Títol alternatiu emprat a la intranet docent de l'EPSEVG: "Cuina modular adaptada en espais exteriors", A partir d'aquests últims estius el turisme de muntanya ha anat augmentant de forma molt notòria, però molta d'aquesta gent no coneix l'entorn i no sap exactament el que ha de portar, un dels productes més indispensables a l'hora de fer una sortida d'aquest àmbit, són els sistemes de cocció portàtils, productes que no són molt poc coneguts però amaguen uns grans conceptes de disseny. Després de realitzar una cerca d'informació sobre el sector, els productes existents, els seus usos i funcions s'ha pogut observar que aquests productes tenen uns problemes molt comuns que deriven en una gran varietat de productes i dissenys i en el dubte d'elecció dels usuaris. Tot seguit es va dur a terme una pluja d'idees de disseny per tal de resoldre aquests petits punts, solucions que es van desenvolupar i avaluar per tal d'obtenir el millor resultat, que genera més solucions. Es va escollir un producte final i es va dur a terme el modelatge de totes les seves peces, unes més desenvolupades que altres arran del seu grau d'importància, els respectius anàlisis de mecanismes, resistències i l'elecció dels seus materials. Per finalitzar es va dur a terme un estudi ergonòmic i també es va veure la seva implantació amb el conjunt complet., Since the last few summers, mountain tourism has been increasing in a very notorious way, but many of these people do not know the environment and do not know exactly what it should carry. They are the portable cooking systems, products that are not very little known but conceal great design concepts. After conducting an information search on the sector, the existing products, their uses and functions it has been noted that these products have very common problems that result in a wide variety of products and designs and in the question of users' choice. A lot of design ideas were developed and evaluated in order to achieve the best result, which generates more solutions. A final product was chosen and modelled on all their pieces, some more developed than others as a result of their degree of importance, the respective analysis of mechanisms, resistance and the choice of their materials. To finish an ergonomic study was carried out and its implementation was also seen with the whole set.

104. Maya snail cooking camp discovered in Telchac Pueblo (Yucatán).

Excavations in Telchac Pueblo, Yucatán, have uncovered the first known archaeological site in the region. The site contains prehispanic Maya structures, including mounds with high amounts of ash and charcoal. Among the finds are numerous marine snail shells, particularly of the edible genus Sinistrofulgur, which show signs of being boiled. The site is believed to have been a seasonal camp used for cooking marine snails, inaccessible during the wet season. Additionally, a funerary urn depicting the Maize God was discovered during salvage excavations in Tulum, with human remains still inside. [Extracted from the article]

Published in 1885 in New York, Canoe and Camp Cookery by well-known outdoor writer Henry H. Soule is one of the earliest outdoor cookbooks published. Focused on practical recipes for simple but filling meals, the cookbook has two sections: one for the modern-day version of a backpacker, emphasizing light weight and ease of transportation; and the other for the more settled camper, describing more elaborate meals that can be fixed outdoors. Entries include: The Canoeist's “Grab Box,” Fish Caught in Muddy Streams, Potatoes and Green Corn, Go Light as Possible, Brown Betty, and General Remarks on Cooking Soups. Soule compiled the majority of the recipes from outdoor enthusiasts of the time: hunters, trappers, and army men, but actually tested each recipe himself during his own outdoor adventures. This edition of Canoe and Camp Cookery was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the Society is a research library documenting the life of Americans from the colonial era through 1876. The Society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. The cookbook collection includes approximately 1,100 volumes.

Background: Efforts to combat the epidemic of childhood obesity have approached the issue from many different angles, with a family approach being the gold standard. While most efforts focus on the parents, few have viewed the child as the agent of change. In this study, we explored the feasibility of implementing a cooking curriculum into a summer day camp to determine its reception and explore the potential of home reach. Methods: In partnership with a local YMCA, a child-focused cooking curriculum was developed, designed to be delivered to various age groups with key nutritional messages. Interviews were conducted with participating children and their parents to determine acceptability and potential to influence the home environment as well as explore children's understanding of nutrition and cooking topics. Results: Children in the study ranged from 7 to 15 years of age. Children overwhelmingly enjoyed the cooking camp and talked about it with their parents at home. Almost all parents had plans to try the recipes at home, and many had already made one or more of the recipes. Conclusions: It is feasible to incorporate cooking lessons into a children's summer day camp, with some evidence of reach into the home. Future studies should evaluate children as agents of change in cooking and meal preparation, and assess if this could increase the number and quality of family meals. [ABSTRACT FROM AUTHOR]

Résumé: La combustion de la biomasse lors de la cuisson des repas émet des PM
2,5 potentiellement nocives pour la santé. À Ouagadougou, 60 % des ménages utilisent la biomasse pour la cuisson des repas. La présente étude vise à identifier les facteurs de fortes concentrations de PM2,5 , ainsi que les effets sur la santé des personnes exposées. L'étude a été réalisée en mai-juin 2017 et a concerné 56 ménages du secteur 15 de Ouagadougou. Les données ont été collectées à l'aide d'une grille et les concentrations de PM2,5 mesurées à l'aide d'un appareil de mesure de polluants « QUEST EVM ». Les variables indépendantes étaient le type de cuisine, le type de foyer, le type de combustible, la température, l'humidité et la durée de cuisson des repas. Les données ont été saisies avec EpiData et analysées avec Stata/SE 12.0. Les intervalles de confiance ont été estimés à 95 %. La comparaison des valeurs moyennes a été réalisée à l'aide du test Anova. Une régression linéaire a permis d'identifier les facteurs liés à la forte concentration de PM2,5 . Les concentrations de PM2,5 pour 24 heures étaient au-dessus du seuil préconisé par l'Organisation mondiale de la santé (OMS) (25 μg/m3 ) dans les situations suivantes : cuisine à l'air libre, utilisation de la biomasse à l'aide de foyers traditionnels/améliorés. L'analyse bivariée a montré que les concentrations de PM2,5 étaient plus élevées dans les ménages utilisant de la biomasse (p = 0,03). La régression linéaire a montré que les concentrations de PM2,5 étaient significativement plus élevées au niveau des cuisines à l'air libre comparativement aux cuisines externes (p = 0,01) ou internes (p < 0,01), et quand des foyers traditionnels avec du bois étaient utilisés (p = 0,01). Ces fortes concentrations de PM2,5 exposent les habitants à des risques sanitaires importants, allant des infections respiratoires aux cancers. Confidence intervals were estimated at 95%. Mean values were compared with Anova. A linear regression identified the factors related to high concentrations of PM2.5 . The 24-hour concentrations were higher than the WHO recommended value (25 μg/m3 ) in the following situations: outdoor cooking, and use of biomass with the aid of traditional/improved fireplaces. The bivariate analysis found that PM2.5 concentrations were higher in households using biomass (p = 0.03). The linear regression analysis found that PM2.5 concentrations were significantly higher in open-air kitchens compared with outdoor kitchens (p = 0.01) or indoor kitchens (p < 0.01) and when traditional wood fireplaces were used (p = 0.01). These high concentrations of PM2.5 expose people to serious health risks ranging from respiratory infections to cancers. Measures must be taken to promote the use of less polluting cooking devices. A recent archaeological excavation carried out within the Reales Alcázares of Seville, at a plaza known as Patio de Banderas, uncovered several semi-subterranean structures dated between the 9th and 7th century BCE. The structures, dug in the most recent Upper Pleistocene terrace of the Guadalquivir, contained hearths for preparing meals, suggesting that they were possibly outdoor cooking installations situated in the southern periphery of the settlement and near the port area. The associated pottery remains mostly correspond to pots and other handmade containers, however, some pieces of wheel-thrown pottery from the same period have also been documented. This evidence proves that the founding of Seville was contemporaneous with the construction of the first sanctuary on the opposite bank of the Guadalquivir at Carambolo. Both sites constitute a Phoenician colonization model that is found in other river mouth areas along the southwestern Iberian coast. This same pattern occurs in the estuaries of the Guadiana river, at Huelva, and, likewise, in the Bay of Cadiz. [ABSTRACT FROM AUTHOR]
