The objectives of this study were to examine the effects of ractopamine (RAC) on the behavior and physiology of pigs during handling and transport. Twenty-four groups of three gilts were randomly assigned to one of two treatments 4 wk before slaughter: finishing feed plus RAC (10 ppm) or finishing feed alone. Pigs were housed in the same building in adjacent pens with fully slatted floors and ad libitum access to feed and water. Behavioral time budgets were determined in six pens per treatment over a single 24-h period during each week. Behavioral responses of these pigs to routine handling and weighing were determined at the start of the trial and at the end of each week. Heart-rate responses to unfamiliar human presence were measured in all pigs and blood samples were taken from a single pig in each pen on different days during wk 4. At the end of wk 4, all pigs were transported for 22 min to processing. Heart rate was recorded from at least one pig per pen during transport and a postmortem blood sample was taken from those pigs that were previously sampled. During wk 1 and 2, RAC pigs spent more time active (P < 0.05), more time alert (P < 0.05), and less time lying in lateral recumbency (P < 0.05). They also spent more time at the feeder in wk 1 (P < 0.05). At the start of the trial, there were no differences in behavioral responses to handling. However, over each of the next 4 wk, fewer RAC pigs exited the home pen voluntarily, they took longer to remove from the home pen, longer to handle into the weighing scale and needed more pats, slaps, and pushes from the handler to enter the scales. At the end of wk 4, RAC pigs had higher heart rates in the presence of an unfamiliar human (P < 0.05) and during transport (P < 0.05), but not during loading and unloading. Also at the end of wk 4, RAC pigs had higher circulating catecholamine concentrations (P < 0.05) than control pigs. Circulating cortisol concentrations and cortisol responses to transport did not differ between treatments. The results show that ractopamine affected behavior, heart rate, and catecholamine profile of finishing pigs and made them more difficult to handle and potentially more susceptible to handling and transport stress.

Carcass and live measurements of 45 barrows were used to evaluate the magnitude of ractopamine (RAC) treatment prediction biases for measures of carcass composition. Barrows (body weight = 69.6 kg) were allotted by weight to three dietary treatments and fed to an average body weight of 114 kg. Treatments were: 1) 16% crude protein, 0.82% lysine control diet (CON); 2) control diet + 20 ppm RAC (RAC16); 3) a phase feeding sequence with 20 ppm RAC (RAC-P) consisting of 18% crude protein (1.08%. lysine) during wk 1 and 4, 20% crude protein (1.22% lysine) during wk 2 and 3, 16% crude protein (0.94% lysine) during wk 6, and 16% crude protein (0.82% lysine) during wk 6. The four lean cuts from the right side of the carcasses (n = 15/treatment) were dissected into lean and fat tissue. The other cut soft tissue was collected from the jowl, ribs, and belly. Proximate analyses were completed on these three tissue pools and a sample of fat tissue from the other cut soft tissue. Prediction equations were developed for each of five measures of carcass composition: fat-free lean, lipid-free soft tissue, dissected lean in the four lean cuts, total carcass fat tissue, and soft-tissue lipid mass. Ractopamine treatment biases were found for equations in which midline backfat, ribbed carcass, and live ultrasonic measures were used as single technology sets of measurements. Prediction equations from live or carcass measurements underpredicted the lean mass of the RAC-P pigs and underpredicted the lean mass of the CON pigs. Only 20 to 50% of the true difference in fat-free lean mass or lipid-free soft-tissue mass between the control pigs and pigs fed RAC was predicted from equations including standard carcass measurements. The soft-tissue lipid and total carcass fat mass of RAC-P pigs was overpredicted from the carcass and live ultrasound measurements. Prediction equations including standard carcass measurements with dissected ham lean alone or with dissected loin lean reduced the residual standard deviation and magnitude of biases for the three measures of carcass lean mass. Prediction equations including the percentage of lipid of the other cut soft tissue improved residual standard deviation and reduced the magnitude of biases for total carcass fat mass and soft-tissue lipid. Prediction equations for easily obtained carcass or live ultrasound measures will only partially predict the true effect of RAC to increase carcass leanness. Accurate prediction of the carcass composition of RAC-fed pigs requires some partial dissection, chemical analysis, or alternative technologies.

Carcasses from 64 gilts were subjected to electrical stimulation (ES) at 3, 15, 25, 35, 45, and 55 min postmortem or were untreated (NS). Two experiments were conducted to challenge nursery and growing pigs to increased levels of dietary fat (5–10% as fed), using a crystallised powdered oil mix (CPOM), produced by a modified freeze-drying process. Growth performance of nursery pigs was determined and a digestibility trial was also conducted with growing pigs (Experiment 2). The CPOM was compared, at similar levels of lipid inclusion (10% total lipids), with other fat sources commonly used in swine diet, namely soybean oil (SBO) and hydrogenated palm oil. For the growth assay (Experiment 1), the CPOM was prepared and added at different levels (0%, 2.6% and 3.8%) commonly used in commercial diets (Phase 1–4 diets). Seventy-five weaning pigs (28 days of age) were housed in 15 pens (5 pigs per pen) and randomly assigned into the three dietary treatments until 70 days of age. Growth performance and feed utilisation were compared weekly among experimental groups. The use of CPOM improved average daily gain (~60%), and increased average daily feed intake by 40% and 50% at the 2.6% and 3.8% CPOM levels respectively. In the digestibility trial (Experiment 2), pigs fed with 5% incorporation of CPOM (10% of total lipid content) had digestibility of energy and ether extract similar to those fed the SBO-supplemented diet, although the SBO diet had a significantly greater polyunsaturated fatty acid concentration. The powdered crystallisation process of the CPOM fat allowed an equivalent digestibility of this fat source with more saturated fatty acids, and the physical-property effect of this processed oil source on apparent total-tract digestibility should be further studied.

Alternative versions of a common three-parameter nonlinear growth function were evaluated on two groups of gilts. Gilts were randomly assigned to be reared under all-in, all-out (AIAO; n = 96) or continuous flow (CF) management (n = 96). The addition of a single random effect, in which the mature BW of each pig varies, provided a substantially better fit and smaller parameter standard errors. This model predicts a constant coefficient of variation between pigs. The addition of a second random effect further improved the likelihood statistics and reduced the residual standard deviation, although the impact was much smaller. The inclusion of the second random effect accounts for different patterns of growth between pigs. Variations in the growth patterns allow greater fleiibility to describe the underlying variance/covariance structure of the serial live BW. For all miied effects models, the mean and approiimate variation in age required for pigs to reach a specific BW can be predicted. After 104 d of age, the growth of CF gilts declined more rapidly, and the standard deviation in days required to reach specific target BW (TBW) (110, 120, or 130 kg) increased more rapidly than for the AIAO gilts. These models are also easily adaptable to stochastic modeling.

An experiment was conducted to evaluate the use of two real-time ultrasound data-collection methods to develop a dynamic assessment of live weight growth, protein and lipid accretions, and lysine requirement curves on two commercial swine operations. For the first method, pigs (40 barrows and 40 gilts) were weighed (ranging from 18 to 121 kg) and scanned ultrasonically to collect backfat depth and longissimus muscle area measurements every 3 wk in the finishing facility on two farms (serial method). For the second method, pigs (200 gilts and 200 barrows) of similar corresponding ages on the same two farms were weighed and scanned on 1 d (mass scan) at three different times (February, April, and May). Thirty-two pigs/sex were measured at approximately the same ages as with the serial scans. Pigs on farm 1 grew faster and had smaller backfat depths and larger longissimus muscle areas (P < 0.01) than those on farm 2, irrespective of method. These measurements were used to predict empty-body protein and lipid contents using nonlinear functions, which then were converted to accretion rates and lysine requirements at each BW. Protein accretion (g/d) and daily lysine requirements increased and then decreased for each sex on each farm and were higher on farm 1 than on farm 2. Data from the individual mass scans had larger standard errors for modeled live weight growth than data from the serial scans. Combining data from the three mass scans yielded growth curves with standard errors similar to those for the curves from the serial scans. For the protein accretion curves, the standard errors of the combined mass scans were approximately 20% lower than the standard errors of the serial scans. The standard errors for the modeled lysine:calorie ratio requirement from the serial scans were approximately 1% of the requirement at each BW. These results indicated that either the serial or mass scan data-collection method is a practical means of determining on-farm growth and daily protein and lipid accretion rates, which can be used to determine the farm-specific lysine requirements of growing-finishing pigs.

Several research trials have evaluated the impact of ractopamine on barrows and gilts of vari- ousgeneticpopulations. Overall,thedesirableresponse of ractopamine to increase daily carcass lean gain, im- prove feed efficiency, and increase carcass lean percent- age has been observed in genetic populations of sub- stantially different lean growth rates and carcass lean percentages. Six trials have evaluated the magnitude of genetic populations × ractopamine interactions. In one trial, carcass muscle accretion (g/d) increased with ractopamine to a greater extent in high-lean-gain (High-Lean) barrows than in low-lean-gain (Low-Lean) barrows (P < 0.02). Dissected fat accretion (g/d) was reduced by a greater magnitude in the High-Lean than in the Low-Lean barrows (P < 0.04). A second trial evaluated the ractopamine response in five genetic pop- ulations of barrows and found significant ractopamine × genetic populations interactions (P < 0.05) for daily carcass lean gain. A mixed effects model version of a common swine growth function is introduced. This version, in which the mature BW of each pig is considered random, accounts for increasing variation with age and serial correlations across age that are common in serial BW growth data sets, thereby providing a much better fit and significantly smaller parameter SE. The inclusion of random effects also reduces the impact of selective sampling, which occurs when fast-growing pigs are removed for marketing, and provides a statistic (i.e., variance estimate) that describes the between-pig variation within a group. Comparisons between the fixed and mixed effects models are made using swine growth data consisting of 93 pigs with biweekly BW data from 54 to 138 d of age. In addition to a much better fit, the mixed effects model version is easily adaptable to stochastic modeling because only an additional random effect (i.e., mature BW) for each pig needs to be generated.

The objective of this experiment was to compare the effects of tail docking and teeth clipping on the growth and behavior of pigs. Pigs (n = 126) from 21 litters (6 pigs/litter) were blocked by birth weight, and assigned at 3 d of age within blocks to either teeth clipping and tail docking (processed) or control (sham-processed). Vocalizations of pigs were recorded during the procedures, and behavior was observed during the lactation, nursery, and growing periods. Blood samples were collected on d 21 to measure serum IgG concentrations. Wounds on the body and tail were assessed by inspecting both sides of the body and tail at 70, 110, and 160 d of age, whereas BW were recorded at 10, 21, 70, and 160 d of age. Fat and LM depths were measured ultrasonically on growing pigs at 160 d of age. Clipped and docked pigs vocalized more (1.06 vs. 0.62 s; P0.01) during processing, and processed pigs were observed lying alone more often (P = 0.03) during the 3 d after processing and the entire suckling period; however, teeth clipping and docking did not (P ≥ 0.14) alter the frequency that pigs spent suckling, standing, huddling, playing/fighting, or sitting during the first 3 d or between 5 and 15 d after processing. Social behavior during the nursery (P ≥ 0.23) and grower phases (P ≥ 0.18) was unaffected by clipping and docking, but processed pigs rested more (P = 0.03) during the nursery period and were less (P ≤ 0.01) interested in exploratory behaviors during both phases, especially during pen (P ≤ 0.04) and enrichment investigations (P ≤ 0.02). Teeth clipping and tail docking reduced ADG between 10 and 21 d (P = 0.01) and 21 to 70 d of age (P = 0.04), resulting in lighter BW at 21 (P = 0.01) and 70 d of age (P = 0.08) compared with sham-processed pigs. However, 160-d BW (P = 0.62), d 70 to 160 ADG (P = 0.23), and G:F (P ≥ 0.15) were not affected by teeth clipping and tail docking. Additionally, there was no difference between sham and processed pigs for fat depth (P ≥ 0.05), LM depth (P = 0.93), or estimated percent muscle (P = 0.27). Even though tail docking and teeth clipping appear to produce short-term pain and distress, results of this experiment indicate that leaving the teeth and tails intact have no detrimental effects on mortality, morbidity, live performance, or carcass merit of growing-finishing pigs.

Protein accretion curves were derived using food intake, growth and body composition data from a total of 320 pigs, which comprised castrated males and gilts from five genotypes. The 32 pigs from each genotype/sex subclass were offered ad libitum a series of isoenergetic diets (13·8 MJ metabolizable energy per kg) designed to provide a non-limiting intake of nutrients and to allow maximum protein deposition rates. Four pigs from each subclass weren slaughtered at each of the live weights (kg) 25, 44, 65, 85, 100, 115, 130 and 150. Daily food intake (dF/dt) was described as an increasing exponential function of age (t), live weight (W) as an increasing exponential function of cumulative food consumed (F), and protein weight (Pr) as an allometric function of live weight (W). The rate of protein accretion in the body of pigs [d(Pr)/dt] was calculated as d(Pr)/dt = (dF/dt).(dW/dF).(dPr)/dW). Bootstrap procedures were used to estimate standard errors for the food intake, growth and compositional parameters and to obtain the confidence bands for the dependent variables (dF/dt, W, Pr and d(Pt)/dt).Protein accretion rate as a function of live weight was curvilinear, increasing to a maximum, then decreasing with increasing live weight. There were significant differences between subclasses in the maximum rate of protein accretion, although there was no relationship between this rate and the live weight, stage of maturity, or age at which maximum protein accretion occurred. Describing protein accretion as a multiplicative function of food intake, food efficiency and the partitioning of nutrients in the body allowed changes in the magnitude and shape of the protein accretion curve to be ascribed to one, or a combination, of the above mechanisms.

Growth modelling was used to characterize the response to digestible lysine in two experiments (114 gilts in experiment 1 and 96 gilts in experiment 2) from 34 to 72·5 kg and 72·5 to 136 kg, respectively. Maize-soya-bean meal diets were formulated to assure that lysine (5·4 to 10·4 and 5·4 to 9·4 g digestible lysine per kg for experiments 1 and 2, respectively) was the first limiting amino acid. Analysis of variance was used to test linear and quadratic responses in cumulative weight gain on test as digestible lysine increased. A time × digestible lysine interaction (linear, P < 0·001) was detected, indicating that a separate regression equation for each lysine level was necessary. In experiment 1, average daily gain (ADG) and carcass crude protein (CP) accretion were maximized for gilts given 10·4, 9·4 and 8·4 g digestible lysine per kg from 34 to 44 kg, 44 to 54 kg, and 54 to 72·5 kg, respectively. Lipid accretion was minimized for gilts given 7·4 to 8·4 g digestible lysine per kg. In experiment 2, ADG was maximized by feeding 8·4 g/kg from 72·5 to 92·5 kg and 7·4 g/kg from 92·5 to 136 kg. Carcass CP accretion was maximized by feeding 9·4 g digestible lysine per kg, whereas lipid accretion was minimized for gilts given 8·4 g digestible lysine per kg from 72·5 to 136 kg. If feeding graded levels of digestible lysine resulted in parallel lines for protein accretion, mean values would result in accurate data evaluation. However, responses to digestible lysine changed over the feeding period. Therefore, the use of body weight and compositional growth curves offers an approach to more accurately characterize the growing pig's response to increased digestible lysine.

Developments in biotechnology offer potential for great economic advances in agriculture. The livestock hormone porcine somatotropin (PST) which can be produced using biotechnology is currently pending approval by the Food and Drug Administration (FDA) (Millar; Riepe and Martin). Recombinant porcine somatotropin is the genetically-engineered version of the naturally-occurring growth hormone produced in pituitary glands of all healthy swine. PST redirects nutrients from fat production to muscle production (Monsanto Animal Sciences Division). When injected daily, PST increases the animal's rate of gain and improves feed conversion. In addition, the lean growth rate improves resulting in a leaner carcass and a lower dressing percentage than untreated pigs, partly because some internal organs increase in weight (Shoup, Chen, and Schinckel). Ractopamine hydrochloride (RAC) improves swine production efficiency by redirecting nutrients to favor muscle accretion rather than fat deposition. In the present study, the time-dependent effect of RAC feeding on performance, plasma urea N (PUN) concentrations, and carcass traits of finishing pigs were evaluated. In a 28-d growth study, 80 barrows (average initial BW = 69.4 ± 7.9 kg) were assigned to 1 of 5 treatments in a randomized complete block design with 8 replicate pens per treatment and 2 pigs per pen. The pigs were fed a corn-soybean meal-based diet with no added RAC (control) or 10 mg of RAC/kg fed for 7, 14, 21, or 28 d before slaughter. All diets were formulated to contain 0.88% standardized ileal digestible Lys (1.0% total Lys) and 3.23 Mcal of ME/kg. Individual pig BW and pen feed disappearance were recorded weekly to determine BW changes, ADG, ADFI, and G:F. Anterior vena cava blood samples were taken on d 28 for determination of PUN concentrations. After 28 d on trial, the pigs were slaughtered and carcass measurements made at 24 h postmortem. Overall, providing pigs with different RAC feeding durations did not affect the final BW and ADFI but resulted in a tendency (P = 0.09) for a linear increase in ADG and a linear improvement (P = 0.003) in G:F. No effect of RAC feeding was found for weekly ADFI. Weekly improvements (P0.05) in ADG and G:F were observed over the first 21 d of RAC feeding. However, the growth response declined (P0.05) in wk 4 of RAC treatment. The concentrations of PUN exhibited a quadratic decrease (P = 0.004) as the RAC feeding duration increased. Although RAC feeding did not affect any backfat measurements and carcass length, increasing the RAC feeding duration linearly increased HCW (P = 0.01), dressing percentage (P = 0.03), LM depth (P = 0.001), LM area (P0.001), muscle-to-fat ratio (P = 0.004), and predicted carcass lean percentage (P = 0.02). These results indicate that a greater growth rate was achieved within the first 21 d of RAC feeding whereas the magnitude of carcass response was directly dependent on the duration of RAC feeding.

An experiment was conducted comparing multilevel selection in Japanese quail for 43 days weight and survival with birds housed in either kin (K) or random (R) groups. Multilevel selection significantly reduced mortality (6.6% K vs. 8.5% R) and increased weight (1.30 g/MG K vs. 0.13 g/MG R) resulting in response an order of magnitude greater with Kin than Random. Thus, multilevel selection was effective in reducing detrimental social interactions, which contributed to improved weight gain. The observed rates of response did not differ significantly from expected, demonstrating that current theory is adequate to explain multilevel selection response. Based on estimated genetic parameters, group selection would always be superior to any other combination of multilevel selection. Further, near optimal results could be attained using multilevel selection if 20% of the weight was on the group component regardless of group composition. Thus, in nature the conditions for multilevel selection to be effective in bringing about social change maybe common. In terms of a sustainability of breeding programs, multilevel selection is easy to implement and is expected to give near optimal responses with reduced rates of inbreeding as compared to group selection, the only requirement is that animals be housed in kin groups.

Carcasses of 154 hogs representing seven genotypes with substantial variation in carcass composition and percentage of lean were completely dissected and analyzed. Measurements from a ruler, Hennessy probe, and electromagnetic scanner were each used to predict wholesale and lean boneless carcass value. Error, defined as dissected value minus predicted value, due to the omission of sex, genotype, weight, and their interactions was estimated for each model. Daily feed intakes (DFI) of 565 lactation records were evaluated for sows of 2 genetic lines, PIC C-22 and L-42. Sows were fed ad libitum during the entire 21-d lactation period with a diet supplemented with either 0 or 0.3% betaine-HCl. Sows were fed corn–soybean based diets (3.32 Mcal of ME/kg).

Publisher Summary The application of biotechnology to the production of food and feed presents both new opportunities and challenges to the health of both human and livestock. As the last decade has witnessed an increase in the prevalence of Food Allergy (FA), the development of validated animal models that can be used to evaluate the potential impact of new food and feeds, both on the development of allergic responses and on growth and development, is needed. Allergic reactions to food and feed are relatively rare but occasionally produce a severe immunological reaction in both humans and animals. Food allergy encompasses several immune mechanisms that can present with a variety of symptoms. This chapter discusses the incidence and severity of food allergy, and outlines the mechanism of Type 1 immediate hypersensitivity as it applies to man and livestock. It also describes an ongoing effort that is directed toward developing inbred swine populations in which neonatal piglets exhibit either reduced or enhanced hypersensitivity to soybean and peanut.

An experiment was conducted to determine the effect of ractopamine, energy intake, dietary fat level, and sex on performance and carcass composition in finishing pigs. Three hundred six barrows and gilts were used in a factorial arrangement of treatments replicated over three seasons. Treatments consisted of two ractopamine levels (0 vs 44.7 mg/d), two sexes (barrows and gilts), two levels of fat addition (0 vs 5% added fat), and four energy intake levels (8.3, 8.9, 9.5, and 10.1 Mcal of ME/d for barrows and 7.7, 8.3, 8.9, and 9.5 Mcal of ME/d for gilts). Diets were formulated to maintain an equal lysine (28.5 g/d) intake at each feeding level through cornstarch dilution of the basal (7.7 Mcal of ME/d) diets. Pigs were fed daily based on a standard feed intake curve and prior weekly body weights. At slaughter (104 kg), carcass measurements and TOBEC HA-1 scanner measurements were recorded. Dietary fat addition improved live weight and lean efficiency (grams of carcass lean gain/kilogram of feed, P < .05). Dietary fat addition did not affect growth rate or carcass composition. Increasing energy intake resulted in a linear increase in average daily gain for both barrows and gilts (P < .01). Dietary ractopamine influenced the response of lean tissue accretion, lean tissue accretion efficiency, and fat tissue accretion to energy intake. Pigs with no added ractopamine demonstrated increased lean tissue accretion and improved efficiency and decreased fat tissue accretion with increasing energy intake (up to 9.5 Mcal of ME intake for barrows and 8.9 Mcal of ME intake for gilts). In contrast, pigs with added ractopamine did not respond to increasing energy intake and demonstrated increased fat tissue accretion with increasing energy intake. The response to ractopamine for growth was greatest from d 6 to 22 on test or during the test gain period of 7 to 18 kg. After d 22, the response of ractopamine declined linearly. These results indicate that ractopamine increases growth rapidly at the onset of feeding until a plateau is reached, after which there is a linear decline in growth response.

Pigs from four sire lines were allocated to a series of low energy (LE, 3.15 to 3.21 Mcal ME/kg) corn-soybean meal-based diets with 16% wheat midds or high energy diets (HE, 3.41 to 3.45 Mcal ME/kg) with 4.5 to 4.95% choice white grease. All diets contained 6% DDGS. The HE and LE diets of each of the four phases were formulated to have equal lysine:Mcal ME ratios. Barrows (N = 2,178) and gilts (N = 2,274) were fed either high energy (HE) or low energy (LE) diets from 27 kg BW to target BWs of 118, 127, 131.5 and 140.6 kg. Carcass primal and subprimal cut weights were collected. The cut weights and carcass measurements were fitted to allometric functions (Y = A CW(B)) of carcass weight. The significance of diet, sex or sire line with A and B was evaluated by linearizing the equations by log to log transformation. The effect of diet on A and B did not interact with sex or sire line. Thus, the final model was (B)) where Diet = -0.5 for the LE and 0.5 for HE diets and A and B are sire line-sex specific parameters. cut weight = (1+bD(Diet)) A(CW Diet had no affect on loin, Boston butt, picnic, baby back rib, or sparerib weights (p0.10, bD = -0.003, -0.0029, 0.0002, 0.0047, -0.0025, respectively). Diet affected ham weight (bD = -0.0046, p = 0.01), belly weight (bD = 0.0188, p = 0.001) three-muscle ham weight (bD = -0.014, p = 0.001), boneless loin weight (bD = -0.010, p = 0.001), tenderloin weight (bD = -0.023, p = 0.001), sirloin weight (bD = -0.009, p = 0.034), and fat-free lean mass (bD = -0.0145, p = 0.001). Overall, feeding the LE diets had little impact on primal cut weight except to decrease belly weight. Feeding LE diets increased the weight of lean trimmed cuts by 1 to 2 percent at the same carcass weight.

Differences in optimal slaughter weights were examined for barrows and gilts for three genotypes marketed under two pricing systems. Ninety-six barrows and 95 gilts were used. The first genotype (G1) averaged 44.4 and 48.8% standardized lean (10% fat) for barrows and gilts, respectively. The second genotype (G2) was 53.1 and 54.2% lean, respectively, and the third (G3) measured 47.1 and 52.7%, respectively, at an average slaughter weight of 120 kg. Carcass value was determined using a component (CO) pricing system with separate payments for lean, fat, and by-product, a live weight pricing system (LW), and backfat measurements from a Destron® probe (PR). Growth functions that define the relationships between live weight, time, and feed intake were estimated. Allometric functions were used to estimate the relationship between lean, fat, and live weight. Optimal slaughter weights were estimated by maximizing average daily profit per hog under the CO, PR, and LW pricing systems using 1991 prices and production costs. Optimal slaughter weights were lighter for the genotypes with more carcass lean. The range of differences in carcass value was higher using CO as compared to PR and LW. These carcass value differences were greater for G2, suggesting that LW does not accurately reflect the actual carcass value. The PR system underestimated lean in the G1 and G3 gilts, and G2 barrows and gilts. The differences in optimal slaughter weights across sex and genotype can be attributed to the differences in the lean growth curves and feed efficiency. To capture these differences in carcass value, producers should market genetically leaner hogs based on carcass merit.

An experiment with 127 barrows representing five genotypes, 1) H x HD, 2) SYN, 3) HD x L[YD], 4) L x YD, and 5) Y x L (H = Hampshire, D = Duroc, SYN = synthetic terminal sire line, L = Landrace, and Y = Yorkshire), was conducted to evaluate growth and development of swine from 59 to 127 kg live weight. Animals were allowed ad libitum access to a pelleted finishing diet containing 18.5% CP, .95% lysine, and 10.5% fat, with an energy density of 3,594 kcal of ME/kg. Pigs were serially slaughtered at either 59, 100, 114, or 127 kg live BW. After slaughter, carcasses were chilled and backfat was measured at four locations. The right side of each carcass was fabricated into primal cuts of ham, loin, Boston Butt, picnic, and belly. Composition of each primal cut was determined by physical dissection into lean, fat, bone, and skin. Estimated allometric growth coefficients for carcass length, carcass weight, and longissimus muscle area relative to BW; carcass lean, fat, bone, and skin relative to both BW and carcass weight; and lean in each of the primal cuts relative to total carcass lean did not differ (P greater than .05) among genotypes. Relative to BW, the pooled growth coefficient(s) for carcass weight was (were) greater (P less than .001) than unity, whereas those for carcass length, longissimus muscle area, and backfat at first rib were smaller (P less than .001) than unity. Those for other backfat measurements were close to 1.00. Relative to either BW or carcass weight, the pooled coefficient(s) for fat was (were) greater (P less than .001) than unity, whereas those for lean, bone, and skin were smaller (P less than .001) than unity. Growth of lean, backfat, bone, and skin in the carcass were nearly linearly associated with increases in BW. The increase in fat weight was curvilinear as the pig grew and was accelerated in later growth stages, indicating that carcass fat percentage increased with increased BW.

Three techniques for estimating the value of pork carcasses were evaluated: an optical probe, a real-time ultrasound scanner, and an electromagnetic scanner (EMSCAN). The ability of these techniques to predict carcass value was compared to the predictive ability of actual measures of backfat depth and longissimus muscle area taken with a ruler and a dot grid. Results indicated the EMSCAN model was the best predictor of carcass value. However, the optical probe, ultrasound, and the ruler/dot grid all provided information not contained in the EMSCAN model. The choice among ultrasound, the optical probe, and the ruler/dot grid depends on how the carcass will be used. There is no significant difference between ultrasound and the ruler/dot grid or the optical probe and the ruler/dot grid if the carcass is to be marketed in wholesale primal form, but the ruler/dot grid is superior if the ham and loin are to be sold as lean, boneless products. A model combining the EMSCAN and optical probe readings provided more accurate value predictions than either technique alone. A carcass value matrix for use in pricing pork carcasses was developed using readings from the optical probe. Carcass use has a substantial impact on value differences between fat and lean pigs.

Video images of ham cross-sections were recorded from 71 pork carcasses (ranging in weight from 72 to 119kg). Three sets of prediction equations were developed to estimate pork carcass lean and fat composition from video image analysis (VIA) of ham cross-sectional area measurements, 10th rib back fat depth (TENFAT) and hot carcass weight (HCKg). Carcass data of dissected lean and fat in the four primal cuts (ham, loin, Boston button and picnic shoulder) were used as dependent variables in establishing regression equations. The first set of equations combined VIA ham measurements and total ham weight (HTKg). Regression models containing the single variable HTKg times ham percentage lean area (Vol. 1) or HTKg times ham percentage fat area (Vol. 2) accounted for 88% and 68% of the variation in total carcass lean weight (CLKg) and total carcass fat weight (CFKg) from the right side of each carcass, respectively. The second set of equations combined VIA ham measurements and TENFAT (cm). Multiple regression models involving TENFAT, Vol. 1, and Vol. 2 accounted for 91% and 90% of the variation in CLKg and CFKg. The third set of equations used VIA ham measurements, TENFAT and HCKg. Carcass lean weight was best predicted by HCKg, TENFAT, and ham lean area (HLA) (R(2)=.92). Genetic evaluations for the U.S. swine industry are conducted by the eight purebred associations of the National Association of Swine Records. Within-herd evaluations of the growth traits (days to 105 kg [market] and backfat depth) were first reported in 1986. Analyses of the maternal traits (litter size at birth and weaning, and litter 21-d weight) were inaugurated in 1987. Expected progeny differences (EPD) are reported for all traits and for general, paternal, and maternal bioeconomic indexes. A sow productivity index combining only maternal traits is available. All records are adjusted according to National Swine Improvement Federation (NSIF) guidelines for effects such as number of pigs transferred at crossfostering and age at recorded observation prior to the BLUP evaluation. Within-herd analyses of individual contemporary groups are conducted immediately on receipt of performance records at each breed association office. All parents in the herd and the young pigs in the current group are evaluated. A report is returned to the breeder for use in herd selection and the EPD are placed in the pedigree file. The genetic base of each herd is defined as the first n tested pigs or litters, where n is the number of pigs registered annually within the herd. Change in mean EPD between groups is indicative of genetic trend. Periodic across-herd analyses are used to update interim within-herd analyses and a national sire summary is published.

Estimated breeding value programs provide more accurate estimates of each animal's true genetic merit through the analysis of available individual, sib, progeny and ancestral performance data. Selection based upon ebv 's will result in more rapid genetic progress than previous genetic improvement programs which only utilize individual performance records. Analysis of performance records via on-farm micro-computers allows immediate editing of possible errors and calculation of the ebv 's and selection indexes. Utilization of an on-farm micro-computer estimated breeding value program can lead to more competitive pork production. The program also has potential application to other species.

A replicated factorial experiment using 183 individually fed crossbred barrows was conducted. Pigs were fed an 18.5% CP (.95% lysine) diet with 3,594 kcal of ME/kg. The effects of five genotypes (GT): 1) Hampshire (H) x (H x Duroc [D]), 2) synthetic terminal sire line, 3) (H x D) x (Landrace [L] x [Yorkshire (Y) x D]), 4) L x (Y x D), and 5) Y x L; two levels of ractopamine (RAC) treatment: 0 and 20 ppm; and three treatment weight periods (WT): 1) 59 to 100, 2) 73 to 114, and 3) 86 to 127 kg live weight on growth performance and carcass traits were evaluated. Ractopamine increased (P less than .0001) amount (FSL) and percentage (PFSL) of carcass lean standardized to 10% fat content, loin eye area (LEA), and dressing percentage (PDRES) and reduced (P less than .01) amount (DF) and percentage (PDF) of dissected fat. Magnitudes of RAC effects were smaller than those reported by other researchers. Effects of GT and WT on all growth and carcass traits were highly significant (P less than .001) except for those of WT on ADG (P less than .05) and GT on average feed intake (AFI) and backfat thickness at the last rib (BFLR; P less than .05). Genotype 3 performed better for most economically important traits than did GT 1 and 4, suggesting that heterosis existed in GT 3, which essentially was obtained by crossing GT 1 and 4. Among the three treatment periods, WT 2 had the highest ADG. As BW increased from WT 1 to 3, AFI and AFI/ADG ratio (FCR) increased and lean percentage decreased.(ABSTRACT TRUNCATED AT 250 WORDS)

Two experiments were conducted to determine the effects of feeding a corn- and soybean meal-based diet (control) or a low nutrient excretion (LNE) diet, formulated with reduced dietary CP and additional synthetic AA, low phytic acid corn, and phytase, on pig growth performance during the grower (BW=32 to 77 kg) and finisher (BW=78 to 126 kg) periods and on carcass and bone characteristics at slaughter. Pigs (32+/-1.3 kg of BW, Exp. 1; 6.7+/-0.27 kg of BW, Exp. 2) were blocked by sex and BW and randomly allotted to a control or LNE diet. Pigs were housed in 4 rooms during the nursery period and in 2 rooms during the grower and finisher periods, with individual and identical ventilation systems. Pigs were phase fed 3 nursery diets for 5 wk (Exp. 2) and phase fed 2 grower and 2 finisher diets for 16 wk (Exp. 1 and 2). Pigs were housed 4 or 5 pigs/pen with 9 pens x sex(-1) x treatment(-1) during the nursery period and 4 or 5 pigs/pen with 5 pens x sex(-1) x treatment(-1) in the grower phase and 2 or 3 pigs/pen in the finisher phase. Individual BW and pen feed disappearance were recorded weekly in the nursery period and every 2 wk in the grower-finisher period. Pigs were scanned ultrasonically at d 34 of the nursery period and wk 8 and 16 of the grower-finisher period to determine backfat depths and LM area. Ten pigs x sex(-1) x treatment(-1) were slaughtered at wk 16 of each experiment to determine carcass characteristics. Overall growth performance was not different during each experiment. However, nursery G:F (control=0.65; LNE=0.60), grower ADG (Exp. 1 and 2), and grower G:F (Exp. 2) were reduced (P0.05) when the LNE diets were fed. Diet had no effect on 10th-rib carcass data in either experiment. Metatarsal bone ash percentage was reduced (P0.05) when the LNE diets were consumed in both experiments. Feeding LNE diets resulted in the maintenance of overall growth performance, bone variables, and carcass characteristics. However, further refinements are still required in the nursery and grower phases of pig production to optimize LNE diet use by the swine industry.

Dried corn distillers grains with sol- ubles (DDGS) fed to swine may adversely affect car- cass quality due to the high concentration of unsatu- rated fat. Feeding CLA enhances pork quality when unsaturated fat is contained in the diet. The effects of CLA on growth and pork quality were evaluated in pigs fed DDGS. Diets containing 0, 20, or 40% DDGS were fed to pigs beginning 30 d before slaughter. At 10 d before slaughter, one-half of each DDGS treatment group was fed 0.6% CLA or 1% choice white grease. Carcass data, liver- and backfat-samples were collected at slaughter. Longissimus muscle area, 10th-rib back- fat depth, last rib midline backfat depth, LM color, marbling, firmness and drip loss, and bacon collagen content were not altered by DDGS or CLA. Outer layer backfat iodine values were increased (P ≤ 0.05) with DDGS feeding and were 65.07, 69.75, and 74.25 for 0, 20, and 40% DDGS, respectively. Addition of CLA de- creased (P ≤ 0.05) outer layer backfat iodine values from 71.11 to 68.31. Diets containing DDGS decreased (P ≤ 0.05) percent lean tissue contained in bacon from 48% for controls to 38% for pigs fed 40%. Abundance of fatty acid synthase, carnitine palmitoyl transferase Ia, acetyl-CoA-carboxylase, stearoyl-CoA desaturase, and glycerol-3-phosphate dehydrogenase mRNA in adi- pose or liver were not different (P > 0.05) for pigs fed DDGS. Feeding CLA decreased (P ≤ 0.05) the ∆ 9 de- saturase index in adipose tissue. The data indicate that decreased carcass firmness with DDGS feeding is not reflected by changes in lipogenic gene expression. Feed- ing 20% or more DDGS to finishing swine decreases bacon leanness, but inclusion of 0.6% CLA in the fin- ishing diet can partially reverse these effects.

Managing stressors is essential for optimizing pig growth performance. To determine the effects of temperature and space allocation on growth performance and carcass characteristics, pigs were housed within their thermoneutral zone, at 23.9 degrees C, or above their thermoneutral zone, at 32.2 degrees C, and were provided either 0.66 or 0.93 m(2)/pig for the final 35 d of the grow-finish period. Individual BW were recorded on d 1, 10, 20, and 30. At slaughter, carcass measurements and samples of backfat and belly fat were collected. Final BW was decreased (P < or = 0.05) from 113 to 103 kg for pigs housed at 32.2 degrees C. The ADG was reduced (P < 0.05) for pigs housed at 32.2 degrees C (0.89 vs. 0.54 kg/d), as was G:F (0.28 vs. 0.24). Housing at 0.66 m(2)/pig resulted in pigs that were lighter (P < or = 0.05), at 106 compared with 110 kg, as a result of decreased (P < or = 0.05) ADG (0.78 to 0.65 kg/d) and decreased (P < or = 0.05) G:F (0.275 to 0.255) compared with pigs housed at 0.93 m(2)/pig. Pigs housed at a greater spatial allocation had elevated (P < or = 0.05) ADFI. The interaction of housing at 32.2 degrees C and decreasing spatial allocation increased (P < or = 0.05) the adipose iodine value from 66.8 to 70.4, decreased (P < or = 0.05) the saturated:unsaturated fatty acids ratio from 0.59 to 0.56, and increased (P < or = 0.05) the n-6:n-3 from 23.56 to 25.27. Decreased spatial allocation resulted in decreased (P < or = 0.05) belly weights. Although increased temperature did not affect belly weight, the 32.2 degrees C pigs had decreased (P < or = 0.05) raw and cooked slice weights, increased (P < or = 0.05) percentage lean of bacon, increased (P < or = 0.05) lean:fat ratio of bacon slices, increased (P < or = 0.05) raw slice scores, and increased (P < or = 0.05) quantity of collagen in belly fat. Some of these changes may have resulted from changes in lipid metabolism. Increasing spatial allocation in the 32.2 degrees C pigs decreased fatty acid synthase (P = 0.03) and stearoyl-CoA desaturase- 1 (P = 0.08) mRNA expression in adipose tissue. The results from this study demonstrated decreased growth, carcass lipid quality, and bacon quality in pigs housed at temperatures above the thermoneutral zone; however, increasing the spatial allocation for housing may be a means to ameliorate the negative effects of temperature stress.

Two genetic lines of barrows and gilts with different lean growth rates were used to determine the BW and chemical composition growth from 23 to 125 kg of BW. The experiment was a 2 x 2 x 5 factorial arrangement of treatments in a completely randomized design conducted in 2 replicates. Six pigs from each sex and genetic line were killed at approximately 25-kg intervals from 23 kg to 125 kg of BW. At slaughter, tissues were collected and weighed. All components were ground and frozen until analyzed for water, protein, lipid, and ash. Serial BW data were fitted to alternative functions of day of age. Based on Akaike's information criteria values, the random effects model, BW(i, t) = (1 + c(i))(b(0) + b(1)t + b(2)t(2)), was the best mixed model equation. The chemical component mass data were fitted to alternative functions of BW. The allometric function, chemical component mass = aBW(b), provided the best fit to the data. Daily deposition rates of each chemical component were predicted by using the derivatives of the 2 functions. The overall ADG of the 2 genetic lines were not different. Barrows had 0.052 kg/d greater (P = 0.03) ADG than gilts. Allometric growth coefficients for all 4 chemical components were different (P0.01) for each genetic line. Allometric coefficients and predicted relative growth (g/kg of BW gain) for protein and moisture mass were greater (P0.01) for the high lean-gain pigs than the low lean-gain pigs. Allometric coefficients for lipid mass were smaller (P = 0.001) for the high lean-gain pigs than the low lean-gain pigs overall. Allometric coefficients and predicted relative growth rates for lipid mass were greater (P0.01) and for moisture and protein mass were lesser (P0.002) than the gilts. Compared with low lean-gain pigs, high lean-gain pigs had (1) 32.8% lesser predicted daily rates of lipid deposition (200 vs. 305 +/- 80 g/d), with the difference increasing from 23 to 37% from 25 to 125 kg of BW; (2) 12.3% greater daily rates of protein deposition (118.7 vs. 106.0 +/- 3.3 g/d); and (3) 18.8% greater predicted daily moisture accretion rates (423 vs. 356 +/- 9 g/d). Overall, barrows had 21.3% greater lipid deposition (279 vs. 230 +/- 78.2 g/d) than gilts. In this study, barrows and gilts had similar predicted daily moisture, protein, and ash accretion rates.

Ractopamine (RAC) improves growth by increasing lean accretion and decreasing fat deposition through repartitioning nutrients from adipose tissue to skeletal muscle. Although the process is not completely understood, RAC alters the proportion of muscle fiber type composition toward a faster-contracting phenotype. Because one of the primary determinants of contractile speed is the relative abundance of myosin heavy chain (MyHC) isoforms and because the genes encoding these isoforms are transcriptionally regulated, RAC likely alters MyHC gene expression. Using real-time PCR, the relative abundance of transcripts of individual type I, IIA, IIX, and IIB, and total MyHC, as well as glycogen synthase, citrate synthase, lactate dehydrogenase, peroxisome proliferator activated receptor alpha, beta1-adrenergic receptor (AR), and beta2-AR were determined in the LM of 44 pigs fed RAC (20 mg/kg) for 0, 1, 2, or 4 wk. In addition, MyHC isoform expression was determined in the LM and red semitendinosus and white semitendinosus muscles of 48 pigs fed RAC (20 mg/kg) for shorter periods of 12, 24, 48, or 96 h. Type I MyHC expression was unaffected (P0.73) by RAC administration. Type IIA MyHC expression decreased (P0.0001) by 96 h, was lower (P0.0001) by 1 wk, and returned to normal by 4 wk. Type IIX MyHC mRNA decreased (P0.001) by 2 wk and continued to decrease (P0.0001) by 4 wk. Most interesting was an increase (P0.0001) in type IIB MyHC by 12 h, which was maintained at an elevated level throughout the 4-wk feeding period. Abundance of glycogen synthase transcript was increased (P0.05) by 12 h, but was not different from controls at 2 wk, and was lower (P0.01) at 4 wk. Gene expression of beta1-AR was not affected by feeding RAC, whereas beta2-AR gene expression was decreased (P0.05) by 2 wk. These data show MyHC genes are differentially regulated by RAC and suggest that the beta adrenergic agonist-induced repartitioning effect is, in part, mediated by changing muscle fiber type-specific gene expression, perhaps through the beta2-AR.

The development of regression equations to predict carcass composition typically assumes that the independent variables, such as backfat depth, are measured without error. However, technological and operator-specific types of measurement errors do exist. To evaluate the impact of measurement error for backfat depth, Monte Carlo simulation was used to model carcass fat-free lean mass (FFLM) in pigs. In the simulation, FFLM was a linear function of carcass weight and actual backfat depth (ABFD). Carcass weight was assumed to be measured without error, but measurement errors were generated such that the correlation (r(BF)) of the measured backfat depth (BFD) and ABFD ranged from 0.70 to 0.95. Two types of measurement errors were simulated: 1) constant variation that was additive to the variance of ABFD, and 2) variation proportional to the ABFD that was additive to the variance in ABFD. A total of 1,000 replications of 1,000 pigs were simulated. Within each type of measurement error, the absolute values of the regression coefficients and R2 values of the equations decreased as r(BF) decreased. The probability of the backfat depth squared (BFD2) being significant (P < 0.05) in the regression equation was increased when the measurement errors were proportional to ABFD. The occurrence of a significant BFD2 variable was 792 times out of 1,000 replications when r(BF) = 0.95 and increased to 996 times out of 1,000 when r(BF) = 0.85 for BFD with type 2 measurement errors. The inclusion of a CW x BFD variable in the regression equations (P < 0.05) increased (270 to 423 times out of 1,000) as r(BF) decreased from 0.85 to 0.70 for BFD with type 2 errors. Equations developed from BFD with measurement errors resulted in biased predictions of FFLM and changes in FFLM per unit change in BFD. The level and type of measurement errors that exist in the independent variables should be evaluated.

An 8-wk study of the effects of CLA, rendered animal fats, and ractopamine, and their interactive effects on growth, fatty acid composition, and carcass quality of genetically lean pigs was conducted. Gilts (n = 228; initial BW of 59.1 kg) were assigned to a 2 x 2 x 3 factorial arrangement consisting of CLA, ractopamine, and fat treatments. The CLA treatment consisted of 1% CLA oil (CLA-60) or 1% soybean oil. Ractopamine levels were either 0 or 10 ppm. Fat treatments consisted of 0% added fat, 5% choice white grease (CWG), or 5% beef tallow (BT). The CLA and fat treatments were initiated at 59.1 kg of BW, 4 wk before the ractopamine treatments. The ractopamine treatments were imposed when the gilts reached a BW of 85.7 kg and lasted for the duration of the final 4 wk until carcass data were collected. Lipids from the belly, outer and inner layers of backfat, and LM were extracted and analyzed for fatty acid composition from 6 pigs per treatment at wk 4 and 8. Feeding CLA increased (P0.02) G:F during the final 4 wk. Pigs fed added fat as either CWG or BT exhibited decreased (P0.05) ADFI and increased (P0.01) G:F. Adding ractopamine to the diet increased (P0.01) ADG, G:F, and final BW. The predicted carcass lean percentage was increased (P0.05) in pigs fed CLA or ractopamine. Feeding either 5% fat or ractopamine increased (P0.05) carcass weight. Adding fat to the diets increased (P0.05) the 10th rib backfat depth but did not affect predicted percent lean. Bellies of gilts fed CLA were subjectively and objectively firmer (P0.01). Dietary CLA increased (P0.01) the concentration of saturated fatty acids and decreased (P0.01) the concentration of unsaturated fatty acids of the belly fat, both layers of backfat, and LM. Ractopamine decreased (P0.01) the i.m. fat content of the LM but had relatively little effect on the fatty acid profiles of the tissues compared with CLA. These results indicate that CLA, added fat, and ractopamine work mainly in an additive fashion to enhance pig growth and carcass quality. Furthermore, these results indicate that CLA results in more saturated fat throughout the carcass.

Two nonlinear growth functions were evaluated on 6 groups of 32 ducks. Ducks were randomly assigned to 1 of 6 dietary treatments and weighed weekly from 1 to 43 d of age. The Weibull function had the form: BW(it) = A - (A - B) exp - [(C - 1)/C] (t/IP)**C, where BW(it) is the BW of the ith duck at age t in days and A, B, C, and IP are fixed parameters. The variable A represents mature BW and the variable IP is the age (inflection point) at which maximum average daily gain is achieved. The addition of a single random effect to the Weibull growth function (ip), in which the age to reach the BW at the overall population inflection point of each duck varies, provided a substantially better fit than any other alternative fixed or mixed models. Overall, the Weibull function under-predicted the d-1 BW (46.7 vs. 55.1 g, P < 0.05) and over-predicted the d-8 BW (233.6 vs. 211.7 g, P < 0.05). The predicted BW from d 15 to 43 was very close to the actual mean BW at each age. This model predicts that the between-duck variance in BW increases with age and that the CV increases from 1 to 8 d of age, reaches a plateau from 15 to 22 d of age, and then slowly declines. This mixed effects model predicts the mean age and approximate variation in age that ducks require to reach a specific BW, and is easily adaptable to stochastic modeling.
