An adequate supply of food sources with high levels (i.e., weight proportion of total fatty acids) and contents (i.e., absolute amount per mass) of long chain polyunsaturated fatty acids such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are important for ecosystems. Therefore, the supply of EPA and DHA from basal food sources is a useful indicator of ecosystem health. To determine whether EPA and DHA levels and contents in fish can be used as indicators of EPA and DHA supply in lakes, five dominant species of fish and basal food sources (seston and sediment) were collected monthly from June to November from 2016 to 2021 from Lake Hachiro, Japan. Seston and Hypomesus nipponensis were collected from 12 lakes (one collection per lake) with varying seston contents in EPA and DHA. The trends of EPA and DHA in all fish species were similar to those of the basal food sources. Correlation analysis showed that the EPA levels were strongly correlated between fish and seston; moreover, the correlation coefficient increased when a 1- or 2-month moving average was applied to the basal food sources, suggesting that fish represent a time-integrated supply of EPA and DHA. EPA levels of H. nipponensis had the highest correlation coefficients with seston among all fish species. EPA levels of H. nipponensis were significantly correlated with those of seston among lakes. The results of this study suggest that H. nipponensis is a useful indicator of EPA and DHA supplies in lake ecosystems. [ABSTRACT FROM AUTHOR]

Schizothorax plagiostomus, commonly known as snow trout, is a popular food fish found in parts of Central Asia and the Indo‐Himalayan region. Despite such a broad range of distribution and potential financial value, it is a highly neglected cold‐water ichthyofauna. Furthermore, an alarming decline in Schizothoracine population has been reported in the recent past due to climate change and uncontrolled anthropogenic interference. In this study, the seasonal variations in ovarian architecture and development were examined in adult S. plagiostomus from Garhwal Himalayan region, Uttarakhand, India. Ovarian‐somatic index ranged from 16.86 ± 0.29 to 0.31 ± 0.56, with a maximal value in September and a minimal value in April. Ovarian histology revealed the abundance of primary growth oocytes in resting and preparatory stages; primary/secondary vitellogenic oocytes with numerous cortical alveoli were predominant in the developing stage of pre‐spawning ovaries; secondary/tertiary vitellogenic oocytes were conspicuous in actively spawning ovaries; and atretic follicles/oocytes were discernible during the regressing stage of spent ovaries. Scanning electron microscopy of mature ova (mean diameter 2.003 ± 0.01 mm) prominently showed the structure micropyle (mean diameter 12.93 ± 3.38 μm). Fecundity analyses suggested that September was the principal breeding season, whereas residual spawning occurred with fresh rain in late winter during February–March. Collectively, this is the first comprehensive qualitative and quantitative report of the seasonal variations in the ovarian development and function for S. plagiostomus. These data may provide valuable information towards the captive breeding programme as well as conservation and management for Schizothoracine fishes in normal and altered climatic conditions. Simple Summary: Aquaculture plays a key role in many emerging economies. Sources of fish for human consumption now exceed those from capture fisheries. However, the high cost of food to feed fish limits investment returns. Physiological inefficiencies in the way fish digest and assimilate nutrients and energy from food can be improved to lower the amount of feed required to farm fish whilst reducing waste and enhancing environmental sustainability. Being able to measure this 'feed efficiency' is crucial to develop strategies to improve it, yet we do not currently have a good means of doing this. With a focus on salmon, this research uses detailed physiological information involved in fish metabolic processes to better understand the mechanisms that can contribute towards better feed efficiency and growth, and at the same time enable development of models to accurately predict such measures. Our findings can be used to improve the efficiency of the salmon aquaculture industry and reduce the impact of farming practices on the environment. Fish aquaculture is a rapidly expanding global industry, set to support growing demands for sources of marine protein. Enhancing feed efficiency (FE) in farmed fish is required to reduce production costs and improve sector sustainability. Recognising that organisms are complex systems whose emerging phenotypes are the product of multiple interacting molecular processes, systems-based approaches are expected to deliver new biological insights into FE and growth performance. Here, we establish 14 diverse layers of multi-omics and clinical covariates to assess their capacities to predict FE and associated performance traits in a fish model (Oncorhynchus tshawytscha) and uncover the influential variables. Inter-omic relatedness between the different layers revealed several significant concordances, particularly between datasets originating from similar material/tissue and between blood indicators and some of the proteomic (liver), metabolomic (liver), and microbiomic layers. Single- and multi-layer random forest (RF) regression models showed that integration of all data layers provide greater FE prediction power than any single-layer model alone. Although FE was among the most challenging of the traits we attempted to predict, the mean accuracy of 40 different FE models in terms of root-mean square errors normalized to percentage was 30.4%, supporting RF as a feature selection tool and approach for complex trait prediction. Major contributions to the integrated FE models were derived from layers of proteomic and metabolomic data, with substantial influence also provided by the lipid composition layer. A correlation matrix of the top 27 variables in the models highlighted FE trait-associations with faecal bacteria (Serratia spp.), palmitic and nervonic acid moieties in whole body lipids, levels of free glycerol in muscle, and N-acetylglutamic acid content in liver. Simple Summary: The Nile tilapia (Oreochromis niloticus) (NT) is an aggressive and omnivorous species that competes with native fishes for food resources, and it has successfully invaded much of the Pearl River basin in China. Intensive research has focused on the gut microbiota of Nile tilapia in artificial culture. However, differences in gut microbes between invasive Nile tilapia and indigenous fish are relatively less well characterized. In the present study, we chose the black Amur bream (Megalobrama terminalis) as a native omnivorous fish that shared a common habitat and partially overlapped resource usage with Nile tilapia. Here, we investigated the gut microbiomes of invasive Nile tilapia and indigenous black Amur bream (BA) in the same river section using high-throughput 16S rRNA gene sequencing. The results indicated that the gut microbiome of NT had several special characteristics, e.g., higher alpha diversity and greater niche breadth, compared with the bream. Thus, the aim of the present study was to investigate the role of gut microbiomes between an indigenous fish (black Amur bream) and invasive Nile tilapia from the low region of the Pearl River basin to better understand the microbial complexity and diversity of their gut microbiota. The gut microbiome is thought to play vital roles in host fitness and local adaptation to new environments, thereby facilitating the invasion of the host species. The gut microbiota of the small size of Nile tilapia (NTS) and small size of black Amur bream (BAS) groups were dominated by Proteobacteria, while those of the NTS and large size of Nile tilapia (NTL) and BAS and large size of black Amur bream (BAL). BAL and NTL were characterized by Firmicutes and Fusobacteriota, respectively. We found that Pseudomonas, Cetobacterium, Ralstonia, and Romboutsia were biomarkers of the NTS, NTL, BAS, and BAL groups, respectively. Moreover, the results collectively suggested that the clustering coefficients of BAL and NTL networks were greater than those of BAS and NTS networks, and BAS had the smallest network among the four groups. Positive interactions between two ASVs dominated the BAS, NTS, and NTL networks, while the proportion of negative interactions between two ASVs in the BAL network was remarkably increased. Low levels of interspecies competition in the NT gut microbiome would contribute to high diversity in the dietary niches and would also benefit the survival and local adaptation of the host. Our results identified specific biomarkers of gut microbial species in invasive Nile tilapia and provided useful information concerning how to monitor and manage invasive Nile tilapia populations. We investigated two inter-related questions: How is the fruit consumption rate affected by fish assembly and how does an increase in fruit production alter fish composition and richness? To answer these questions, we carried out two complementary experiments in a karst tropical stream, Brazil, South America. First, we measured the fish assemblage composition before, during and after the addition of fruit under fruit producing trees. Added fruit increased differentiation of fish between up-stream and down-stream sites over time. Fish composition under fruit-producing trees was distinct from adjacent sites. Second, we set Inga laurina (Fabaceae) fruits on the stream bottom and measured the consumption time. We also analyzed if the fishes that consumed the fruits differed among 41 sites. Fish assemblage structure partially explained the observed consumption rate for the fish assemblages. Our study provides new information on how fruit input and the location of fruiting trees can induce spatial segregation within freshwater fish communities. Our results can help improving management plans for conservation and restoration of headwater streams, including the locations of riparian fruit trees that provide resources and promote hotspots of ecological interactions for freshwater communities. Background: Freshwater fish communities typically thrive in heterogenous ecosystems that offer various abiotic conditions. However, human impact increasingly leads to loss of this natural heterogeneity and its associated rich fish communities. To reverse this trend, we need guidelines on how to effectively restore or recreate habitats for multiple fish species. Lake Markermeer in the Netherlands is a human-created 70,000-ha lake with a uniform 4 m-water depth, steep shorelines, high wind-induced turbidity, and a declining fish community. In 2016, a forward-looking restoration project newly created a 1000-ha five-island archipelago in this degrading lake, which offered new sheltered shallow waters and deep sand excavations to the fish community. Methods: In 2020, we assessed how omnivorous and piscivorous fish species used these new habitats by tracking 78 adult fish of five key species across local and lake-scales. We monitored spring arrival of adult fish and assessed local macro-invertebrate and young-of-the-year fish densities. Results: Adult omnivorous Cyprinidae and piscivorous Percidae arrived at the archipelago in early spring, corresponding with expected spawning movements. During the productive summer season, 12 species of young-of-the-year fish appeared along the sheltered shorelines, with particularly high densities of common roach (Rutilus rutilus) and European perch (Perca fluviatilis). This suggests the sheltered, shallow, vegetated waters formed new suitable spawning and recruitment habitat for the fish community. Despite highest food densities for adult fish in the shallowest habitats (< 2-m), adult fish preferred minimally 2-m deep water. After spawning most Cyprinidae left the archipelago and moved long distances through the lake system, while most Percidae remained resident. This may be related to (1) high densities of young-of-the-year fish as food for piscivores, (2) medium food densities for omnivores compared to elsewhere in the lake-system, or (3) the attractiveness of 30-m deep sand excavations that were newly created and frequently used by one-third of all tracked fish. Conclusions: New littoral zones and a deep sand excavation constructed in a uniform shallow lake that lacked these habitat types attracted omnivorous and piscivorous fish species within four years. Myxozoans are a unique group of microscopic parasites that infect mainly fishes. These extremely reduced cnidarians are highly diverse and globally distributed in freshwater and marine habitats. Myxozoan diversity dimension is unknown in Mexico, a territory of an extraordinary biological diversity. This study aimed to explore, for the first time, myxozoan parasite diversity from fishes of the Neotropical region of Mexico. We performed a large morphological and molecular screening using host tissues of 22 ornamental and food fish species captured from different localities of Veracruz, Oaxaca and Chiapas. Myxozoan infections were detected in 90% of the fish species, 65% of them had 1 or 2 and 35% had 3 and up to 8 myxozoan species. Forty-one putative new species were identified using SSU rDNA phylogenetic analyses, belonging to two main lineages: polychaete-infecting (5 species) and oligochaete-infecting (36 species) myxozoans; from those we describe 4 new species: Myxidium zapotecus sp. n., Zschokkella guelaguetza sp. n., Ellipsomyxa papantla sp. n. and Myxobolus zoqueus sp. n. Myxozoan detection increased up to 6 × using molecular screening, which represents 3.7 × more species detected than by microscopy. This study demonstrated that Neotropical fishes from Mexico are hosts of a multitude of myxozoans, representing a source of emerging diseases with large implications for economic and conservation reasons. Using a dynamic optimisation model for juvenile fish in stochastic food environments, we investigate optimal hormonal regulation, energy allocation and foraging behaviour of a growing host infected by a parasite that only incurs an energetic cost. We find it optimal for the infected host to have higher levels of orexin, growth and thyroid hormones, resulting in higher activity levels, increased foraging and faster growth. This growth strategy thus displays several of the fingerprints often associated with parasite manipulation: higher levels of metabolic hormones, faster growth, higher allocation to reserves (i.e. parasite‐induced gigantism), higher risk‐taking and eventually higher predation rate. However, there is no route for manipulation in our model, so these changes reflect adaptive host compensatory responses. Interestingly, several of these changes also increase the fitness of the parasite. Our results call for caution when interpreting observations of gigantism or risky host behaviours as parasite manipulation without further testing. [ABSTRACT FROM AUTHOR]

The general ideas regarding ecological biochemical adaptations in aquatic organisms are based on the results obtained by using a set of field and experimental methods over decades of research on members of marine and freshwater fish fauna and on their food items (mollusks, crustaceans) carried out by Science School in Ecological Biochemistry. Examples of biochemical adaptations in aquatic organisms are provided. Certain conclusions are drawn regarding the common and specific pattern of the metabolic adaptive response in the studied organisms growing and developing under normal conditions and upon changes in the environment. The results improve our understanding of the mechanisms behind ecological biochemical adaptations and their role in maintaining homeostasis in aquatic organisms. [ABSTRACT FROM AUTHOR]

Summary: Fish consumption is an important part of a healthy and sustainable diet. However, smoked fish can provide significant amounts of salt (NaCl), which is inadequate considering that the reduction of its intake is a priority for public health authorities worldwide. The aim of this study was to develop smoked rainbow trout with reduced NaCl content without compromising its quality and safety. In Experiment I, optimal salting parameters (2% NaCl and 4 h) were selected. In Experiment II, different combinations of NaCl, KCl (with and without bitterness masking agent), or microencapsulated spices and aromatic plants were evaluated. In general, products prepared with different formulations showed similar microbiological and physicochemical characteristics. Nevertheless, the most desirable ratio of sodium/potassium and sensory scores was attributed to the formulations prepared with 50% NaCl + 50% KCl (with and without bitterness masking agent). The freshwater angelfish (Pterophyllum scalare) is a quite popular freshwater ornamental fish in Indonesia due to its distinguished body shape and pattern. However, its growth tends to be slow due to low nutrients in its main diet, namely Daphnia magna. The most feasible solution is to enrich D. magna to increase its nutritional content with Viterna (livestock vitamins). The purpose of this study was to determine the effectiveness of D. magna enriched with Viterna to increase the growth of freshwater angelfish. This study used a Completely Randomized Design to compare three enrichment dosages (10, 20, and 30 ml/L) with a non-enriched control in three replications. This study showed that 3 hours-enrichment can result in an increase in fat (0.6%) and protein (1.25%) profiles in D. magna. Absolute Weight Growth (AWG), Absolute Length Growth (ALG), and Specific Growth Rates (SGR) showed significant differences (P=0.05) between all treatments. The best result was obtained at a Viterna dosage of 30 ml/L which resulted in an Absolute Weight Growth value of 207.14 mg, an Absolute Length Growth of 14.19 mm, and an SGR of 2.58%/day. Survival rates during the larvae culture were not statistically different (P=0.05) among the treatments. Enrichment of D. magna with Viterna has been proven to optimize its potential as live food for fish larvae cultivation. [ABSTRACT FROM AUTHOR]

To understand how Neotropical freshwater fishes (NFF) benefit society, we conducted a broad literature survey to (i) map and list the ecosystem services (ES) generated by these organisms, and (ii) investigate how human activities have affected the ecosystem service chain. We found sound evidence that NFF contribute directly and indirectly to the generation of several provisioning, regulating, supporting, and cultural services. Provisioning services have been widely recognized, especially those related to fisheries, but this class also included ornamental fish, genetic pools, medicines, aquaculture, and bioindicators. Other services remain less understood and largely ignored by society. Regulating services included seed dispersal, decomposition, and top-down control, while supporting services included nutrient cycling, habitat quality, and ecosystem engineering. Cultural services associated with NFF included recreational fishing, tourism, fishkeeping, education, production of scientific knowledge, in addition to values linked to traditional communities, such as local knowledge, cosmology, and existential foundations. Human activities have negatively impacted the generation of ES, especially those related to fishing and food provisioning. This review indicates that Neotropical fishes benefit society in multiple ways, but it is imperative to improve our understanding about those benefits, and to increase conservation efforts directed to this important component of global biodiversity. Spotted seabass (Lateolabrax maculatus) is a popular food fish in Asian countries. Not only does the fish tasted well, but it is also widely utilized as nutraceuticals. However, the knowledge about the composition of the fish is lack. In this work, the proximate composition of spotted seabass flesh was determined. The content of proximate composition (moisture, proteins, fat, and ash) of spotted seabass flesh was fell within the range of other reported fish species, while it was a high-quality food fish with low oil-very high protein. The ratio of essential amino acids (EAAs) to nonessential amino acids (NEAAs) was 0.74, and the amount of EAAs accounted for approximately 42.34% of the total amino acids. Unsaturated fatty acids composed the majority of the fatty acid components, with linoleic acid was the predominate one. The content of docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) were abundant in spotted seabass flesh. The proximate composition of the dorsal, ventral, lateral, and tail flesh was similar, except for the ventral flesh exhibited a higher content of fatty acids and lower content of moisture. Fish are an essential source of food and protein for people all over the world, and their consumption is increasing every year. Fish are high in critical nutrients and amino acids, which are important for the development of other species as well as the control of the food chain. Because of the growing need for fish as a food source around the world, the quantity of fish is fast declining, necessitating large-scale aquaculture to meet the demand. Aquaculture pollution and stress are caused by growing fish in an unnatural fashion and in an artificial environment, affecting the health of the fish. Farmed fish are fed artificial diets, which frequently result in the breeding of various diseases in the fish, which can then spread to wild fish populations. To address this issue, aquaculture producers utilized prophylactic antibiotics to prevent illnesses in fish, but this had the unintended consequence of causing antibiotic-resistant bacteria to evolve in the fish. The goal of this research was to extract and identify microorganisms from several fish species. It is critical to understand the microbiota of fish so that it can be altered or exploited to increase aquaculture and productivity. The 16S rRNA gene sequencing approach is now considered to be the most efficient method for bacterial colony identification. Seafood products are a crucial dietary source of n-3 polyunsaturated fatty acids (n-3 PUFA), which are essential for human health. However, the presence of these n-3 PUFA may be subject to changes related to different processing methods. The aim of this study was to determine the fatty acid composition, focusing on n-3 PUFA, in different processed fish and shellfish products of both EU and non-EU origin. The products were purchased from supermarkets and ethnic food shops in Messina (Italy). Gas chromatography with a flame-ionization detector (GC-FID) was used for analysis. Based on the fatty acid profile, the atherogenicity index (AI), thrombogenicity index (TI), and flesh lipid quality index (FLQ) were determined: 0.13–1.04 (AI), 0.19–0.89 (TI), and 0.41–29.90 (FLQ). The percentages of saturated (SFA), monounsaturated (MUFA), and polyunsaturated (PUFA) fatty acids fell within the following ranges: 13.55–50.48%, 18.91–65.58%, and 13.84–52.73%, respectively. Considering that all samples showed low AI and TI indices and that all processed fish products proved to be a good source of beneficial PUFAs, especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), their consumption is recommended for humans. This study aimed to investigate the effects of baking and pan-frying methods on the lipid quality and mercury (Hg) levels of two important fish species in Türkiye, namely, fileted sardine (Sardina pilchardus) and rainbow trout (Oncorhynchus mykiss). The results revealed that sardines significantly decreased n-3 fatty acids depending on the cooking process, while the best n-6/n-3 ratio was observed in baked sardines, with higher rates found in pan-fried fish. Notably, pan-fried rainbow trout cooked with butter showed the highest atherogenic index (AI) of 0.71±0.32 and thrombogenic index (TI) of 0.61±1.43, as well as a hypocholesterolemic/hypercholesterolemic index (HH) of 0.79 ± 0.17. Conversely, fried sardines exhibited lower atherogenic and thrombogenic scores, with fried sardines cooked in sunflower oil having a hypocholesterolemic/hypercholesterolemic index of 4.85 ± 0.3. There were no significant variations in Hg content between raw and cooked fish. However, when compared to the raw control, the rise in Hg content for baked fish was substantial (p < 0.05) (baked rainbow trout 0.18 mg/kg and sardine 0.29 mg/kg). The decrease in FAs (Fatty Acids) due to cooking methods can be ordered as follows: Raw sardine > baked > fried. Conversely, the increase in FAs due to the cooking methods can be ordered as follows: fried > baked > raw sardine. Baked rainbow trout had much lower levels of palmitic acid, stearic acid, and myristic acid than the raw material. However, these levels were significantly increased in rainbow trout cooked in a frying pan. Additionally, oleic acid levels in fried rainbow trout were detected to be lower than in other preparations, whereas they were equivalent in baked rainbow trout. [ABSTRACT FROM AUTHOR]

Information about the food sources for fish is important not only for predation and food competition, but also for the direct impact on organism interactions, relationships, and biodiversity within aquatic ecosystems. We analyzed the food sources of 21 fish species in 9 families of 6 orders based on the literature data from brackish ecosystems in South Korea to improve the understanding of the estuarine ecosystem. The food sources of the 21 fish species contained 173 families, 86 orders, 39 classes, and 22 phyla. The 21 fish species were classified into 4 groups using hierarchical analysis based on their food sources: Group 1 fishes mainly consumed Amphipoda; Group 2 fishes were zooplanktivores; Group 3 were omnivorous; and Group 4 consumed small food sources, such as Nematoda, Corophiidae, and Harpacticidae. The feeding competition index was relatively high within each group, but the competition index for Group 3, the omnivorous fishes, was low. Network analysis and hub scores represented the importance of food sources consumed by each fish species by showing the connections between the fish and their prey. Polychaeta, Actinopterygii, and Decapoda were the most commonly consumed food sources. Food source diversity was high for zooplanktivores (group 2). Additionally, the food contents of each fish species were classified into freshwater and marine sources for identifying the habitats of the food sources. Trophic level measuring values using the data were similar to the reported literature data. This study can be utilized for understanding estuarine ecosystems and identifying food relationships. Meat, poultry, and seafood such as fish are a valuable source of protein, vitamins and minerals. Considering their high consumption in the human diet, it is necessary to study pollutants (such as PAHs) in them. This present study has focused on the PAHs level and probabilistic risk of health in meat, poultry, fish and related product samples by MSPE-GC/MS technique (magnetic solid-phase extraction with gas chromatography-mass spectrometry). The maximum mean of 16 PAH was detected in smoked fish samples (222.7 ± 13.2 μg/kg) and the minimum mean of 16 PAH was detected in chicken (juje) kebab (112.9 ± 7.2 µg/kg μg/kg). The maximum mean of 4PAHs was detected in tuna fish (23.7 ± 2.4 µg/kg) and the minimum mean of 4PAHs was seen in grilled chicken and sausage samples (non-detected). Our results showed the 4PAHs and B[a]P were lower than the EU (European Union) standard levels (these standard levels were 30 and 5 μg/kg, respectively). Furthermore, the correlation among the type and concentrations of PAHs congeners was investigated through cluster analysis by heat map and principal component analysis. The 90th percentile ILCR (incremental lifetime cancer risk) of PAH compounds in fish, poultry, meat and related products samples was 3.39E-06, which was lower than the maximum acceptable level of risk (10–4). Finally, the highest ILCR was related to hamburger (4.45E-06). Therefore, there is no risk in consuming these foods in Iran, but it is necessary to monitor PAHs concentration in different types of foods. [ABSTRACT FROM AUTHOR]

The aim of this study was to investigate the physicochemical characteristics and volatile flavor of fried tilapia skins under three frying methods. Conventional deep-fat frying usually increases the oil content of the fried fish skin and leads to lipid oxidation, which reduces the product quality. Alternative frying methods, such as air frying for 6 and 12 min under 180 °C (AF6, and AF12) and vacuum frying at 0.085 MPa for 8 and 24 min under 120 °C (VF8, and VF24) were compared to conventional frying for 2 and 8 min under 180 °C (CF2, and CF8) for tilapia skin. Physical properties of fried skin, such as the moisture content, water activity, L* values and breaking force decreased under all frying methods, while the lipid oxidation and a*, b* values increased with the increase in frying time. In general, VF offered higher hardness of product compared to AF which had a lower breaking force. Especially AF12 and CF8 had the lowest breaking force, which indicated higher crispness. For the oil quality inside the product, AF and VF reduced conjugated dienes formation and retarded oxidation compared to CF. The results of the flavor compositions of fish skin measured using gas chromatography mass spectrometry (GC/MS) with solid phase microextraction (SPME) showed that CF obtained higher unpleasant oily odor (nonanal, 2,4-decadienal, etc.), while AF presented greater grilling flavor (pyrazine derivatives). Because fish skin fried by AF only relied on hot air, Maillard reaction derived compounds, such as methylpyrazine, 2,5-dimethylpyrazine, and benzaldehyde were the leading flavors. This made the aroma profiles of AF very different from VF and CF. Among all the approaches, AF and VF developed lower oil content, mild fat oxidation and better flavor attributes, which proves their practical applications for frying tilapia fish skin. We used a combination of morphological, molecular and biological data to characterize a novel Henneguya (Myxozoa) species infecting the Amazonian prochilodontid Semaprochilodus insignis or "kissing prochilodus", a popular food fish and aquarium species in the Brazilian Amazon. Twenty-one S. insignis were caught live from the Tapajós river, Pará State, Brazil, then examined for myxozoan infections. Cysts of a novel Henneguya species were observed in the connective tissue of the fins. Myxospores measured 48 ± 4.9 (39.5–60.8) µm total length, of which caudal appendages were 33 ± 4.5 (26.4–45.2) µm and spore body was 15 ± 1.6 (12.4–20.5) µm. The spore body was 4.0 ± 0.6 (2.7–5.3) µm wide × 3.2 ± 0.4 (2.7–3.6) µm thick, with two unequal polar capsules (nematocysts) 7.2 ±0.8 (5.2–8.3) × 1.5 ± 0.3 (1.0–2.2) µm for the larger capsule and 5 ± 0.7 (4.0–6.3) × 1.4 ± 0.2 (1.0–1.8) µm for the smaller capsule. Polar tubules had 8–13 turns. Generative cells, immature and mature myxospores were observed within plasmodia. Ultrastructure showed plasmodia surrounded by collagen fibers, with the plasmodial membrane having pinocytotic channels. Phylogenetic analysis of small subunit ribosomal DNA sequences showed that the new Henneguya species clustered as a sister taxon to Henneguya tietensis, a parasite of the gills of the prochilodontid fish Prochilodus lineatus, from the geographically distant Paraná–Paraguai River basin. Trash fish is a captured fish that has low economic value. Trash fish has a reasonably high protein. However, myofibrillar protein from trash fish cannot form gel properly. Therefore, it is necessary to modify it by adding a gelling agent. This study aimed to determine myofibrillar protein's chemical and functional characteristics from trash fish as a food ingredient. The research method is in the form of laboratory experiments. The types of fish used as samples in this study were Chacunda gizzard-shad (Anodontostoma chacunda Hamilton, 1822), Orangefin ponyfish (Leiognathus bindus Valenciennes, 1835), and Sardines (Sardinella fimbriata Valenciennes, 1847). Myo fibril modification was carried out by adding 10 % carrageenan (wv-1) to each trash fish sample. The results showed that the myofibrillar protein from Chacunda gizzard-shad had higher protein content (84.77 %), water holding capacity (524.78 %), and emulsion activity (8.85 m g-2) than other samples. Chacunda gizzard-shad is characterized by more red meat than the others. This fish species also has the highest oil-holding capacity (620.35 %) and emulsion stability (4.58 h). The microstructure of the trash fish myofibrils is tighter and more hollow, so it has a better ability to absorb oil. Myofibrillar protein from another species, Orangefin ponyfish, has a relatively higher whiteness value (78.42) than other samples because white meat is dominant for this species. Modifying myofibrillar protein by adding agar and carrageenan can increase the hardness value of the sample due to the addition of agar.
