203. Shoppers' reactions to modern food retailing systems in an emerging countryThe case of Morocco.

Purpose – This article aims to explore the effects of the massive arrival of foreign distribution concepts in emerging countries on the evolution of the local buyers' shopping practices. The confrontation of the latter, long accustomed to the traditional network, with the new retail outlets gives rise to the emergence of new modes of shopping and purchasing. Design/methodology/approach – The use of a qualitative approach, combining in-store observations of behaviours and in-depth interviews, highlighted rich and complex trends in consumption in an emerging country; Morocco for instance. Findings – The content analysis of collected data shows that the differences in social classes give place to varied shopping strategies and generate singular symbolic representations of shopping experiences. The research reveals also a hybridization of shopping practices where the consumers transpose some values and shopping behaviors inherited from the traditional trade into the modern distribution stores. Finally, the research also shows differences between global and local retail banners laying on their perceived images, store attendance and shopping practices which reflect their contrasted positioning strategies. Practical implications – The findings enable the retailers to adapt/shape their location strategy, assortment policy and positioning strategy to improve their store image and attractiveness and gain market power. The results have also implications on the public policy to manage the balance and the future of local traditional shops and modern retail stores. Originality/value – This paper points out the role of cultural anchorage in producing hybridized shopping practices that allows the domestic buyers to cope with the uncongruency between their inherited traditional values and those associated to the modern distribution. It also shows how these local customers use the modern retail stores as a scene of symbolic exhibition for their social status and invent hybrid shopping practices to cope with this incongruency. This study describes dietary supplement consumption practices among the Taiwanese population over the age of 65. Data for the analyses were derived from the 2005-2008 Nutrition and Health Survey in Taiwan. Data from a total of 914 participants (456 men and 458 women) was collected in the study to delineate patterns of supplement usage. The results indicated that the percentage of individuals taking supplements was 45.7% for men and 52.2% for women. There were no significant differences in supplement use by gender, age group, geographic stratum, current employment status, household monthly income, self-reported health status or marital status, except for higher education and adequate perceived financial resources. Half of both men and women chose to take only one supplement. In addition, as the number of supplements taken increased, the number of people decreased. The elderly with higher education levels were more likely to take tyro kinds of supplements. The top five supplements consumed from highest to lowest were: glucosamine, multivitamins and minerals, calcium, fish oil and vitamin B complex. The major reason for supplements use for men was to supplement an unbalanced diet, and that for women was to prevent joint degeneration. The main factor influencing choice of supplements in the elderly was receiving the supplement as a gift from another person. The aim of this paper is to analyse the concept of consumer in relation to the concepts of habitus and reflexivity. We depart from the microeconomic perspective as well as rational choice models in order to question rational choice and insatiability issues. We believe that the consumer is multi-determined and multi-faceted by both the diversity of socialization and interaction contexts. The empirical analysis focuses on expenditure lists in order to identify distinctive features in accordance to descriptive variables and to emphasize the relevance of the dichotomy between practical and reflective habits. The objective of this research was to establish the link between the ideological consumption of the Democratic Security Policy (DSP in English or PSD in Spanish) and President Álvaro Uribe Vélez's image, with the consumption of nationalistic goods, products or services in young college students in Bogotá, Colombia. To this end, a descriptive multidimensional type study was conducted, which allowed for the quantitative analysis of open and closed-ended questions. A survey aimed at inquiring about the cultural, social and psychological dimensions of the ideological consumption was developed and administered to 251 college youth. The main results show that in some segments of the population there is an ideological consumption of the DSP associated with the consumption of products which strengthen the Colombian national identity, and symbolized in Uribe Vélez's image are the majority of characteristics participants associated with DSP. The historical and structural connections between auto-centered transport and fast food franchising are analyzed as comprising a synergistic contemporary mode of consumption. It is a mode that is rooted in individualized, private convenience, and it is implicated in a number of growing public health and environmental problems, including obesity and climate change. Emerging in the US after World War I, this mode of consumption, 'fast cars/fast foods,' developed rapidly after World War II, based on the application of mass production techniques to food, and in the development of the Interstate highway system. The analysis suggests that this mode of consumption is associated with a particular socio-material landscape, motorized urban sprawl, and that both promote hyperconsumption. [ABSTRACT FROM AUTHOR]

This paper presents an exploratory study of the consumption practices of UK-based young Iranians. Based on a series of in-depth interviews and participatory observation we provide an insight into the identity-constituting meanings associated with consumption practices. We illustrate how individuals use consumption discourses to tackle a series of ideological tensions in their sociocultural settings, both in Iran and in the UK. We describe how in a theocratic state individuals use commodified cultural symbolic mediators to construct and reaffirm a sense of self and identity and also to covertly resist the dominant order. We discuss consumer's paradoxes and dilemmas when confronted with a complex set of clashes between restricting political/institutional dynamics and the emancipatory forces of Western consumption. Epidemiological studies have provided evidence of an inverse association between plants based diets and degenerative diseases. The content and concentration of antioxidants in nuts suggest the beneficial role they play in health promotion and disease prevention. These benefits though evident to scientists and the other handful of people, the knowledge among the customer population might not be sufficient in order to modify their dietary habits and patterns. Thus, there was a felt need of assessing the consumption practices of consumers regarding the utilization of nuts. The present study was therefore conducted in the Udaipur city of Rajasthan (India). The sample comprised of 100 respondents who were homemakers, actively involved in household cooking, who could provide crisp and authentic information. A questionnaire was prepared and the respondents were contacted personally. In conclusion, results revealed that though consumption of nuts was noteworthy among the population, the use was largely attributed to taste and flavor and the therapeutic or medicinal value (antioxidants) of nuts was not recognized by majority of respondents, which is of concern. Hence, it was understood that new strategies are required to make aware the consumers about the therapeutic benefits of nuts and thus popularize the use. Future public health initiatives should be mindful of these consumption patterns.

This article analyses the everyday consumption of young people who live in villages and small towns in modern‐day Russia. Based on 59 semi‐structured interviews conducted in three districts of the Leningrad region, the authors try to answer the following questions: How does everyday consumption fit in the biographical experience of rural youth? What consumption styles are implemented in small towns and villages? The conceptual framework of the analysis is the perspective of ‘the lifestyle’, which connects everyday consumption practices with the construction of youth identities. The authors come to the conclusion that the differentiation of the consumption styles of modern rural residents can be explained in the context of life strategies, construed on the basis of family capital, education, employment and orientation towards success. The article describes four basic styles that characterise the consumption of young rural residents, namely ‘family’, ‘status‐oriented’, ‘individualistic’ and ‘conformist’ styles.

The ability of plants to exert health benefits beyond antioxidant and micronutrient capacity introduces a gap in scientific understanding. The xenohormesis hypothesis aims to fill this gap, proposing that an evolutionary adaptation of enzyme and receptor pathways allow us to react to information that plants provide about the environment, offering a distinct survival advantage. The concept suggests that phytochemicals produced by plants under stress are able to activate longevity pathways in other organisms when consumed. The same pathways activated by calorie restriction, the highly conserved sirtuin enzymes and cellular homeostasis mechanisms provide an exciting perspective for treating chronic conditions related to excessive consumption. Harnessing the biological activity associated with the xenohormesis paradigm could provide a simple and achievable therapeutic alternative, although it needs to be considered within the confounding framework. The objective of this paper is to provide an update on the role of xenohormesis within nutritional medicine and to discuss the impact of modern food supply and consumption practices on evolutionary processes.

The increasing popularity of mobile dating apps in the past decade has transformed the ways in which gay men network with each other. Based on sociology and media studies literature, I contextualize this contemporary form of intimacy, which is known as networked intimacy, in relation to networked individualism and neoliberalism. Using a mixed-methods design with interviews ( N = 7) and a survey ( N = 245), this study explored how gay men experience intimacy on these platforms. Users reported ambivalence in establishing relationships, which is brought forth by the ambiguity of relationships, dominance of profiles, and over-abundance of connections on these apps. I conclude that these aspects of ambivalence are not at all exclusive to the private domain of gay men but are tightly intertwined with the neoliberal market and consumption practices.

Although gambling has been legitimized as a form of leisure, this consumption activity can have individual and social costs. Policy approaches often focus on problem gambling as a discrete activity undertaken by an individual. Drawing on social practice theory and family identity research, we take an alternative approach, identifying how exposure to gambling can occur in emergent ways that can have an unintended but lasting effect. Based on 40 depth interviews, we identify how the pursuit of four family identity goals (membership and bonding, coming-of-age, emotional sustenance, and communing) plays a role in the normalization of gambling in childhood. We then explore how these goals and family gambling practices may contribute to gambling behaviour longer term. Finally, we examine the interplay between family identity goals at the meso-level, and wider macro-level socio-cultural institutions. Policy and social marketing initiatives that acknowledge the influence of identity-related gambling behaviour are recommended.

While cross-cultural geographical mobility is considered as one of the main social conditions of contemporary times, social sciences research in mobility has examined mainly leisure mobility or mobility of sedentary populations (e.g., sojourners). This article studies a group of contemporary nomads. transnational mobile professionals (TMPs)—a global consumer segment characterized by cosmopolitanism and voluntary mobility that is not anchored in national territories and is constantly on the road. Contrasting TMPs to sojourners, the article suggests that TMPs experience mobility as an out of ordinary experience, as a mean for creating, transforming, and developing self-identity, and a way of achieving other professional or life goals. The article also shows that TMPs take a cosmopolitan perspective on mobility and other cultures and engage voluntary in the acculturation process in the host country. [ABSTRACT FROM AUTHOR]

This study identified practices, preferences, attitudes and decision-making for fruit consumption, fruit production, and use of income generated from these activities and assessed the contribution of fruits to closing nutritional gaps of members of smallholder farming households in Western Kenya during two different seasons. Two cross-sectional surveys were conducted, one in July/August 2013 (S1) and the other in February/March 2014 (S2). The same respondents, women responsible for food preparation in the household, were interviewed during S1 and S2 with a total of 272 women participating. Semi-structured questionnaires were used to collect data on practices, preferences and attitudes related to fruit production and consumption including a quantitative 24-h recall. In this paper, we examine how actors within what we conceptualise as an emerging wild food alternative network are navigating through the foodscape to find alternatives to homogenous and standardised food products. Drawing on data from different research engagements with wild food consumers and producers over the last decade in Canada, we use the context of wild foods to explore how the ‘alternative’ is being articulated and negotiated. Inspired by scholarly work exploring the pedagogical promise of food, we also explore the transformational potential of the ‘alternative’ – how bringing wild foods to the table can both inspire and teach consumers about sustainability and alternative consumption practices. Since the mid-2000s, Turkish television drama series have been exported to many countries and attracted an unprecedented transnational audience. However, despite popularity, there is paucity of research focusing on the transnational understanding(s) of Turkish television drama audiences in different geographies. Through a reception analysis of three mostly cited television series among participants Muhteşem Yüzyıl (Magnificent Century), Aşk-ı Memnu (Forbidden Love), Kuzey Güney (North South), this study aimed at offering an understanding beyond overly stated cultural/religious proximity explanations to ascertain traces and elements of empowerment that citizens feel coming through their act of consuming Turkish dramas. For that purpose, in-depth interviews were conducted with Iranian viewers of Turkish television series living in the Austrian capital Vienna. Interpretation of that collected qualitative material suggests re-thinking of the transnational audience’s consumption practices that expand tourism and trade flows and other related businesses between the two countries.

Esse artigo é resultado parcial de uma pesquisa de doutorado e teve como objetivo visibilizar como grupos com estilos de vida e de trabalho alternativos a modos massificados de viver relacionavam-se com o consumo. Problematizaremos o aspecto da individualização das responsabilidades sobre os problemas ambientais, crítica apontada por um dos grupos participantes. Ainda que refletir e modificar as práticas de consumo não acabe com os problemas ambientais, o fato de tomar para si as preocupações em relação ao planeta que habitamos pode viabilizar relações menos massificadas com a própria vida. The omnipresence of norms on the market requires us to question their influence on consumption practices, how to study them, design them and manage them. Drawing on the work of Foucault, this article sets out to test prior research on consumption against the norm, normality and deviance. Given the political nature of (ab)normalisation, three government modes and market topographies (anthropemous, anthropophagous and mutualist) can be identified based on the primary political models that shape them (conservatism, liberalism and communism). The author concludes by challenging the role of the researcher in the politicisation of practices and emphasises the risks of failing to consider the norm and (ab)normality in consumption research.

ResumoEsta pesquisa aborda a relação entre o corpo e a estética, compreendida como padrão corporal. O objetivo foi analisar o corpo masculino na revista Men's Health. A metodologia usada foi à análise de conteúdo como proposta por Bardin (1979). O corpus de análise foi composto por 12 edições da revista, veiculadas de janeiro a dezembro de 2011. A partir da análise feita, pode‐se afirmar que na revista Men's Health a aparência encontra‐se ligada a um corpo magro e musculoso. Para a obtenção do modelo propagado pela revista, são necessários investimentos e práticas de consumo. Nota‐se ainda que o discurso do bem‐estar e da felicidade usa a publicidade para incentivar os leitores a comprar as novidades lançadas pela sociedade de consumo.AbstractThis research presents the relationship between the body and aesthetics, understood as standard corporal. The aim of this study was to analyze the male body in Men's Health magazine. The methodology was content analysis as proposed by Bardin (1979) and the corpus analysis was composed by 12 editions of the magazine, published from January to December 2011. From the analysis, it can be affirmed that in Men's Health magazine appearance is linked to a lean and muscular body. To obtain the model propagated by the magazine, several investments and consumption practices are necessary. It is also observed that the discourse of well‐being and happiness uses advertising to encourage readers to buy the news released by the consumer society.

This article discusses parents' and young people's accounts of family television viewing, produced as part of a research project into responses to sexual content in the media. The analysis identifies how practices of media consumption, such as parents 'discussing' social issues in drama with their children, are gendered and gendering. These in turn contribute to young people's understandings of gender and sexual identities. The article argues that familiar anecdotes, for example, about the 'embarrassment' of communally watching sexual images on television, can be an occasion for challenging or reinforcing family power relations and making identity claims, both at the time of viewing and of retelling. This research work aims to describe the results of the archeological collection recovered from Precinct 62 of Complex 17, at the El Shincal de Quimivil site (Inka period with brief occupation during the Hispanic-indigenous), through a perspective that highlights the possible interactionsbetween human and non-human persons (Hallowell 1960). The purpose of the analysis is to compare its results with ritualistic use and consumption practices. A variety of research at the site allows for its interpretation as a political and administrative center of relevance within the structure of Tawantinsuyu (Raffino 2004), where significant ceremonies and celebrations of the official calendar were held. During such, abundant/plentiful amounts of food and beverages were shared amongst diverse communities (Giovannetti 2009, Giovannetti et al. 2012). There, faunistic remains play a pivotal role for the interpretation of commensalism practices (Bray 2012). The zooarcheological results obtained contribute to the debate concerning the use and consume of animals in Inkaic past, specifically during those events that exceed every-day life. Its articulation with the analysis of other elements (pottery, architectonics and archeobotanical remains), as well as their spatial disposition, has allowed for the highlighting/recognition of the ritualistic character of the context in which they occurred., El objetivo del presente trabajo es presentar los resultados del análisis del conjunto arqueofaunístico recuperado del Recinto 62 del Complejo 17 del sitio El Shincal de Quimivil (período inka con breve ocupación durante el hispano-indígena), a través de una perspectiva que destaca las posibles relaciones que se forjaron entre personas humanas y no humanas (Hallowell 1960). Este análisis pretende discutir dichos resultados relacionándolos con prácticas de uso y consumo en un contexto ritual. Las múltiples investigaciones realizadas en el sitio, permiten interpretarlo como un centro de importancia política y administrativa en la estructura del Tawantinsuyu (Raffino 2004), donde se celebraban importantes fiestas y ceremonias del calendario oficial. En las mismas se compartían abundantes cantidades de comidas y bebidas entre diversas comunidades (Giovannetti 2009, Giovannetti et al. 2012). Aquí, los restos faunísticos juegan un importante papel para la interpretación de las prácticas de comensalismo (Bray 2012). Los resultados zooarqueológicos obtenidos contribuyen a la discusión acerca del uso y consumo de animales en el pasado inkaico, específicamente en aquellos eventos que exceden la cotidianeidad. Over 500 abandoned uranium mines are located on the Navajo Reservation. Different pathways of environmental uranium exposure have been studied with respect to the Navajo people including water, soil, and plants, however, uranium exposure from traditional Navajo food, specifically mutton (sheep), has not been reported. This study focuses on mutton consumption in the small community of Cameron, Arizona, located in the southwestern region of the Navajo Nation and initiated after community members expressed concern with the uranium exposure of their sheep. Preliminary investigation into the presence of uranium in sheep raised near Cameron showed elevated uranium levels in the kidneys the sheep tested. The goal of this study is to investigate mutton consumption among the Navajo living in Cameron. Mutton is a traditional food of the Navajo, but consumption practices are not well documented. An important aspect of determining the extent of exposure through food consumption is to assess the frequency of consumption. The results of this study indicate the Cameron participants consume mutton most commonly at family gatherings or celebrations. The survey suggests that less mutton is consumed now compared to the past, and there is concern that contaminated mutton may change traditional ceremonies.

El objetivo del presente artículo es caracterizar los conocimientos y las prácticas de consumo de sustancias ergogénicas que presentan los usuarios del gimnasio Strong Fit ubicado en el departamento de Cundinamarca en la ciudad de Mosquera. El tipo de estudio es cuantitativo, de enfoque descriptivo y transversal con una muestra integrada por 21 usuarios, 11 hombres y 10 mujeres. El instrumento utilizado es un cuestionario de 28 preguntas con preguntas abiertas y cerradas. Como resultados principales, se aprecia que el 90,91 % de los hombres y el 50% de las mujeres consumen ayudas ergogénicas actualmente. También se observó que el 63,64% de los hombres y el 70% de las mujeres no recibieron la recomendación o prescripción para el consumo de este tipo de sustancias por parte de un profesional. Finalmente, entre los agentes que promueven o facilitan el consumo de ayudas ergogénicas observamos que los entrenadores tienen el porcentaje más alto con un total del 69,2%. The objective of this paper is to characterize the knowledge about the consumption of ergogenic substances presented by users of the Strong Fit gym located in the department of Cundinamarca in the city of Mosquera. The approach is quantitative, descriptive and transversal scope with an integrated sample by 21 Users, 11 men and 10 women. The instrument used is a questionnaire of 28 questions. As a result, it can be seen that 90.91% of men and 50% of women currently consume ergogenic aids. En el contexto de un mundo cada vez más globalizado, que afecta en particular las ciudades de América Latina y que está orientado, entre otras cosas, a homogeneizar las prácticas de consumo, los bienes patrimoniales (materiales e inmateriales) son transformados en mercancía que añade valor a las ciudades que deben responder a la demanda por el interés que despiertan para el turismo internacional y para la sobrevivencia de algunas economías locales. Las acciones que se toman desde las instancias gubernamentales para la gestión del patrimonio tienden a ver sus valores desde una perspectiva instrumentalista que en la mayoría de los casos no considera las verdaderas necesidades de la población que habita estos lugares generando procesos de gentrificación o tomado acciones donde se tiende a petrificar las prácticas y a que se impongan simulacros orientados a complacer las expectativas de los turistas ávidos de consumir "cultura". La valoración, por tanto, requiere de visones más amplias donde se tenga una aproximación holística del territorio. En este sentido, la noción de paisaje contribuye a este propósito. Sin excluir otros tipos de valoración, la comprensión de un lugar patrimonial, desde esa noción de paisaje, permite abordar el problema desde diferentes aspectos y lograr un mejor reconocimiento para la planificación con el fin de poder tomar acciones de mayor pertinencia en la gestión de estos lugares.

Il s’agit de développer, au sujet d’un objet encore peu étudié sous cet angle en France, des interrogations classiques de la sociologie des pratiques culturelles. L’enquête, réalisée auprès d’étudiants, examine si l’origine sociale, le sexe et l’engagement politique des étudiants sont associés des variations marquées en termes de consommations et de goûts humoristiques. Si l’on a transposé au rire des formes de questionnements classiques en sociologie de la culture, une attention plus grande que d’ordinaire a été portée aux modalités des pratiques et aux modes de consommation des œuvres. Pour saisir les logiques sociales des goûts, les manières de consommer sont souvent aussi importantes – et socialement différenciées – que les biens consommés. This article aims at analysing the principles structuring the consumption of humoristic cultural goods, according to individual social characteristics. Bringing such a perspective on this object, which is largely absent in France, arguably addresses larger issues of the sociology of cultural practices. Based on an empirical study conducted among students, the paper questions how students’ social origin, sex and political preferences are associated to conspicuous variations in terms of consumption practices and tastes in humor. The article is not only transposing central themes of sociology of culture onto laughter, it also brings attention to the social modalities of practices and on modes of consumption of artworks. More than studying the social distribution of cultural goods and practices, the article contends that analysing social logics of taste implies to look specifically at how individuals consume: ways of consuming are arguably at least as much subject to social differentiation as consumed goods.

Purpose This paper aims to examine how socio-economic status (SES) shapes consumers’ purchase behavior of genuine brands and counterfeits. It also forms a typology based on the decision-making processes of these two groups by exploring neutralization processes and emotional outcomes related to their behaviors. Design/methodology/approach Data are collected through in-depth, semi-structured interviews with 42 users and non-users of counterfeits from different SES groups. Findings This paper develops a consumer typology based on the customer behavior of counterfeit and genuine brand users, as well as emotional outcomes and neutralization strategies used to justify their actions according to their SES group. These categories are defined as the black chameleons, the counterfeit owners, the genuine brand owners and the authenticity seekers. Originality/value This paper contributes to the counterfeit literature by examining the consumption practices of each SES group of users and non-users of counterfeits by focusing on motivations, emotional outcomes and neutralization processes. The study shows how consumers’ end consumption practices and their SES group explains the mix findings on the counterfeit literature.

Limiting global warming below 1.5 °C requires rapid decarbonization of energy systems. Reductions of energy demand have an important role to play in a sustainable energy transition. Here we explore the extent to which the emergence of low energy consuming practices, encompassing new behaviors and the adoption of more efficient technologies, could contribute to lowering energy demand and thereby to reducing CO2 emissions. To this end, we design three detailed energy consumption profiles which could be adopted by individuals in current and future wealthy regions. To what extent does the setting of air conditioners to higher temperatures or the widespread use of efficient showerheads reduce the aggregate energy demand? We investigate the potential of new practices at the global level for 2050 and 2100. The adoption of new, energy saving practices could reduce global energy demand from buildings by up to 47% in 2050 and 61% in 2100 compared to a scenario following current trends. This strong reduction is primarily accounted for by changes in hot water usage, insulation of buildings and consumer choices in air conditioners and heat pumps. New behaviors and efficient technologies could make a significant long-term contribution to reducing buildings' energy demand, and thus facilitate the achieval of stringent climate change mitigation targets while limiting the adverse sustainability impacts from the energy supply system.

Raising awareness among young people and changing their behavior and habits concerning energy usage and the environment is key to achieving a sustainable planet. Luxury branding is a highly dynamic and evolving area within brand management. Despite evidence from consumption practices which indicates that there is a negative side in consumers’ relationships with luxury brands and responses to them, existing literature on luxury branding seems to remain predominantly focused on the positive aspects of consumption. The paper synthesizes insights from literature on luxury branding, negative brand relationships and theoretical views on negative consumer responses. A research agenda highlighting issues that merit further investigation on this topic is subsequently proposed so as to guide subsequent research efforts. Promising topics for further research are identified research in the following domains: (a) negative internal responses to luxury brands, (b) the antecedents and consequences of negative responses to luxury brands, (c) the dynamics of negative consumer-luxury brand relationships, and (d) the interplay between consumer positivity and negativity.

This paper presents a synthesis of the theoretical approaches around consumption in different Social Sciences, in order to understand their treatment as to feeding practices. The emphasis in this last point is directed towards food inquiries in Archaeology. A zooarchaeological case study (Fort La Perra, La Pampa, Argentina, late 19th century) is presented to illustrate and discuss the perspectives upheld by the author. El artículo presenta una síntesis sobre las aproximaciones teóricas en torno al consumo en diversas disciplinas de las Ciencias Sociales, con el fin de comprender su tratamiento en relación con las prácticas de alimentación. El énfasis en este último punto se dirige a la indagación sobre la alimentación particularmente en el campo de la Arqueología. Se presenta un caso de estudio zooarqueológico (fortín La Perra, La Pampa, Argentina, fines del siglo XIX) para ilustrar y discutir las perspectivas sostenidas por la autora.

Garrett and Rueda analyse the drivers of food systems globalisation and the ways in which increasingly global and homogeneous consumption practices are creating new couplings between places of consumption and production. The authors present recent data on food consumption trends and then describe the changes in demographics, economies, information flows, and energy policies that explain such trends. Using the lens of telecoupling, they then analyse how changes in consumption are influencing demand for land and production practices in distant regions and how these telecouplings between distal socio-ecological systems of production and consumption, as they become more visible, are giving rise to feedback mechanisms in the form of environmental and social governance.

International audience; Over the past 20 years, health and environmental issues have led to the reshaping of a more sustainable or resilient agriculture and to increased sales of organic and local products. However, organic food accounts for only $4 billion in Canada, barely 2 to 3% of total annual food consumption, and direct-to-consumer markets represent only 3% of Quebecers' food consumption. As sustainable consumption patterns became more prevalent, the food retail landscape had to adapt and has dramatically changed. Thus, Walmart is the largest retailer of organic products in Canada. Some other retail giants have bought chains of health food stores. In the meantime, direct-to-consumer types of retailing emerged while traditional public and farmers markets enjoyed a return to popularity. Academic literature in management, more scarcely in marketing, have focused on the process of legitimation, either of conventional grocery stores , natural food stores or “alternative food systems”. Thus, researchers used to oppose or to study separately the different types of retailing. This paper aims to propose through an ethnographic study a more integrative and global understanding of the dynamics of change in the organizational field of sustainable food through neo-institutional theory (DiMaggio and Powell, 1983; Scott, 1995). It highlights particularly the lack of pragmatic legitimacy despite the institutional work of individual actors in order to influence the cognitive, normative and regulative pillars of food consumption.

In recent years, the increasing consumer concern towards food safety, environmental sustainability and social justice issues have stimulated new consumption practices more oriented towards social, economic, and environmental sustainability [1–3]. This includes the growing consumers’ preference for organic food, local food, and other sustainable food and beverage consumption (Contribution 1) [ 4], as well as the spread of alternative distribution chains, which emphasise the importance of local food productions [ 5 ], the short-distance transportation of food, and the direct relationship between consumers and producers, although, as Kwil and colleagues (Contribution 2) highlighted in this Special Issue, “local” is still an ambiguous term in the food domain. Relatively to organic consumption, which represents one of the prominent examples of sustainable consumption practices, Rizzo, and colleagues (Contribution 3) emphasized, in this Special Issue, how the growing consumers’ interest in organic products is not only due to their desire to protect the environment or sustain rural areas, but the perceived positive impact on human health of organic food consumption has been shown as the main driver of consumer preferences for organic extra-virgin olive oil. The preference for health the attribute has also been highlighted by Butcher and colleagues (Contribution 4), as well as by Buth and colleagues (Contribution 5), among Romanian urban consumers of ecological food products, and by Nagy-Pércsi and Fogarassy (Contribution 6) for organic consumers in the Hungarian market. In addition, Testa and colleagues (Contribution 7) showed that the trend toward the preference for the health attribute also involved the consumer’s convenient orientation and is not linked only to green products. In particular, the authors also found that the category of ready-to-eat products, especially fresh-cut fruits, is affected by health-conscious consumers.

Household food waste is a significant environmental challenge, and almost half of the total global food waste comes from households. Thus, it is crucial to understand why food is wasted at home. This paper proposes a new method, Fridge Studies, that provides knowledge on food waste drivers adding to the research currently documenting the amounts and types of food wasted. Fridge studies is based on social practice theory, suggesting that waste is produced through food handling practices. By rummaging through the fridge together with the study participants, this method provides thick descriptions of practices that generate food waste in an efficient manner. Researchers and participants talk while rummaging, selecting food items and telling their story, as well as photographing the fridge and its content. The method was developed as part of three projects on sustainable food consumption in Norway and has been employed in 57 households. [ABSTRACT FROM AUTHOR]

Charcoal consumption is prevalent in the Sanaag province of North-Eastern Somalia amidst the energy crisis, leading to destruction of the fragile environment and negative impacts on citizen’s health. This study seeks to evaluate charcoal consumption trends among households. The objectives were to assess the households’ level of knowledge, attitude, and practice (KAP) regarding charcoal consumption, and to determine the association of knowledge and attitude with practices. A questionnaire was designed and distributed to 343 households who were selected using a multistage random sampling technique. Data were analyzed by both descriptive and inferential statistics using SPSS. Findings showed that 79.3% of the respondents have a good level of knowledge, 63.6% have fair level of attitude, and a fair level of practice was displayed by 77.3%. A significant association was found of charcoal consumption practices with knowledge, but not with attitude. Results also suggest that good knowledge does not necessarily translate into good practice. Improving knowledge and attitude through appropriate intervention programs or policies can ensure sustainable charcoal consumption practice. This study is a substantial contribution to the literature on KAP relating to charcoal consumption among households in Somalia.
