The sucrose content of irradiated chestnuts was determined during storage at various temperatures. The sucrose content was enhanced by cold-storage or gamma-irradiation. Sucrose was accumulated in irradiated chestnuts and a preferable dose range for the accumulation of sucrose was between 0.5 and 1 kGy. Storage temperature had a profound effect on the sucrose content and the degree of the sucrose accumulation increased with the decrease of storage temperature in both unirradiated and irradiated samples. The spoilage of chestnuts was dependent upon storage temperature irrespective of irradiation treatment.

アントシアニン色素の化学構造と安定性との関連を明らかにするために,アントシアニン色素4種類および合成フラビリウム塩13種類を用い, 0.2M酒石酸ナトリウム-酒石酸緩衝液(pH2.5～4.5)中で色素の安定性に及ぼす置換基の効果を系統的に検討し,より安定な色素の検索を行なった。(1) 供試した17種類のフラビリウム塩のpK値(平衡定数)を分光学的に求めた。(2) ベンゾピリウム環7位への水酸基の導入は色素分子の安定化に大きく貢献し, 3位への水酸基の導入は逆に色素分子を著しく不安定化した。(3) B環(3', 4'および5'位)への水酸基の増加が色素分子を不安定にすることからdelphinidin系色素などB環に隣接水酸基を有するアントシアニン色素が安定性に欠けると示唆された。(4) B環へのメトキシル基の導入が色素分子を安定化することを明示すると共に, peonidin系色素(メトキシル基1個)よりもmalvidin系色素(メトキシル基2個)が安定性に富むことを認めた。

プラスチック容器を用いて, コンコード種ブドウ果汁の色密度, 色調, アントシアニン含量, 官能評価に及ぼす酸素透過性および貯蔵温度の影響を調査した。11°Brixのブドウ果汁 (濃縮還元果汁) を酸素透過性の相違する3種類のスタンディングパウチに熱間充填, 密封し, 水冷後, 5℃, 20℃および37℃に3カ月間貯蔵し, 定期的に検査した。酸素と貯蔵温度はブドウ果汁の品質に顕著な影響を及ぼし, 酸素透過性が大きく貯蔵温度が高いほど色密度, アントシアニン含量および官能評価は低下した。酸素透過性のないアルミニウニウム箔 (Al) 入りパウチが最も果汁の品質を保持していた。これらの結果に基づいて, 供試プラスチック容器の流通・用途について考察した。

ある種の無機塩,有機酸および糖の添加によって生ずるアントシアニン色素溶液(pH 3.0)の濃色化(E520nmの増大)機構解明の糸口を得るために,無機塩(過塩素酸ナトリウム)添加に伴う合成フラビリウム塩(3'-メトキシ-4', 7-ジヒドロキシフラビリウム=クロリド)の分光学的およびポーラログラフ的挙動を酸性溶液中で検討した。(1) 一定pH (3.0～4.0)で,無機塩濃度の増加に伴いフラビリウム塩の吸光度(λmax 468nm)および波高(-0.35Vvs.SCE)は増大した。これに対して,trans-カルコンの吸光度(λmax 376nm)および波高(-0.77Vvs.SCE)は逆に減少した。(2) 無機塩添加に伴う分光学的およびポーラログラフ的挙動はpHによるそれらの変化と良く対応していた。(3) 無機塩の添加によって,フラビリウム塩(発色形)-カルコン(非発色形)の平衡がフラビリウム塩側に移動した。(4) 以上から,合成色素溶液の無機塩添加による濃色化効果(E486nmの増大)はカルコンをフラビリウム塩に変化させることに基づくことを明らかにした。

沖縄産パインアップル果汁の原料および現行製造法による果汁の品質を検討した。(1) 原料および果汁とも,夏実で可溶性固形分が最も高く,酸度は最も低かつた。冬実では酸度,還元型アスコルビン酸,灰分含量が高かった。アミノ態窒素含量は秋実で最も多かった。(2) 果実の部位では,果梗部の果肉で可溶性固形分が高く,熟度も進んでいた。硝酸態窒素含量はへた部が果肉部の約17倍も含有していた。(3) 現行製造法による搾汁率は,遠心分離で不溶性固形物を除去したシングルストレングス果汁として45%であった。(4) 剥皮搾汁の果汁が全果搾汁の果汁より品質的に優れていることを認めた。

Anthocyanin pigment contents in three strains(A, B and C)of wild grapes in Tokachi district and Seibel No.13053 grapes were respectively 71.9, 37.4, 97.8 and 64.3mg per 100g of fresh weight in terms of delphinidin-3-monoglucoside.From these grapes, 12 anthocyanins were isolated and identified as follows: 3-monoglucosides and 3, 5-diglucosides of delphinidin, petunidin, malvidin and peonidin; delphinidin-3-monoglucoside and -3, 5-diglucoside acylated with p-coumaric acid; peonidin-3, 5-diglucoside and malvidin-3-monoglucoside acylated with p-coumaric acid.The species of wild grapes are discussed from the viewpoint of these pigment patterns mentioned above.

ブドウ果汁(キャンベル・アーリー)の色素液(pH3.0)に対する糖類の濃色化効果を検討した。ある種の無機塩,有機酸と同様多くの糖類が濃色化効果(E520nmの増大)を示し,同時に強められた赤紫色が通常の貯蔵条件下で長時間安定であることを見出した。(1) 供試糖類は全て濃色化効果(E520nmの増大)を示し,糖濃度と吸光度(520nm)との間には良好な直線関係が成立した。濃色化効果は,3糖>2糖>単糖で分子量の順と一致した。(2) 単糖類の濃色化効果では,アルドヘキソース>アルドペントース>ケトヘキソース>糖アルコールの順となった。(3) 多くの糖類は室内・散乱光下の貯蔵条件下で,有効色素濃度の増加分(ΔE520nm)を良く保持した。(4) 貯蔵中の色素の安定性は温度によって多大な影響を受けた。すなわち,低温区(6℃)および室温区で糖は色素を安定化した。これに対して,高温区(55℃)で糖は色素分解を促進した。

殺菌温度,殺菌時間,ヘッドスペース量ならびに貯蔵温度が温州ミカン缶詰果汁の品質に及ぼす影響について調査した。 12°Brixの温州ミカン果汁を250ml容TFS缶に,殺菌温度60～93℃,殺菌時間30秒～10分,ヘッドスペース量0～20mlの条件で充填,巻締し,水冷後,20℃と37℃で6カ月間貯蔵した。アスコルビン酸,ヒドロキシメチルフルフラール(HMF),褐変度(O. D. 430mm),色調および官能検査を経時的に分析,調査した。ヘッドスペース量および貯蔵温度が果汁品質に最も大きな影響を与えた。ヘッドスペース量が大きく,貯蔵温度が高いほど,アスコルビン酸およびL値は減少し,褐変度およびHMF含量が増加した。また,官能評価もヘッドスペース量が大きいほど悪い評点が得られた。殺菌時間および殺菌温度は,本実験条件下で一定の傾向を与えなかった。以上から,ヘッドスペースおよび貯蔵温度が温州ミカン果汁の品質を保持する上で重要な役割を演ずることが明らかとなった。

香気成分の食品容器内面材プラスチックフィルムへの吸着挙動を検討するため温州ミカン果汁を2種類のパウチ(ポリエチレンテレフタレート(PET)/アルミ箔(Al)/高密度ポリエチレン(HDPE), PET/Al/未延伸ポリプロピレン(CPP))に充填した。なお,対照区としてビン詰め果汁を用い,試験区,対照区とも充填後40℃定温下に置いた。(1) 充填後7日間経過したときの,各香気成分のHDPEパウチにおける分配比(フィルム中の量/果汁中の量)は,テルペン炭化水素で1.2～1.7,テルペンアルデヒドは0.65,テルペンアルコールは0.19～0.24であった。(2) 各香気成分の果汁およびフィルムからの回収量を充填後14日後まで追跡したところ,テルペル炭化水素の果汁からの回収量はHDPEでは減少し続けたが,CPPでは7日目に極小値を与え,それ以降増加した。リナロール,シトロネラールの果汁からの回収量は,CPPで7日目以降大きく増加した。(3) パルプ含量0～4.4%の果汁を用いて香気成分のフィルムへの吸着に及ぼすパルプの影響を明らかにした。すなわち,CPPよりHDPEの方がパルプ含量の影響が顕著であり,パルプ含量が低いほどフィルムへの吸着が著しかった。また,パルプ含量4.4%の果汁をHDPEパウチに充填した場合,リナロールの回収量は7日目には対照区の約1.5倍となり,香気改善効果が期待された。

夏期における一次加工野菜生産工場の冷蔵庫, 配送車および店舗内冷蔵庫を通してカットレタスの温度管理の実態を測定した。同時に, 1, 5, 10およ、び20℃におけるナイロン/ポリエチレン60μm小袋に脱気包装されたカットレタスの品質変化について検討を加えるとともに, 砕氷, 蓄冷剤および発泡スチロール箱を用いた簡易・迅速な低温配送方法を開発した。結果は以下の通りである。(1) 夏期におけるカットレタス製造後の保管流通温度 (庫内温度) は512℃であった。この温度条件下でのカットレタスのシャルフライフは3日以内であった。(2) 実験室規模のモデル試験では, カットレタスの貯蔵安定性は, 1℃で14日間, 5℃で57日間, 10℃で35日間, 20℃で13日間であった。本条件下での品質低下は, 嫌気呼吸に伴う異臭の発生が主であり, 主要成分としてエチルアルコールが検出され高温貯蔵温度区ほど発生量が増大した。(3) 発泡スチロール箱による簡易低温貯蔵方法では, 貯蔵前にカットレタス品温をできる限り速やかに低下させることが重要であった。冷却方法としては, 品温低下の点で砕氷が有効であると考えられた。これらの結果に基づいて, 発泡スチロール, 砕氷からなるカットレタスの貯蔵・流通法を設定した。

Studies on the effect of surfactant location on O/W emulsifiction, revealed a useful correlation between the maximum amount of aqueous phase that could be solubilized in the oil phase containing the emulsifier and the average droplet size of the emulsion subsequently formed.It is suggested that this correlation may be applied to develop a tool which can minimize the need for a trial-and-error process in selecting the best surfactant combination for a given emulsion formulation. The proposed method would have an advantage over Griffin's “required HLB” concept as, unlike required HLB values, solubilization measurements are relatively simple and the results are reproducible. Furthermore, this method should be more reliable since it takes into account the effects of other additives in the oil and aqueous phase.The correlation between solubilization and emulsification is believed to be related to the basic emulsification mechanism.

We introduce a one-dimensional model involving the nucleation and the drift of many particles. The model originates from interacting kink systems and simulates time evolution in modulated systems. In this model the nucleation rate of a particle depends nonlocally on the density of preexisting particles and the drift of particles is due to a weak and repulsive interaction among them. We first study the statistics of this model in the case that the drift of particles is negligible, and then consider the effects of the drift of particles.

果汁,トマトピューレなどの液状食品の保存及び輸送容器として用いられつつあるドラム缶式無菌バッグの耐振動衝撃性について解明するとともに,ドラム缶内無菌バッグのクラックやピンホールの防止策について検討し,次の結果を得た. (1) ドラム缶式無菌バッグは,大分県杵築市から神奈川県海老名市までの1200kmの輸送中にクラックを生じ,著しい場合にはピンホールを生じた.損傷程度はトラック・フェリー輸送より貨車輸送において著しかった. (2) 無菌バッグの損傷は輸送中の振動に伴って生じる同バッグの屈曲現象による疲労破壊で,上下振動より水平振動によって生じやすかった. (3) クラックの発生率は,緩衝処置を施すことによって低減でき,特に半円状の発泡スチロール板を用いた緩衝方式3 (C区)で緩衝効果が最も高かった.この場合,1200km以上の貨車輸送及びトラック・フェリー輸送の両輸送区においてもクラックやピンホールは発生しなかった. (4) トラック・フェリー輸送より貨車輸送において多く損傷が発生する現象は貨車の水平振動がドラム缶の内容物の水平振動と共振を起こすことが原因であった.

生栗の6カ月以上の長期貯蔵を目的に低温貯蔵試験を行った。1. 1℃ポリエチレン包装区は, カビ・萌芽等の不良果の発生が6カ月貯蔵でも6%と少なかった。一方, 5℃以上の貯蔵区は不良果の発生が甚しく, 5℃貯蔵でも3～4カ月が貯蔵限界であった。2. 貯蔵中, シヨ糖含量の増加と澱粉含量の減少が認められた。この現象は低温貯蔵区ほど著しかった。このショ糖含量の増加により官能評価において高い評点が得られた。3. 総フェノール含量, 硬度, 色調, 官能評価等の測定項目においても, 1℃区 (PE) での貯蔵中変化は, 5℃以上の貯蔵区に比べ際立って少なかった。以上より, 1℃, PE貯蔵により6カ月以上の長期貯蔵が可能であると考えられると同時に, 貯蔵に伴うシヨ糖含量の増加による甘味の改善という副次的効果が確認された。

In order to establish a long-term storage procedure for chestnuts, both precooling, by room cooling, pressure cooling and vacuum cooling, and cold-storage with polyethylene pouches were investigated. Results obtained were as follows:1. Vacuum cooling gave the fastest cooling rate, followed by pressure cooling and by room cooling. Vacuum cooling, however, gave rise to white spots on the shell of chestnuts which was considered to be an undesirable selling factor. Of the three precooling treatments mentioned above, pressure cooling was thought to be the best.2. The weight losses during cooling were 1.6% for pressure cooling and 2.8% for vacuum cooling. In the latter case, the loss was approximately equal to the result calculated from the temperature reduction, assuming that almost all of the latent heat of vaporization came from the product.3. The extent of mold growing on the shell or scar of the stored chestnuts increased with increasing storage temperature and storage period. Almost all of the chestnuts which were stored at 10°C for 4 months or at 5°C for 6 months were spoiled.4. To evaluate an elastic modulus of chestnut flesh, cylindrical specimens were cut out from chestnuts along with long and short axis parallel to the seed scar. In chestnuts stored at 1°C, elastic modulus of the long axis flesh changed with the storage period.5. The sucrose content of the chestnuts stored at 1, 5 and 10°C increased rapidly during the first month, particularly at 1°C. Conversely, the starch content of the chestnuts decreased during the above period.6. The LL size chestnuts were more suitable for storage than L size ones. Since both the respiration rate and the weight loss of these chestnuts were lower than in L size.7. The shelf life of the LL size chestnuts was 3 months at 1°C, 2 months at 5°C and 1 month at 10°C.

業務用カットレタスの適正な製造・貯蔵条件を見出すことを目的に,5×5cmに処理したカットレタスの5および10℃における貯蔵の安定性を物理的,化学的および官能的方法によって調べた.(1) 切断工程では,鋭利な刃で処理したカットレタスの品質が鈍い刃あるいはチョップ切りしたものより良好であった.洗浄工程では,流水洗浄,バブリング洗浄によって生菌数が1/10～1/100に減少し,品質も保持されていた.アスコルビン酸,次亜塩素酸ナトリウムのような化学薬品の効果は認められなかった.(2) 脱水工程では,1000rpm, 30秒の遠心処理が顕著にカットレタスの品質保持期間を延長させた.包装材料はON/PE, 60が最も良く,150mmHgの脱気包装が長時間褐変および異臭の生成を抑えていた.(3) 貯蔵中では,アスコルビン酸,クロロフィル,グルコース,フラクトースおよび貫入抵抗値とも徐々に減少したが,ポリフェノール含量は7日以降で顕著な増大が認められた.酸素濃度2～3%でエチルアルコールの生成が見られ,その生成量は官能検査による品質評価と良く一致していた.供試カットレタスの呼吸速度は0℃でも20 (CO2 mg/kg・hr)と高かった.(4) 以上から,カットレタスの適正な製造・流通条件として,鋭利な刃による切断,冷却水(5～8℃)による流水洗浄,バスケット型遠心分離機(φ52cm, 1000rpm)で30秒脱水,ON/PE, 60袋充填,脱気(150mmHg)包装,1～5℃下での保管・流通を設定した.

Human body odor consists of various kinds of odor components. Here, we have investigated the changes in body odor associated with aging. The body odor of subjects between the ages of 26 and 75 was analyzed by headspace gas chromatography/mass spectrometry. 2-Nonenal, an unsaturated aldehyde with an unpleasant greasy and grassy odor, was detected only in older subjects (40 y or older). Furthermore, analysis of skin surface lipids revealed that omega7 unsaturated fatty acids and lipid peroxides also increased with aging and that there were positive correlations between the amount of 2-nonenal in body odor and the amount of omega7 unsaturated fatty acids or lipid peroxides in skin surface lipids. 2-Nonenal was generated only when omega7 unsaturated fatty acids were degraded by degradation tests in which some main components of skin surface lipids were oxidatively decomposed using lipid peroxides as initiator of an oxidative chain reaction. The results indicate that 2-nonenal is generated by the oxidative degradation of omega7 unsaturated fatty acids, and suggest that 2-nonenal may be involved in the age-related change of body odor.

酒石の安定化したブドウ果汁中の酒石酸およびカリウム含量の目標値を得るために,6種類の濃縮ブドウ果汁から調製した還元果汁(13° Brix)の主要有機酸(酒石酸およびリンゴ酸)ならびにカリウム含量を測定した。(1) 酒石酸含量は0.06～0.11g/100ml(平均,0.09g/100ml),リンゴ酸含量は0.51～0.56g/100ml(平均,0.53g/100ml)であり,リンゴ酸が酒石酸よりも高い値を示した。(2) カリウム含量は18.7～31.2mg/100ml(平均,27.4mg/100ml)であった。(3) 以上の結果から,酒石の安定化したブドウ天然果汁の目標値として,酒石酸0.1g/100mlおよびカリウム30mg/100mlを推定した。
