Abstract

Extrait de document; International audience; From a nutritional point of view, particularly and also due to its sensory and technical properties such as dressing yield, fat content and distribution are both important quality criteria of fish flesh. In this work, a MRI sequence has been optimised and image correction method has been developed to obtain accurate mapping of fat distribution in fish flesh. Because fish lipids are highly unsaturated, high contrast between muscle fibres and adipocytes is obtained by using strong T1-weighted images. So grey level restitution of fat content is affected not only by permanent field and RF reception inhomogeneities but also by RF transmission inhomogeneity which significantly affects T1-weighing. The location of adipocytes in thin myoseta between thin muscle layers variously orientated leads to images with strong partial volume effect related to voxel size. The following corrections were used to traduce grey levels in accurate fat content: -normalisation by dividing each raw image by corresponding oil phantom image obtained by a proton density weighted sequence (Spin Echo, TE/TR= 15ms/2500ms) -correction of T1-weighing effect by using B1 mapping of oil phantom -transformation of volume fat percentage in fat content by taking into account weigh density of fat and muscle. The accuracy of the MRI method was estimated by comparing fat content determination on flesh biopsies with a chemical method based on solvent extraction and the fat values of corresponding region of interest from corrected MRI images.; D'un point de vue nutritionnel et sensoriel le gras et sa répartition dans l'animal sont deux critères de qualité importants pour la chair de poisson. Dans le but d'obtenir une cartographie précise du gras, l'imagerie par résonance magnétique nucléaire a été utilisée. La séquence d'acquisition a été optimisée et une méthode de correction des images a été développée. Un contraste optimal entre le muscle et le gras a été obtenu en utilisant une séquence écho de spin fortement pondérée en T1. Dans le cas de cette séquence, les niveaux de gris des images présentent des inhomogénéités dues non seulement aux inhomogénéités du champ permanent et de la réponse de l'antenne de réception mais aussi par les imperfections de la transmission radio-fréquence. D'autre part, la localisation des myomères entre les myoseptes induit dans les images un effet important de volumes partiels. Les corrections suivantes ont été utilisées pour traduire le niveau de gris en taux de gras : - division de chaque image par l'image d'un fantôme d'huile obtenue par une écho de spin pondérée en densité de protons (TE/TR = 15ms/2500ms) - correction de l'inhomogénéité de la transmission RF en utilisant une cartographie B1 mesurée sur le même fantôme d'huile - conversion du pourcentage volumique obtenu en pourcentage massique La précision de cette méthode de mesure par IRM a été estimée en comparant les résultats obtenus par IRM avec des mesures effectuées par une méthode d'analyse chimique par extraction

Abstract

The effects of partial (75%; diet PP75) and total (100%; diet PP100) replacement of fish meal by plant protein sources on the intestinal nutrient absorption of gilthead sea bream and rainbow trout were examined over a 12-week growth trial. The diets comprised a mixture of plant ingredients (corn gluten meal, wheat gluten, extruded peas and rapeseed meal) and met the amino acid requirements of the fish. A third group of fish on a fish meal diet was used as a control for comparative purposes. Diets were tested in triplicate and fish were fed twice a day until visual satiation. At the end of the trial, we measured amino acid (l-leucine, l-lysine, l-phenylalanine, l-alanine and l-proline) and d-glucose absorption at short-term (6. h) and long-term (36. h and 48. h in rainbow trout and sea bream respectively) post-feeding by means of brush border membrane vesicles obtained from pyloric caeca, proximal intestine and distal intestine. The absorption pattern at 6. h post-feeding was modified in both species in response to fish meal replacement. In PP75-fed trout absorption was delayed from pyloric caeca to proximal and/or distal intestinal segments, thus total absorption capacity was maintained in this group. On the contrary, total uptake was significantly decreased in trout fed the PP100 diet and in sea bream on both PP75 and PP100 diets. Glucose transport capacity was increased in both experimental sea bream groups and in PP75 trout. Long-term transport capacity was up-regulated for both species. Our results show that intestinal nutrient absorption is modified in response to the use of high levels of plant protein sources and that these changes are species-specific. © 2011 Elsevier B.V.

Abstract

L’objectif du travail était d’étudier l’effet de la température d’élevage de la carpe commune (Cyprinus carpio) sur l’utilisation digestive d’un régime riche en amidon et ses conséquences sur la glycémie, l’excrétion azotée, les dépenses énergétiques et la composition corporelle des animaux. Dans ce but, nous avons comparé les résultats obtenus chez des carpes élevées à 18 ou à 25°C et nourries pendant 10 semaines avec un aliment contenant 46% de blé floconné. Les coefficients de digestibilité des composants du régime, y compris celui de l’amidon, sont plus élevés à 25°C qu’à 18°C. Contrairement à ce qui est observé chez les salmonidés, l’ingestion d’un aliment riche en glucides digestibles ne provoque pas d’hyperglycémie chez la carpe. Une augmentation du taux plasmatique de glucose se produit après le repas mais les valeurs ne dépassent pas 1 g/l quelle que soit la température d’élevage. À 25°C, les valeurs maximales apparaissent plus tôt qu’à 18°C et le retour aux valeurs de base est plus rapide. À l’issue de 10 semaines d’alimentation, la teneur en lipides corporels est plus élevée à 18 qu’à 25°C. À 18°C, les dépenses de thermogenèse alimentaire représentent une part plus importante de l’énergie digestible ingérée mais les besoins énergétiques de base sont 1,8 fois plus faibles qu’à 25°C. De plus, à 18°C, la participation des lipides à la fourniture d’énergie est considérablement réduite ce qui se traduit par une augmentation du gain en lipides alors que le gain protéique n’est pas modifié par la température d’élevage.

Abstract

Metabolic utilization of energy substrates by a tropical catfish species, #Hoplosternum littorale$, was investigated. Both endogenous and exogenous substrates were considered, either through analysis of whole body losses during long term starvation, or through indirect calorimetric measurements. Results show that utilization of fats, during long term starvation, was not related to their body concentration. Even if most of the energy is provided by proteins, as for temperate species, carbohydrates could be used as far as they remain available. Therefore, carbohydrates metabolism seems to be active in "Atipa". (Résumé d'auteur)
