LILACS, Dialnet, Medline and Scielo, using the descriptors: ascorbic acid; vitamin C; antioxidant; free radicals and skin aging. The studies evaluated suggest that premature skin aging can be mitigated through the use of cosmetics that contain vitamin C in their composition, since its antioxidant action promotes deep hydration, making the skin bright, young and healthy, in addition to preventing and softening wrinkles. and expression lines, increasing skin elasticity and promoting collagen synthesis. A pandemia pelo coronavírus, foi decretada no dia 30 de janeiro pela OMS, porém ela teve início em dezembro de 2019 na China. Com o estudo, objetivou-se contribuir com informações relacionadas ao fortalecimento do sistema imunológico, associado ao contexto atual do COVID-19, com ênfase ao consumo de frutas fontes de vitamina C. O estudo trata-se de uma revisão de literatura simples, com estudos disponíveis em bancos de dados como o Google Acadêmico, Periódicos Capes, SciELO, além de outros documentos científicos, nos idiomas inglês e português. A partir dos resultados, afirma-se que a alimentação saudável e em níveis adequados de micronutrientes, principalmente por meio da ingestão de frutas fontes de vitamina C, previnem e reduzem a gravidade de doenças infecciosas do trato respiratório. Dessa forma, conclui-se que, o sistema imune é essencial para o enfrentamento do COVID-19, pois através da alimentação equilibrada ocorre o fortalecimento e potencialização do mesmo, auxiliando no tratamento de enfermidades. Porém, mais estudos são necessários para a comprovação efetiva do efeito dessa vitamina relacionada a prevenção e ao tratamento do coronavírus. 31. A vitamina C na esquizofrenia apresenta benefício? Estudo preliminar com análise comportamental em ratos

RESUMO Objetivo O objetivo deste estudo foi analisar em ratos modelos de esquizofrenia, induzidos pela administração de cetamina, a possibilidade dos efeitos benéficos do ácido ascórbico na esquizofrenia, por meio do teste comportamental. Métodos O estudo preliminar foi simples-cego e randomizado. Foi realizado o protocolo de psicose por cetamina em 24 ratos Wistar submetidos posteriormente à análise comportamental. No primeiro grupo, foram administradas: água e cetamina; no segundo: ácido ascórbico e cetamina; no terceiro: antipsicótico, ácido ascórbico e cetamina; e no quarto: antipsicótico, água e cetamina. A análise comportamental foi feita por meio do Open Field Test, considerado o método-padrão para avaliar comportamento em modelos animais de esquizofrenia. A análise estatística foi realizada pelo software IBM-SPSS, por meio dos Modelos Lineares Generalizados. Resultados O tratamento em monoterapia de haloperidol (Média Quadrante: 44,5 ± 15,8; IC: 13,54-75,46/Média Centro: 2,67 ± 0,67; IC: 1,63-4,35) e aquele em conjunto com a vitamina C (Média Quadrante: 38,67 ± 15,8; IC: 7,71-69,52/Média Centro: 2,00 ± 0,58; IC: 1,14-3,52) demonstraram benefícios nos ratos modelos de esquizofrenia induzidos por cetamina (Média Quadrante: 108,5 ± 15,8; IC: 77,54-139,46/Média Centro: 11,33 ± 1,37; IC: 8,94-14,37) (p < 0,001). O tratamento isolado com a vitamina C não apresentou resultado significante (Média Quadrante: 62,00 ± 15,8; IC: 31,04-92,96/Média Centro: 7,00 ± 1,08; IC: 5,17-9,47). Conclusão A associação de antipsicótico e vitamina C e somente o antipsicótico demonstraram efeito terapêutico em relação aos controles. A vitamina C isolada não apresentou benefício.

Algunos de frutos de la familia Annonaceae son apreciados por sus cualidades organolépticas, digestivas, nutritivas, alimenticias, medicinales e industriales. Aunque existe información sobre el valor nutricional de algunas especies como Annona muricata (guanábana) y A. cherimola (chirimoya), otras destacan por sus propiedades medicinales y toxicidad. Sin embargo, se desconoce el potencial antioxidante y nutracéutico de la mayoría de ellas, como el de A. purpurea (chincuya). El objetivo de esta investigación fue evaluar la calidad nutricional y nutracéutica (compuestos fenólicos, flavonoides y ácido ascórbico) de tres especies de anonáceas: guanábana, chirimoya y chincuya, así como determinar la toxicidad de extractos metanólicos de pulpa, cáscara, semillas y hojas de estas especies a través de un bioensayo con Artemia salina, con la finalidad de contribuir al conocimiento científico de especies con potencial nutracéutico y económico de México. El fruto de chirimoya fue el que presentó la mayor concentración de proteína cruda (1.89 %), carbohidratos (20.65 %), los valores más altos de minerales (Ca, P, Mg, Na, Fe y Zn), compuestos fenólicos (366.27 mg EAG 100 g-1 p. f.) y ácido ascórbico (48.36 mg EAA 100 g-1 p. f.). De acuerdo con la correlación de Pearson, la mayor actividad antioxidante se asoció con el contenido de compuestos fenólicos y ácido ascórbico; el fruto de guanábana superó a las dos especies restantes en los niveles de lípidos (0.31 %) y flavonoides (10.13 mg EQ 100 g-1 p. f.). Finalmente, los extractos de semillas de chincuya y de chirimoya resultaron extremadamente tóxicos (CL50 = 5.0 ppm) para A. salina, mientras que el extracto de pulpa de guanábana se clasificó como muy tóxico (CL50 = 67.5 ppm); de acuerdo con los criterios reportados en otras investigaciones extremadamente tóxico (CL50 ≤ 10 ppm) y muy tóxico (CL50 10 - 100 ppm).

Some of the fruits of the family Annonaceae are appreciated for their organoleptic, digestive, nutritional, dietary, medicinal, and industrial properties. Although there is information about the nutritional value of some species such as Annona muricata (soursop) and A. cherimola (cherimoya), others are noted for their medicinal properties and toxicity. However, the antioxidant and nutraceutical potential of most of them, such as that of A. purpurea (chincuya), is unknown. The objective of this research was to evaluate nutritional and nutraceutical quality (phenolic compounds, flavonoids, and ascorbic acid) of three species of Annonaceae: soursop, cherimoya and chincuya, as well as to determine the toxicity of methanolic extracts of pulp, peel, seeds, and leaves of these species through a bioassay with Artemia salina, in order to contribute to the scientific knowledge of species with nutraceutical and economic potential in Mexico. The cherimoya fruit presented the highest concentration of crude protein (1.89 %), carbohydrates (20.65 %), the highest values of minerals (Ca, P, Mg, Na, Fe and Zn), phenolic compounds (366.27 mg EAG 100 g-1 F.W.) and ascorbic acid (48.36 mg EAA 100 g-1 F.W.). ); according to Pearson's correlation, the highest antioxidant activity was associated with the content of phenolic compounds and ascorbic acid; soursop fruit was higher than the other two species in lipid (0.31 %) and flavonoid levels (10.13 mg EQ 100 g-1 F.W.). 36. Influencia de las condiciones de almacenamiento en la degradación de vitamina C

En este trabajo se estudia la influencia de las condiciones de almacenamiento y la adición de azúcar en la degradación de la vitamina C presente en los jugos frescos de maracuyá, pitahaya, limón y grosella. Se almacenaron muestras a 8 y 28 ºC con y sin adición de azúcar durante ocho horas a fin de monitorear la variación en la concentración de la vitamina C presente. Para ambas temperaturas, los jugos de maracuyá y pitahaya se ajustaron a una cinética de orden cero cuando se adicionó azúcar y primer orden sin adición de esta, mientras que los jugos de limón y grosella, respondieron una cinética de primer orden para todas las condiciones de estudio. La velocidad de reacción aumentó en las muestras que no contenían azúcar y cuya temperatura de almacenamiento fue 28ºC. El tiempo de vida media promedio fue de 4,14 horas y el porcentaje de pérdida de vitamina C estuvo entre un 40 y 80%, siendo la pitahaya la que presentó mayor concentración a lo largo del tiempo. Se concluye que las condiciones de almacenamiento influyen en la degradación de vitamina C presente en los jugos cítricos frescos.

Condiciones inadecuadas de almacenamiento pueden afectar las características sensoriales, fisicoquímicos y propiedades funcionales en frutos tropicales como Pouteria lúcuma; que es una fruta climatérica, de aroma y sabor agradable; siendo el Perú el principal productor y exportador de esta fruta, no se han estudiado condiciones de almacenamiento postcosecha que permitan mantener sus propiedades. El objetivo de la investigación fue evaluar el efecto de las condiciones de almacenamiento sobre los principales componentes fisicoquímicos, metabolitos primarios y secundarios, capacidad antioxidante e hipoglucemiante durante la maduración postcosecha, en dos condiciones de almacenamiento: ambiente (29 °C y 70% HR) y cámara climatizada (15 °C y 90% HR). Con relación a las características fisicoquímicas, el estado de madurez influyó en la acidez, pH, azúcares reductores, almidón, fibra dietaría, firmeza, color de pulpa y epicarpio. En almacenamiento en cámara climatizada, la glucosa es el único metabolito que se incrementó; mientras que la fructosa, los azúcares alcohol y los aminoácidos (Ala y Val), presentan valores superiores en condiciones ambientales; la sacarosa, ácidos orgánicos, aminoácidos (Tyr, Glu, Asp y Thr), β-caroteno, compuestos fenólicos totales y carotenoides totales no fueron afectadas por el tipo de almacenamiento. La medida de la capacidad antioxidante e hipoglucemiante disminuyeron significativamente (p < 0,05), mostrando ser afectadas solo por el estado de madurez. El estudio del perfil de carotenoides en función de su espectro (UV-vis) mostró presencia del grupo de las xantofilas. Los resultados indicarían que el estado de madurez respecto a la condición de almacenamiento tuvo efecto sobre la mayoría de los cambios estudiados.

Cashew is a fruiting specimen exported from different countries, including Venezuela, due to its high nutritional value and unique taste. However, only the fruit (cashew nut) is considered the most used part for consumption while the pseudo-fruit (cashew apple) is discarded due to its strong taste and smell. This study is based on the changes that occur in the physical and chemical composition of the pseudo-fruit of cashew (Anacardium occidentale L.) in different days of storage (0, 3, 6, 9, 12) related to the color analysis of the pseudo-fruit. Image analysis was performed using the CIELab color space, which revealed different maturity stages for samples from day 0 to day 12. Nevertheless, antioxidant activity refers to ascorbic acid, and polyphenols content showed a degradation before day 6 of storage. These results prove that cashew apples can be stored for long-term at room temperature (25 °C), but the color and physico-chemical properties suffer some changes decreasing their nutritional value after day 6 of storage. A correlation between image analysis and chemical parameters can be used to evaluate the optimal maturity stage in samples. [ABSTRACT FROM AUTHOR]

Objetivo: Determinar el efecto que ejerce la administración de hierro hemo y la de sulfato ferroso con vitamina C en hígado y cerebro de rata. Materiales y métodos: Se utilizaron ratas albinas Holtzman mantenidas en un bioterio con temperatura de 22 ± 2° C, humedad entre 50 y 70 % y 12 horas de luz y 12 horas de oscuridad, que recibieron 4,0 mg de hierro elemental/ kg p.c. bajo la forma de hierro hemo o como sulfato ferroso + 10 mg de vitamina C durante siete días, a cuyo término se sacrificaron y se les extrajo sangre, hígado y cerebro. Se hicieron los cortes histológicos que se trataron con hematoxilina-eosina para la observación microscópica y en el suero se midió la capacidad antioxidante. Resultados: Los cerebros de las ratas que recibieron tratamiento con hierro hemo y sulfato ferroso + vitamina C no sufrieron alteraciones significativas, mientras que los cortes histológicos de hígado de ratas tratadas con hierro hemo mostraron un parénquima sin distribución polar, algunos núcleos carentes de citoplasma y numerosas células de Küpffer a nivel del sinusoide. En cambio, las ratas que fueron tratadas con sulfato ferroso + vitamina C presentaron un parénquima hepático deteriorado notablemente, algunas áreas con núcleos sueltos sin citoplasma y otras con citoplasma cuya membrana había desaparecido. Además, en algunas zonas, el parénquima hepático se encontraba homogenizado. Conclusiones: Los cerebros de las ratas tratadas con hierro hemo y las que recibieron sulfato ferroso + vitamina C prácticamente no sufrieron modificación alguna, en cambio, el hígado de las ratas tratadas con sulfato ferroso + vitamina C presentaron mayor daño hepático que las tratadas con hierro hemo.

O suco de laranja é um alimento complexo, formado por vários componentes orgânicos voláteis e instáveis, açúcares, ácidos, sais minerais, pigmentos e vitaminas. Seu consumo é motivado pela presença de Vitamina C que tem participação em inúmeras reações no organismo humano. Os humanos não sintetizam a vitamina C e dependem da sua ingestão na sua dieta alimentar, o suco de laranja representa uma das importantes fontes da vitamina. A vitamina C conhecida cientificamente por ácido ascórbico, inicia um processo de degradação logo que se produz o suco da fruta, e os principais fatores que influenciam na degradação da vitamina C nos sucos de fruta são o tipo de processamento, as condições de estocagem, o tipo de embalagem, a presença de oxigênio, de luz e enzimas. Os fatores de degradação da vitamina C em sucos de frutas, são constantemente estudados pela indústria, já que os consumidores também estão em constante busca por hábitos alimentares saudáveis. Diante disso, o projeto propõe um experimento investigativo capaz de observar a influência de alguns fatores que o consumidor tem a possibilidade de controlar, e sugerir que este experimento investigativo seja desenvolvido na íntegra, parcialmente ou correlatamente por professores no ensino de Química. 45. Role of Ascorbic Acid Versus Silymarin in Amelioration of Hepatotoxicity Induced by Acrylamide in Adult Male Albino Rats: Histological and Immunohistochemical Study.

Acrylamide (ACR) is a cytotoxic and carcinogenic material. It is a product of a Maillard reaction during the cooking of many types of fried fast food, e.g. potato chip fries, and chicken nuggets. ACR has a severe toxic effect on different body organs. This study investigates the hepatotoxic effect of ACR, and the protective effect of ascorbic acid and silymarin. For this purpose, forty adult, male, albino rats were divided into four groups and received the following treatments for fourteen days: Group I: (the control) normal saline; Group II: ACR only; Group III: ACR and ascorbic acid; and Group IV: ACR and silymarin. Under a light microscope, the liver from rats treated with ACR only presented disturbed liver architecture, degenerated hepatocytes, reduced glycogen contents, congested central vein, and increased collagen fibres with areas of fibrosis. Immunohistochemical examination revealed an increased mean number of CD68-, and α-SMA-positive cells. This indicates the presence of large numbers of stellate macrophages (Kupffer cells) and Hepatic stellate cells (HSCs). The combination of ACR with either ascorbic acid or silymarin resulted in less hepatic degeneration, less fibrosis and fewer CD68 and α-SMA positive cells compared to the ACR only group. In conclusion, treatment with silymarin or ascorbic acid along with ACR appears to alleviate ACR-induced hepatotoxicity with more protection in silymarin treated rats. [ABSTRACT FROM AUTHOR]

Objetivo: comparar la efectividad del ácido ascórbico y la solución salina al 0,9% en la prevención de la obstrucción del catéter venoso central pediátrico. Método: ensayo clínico aleatorizado realizado en un hospital público de Paraná, entre los meses de junio de 2018 a octubre de 2019 con 152 participantes, de los cuales, 73 en el grupo experimental y 79, grupo control) que fueron sometidos a la inserción de catéteres venosos centrales y aleatorizados a recibir la intervención de lavado con ácido ascórbico o solución salina al 0,9%. Resultados: la obstrucción del catéter se produjo en 17 casos (11,2%), nueve (11,4%) en el grupo de control y ocho (10,9%) en el grupo experimental. La obstrucción trombótica se produjo en 15 casos, de forma similar, en ambos grupos (p=0,88). La retirada del catéter se produjo en 82 casos por razones electivas y en 63 casos por complicaciones. Conclusión: el uso de ácido ascórbico es tan eficiente como la solución fisiológica al 0,9% en la prevención de la obstrucción del catéter venoso central. El estudio amplía las posibilidades de intervención dentro del tema.

Introdução: O microagulhamento é uma técnica utilizada para o tratamento de cicatrizes e apresenta cada vez mais destaque na Dermatologia. Nesse contexto, em associação com o microagulhamento, drogas e ativos podem ser administrados por meio da técnica conhecida como drug delivery. Destaca-se o uso da vitamina C, por sua já comprovada ação antioxidante. Outro exemplo é a andiroba (Carapa guianensis Aubl.), por suas propriedades anti-inflamatória, analgésica, antisséptica e cicatrizante. Objetivo: Avaliar os efeitos da andiroba associada ao microagulhamento. Métodos: Foram utilizados 31 ratos machos distribuídos em cinco grupos: GPi (piloto), com três animais; GM (microagulhamento); GMA (microagulhamento + andiroba); GMV (microagulhamento + vitamina C); e GOM (microagulhamento + óleo mineral), com sete animais em cada grupo. Os animais foram submetidos à técnica do microagulhamento no D0 (dia 0) e à aplicação da substância do seu respectivo grupo, na pele, pela manhã, durante sete dias. Resultados: Houve diferença significativa entre a intensidade de proliferação fibroblástica e a vascularização observadas no tecido dos animais dos grupos GM e GMV. Já a intensidade de fibras colágenas foi superior nos animais do grupo GMV. Conclusões: O óleo de andiroba como drug delivery obteve resultados inferiores à vitamina C.

Citrus paradisi Macfad are an excellent source of nutrients and important phytochemicals for a healthy diet. In this context, the knowledge of the chemical composition of foods is fundamental to evaluate the nutrient contents and their health benefits. However, one of the problems related to the consumption of pomelo is the bitter taste that comes from the naringin present in the peel, making it important to develop a flour with a reduced content of bitter taste. The determinations were made in the peel, flavedo, and albedo, in the flour obtained by thermal processing of 48 hours, flour by thermal processing of 72 hours, flour processed and washed in cold water and crushed flour, washed in cold water and processed. To determine ascorbic acid, the titration method was used, and the other bioactives were determined by spectrophotometry. Aqueous, hydroacetonic, and ethanolic extracts were used to determine the total phenolic compounds, total tannins. Antioxidant activity was determined by the photocolorimetric method of the stable free radical DPPH. The flour with 72-hour thermal processing had decreased its concentration of bioactive, and the flour that has been obtained by the peel and albedo before being processed had the highest concentrations; thereof, highlighting discrepant increase of ascorbic acid relative to the other. The carotenoid content showed no significant differences between the samples. Among all treatments, the flour obtained by cold water processing, not being crushed before being processed, had reduced the bitterness of naringin. [ABSTRACT FROM AUTHOR]

Ascorbic acid, commonly known as vitamin C, is a weak acid and natural antioxidant that plays essential biological roles in the participation of collagen formation and the absorption of iron by the body. The objective of this work was to verify, through molecular modeling, partial loads and evaluation of PRM reactivity parameters, that it presents favorable electronic densities in stereochemically located positions, for the formation of metallic salts, associated with supposed complex systems. Its electrolytic properties showed a type 1: 1 behavior in freshly prepared aqueous millimolar solution. This is in agreement with the values of pH, Ka1 and Ka2 respectively, evaluated for an equilibrium situation through the program RAÍZES 1.0, developed by the authors. Thermal decomposition starts around 180-190oC and continues until reaching a temperature of 570.3 °C, in which a small experimental percentage of waste has been associated with the presence of reduced carbon. The absorption spectrum in the infrared region identified the main transitions attributed to C = O, C = C, OH, present in their functional groups. The UV-Vis absorption spectrum showed an intense band that occurs between 207 - 312 nm, with maximum absorption peak, Amax = 3,6123 at 249, and 250 nm. This band presents itself in the region where the n → *, n → * e → * transitions occur associated with the chromophore groups. The strength of the oscillator is comparable to those presented by chromophore groups that have intense molecular transitions, in which some types of molecules are used as dyes and other analogs used as sensitizers in solar photocells or devices emitting electromagnetic radiation.
