We evaluated the myogenic potential of muscle stem cells (MuSCs) derived from three distinct chicken purebreds—Rhode Island Red (RIR), White Leghorn (WL), and Cornish (CN). Chicken MuSCs were isolated from the breast muscles of chicken embryos on embryonic day 18 using a pre-plating method. Subsequently, the cells underwent a three-day proliferation period, followed by a three-day differentiation phase. WL MuSCs exhibited higher myogenic potential initially compared to RIR and CN. Despite a relatively lower proliferation rate, WL demonstrated a higher proportion of PAX7-positive cells and showed higher expression of myogenic regulatory factor genes than the other breeds. During differentiation, MuSCs from WL formed thicker muscle fibers and showed the highest proportion of myosin-heavy chain-positive cells than MuSCs from other breeds. Additionally, the expression of MYH1, associated with muscle maturation, was highest in WL. Overall, this finding suggests that the myogenic potential of MuSCs from WL surpasses those of RIR and CN. Given the fact that WL is primarily used for egg laying with a low growth rate in the traditional poultry industry, the present study highlights the crucial distinction between selecting production characteristics in conventional animal husbandry and those desirable for cultured meat production.

As one of the industry leaders in the field of alternative proteins, Israel provides an interesting and important test case for examining explicit and implicit agendas in the professional and public debate regarding sustainable pathways for alternative proteins. Based on in-depth interviews with key stakeholders in the Israeli food-tech ecosystem and analysis of two recent reports (The Good Food Institute-Israel’s report on the State of Protein Alternative Innovation and the Israel Innovation Authority report), we elucidate and highlight institutional, socio-cultural, socio-technological, and nutritional aspects inherent to the debate on meat substitutes. Looking at the socially constructed classification of meat substitutes in Israel, we explore the regulatory challenges and public discourses and scrutinize sustainability considerations in the context of meat substitutes. Finally, we advocate for diverse solutions to address the multifaceted issues intertwined with meat substitutes, emphasizing the need for more comprehensive research to understand the intricate interplay among distinct categories of meat alternatives.

BackgroundThe environmental and social impacts of cultured meat, and its economic viability, are contingent on its implications for food production and for agriculture. However, the implications of cultured meat production for farmers have not yet been thoroughly investigated and are poorly understood. The aim of this research was to engage with the farming sector in critically assessing cultured meat as a technology which could profoundly affect future farm livelihoods, land use, rural and farming communities and agricultural value chains. Ensuring farmers’ voices, and potential ‘counter-narratives’ inform the development of cultured meat is not only inclusive, but could identify unexpected impacts of this emerging technology and contribute to the framing of the social license of the industry developing them.MethodsSix focus groups were undertaken with 75 UK farmers from a variety of farming sectors and regions. Questions focused on what the term ‘cultured meat’ means to farmers, the potential impacts of cultured meat, and potential business scenarios arising for farmers. All meetings were recorded, transcribed, and thematically analyzed.Results and discussionFarmers expressed complex and considered reflections on cultured meat, raising several perceived opportunities and risks associated with the themes of ‘ethics and affective’ narratives, ‘environment-based’ narratives, and ‘socio-economic’ narratives. Aspects of foci of power, food system control and transparency associated with cultured meat emerged from the conversations, as well as cultured meat’s potential impacts on the environment and on jobs, farming/rural communities and connecting with the land.ConclusionGlobally, meat production underpins the livelihoods of many rural communities, so a transition to cultured meat is likely to have deep-seated ethical, environmental, and socio-economic impacts. Within the discourse on cultured meat the voices of farmers are often lost. While not claiming to be representative of all UK farming, this study engaged UK farmer perspectives as a way of starting the substantive process of greater stakeholder inclusion in cultured meat innovation pathways, and which should underpin responsible technology transitions in agriculture.

Avian influenza causes substantial economic loss in the poultry industry and potentially threatens human health. Over recent years, the highly pathogenic avian influenza A/H5N1 virus has led to devastating losses in poultry flocks and wild birds. At the same time, the number of mammalian species identified to be infected with A/H5N1 is increasing, with recent outbreaks in domestic cats, including household individuals, evidenced in July 2023 in Poland, ultimately creating opportunities for the virus to adapt better to mammalian hosts, including humans. Overall, between 2003 and 2023, over 10 outbreaks in felids have been documented globally, and in six of them, feed based on raw chicken was suspected as a potential source of A/H5N1, fuelling a debate on threats posed by A/H5N1 and methods to decrease the associated risks. This article debates that technology allowing the production of slaughter-free meat, including poultry, from cell and tissue cultures could be considered as a part of a mitigation strategy to decrease the overall burden and threat of adaptation of avian influenza viruses to human hosts. By shifting poultry production to the cultured meat industry, the frequency of A/H5N1 outbreaks in farmed birds may be decreased, leading to a reduced risk of virus acquisition by wild and domesticated mammals that have direct contact with birds or eat raw poultry and have close contact with human (including domestic cats), ultimately minimizing the potential of A/H5N1 to adapt better to mammalian host, including humans. This adds to the list of other benefits of cultured meat that are also reviewed in this paper, including decreased antibiotic use, risk of microbial contamination and parasite transmission, and environmental and ethical advantages over conventional slaughtered meat. In conclusion, further development and implementation of this technology, also in the context of poultry production, is strongly advocated. Although cultured poultry is unlikely to replace the conventional process in the near future due to challenges with scaling up the production and meeting the continuously increased demand for poultry meat, it may still decrease the pressures and threats related to the transmission of highly pathogenic avian influenza in selected world regions.

The aim of the study was to evaluate the acceptance and perception of meat scientists (n = 51) towards cultured meat. As professional experts, the opinion of meat scientists is of paramount importance. This is the first report on the perception of cultured meat using meat scientists as the respondents. The majority of the meat scientists were male (70 %), ate meat at least twice a month (86 %) and preferred red meat (80 %). About 25 % of the respondents supported the development of cultured meat and also chose it as the preferred meat whereas the majority (49 %) preferred conventional meat. While 38 % were willing to try cultured meat at least once, only a small percentage of the respondents agreed to purchase it regularly (6 %), pay a higher price (6 %) and were willing to replace conventional meat with it (6 %). Liking conventional meat (58 %), fear of new untested technological products (21 %) and high cost (19 %) were the main reasons for unwillingness to try cultured meat. The majority agreed that cultured meat is good for the environment (42 %) and animal welfare (42 %) but perceived it as unnatural (46 %) and reducing the natural quality of meat (46 %). The meat scientists believed it does not seem to be healthier than regular meat (44 %) as its benefits are often grossly overstated (61 %), society should not rely on this type of production (76 %) and quick transition can be risky (58 %). The meat scientists agreed that it does not pose a health hazard (34 %) nor does it seem to be harmful to health (38 %) but there is not enough scientific evidence yet to prove its safety (61 %), low carbon footprint (61 %) and is not likely to replace the conventional meat production anytime sooner (52 %). These results about these crucial aspects of cultured meat bear importance for policymakers, researchers and industry.

IntroductionAlternative meats have the potential to shape a sustainable food system. This study examined young consumers’ perceptions of and preferences for plant-based and cultured meats. Since comparative studies on consumer preferences for alternative meats in different key Asian markets remain insufficient, this study was conducted in Japan and China, both of whom have promising alternative meat markets in Asia.MethodsWe conducted a discrete choice experiment and co-occurrence networks among 2006 (n = 887 in Japan and n = 1,119 in China) young consumers. This study adopted a treatment-control design where respondents in the treatment groups received health information on the use of antibiotics in meat production.ResultsRespondents in both countries perceived meat alternatives to be substitutes to conventional meat and associated them with plant-based proteins, processed products, and health benefits. In general, Japanese and Chinese respondents differed in their preferences for burger patties but had similar preferences for other attributes. Respondents in both countries were willing to pay a premium for “antibiotic-free,” “traceable,” and low carbon footprint labeling. This study reveals the heterogeneity of consumer preferences and the complexity of the impact of information interventions on consumer preferences.DiscussionPlant-based meat is already available on the market in both countries, whereas cultured meat is still in the research and development stage. Hence, young consumers were more familiar with plant-based meat than cultured meat. It is worth noting that young Japanese consumers preferred cultured meat to conventional meat. This is attributed to the concerns about food security and food animal welfare. Furthermore, this study found that information intervention can induce and direct respondents’ attention to an aspect of alternative meats that is negatively perceived. Based on the findings, this study has three implications for promoting alternative meat products: marketing messaging, food labeling, and product development.

Cultured meat is a novel technology-based meat alternative with the potential to complement protein supply for a growing world population. An increasing body of consumer research has investigated personal factors explaining consumers' acceptance of cultured meat. Research on cultural and economic drivers impacting consumer responses across countries, however, is scant. In this light, this article aims to provide a cross-cultural perspective on cultured meat acceptance and guide future empirical research in this domain. First, this article proposes a framework to explain cross-national differences in cultured meat acceptance comprising societal factors (i.e., culture and religion), indicators of the food environment (i.e., meat production and consumption), and economic market parameters (i.e., gross domestic product, carbon dioxide emissions, and population growth). Second, the paper applies a systematic literature review, including 105 empirical consumer studies related to cultured meat. Third, the identified papers are analyzed according to the proposed framework. The findings of this descriptive analysis demonstrate that empirical research to date has predominately been conducted in countries that produce and consume high amounts of meat and are characterized by high gross domestic products per capita. Many of these surveyed countries harbor secular-rational and self-expressional cultural value orientations. Other country types have been less prominently explored, although they represent potentially relevant target markets for cultured meat in the future. Cross-cultural research aiming to explain differences across countries is scarce. To guide future research, the paper develops research propositions relating societal factors, food environment, and market-related factors to consumer acceptance of cultured meat across countries. This study aimed to comprehensively examine the research on cultured meat in developing countries over the past decade, focusing on its opportunities and challenges for sustainable meat systems. The research method included a combination of literature review and text mining. The study found that research on cultured meat in developing countries has focused on consumer attitudes and acceptance, cultural factors, and policy and regulation. Consumer purchase intentions, attitudes, and knowledge levels significantly impact the promotion and adoption of cultured meat. At the same time, cultural factors, religious regulations, and sustainability challenges are also important factors affecting the development of cultured meat in developing countries. Furthermore, developing and implementing policy and regulatory frameworks are critical to fostering the development of sustainable meat systems. Through the combination of literature review and text analysis, this study provides an in-depth look at research on cultured meat in developing countries over the past decade. The findings suggest that consumer attitudes, cultural factors, and sustainability challenges are central topics in cultured meat research in developing countries. However, relatively little research has been done on social acceptance, economic feasibility, and technology adoption. This research was conducted to investigate the growth performance of black-boned chicken embryonic stem (ES) cells for the future development of cultured meat. Black-boned chicken ES cells were isolated and cultured from fertilized eggs. The treatments applied were: fetal bovine serum (FBS) (T1), commercial chicken serum (SCK) (T2), Pradu Hang Dam chicken serum (PDC) (T3), and black-boned chicken serum (BBC) (T4). Black-boned chicken ES cells were cultured at 37.0 °C in a humidified environment of 5% CO2, for 10 days. The growth of black-boned chicken ES cells concentration was measured by the absorbance at 450 nm. A haemocytometer was used to count the number of black-boned chicken ES cells. Comparing the protein content of cultured meat and chicken meat was collected for combustion and proximate analysis. All collected data were analyzed using ANOVA in a completely randomized design. T4 tended to have a higher number and growth rate than the other groups, followed by T3, T2, and T1, respectively. When counted ES cells final, T4 had a significantly higher number and growth rate than the other groups (p<0.001). Comparing the protein content, it was found that cultured meat had significantly more protein than the other groups (p<0.001), and characteristics (alignment and cross-section of muscle fibers) were not different from chicken cells. Finally, the cultivation of black-boned chicken ES cells necessitates the use of a medium containing black-boned chicken serum in the growth and development of black-boned Chicken ES cells for culture meat. Notwithstanding some controversies, the development of cell culture and tissue engineering and the increasing demand for sustainable animal-based protein, has rendered cultured meat to be a potential source of nutritional protein in the future. As an absolutely novel food, the production of cultured meat involves complex advanced technologies and integration of multiple novel ingredients. Consequently, hazards and risks may be introduced inadvertently at any stage during the production of cultured meat, which must be reviewed and approved by the regulations or legislations of the corresponding jurisdictions before the product can be introduced to the market to ensure food safety and promote human health. Currently, increasing research on the safety and risk assessment of cultured meat is being reported. However, the lack of systematic and in-depth risk assessment of cultured meat remains a hurdle to be crossed before global marketization of cultured meat can materialize. This review comprehensively summarizes the possible hazards and risks that could be introduced during the production of cultured meat and proposes countermeasures accordingly. There is no one-size-fits-all approach to test different types of cultured meat products currently and effective risk and safety assessment strategies should be adopted contextually. Cultured meat is a promising alternative to animal-derived meat production, as it has the potential to offer a sustainable and ethical source of meat for human consumption. Despite the many advantages of cultured meat, scaling up its production remains a major challenge. Among the key factors that must be addressed for efficient production is high-density cell culture, which poses several obstacles, such as the accumulation of metabolic by-products, including toxic ammonia and the inhibitory effects of lactate. Additionally, the use of expensive growth factors and recombinant proteins limits the cost-effectiveness of cultured meat production. This review provides an overview of methods for reducing the accumulation of metabolic by-products (ammonia and lactate), including genetic engineering, culture strategies, physicochemical adsorption, biocatalytic conversion, and electrochemistry. Immobilization of growth factors by separation and concentration enhances their biological activity, moderate release, and recovery. Additionally, we discuss the advantages and disadvantages of these methods in the field of cultured meat. The study concludes that adsorption is a promising pathway for the removal of metabolic by-products. However, the development of adsorbents with favorable biocompatibility, high adsorption efficiency, and reusability remains a challenge. The development of cost-effective alternatives to animal-derived sources and media cycling technology to optimize the usage of media components are essential for the progress of cultured meat production. Estimating the demand for greener products may be challenging when these products are not yet on the market. We design an experiment to elicit the willingness-to-pay (WTP) for a novel product in a non-hypothetical way, despite the fact that the product is not marketed and thus cannot be delivered to participants. We consider a cultured meat product which is presented to participants using the producer's advertising. The basic experimental device consists in eliciting (i) how much a participant is willing to pay for the product under uncertainty about product delivery, and (ii) her beliefs about the probability that the product will be actually delivered. In our sample of 158 French students, under 20% of participants never want to buy the product, and below 10% assign a probability of zero that the product will be delivered if purchased. The average WTP is fairly low, at about 3 Euros per 100 g. A number of factors increase (e.g., education and low meat consumption) or decrease (e.g., neophobia and disgust) this WTP. The simple exposure to the new meat substitute during this experiment reduces subjects' pro-meat justifications. We investigate the external validity of our results using a hypothetical survey on a representative sample (N = 1200). A significant barrier to the adoption of cultured meat is perceptions of the product as risky. Across three experimental studies, we show that scarcity appeals that are demand‐based constitute an effective strategy for promoting cultured meat because of their negative influence on perceptions of risk. In study 1, we show that a demand‐based scarcity appeal is more effective than a supply‐based scarcity appeal (or no scarcity appeal) for promoting cultured meat and that this effect is mediated by consumer perceptions of risk. In study 2, we show that the effect of the type of scarcity appeals on perceptions of risk is moderated by perceived naturalness. In particular, we show that demand‐based scarcity appeals are especially effective when targeted at consumers who consider cultured meat unnatural. In study 3, we retest our moderated mediation model and show that it is corroborated by employing new stimuli and measures. We contribute to the literature on factors that have a nuanced impact on the acceptance of cultured meat as well as to the academic literature on advertising appeals and social norms. A sensitivity analysis of the model identified the nine most influential cost factors for ACBM production out of 67 initial parameters. The results indicate that technological performance will need to approach technical limits for ACBM to achieve profitably as a commodity. However, the model also suggests that low-volume high-value specialty products could be viable based on current technology.

Natural scaffolds have been the cornerstone of tissue engineering for decades, providing ideal environments for cell growth within extracellular matrices. Previous studies have favored animal-derived materials, including collagen, gelatin, and laminin, owing to their superior effects in promoting cell attachment, proliferation, and differentiation compared to non-animal scaffolds, and used immortalized cell lines. However, for cultured meat production, non-animal-derived scaffolds with edible cells are preferred. Our study represents the first research to describe plant-derived, film-type scaffolds to overcome limitations associated with previously reported thick, gel-type scaffolds completely devoid of animal-derived materials. This approach has been employed to address the difficulties of fostering bovine muscle cell survival, migration, and differentiation in three-dimensional co-cultures. Primary bovine myoblasts from Bos Taurus Coreanae were harvested and seeded on alginate (Algi) or corn-derived alginate (AlgiC) scaffolds. Scaffold functionalities, including biocompatibility and the promotion of cell proliferation and differentiation, were evaluated using cell viability assays, immunofluorescence staining, and reverse transcription-quantitative polymerase chain reaction. Our results reveal a statistically significant 71.7% decrease in production time using film-type scaffolds relative to that for gel-type scaffolds, which can be maintained for up to 7 days. Film-type scaffolds enhanced initial cell attachment owing to their flatness and thinness relative to gel-type scaffolds. Algi and AlgiC film-type scaffolds both demonstrated low cytotoxicity over seven days of cell culture. Our findings indicated that PAX7 expression increased 16.5-fold in alginate scaffolds and 22.8-fold in AlgiC from day 1 to day 3. Moreover, at the differentiation stage on day 7, MHC expression was elevated 41.8-fold (Algi) and 32.7-fold (AlgiC), providing initial confirmation of the differentiation potential of bovine muscle cells. These findings suggest that both Algi and AlgiC film scaffolds are advantageous for cultured meat production.

Reducing production costs, known as scaling, is a significant obstacle in the advancement of cultivated meat. The cultivation process hinges on several key components, e.g., cells, media, scaffolds, and bioreactors. This study demonstrates an innovative approach, departing from traditional stainless steel or glass bioreactors, by integrating food-grade plant-based scaffolds and thermoplastic film bioreactors. While thermoplastic films are commonly used for constructing fluidic systems, conventional welding methods are cost-prohibitive and lack rapid prototyping capabilities, thus inflating research and development expenses. The developed laser welding technique facilitates contamination-free and leakproof sealing of polyethylene films, enabling the efficient fabrication of macrofluidic systems with various designs and dimensions. By incorporating food-grade plant-based scaffolds, such as rice seeded with bovine mesenchymal stem cells, into these bioreactors, this study demonstrates sterile cell proliferation on scaffolds within macrofluidic systems. This approach not only reduces bioreactor prototyping and construction costs but also addresses the need for scalable solutions in both research and industrial settings. Integrating single-use bioreactors with minimal shear forces and incorporating macro carriers such as puffed rice may further enhance biomass production in a scaled-out model. The use of food-grade plant-based scaffolds aligns with sustainable practices in tissue engineering and cultured-meat production, emphasizing its suitability for diverse applications.

To investigate the optimal temperature at which to culture chicken muscle satellite cells (MSCs), to improve the production yield and umami intensity of cultured meat, chicken MSCs were cultured at 37, 39, 41, and 43 °C. The most active proliferation and greatest differentiation of MSCs was observed at 41 °C. A significantly shorter doubling time of MSCs and higher area percentage of differentiated myotubes and myofibers were observed at a culture temperature of 41 °C (p < 0.05). Consequently, the total amino acid content and free glutamic acid in cultured muscle tissue (CMT) at 41 °C was significantly higher than at other temperatures (p < 0.05). In addition, the umami and richness intensity of CMT was significantly higher at 41 °C than at other culture temperatures (p < 0.05). Results suggest that chicken MSCs proliferated more actively and differentiated optimally at 41 °C, resulting in a higher amino acid content and umami intensity of CMT.

Cultured meat technologies leverage the proliferation and differentiation of animal-derived stem cells ex vivo to produce edible tissues for human consumption in a sustainable fashion. However, skeletal muscle is a dynamic and highly complex tissue, involving the interplay of numerous mono- and multinucleated cells, including muscle fibers, satellite cells (SCs) and fibro-adipogenic progenitors (FAPs), and recreation of the tissue in vitro thus requires the characterization and manipulation of a broad range of cell types. Here, we use a single-cell RNA sequencing approach to characterize cellular heterogeneity within bovine muscle and muscle-derived cell cultures over time. Using this data, we identify numerous distinct cell types, and develop robust protocols for the easy purification and proliferation of several of these populations. We note overgrowth of undesirable cell types within heterogeneous proliferative cultures as a barrier to efficient cultured meat production, and use transcriptomics to identify conditions that favor the growth of SCs in the context of serum-free medium. Combining RNA velocities computed in silico with time-resolved flow cytometric analysis, we characterize dynamic subpopulations and transitions between active, quiescent, and committed states of SCs, and demonstrate methods for modulation of these states during long-term proliferative cultures. This work provides an important reference for advancing our knowledge of bovine skeletal muscle biology, and its application in the development of cultured meat technologies.

In vitro meat production presents a potential viable alternative for meat consumption, which could provide the consumer with a product indistinguishable from the original, with very similar nutritional and culinary values. Indeed, the alternative products currently accessible often lack comparable nutritional value or culinary attributes to their animal-derived counterparts. This creates challenges for their global acceptance, particularly in countries where meat consumption holds cultural significance. However, while cultured meat research has been progressing rapidly in recent years, some significant obstacles still need to be overcome before its possible commercialization. Hence, this review summarizes the most current knowledge regarding the history of cultured meat, the currently used cell sources and methods used for the purpose of in vitro meat production, with particular focus on the role of bioreactors, scaffolds and microcarriers in overcoming the current obstacles. This research was conducted to investigate the growth performance of black-boned chicken embryonic stem (ES) cells for the future development of cultured meat. Black-boned chicken ES cells were isolated and cultured from fertilized eggs. The treatments applied were: fetal bovine serum (FBS) (T1), commercial chicken serum (SCK) (T2), Pradu Hang Dam chicken serum (PDC) (T3), and black-boned chicken serum (BBC) (T4). Black-boned chicken ES cells were cultured at 37.0 °C in a humidified environment of 5% CO2, for 10 days. The growth of black-boned chicken ES cells concentration was measured by the absorbance at 450 nm. A haemocytometer was used to count the number of black-boned chicken ES cells. Comparing the protein content of cultured meat and chicken meat was collected for combustion and proximate analysis. All collected data were analyzed using ANOVA in a completely randomized design. Since the current process of livestock meat production has considerable effects on the global environment, leading to high emissions of greenhouse gases, cultured meat has recently attracted attention as a suitable alternative way to acquire animal proteins. However, while most published studies on cell-cultured meat have focused on muscle tissue culture, fat production which is an important component of the process has often been neglected from this technology, even though it can enhance the meat's final taste, aroma, tenderness, texture, and palatability. In this study, we focused on bovine muscle reconstruction by monitoring and optimizing the possible expansion rate of isolated primary bovine adipose stem cells and their adipogenesis differentiation to be fully edible for cultured meat application.After approximatively 100 days of serial passages, the bovine adipose-derived stem cells, isolated from muscle tissue, underwent 57 ​± ​5 doublings in the edible cell culture medium condition. This implies that by cultivating and amplifying them, a minimum of 2.9 ​× ​1022 ​cells can be obtained from around 10 ​g of fat. It was discovered that these cells retain their adipogenesis differentiation ability for at least 12 passages. Moreover, the final lipid composition could be controlled by adjusting the fatty acid composition of the culture medium during the differentiation process, resulting in organoleptic features similar to those of real fat from muscle. This was especially so for the cis isomer oleic acid percentage, an important part of high-grade Japanese Wagyu meat.These characteristics of the primary bovine adipose-derived stem cell proliferation and adipogenesis differentiation provide valuable insights for the in vitro production of meat alternatives.

Cultured meat is one of the meat substitutes produced through tissue engineering and other technologies. Large-scale cell culture is the key for cultured meat products to enter the market. Therefore, this study is aimed to explore the effect of long-term passage in vitro on smooth muscle cells (SMCs) and the effect of transforming growth factor-β1 (TGF-β1) on SMCs in the late passage. Multiple passages lead to the decline of the proliferation rate of SMCs in the proliferation stage and the differentiation ability in the differentiation stage. Transcriptome results showed that the ECM pathway and aging-related signaling pathways were significantly up-regulated in the late passage period. TGF-β1 did not promote SMCs of late passage proliferation at the proliferation stage but promoted the gene and protein expression of collagen as the main protein of the extracellular matrix proteins at the differentiation stage. In addition, proteomic analysis revealed that TGF-β1 promoted the expression of cell adhesion molecules which activate the Hippo signaling pathway and the HIF-1 signaling pathway and further promoted the production of collagen-containing extracellular matrix proteins. As with every new technology, safety demonstration is a critical component of bringing products to market and gaining public acceptance for cultured meat and seafood. This manuscript develops research priorities from the findings of a series of interviews and workshops with governmental scientists and regulators from food safety agencies in fifteen jurisdictions globally. The interviews and workshops aimed to identify the key safety questions and priority areas of research. Participants raised questions about which aspects of cultured meat and seafood production are novel, and the implications of the paucity of public information on the topic. Novel parameters and targets may require the development of new analytical methods or adaptation and validation of existing ones, including for a diversity of product types and processes. Participants emphasized that data sharing of these efforts would be valuable, similar to those already developed and used in the food and pharmaceutical fields. Contributions to such databases from the private and public sectors would speed general understanding as well as efforts to make evaluations more efficient. Developing meat alternatives has recently become a popular topic in the food and research communities. In this review, we summarized and focused on various structuring technologies to produce meat alternatives obtained from plants, cultured cells, and edible insects. Plant-based meats were mainly produced by soybeans and wheat, and the texture of meat alternatives obtained from plant sources was improved using extrusion, shear cell, and electrospinning technologies. Cultured meats were mainly produced by stem cell technology using 3D bioprinting, microcarriers, and scaffolds to form aligned tissues. Most edible insects were not only used as alternative protein sources using heating or freeze-drying processes; they also produced oils using supercritical extraction and solvent extraction processes producing meat alternatives. Reponses were collected by distributing questionnaire to students and meat enthusiastic from different fields by using random sampling technique. Still use of culture meat is very limited and people do not know the difference plantbased meat and animal sourced meat. Animal sourced meat is preferred by respondents over the cultured meat. Artificial meat is more expensive than animal meat because it is produced on small scale. When it will be manufactured on large scale at commercial level then cost of it will be lesser. Growing research and technological development is making the commercial production of cultured meat as a sustainable alternative to livestock-derived meat an increasing reality. However, to competitively position cultured meat on the food market, appropriate marketing and communication tailored to specific demographics is required. We aimed to define the motives that influence the willingness to include cultured meat in consumption based on age, specifically in Generation Z and Generation Y. To achieve this, data from a questionnaire survey that asked about ethical, ecological and health and safety factors around cultured meat was collected from 740 respondents (301 Generation Z and 439 Generation Y) and analyzed using the Mann–Whitney test and structural equation modeling. Generation Z were significantly more likely than Generation Y (p < 0.05) to consider cultured meat healthier than conventional meat because of the possibility of adjusting the composition and nutrient content. Generation Z were also significantly less concerned than Generation Y (p < 0.05) about the consequences that consuming cultured meat might have on human health. In Generation Z, ethical, ecological and health and safety factors significantly influenced their willingness to consume cultured meat (all p < 0.01). In conclusion, we confirmed the influence of ecological and ethical awareness, as well as health and safety, on willingness to include cultured meat in consumption; these areas could be targeted when marketing cultured meat. Cultured meat is a new type of green, safe, healthy, and sustainable alternative to traditional meat that will potentially alleviate the environmental impact of animal farming and reduce the requirement for animal slaughter. However, the cultured meat structures that have been prepared lack sufficient tissue alignment. To create a product that is similar in texture and taste to traditional animal meat, muscle stem cells must be organized in a way that imitates the natural structure of animal tissue. Recently, various scaffold technologies and biomaterials have been developed to support the three-dimensional (3D) cultivation and organization of muscle stem cells. Cultured meat (CM) has emerged as a breakthrough technology, which has the potential to minimise future negative impacts associated with the rapidly growing world population; such as serious environmental, sustainability, global public health, and animal welfare concerns. Recently numerous researchers in academia and companies have been putting significant efforts into scientific and translational development in this field. Since various pillars of CM manufacturing hold substantial translational potential, there has been a steady interest in filing patent applications globally in the past decade. For the first time, we have performed a patentometric analysis for cultured meat by highlighting the current patents landscape, determining prolific organisations and geographical locations active in the area, and identifying the overall outlook for the field. In total, > 190 patents published in the English language were collected from 1997 to 2020 for the analysis. Relevant data were extracted from the patents, including technology focus, country of origin, assignees, priority date, cooperative patent classification (CPC) code, to analyse the current patent landscape. New food technologies such as cultured meat, precision fermentation, and plant-based alternatives may one day supplant traditional modes of animal farming. Nonetheless, very little is known about how traditional animal farmers perceive these new products, despite being directly impacted by their advance. The present study explored the views of livestock farmers regarding emerging protein alternatives. We used a comparison group of omnivorous non-farmers as a frame of reference. Forty-five UK-based livestock farmers and fifty-three non-farmers read an informative vignette about emerging food technologies that reviewed their advantages vis-à-vis intensive animal agriculture. Afterwards, participants rated four products (plant-based burgers; plant-based milk alternatives; cultured beef; animal-free dairy milk) in terms of their personal appeal and how much they represented a positive change to the market. Participants furthermore voiced their agreement or disagreement towards 26 statements representing potential facilitators or barriers to product acceptance. Overall, farmers rated the four products less appealing and less beneficial to the industry compared to non-farmers. Positive change ratings tended to be higher than personal appeal ratings for all products. Both groups tended to agree that the alternatives offered advantages, particularly for the environment, resource use, food security, and animal treatment, though agreement rates were lower for farmers. Farmers tended to perceive more barriers to acceptance than non-farmers, with 'threat to farmers' and 'lack of support to local farmers' of paramount concern to both groups. These findings highlight how farmers' attitudes towards alternative proteins are mixed and, ultimately, shaped by the perceived vulnerability of farming communities. [ABSTRACT FROM AUTHOR]

When male and female embryonic MPCs were cultured in vitro, it was confirmed that genetic sex did not affect the expression of factors related to myogenic regulation factors. Therefore, MPCs from male SPF-laying chicken embryos are promising for developing clean animal-cell-derived protein sources via resource recycling. This study examined the potential benefits of male specific-pathogen-free (SPF) White Leghorn embryos in cellular agriculture for sustainable and ethical poultry meat production—addressing traditional farming challenges, including disease outbreaks of Salmonella and Avian influenza. We isolated myogenic precursor cells (MPCs) from the thigh muscles (Musculus femoris) of 12.5-day-old embryos from 10 SPF White Leghorns that tested negative for Salmonella. We randomly selected MPCs from three males and three females, isolated them using a modified pre-plating (pp) method, and compared their in vitro development. After 1 h (pp1) and 2 h (pp2) of incubation, they were transferred to a new dish to remove fast-adhering cells and cultured (pp3). Isolated MPCs had a 69% positive reaction to Pax7. During proliferation, no differences were observed in PAX7, MYF5, or MYOD expression between the male and female MPCs. However, after five days of differentiation, the expression of late myogenic factors—MYOG and MYF6—significantly increased in all MPCs. Notably, MYOG expression was 1.9 times higher in female than in male MPCs. This impacted MYMK's expression pattern. Despite this, the myotube fusion index did not differ between the sexes. Narratives of cellular agriculture, or food technologies using cell cultivation to produce agricultural products such as cultured meat, promise sustainable, ethical alternatives as well as solutions to global food challenges. Although cultured meat is unavailable to consumers, people have formed opinions about it on the basis of media coverage. Drawing on studies of the meaning system of food and the media publicity surrounding cultured meat, the aim is to analyze the emerging meanings of cultured meat in Finnish online news comments (n = 662). The comments were examined using qualitative content analysis and the results were utilized to construct an emerging meaning system for cultured meat. The results indicate that this system draws from nine themes and three aggregate categories, based on the following questions: Why is cultured meat necessary (environmental, animal wellbeing and healthiness considerations)? What are the anticipated product characteristics (naturalness, potential risks and sensory qualities)? How is cultured meat expected to influence societies (the role of actors, decision-making and inequities caused by cultured meat)? The uncertainties of these issues have led to conflicting interpretations, which prevent the achievement of a shared definition of cultured meat and complicate the establishment of cultured meat as an accepted food. Meat comprises of important nutrients for the human body. As the global population increases, so has the demand for meat. A new idea was conceived to invent cultured meat produced from the outer part of the animal's body in the 1930s. However, the idea of cultured meat invention was only realized in 2013 by a Dutch scientist who invented burger-shaped cultured beef. This invention did not exist at the time of the Prophet, his Companions and the tābi'īn and it has become a polemic among the Muslim community regarding its halal status. The existence of cultured meat in the today’s society requires a clear fiqh explanation and procedure because it is one of the new discoveries in the food industry. This study is significant to provide a good understanding and new knowledge to the Muslim society. A clear fiqh approach will provide guidelines to the society in considering it as a staple or alternative diet. Otherwise, they may avoid consuming cultured meat product as a precaution from haram and uncertainty (shubhah). This study employs qualitative descriptive research by analyzing some previous studies as secondary sources that have been recorded elsewhere, processed, printed and disseminated to the public. The results found that cultured meat is a new discovery in Malaysia. Although the original law for this cultured meat is halal, if it does not meet the shariah principles and criteria, it is considered haram. This paper highlights the halal status of cultured meat from fiqh and sufism in terms of the transformative form of God’s creation. Based on the primary sources of fiqh and sufism, the status of cultured meat is considered halal provided if the shortage of meat affects the needs of the population, it causes no harm in terms of consumption and benefits the general public. Further research is necessary to verify that it is also tayyiban and fulfils the maqasid with regard to Islamic nutrition and the effects of consumption to consumers. [ABSTRACT FROM AUTHOR]

Cultured meat, i.e. meat produced in-vitro through the cultivation of animal stem cells, is a radical innovation that prepares to enter the market in the near future. It has the potential to substantially reduce the negative externalities of today's meat production and consumption and pave the way for a more sustainable global food system. However, this potential can only be realized if cultured meat penetrates the mass-market, which renders consumer acceptance a critical bottleneck. Using structural equation modeling, the present paper investigates the role of hitherto neglected organizational factors (trustworthiness, corporate social responsibility (CSR), and extrinsic motives) as antecedents of consumer acceptance of cultured meat. To this end, a pre-post intervention design in terms of a two-part online questionnaire was used with the final sample consisting of 966 participants. We found that in addition to established antecedents on the product level, organizational trustworthiness and CSR have a significant influence on consumers' willingness to buy cultured meat. Cultured meat is a potential sustainable food generated by the in vitro myogenesis of muscle satellite (stem) cells (MSCs). The self-renewal and differentiation properties of MSCs are of primary interest for cultured meat production. MSC proliferation and differentiation are influenced by a variety of growth factors such as insulin-like growth factors (IGF-1 and IGF-2), transforming growth factor beta (TGF-β), fibroblast growth factors (FGF-2 and FGF-21), platelet-derived growth factor (PDGF) and hepatocyte growth factor (HGF) and by hormones like insulin, testosterone, glucocorticoids, and thyroid hormones. In this review, we investigated the roles of growth factors and hormones during cultured meat production because these factors provide signals for MSC growth and structural stability. The aim of this article is to provide the important idea about different growth factors such as FGF (enhance the cell proliferation and differentiation), IGF-1 (increase the number of myoblasts), PDGF (myoblast proliferation), TGF-β1 (muscle repair) and hormones such as insulin (cell survival and growth), testosterone (muscle fiber size), dexamethasone (myoblast proliferation and differentiation), and thyroid hormones (amount and diameter of muscle fibers and determine the usual pattern of fiber distributions) as media components during myogenesis for cultured meat production.

The aim of this study is to examine the concerns surrounding cultured meat and the obstacles it presents in terms of halal issues, particularly for Muslim communities in Indonesia. The production of cultured meat is currently being heralded as one of the most significant advances of this century. Cultured meat is something that is made in a lab using techniques from bioengineering. Although it is not raised on farms like traditional meat, it shares many of the same biological similarities. This innovation still confronts several obstacles, such as the halal issue, which is still discussed by many Muslim academics, including those in Indonesia. A full qualitative method was employed, which was based on library research to investigate the stated problems, and all the findings were analyzed descriptively. The findings of the study have revealed that, despite various different arguments from Muslim academics’ perspectives regarding the halal status of cultured meat, it will be wiser if the related authorities as well as religious institutions join forces to examine the halal status of cultured meat. Once cultured meat is recognized as halal, it will provide more significant benefits, particularly for Muslim communities in Indonesia. It is also taken into consideration that cultured meat may have the ability to overcome global problems associated with the environmental implications of meat production, animal welfare, food security, as well as human health, or in other words it can offer certain maslahah in comparison to traditional meat production.
