Abstract

BACKGROUND Table olives have been a component of the Mediterranean diet for centuries, with the trend for their consumption currently increasing worldwide. They are rich in bioactive molecules with nutritional, antioxidant, anti-inflammatory or hormone-like properties. In the present study, the concentrations of phenolics, triterpenic acids, carotenoids and vitamins, as well as fatty acid profiles and antioxidant activity, were analyzed in the edible portion of black table olives ( Olea europea L.) from Italian (Cellina di Nardò and Leccino) and Greek (Kalamàta and Conservolea) cultivars fermented with selected autochthonous starters and in the corresponding monovarietal olive oils. RESULTS On a fresh weight basis, Cellina di Nardò and Leccino table olives showed the highest total phenolic content. No significant differences were found with respect to the levels of total triterpenic (maslinic and oleanolic) acids and vitamin E among cultivars. All table olives were characterized by high amounts of oleic, linoleic and palmitic acids. Oils were richer in lipophilic antioxidants (carotenoids and tocochromanols) than table olives, which, instead, showed a higher content of polyphenols and triterpenic acids than oils. Abstract

The chemical composition, biosynthesis and ultrastructural organization of the cell wall of cultures of Koliella antarctica (Klebsormidiales, Chlorophyta), a green microalga obtained from samples of sea water taken near the Italian Station of Terra Nova (Ross Sea) during the austral summer 1989-1990, have been studied. Purified cell walls of the microalga were sequentially treated with chemicals which, in higher plants, solubilize matrix polysaccharides (pectins and hemicelluloses) and leave an insoluble residue considered to be alpha -cellulose. CDTA plus Na2CO3- and KOH-solubilized polysaccharides were made up of glucosyl residues (more than 90 mol%), as well as some minor sugars (mannose and rhamnose). Linkage analysis and enzymic hydrolysis of the matrix polysaccharides indicated the presence of beta -1,4-linked glucans with minor amounts of other uncharacterized polysaccharides. The insoluble residue was composed of a small amount of crystalline alpha -cellulose associated with mannan or glucomannan chains. The biosynthesis of cell wall polysaccharides was studied by incubating the microalgae in the presence of D-[U-C-14]glucose or myo-[U-C-14]inositol. The radioactive glycosyl residues incorporated into the polysaccharides solubilized from purified cell walls of the cultured microalga corresponded to those detected in the chemical analysis of the cell wall. The myo-inositol oxidation pathway was demonstrated to be functional in the microalga. Cell wall ultrastructural observations showed a loose network of cellulose microfibrils in an extended matrix.

Abstract

We report the hydrophilic and lipophilic antioxidant activities, as well as the total phenol, flavonoid, tocochromanol (tocopherol and tocotrienol), and carotenoid contents in the edible portion of wild and cultivated varieties of chicory (Cichorium intybus L.) and in the basal rosette leaves of the wild species of poppy (Papaver rhoeas L.), known by natives as “paparina,” collected in the countryside of Salento (South Apulia, Italy). We analyzed (1) two cultivars of chicory, the “Catalogna” harvested in the area between S. Pietro Vernotico and Tuturano (Brindisi) and the “Otrantina” harvested in Otranto (Lecce); (2) two wild chicory ecotypes harvested in S. Pietro Vernotico (Brindisi) and Statte (Taranto), respectively; (3) the basal leaves of wild poppy harvested in Sternatia (Lecce). In all samples, our results showed that the hydrophilic antioxidant activity is, generally, higher than the lipophilic activity. Poppy leaves exhibited the highest hydrophilic and lipophilic antioxidant activities and the highest concentration of total phenols and flavonoids. Tocopherols were detected only as traces. Among the extracted carotenoids, lutein and β-carotene were the most abundant in all analyzed samples. Total carotenoid content was greater in wild than in cultivated plants. [ABSTRACT FROM AUTHOR]

Abstract

Carotenoids are well known for their nutritional properties and health promoting effects representing attractive ingredients to develop innovative functional foods, nutraceutical and pharmaceutical preparations. Pumpkin (Cucurbita spp.) flesh has an intense yellow/orange color owing to the high level of carotenoids, mainly ɑ-carotene, β-carotene, β-cryptoxanthin, lutein and zeaxanthin. There is considerable interest in extracting carotenoids and other bioactives from pumpkin flesh. Extraction procedures able to preserve nutritional and pharmacological properties of carotenoids are essential. Conventional extraction methods, such as organic solvent extraction (CSE), have been used to extract carotenoids from plant material for a long time. In recent years, supercritical carbon dioxide (SC-CO2) extraction has received a great deal of attention because it is a green technology suitable for the extraction of lipophylic molecules and is able to give extracts of high quality and totally free from potentially toxic chemical solvents. Here, we review the results obtained so far on SC-CO2 extraction efficiency and quali-quantitative composition of carotenoids from pumpkin flesh. In particular, we consider the effects of (1) dehydration pre-treatments; (2) extraction parameters (temperature and pressure); the use of water, ethanol and olive oil singularly or in combination as entrainers or pumpkin seeds as co-matrix.
