Another condition of very important condition is the water limitation that reduces the productivity of crops. Thus, this thesis was to evaluate the inoculation of plant growth promoting bacteria Azospirillum brasilense in seeds or foliar spray as well plant growth regulator in foliar spray, in reduction of oxidative stress caused by herbicide inhibitors of carotenoid synthesis in maize and drought in soybean. For this, three experiments were developed in corn, one in greenhouse for evaluation of the biometric, physiological and biochemical variables and two under field conditions for evaluation of the production components. In both the local experiments were carried out in randomized blocks in a 4x2, and four replications. The first factor was composed of treatments: control; seed inoculation with A. brasilense; foliar spray application with A. brasilense; and foliar spray application of plant growth regulation with auxin, gibberellin and cytokinin. Foliar spray treatments were applications in tank mix with herbicide mesotrione (192 g ha-1) in V3 stage. The second factor was formed for presence or absence of mesotrione. The results obtained demonstrate that the application of mesotrione reduces the gas exchanges of maize and the treatments applied not protect the maize from the intoxication provided by the herbicide, and do not increase the productivity of the crop. A randomized block design was used for soybean with five treatments and five replications: irrigated control; drought control; seed inoculation with A. brasilense in drought; foliar spray application A. brasilense in drought; foliar spray application auxin, gibberellin and cytokinin in drought. The imposition of drought occurred in full bloom, with daily evaluations. The evaluation consisted of soil gravimetric moisture, relative water content, photosynthetic response curves in function of different photon flux densities, gas exchange, chlorophyll a fluorescence, antioxidant enzyme activity, photosynthetic pigment content, and production components per plant at the end of the crop. In general, the results show that the foliar spray application of A. brasilense or plant growth regulator alleviates the effects of the drought in photosynthetic curves, in gas exchange, in chlorophyll a fluorescence, in photosynthetic pigment content and increase the activity of the enzyme system by reducing lipid peroxidation. When considering the production by plants all the treatments employed mitigate the losses in relation to the drought control. Therefore, the use of A. brasilense via seed or foliar spray application and plant regulators via foliar spray do not bring beneficial effects on the intoxication of corn with mesotrione. However, when considering the drought in the soybean, the treatments soften the losses in yield per plant due to mitigate the effects on plant biochemical and physiological system. O uso de herbicidas no controle de plantas daninhas é fundamental na produtividade agrícola, todavia, alguns herbicidas mesmo seletivos resultam em intoxicação das culturas. Outra condição de suma importância é a limitação hídrica que reduz a produtividade das culturas. Assim, a presente tese teve como objetivo avaliar a inoculação da bactéria promotora de crescimento vegetal Azospirillum brasilense via semente ou foliar bem como a aplicação de reguladores vegetais via foliar, na redução dos estresses oxidativos causado por herbicida inibidores da síntese de carotenoides no milho e da deficiência hídrica na soja. Para isso, foram desenvolvidos três experimentos com a cultura do milho, sendo um em casa de vegetação para avaliação das variáveis biométricas, fisiológicas e bioquímicas e dois em condições de campo para avaliação da produtividade. Em ambos os locais os experimentos foram desenvolvidos em delineamento de blocos casualizados em esquema fatorial 4x2 e quatro repetições. O primeiro fator foi composto dos tratamentos: controle; inoculação das sementes com A. brasilense; aplicação foliar de A. brasilense; e aplicação foliar de regulador vegetal com auxina, giberelina e citocinina. Os tratamentos foliares foram aplicados em mistura de tanque com o herbicida mesotriona (192 g ha-1) no estádio V3 da cultura. O segundo fator foi formado pela presença ou ausência de mesotriona. Os resultados obtidos demonstram que a aplicação de mesotriona reduz as trocas gasosas da cultura do milho e que os tratamentos aplicados não protegem o milho da intoxicação provida pelo herbicida, bem como não incrementam a produtividade da cultura. Para a cultura da soja adotou-se um delineamento de blocos casualizados com cinco tratamentos e cinco repetições: controle irrigado; controle seco; inoculação das sementes com A. brasilense em déficit hídrico; aplicação foliar de A. brasilense em déficit hídrico; aplicação foliar de auxina, giberelina e citocina em déficit hídrico. A imposição do déficit hídrico ocorreu no florescimento pleno, com avaliações diárias. As avaliações constituíram-se de umidade gravimétrica do solo, teor relativo de água, curvas de respostas fotossintéticas em função de diferentes densidades de fluxo de fótons, trocas gasosas, fluorescência da clorofila a, atividade das enzimas do sistema antioxidante, teores de pigmentos fotossintéticos, e componentes de produção por planta ao final do ciclo da cultura. De forma geral os resultados evidenciam que a aplicação foliar de A. brasilense ou de regulador vegetal mitigam os efeitos do déficit hídrico na curva fotossintética, nas trocas gasosas, na fluorescência da clorofila a, nos pigmentos fotossintéticos e elevam a atividade do sistema enzimático reduzindo a peroxidação de lipídeos. Quando se considera a produção por plantas todos os tratamentos empregados minimizaram as perdas em relação ao tratamento controle seco. Portanto, o uso de A. brasilense via semente ou foliar, bem como reguladores vegetais não atenua a intoxicação de mesotriona no milho. No entanto, ao considerar o déficit hídrico na cultura da soja, os tratamentos reduzem as perdas em produção por planta, por mitigarem os danos no sistema fisiológico e bioquímico das plantas.

The objective of this study was to characterize the physicochemical characterization, phenolic compounds, antioxidant activity and the microbiological quality of 67 honey samples of Apis mellifera collected in 14 municipalities located in the West region of the state of Paraná, southern Brazil. The physico-chemical analyzes were: moisture, pH, hydroxymethylfurfural, acidity, protein, ashes, total sugars, reducing sugars, sucrose, color, electrical conductivity and also the total phenol, flavonoids and antioxidant activity were evaluated. FRAP, ABTS and DPPH. Microbiological quality was evaluated by counting coliforms at 35ºC and at 45ºC, mesophilic aerobic bacteria, Clostridium spp., total counts of molds and yeasts. The minimum and maximum values, medians, means and quartiles were calculated. The use of non-metric multidimensional scaling (NMDS) was used to test the differences of the parameters between different samples of honey. The microbiological quality of the analyzed honey samples presented adequate values for human consumption. Five genus of mold were isolated: Cladosporium spp., Phoma spp., Aspergillus spp., Fusarium spp. and Penicillium spp., commonly found in honey. The physico-chemical evaluations were mostly within the specifications determined by national and international legislation. The mean values were 18.75% for moisture, pH of 3.26, HMF of 10.79 mg.kg-1, acidity of 34.54 meq.kg-1, protein content of 0.28%, ash of 0.14%, total sugars of 69.09%, reducing sugars of 64.57%, sucrose of 4.28%, and 340.10 μS.cm-1 for conductivity. The color on the Pfund scale showed 0.26 mm, with a predominance of lighter shades, which favors the acceptability and commercialization of honey produced in the region. The total phenolic compounds were analyzed by Folin-Ciocalteu and flavonoids by the complexation method with aluminum chloride, with a mean content of 34.83 mgGAE.100 g-1 and 16.26 mgEQ.100 g-1, respectively. The antioxidant activity of honey samples presented a mean value of 0.12 μmolET. g-1 for DPPH of 1.01 μmolET. g-1 ABTS +, and 2.68 μmolSFE. g-1 for FRAP. The analyzes presented the formation of two groups for microbial evaluation, with a large group with 64 samples and one isolated group, highlighting the total coliform values. In relation to the physical-chemical parameters, bioactive compounds and antioxidant activity, the analysis verified the formation of nine groups, behaving similarly in relation to some parameters. The evaluations showed that the samples of the municipalities evaluated presented great similarity. These results are important to confirm the quality of the honey produced in the West of Paraná O mel produzido na região Oeste do Paraná, devido as suas qualidades físico-químicas e a organização agroindustrial, que envolve seu processamento e comercialização obteve o selo de Indicação de Procedência. Assim este estudo avaliou as características físico-químicas, compostos fenólicos, atividade antioxidante e a qualidade microbiológica de 67 amostras de mel de Apis mellifera, coletadas em 14 municípios localizados na região Oeste do estado do Paraná, Sul do Brasil. Foram submetidas a análises físico-químicas: umidade, pH, hidroximetilfurfural, acidez, proteína, cinzas, açúcares totais, açúcares redutores, sacarose, cor, condutividade elétrica e também foi avaliado fenóis totais, flavonoides e a atividade antioxidante pelos métodos de FRAP, ABTS e DPPH. A qualidade microbiológica foi realizada, avaliando a contagem de coliformes a 35ºC e a 45ºC, bactérias aeróbias mesófilas, Clostridium spp., contagem total de mofos e leveduras. Foram calculados os valores mínimos e máximos, medianas, médias e quartis. O emprego do escalonamento não métrico multidimensional foi utilizado para testar as similaridades dos parâmetros entre diferentes amostras de mel. A qualidade microbiológica das amostras de mel analisadas apresentou valores adequados para consumo humano. Foram isolados cinco gêneros de mofo: Cladosporium spp., Phoma spp., Aspergillus spp., Fusarium spp. e Penicillium spp., comumente encontrados no mel. As avaliações físico-químicas em sua maioria encontraram-se dentro das especificações determinadas pelas legislações nacional e internacional. Os valores médios foram de 18,75% para umidade, pH de 3,26, HMF de 10,79 mg.kg-1, acidez de 34,54 meq.kg-1, teor de proteína de 0,28%, cinzas de 0,14%, açúcares totais de 69,09%, açúcares redutores de 64,57%, sacarose de 4,28% e 340,10 µS.cm-1 para condutividade. A cor na escala Pfund apresentou 0,26 mm, havendo uma dominância de tonalidades mais claras, o que favorece a aceitabilidade e comercialização do mel produzido na região. Os compostos fenólicos totais foram analisados pelo Folin-Ciocalteu e flavonoides pelo método de complexação com cloreto de alumínio, apresentando teor médio de 34,83 mgGAE.100 g-1 e 16,26 mgEQ.100 g-1, respectivamente. A atividade antioxidante das amostras de mel apresentou valor médio de 0,12 µmolET. g-1 para DPPH, de 1,01 µmolET. g-1 ABTS+, e de 2,68 µmolSFE. g-1 para FRAP. As análises apresentaram a formação de dois grupos para avaliação microbiana, ocorrendo um grande grupo com 64 amostras e um grupo isolado, destacando os valores de coliformes totais. Em relação aos parâmetros físico-químicos, compostos bioativos e atividade antioxidante, a análise verificou a formação de nove grupos, comportando-se de modo semelhantes em relação a alguns parâmetros. As avaliações apresentaram que as amostras de mel dos 14 municípios possuem grande similaridade. Esses resultados são importantes para confirmar a qualidade do mel produzido no Oeste do Paraná.

The plant has antioxidant activity, antifungal activity and several other characteristics. It is very important to develop studies on vegetables that can replace the use of medicines and also pesticides, as the number of intoxications, diseases and even the resistance of microorganisms by the excessive use of drugs is increasing. The objective of the present work was to evaluate the antioxidant properties of two species of spine-santa (Maytenus ilicifolia and Maytenus aquifolium) under different methods of extraction and subsequent chromatographic separation and also the evaluation of its antifungal activity against the fungus Cylindrocladium clavatum in eucalyptus. The extraction methods for the first work were percolation at 28 ° C for 7 days and ultrasound at different temperatures (50 ° C, 60 ° C and 70 ° C) for 15 minutes. Chromatographic separation solvents were hexane, chloroform and methanol. The antioxidant activity was evaluated by the DPPH, ABTS and FRAP methods. For the evaluation of the antifungal activity, a set of analyzes was done to verify the effectiveness of extracts of the espinheira-santa species in different ways. Firstly, the extracts applied to the fungus were incorporated in culture medium at a fixed concentration of 2000mg L-1, followed by the evaluation of the minimum inhibitory concentration in 5 and 15 days, sporulation in 15 days, and the end of evaluation in eucalyptus leaves. The extract of the espinheira-santa had similar results for the two species analyzed. High levels of antioxidant activity were found for all the tests performed and this occurred mainly in extraction with lower temperature. The extracts that stood out most in antioxidant activity were the crude extracts and extracts obtained with solvent methanol in the chromatography, for all the methods of evaluation of the antioxidant activity. In the evaluations of the antifungal activity it was observed that all the extracts in fixed concentrations of 2000 mg L-1 and later of 500 mg L-1 were effective in controlling the fungus. In the evaluation of the minimum inhibitory concentration the extract obtained with chloroform solvent was the one that stood out in the effectiveness of the control. The extract also inhibited sporulation gradually according to the concentration applied, that is, the higher the concentration of the extract applied, the greater the inhibition of sporulation. For the evaluations in the eucalyptus leaves, the extracts were also effective, and this was according to the concentration used, with the highest concentrations being the most effective. And this occurred mainly for the crude extract and the methanolic. It was also noticeable the effect of delay of the growth of the colonies and sporulation with the application of the extracts. As folhas da árvore chamada popularmente de espinheira-santa possuem compostos benéficos à saúde, e esses benefícios são comprovados cientificamente. A planta possui atividade antioxidante, atividade antifúngica e diversas outras características. Se faz muito importante o desenvolvimento de estudos acerca de vegetais que possam substituir o uso de remédios e também de agrotóxicos, pois é crescente o número de intoxicações, doenças e mesmo da resistência de microrganismos pelo excesso do uso de compostos químicos. O objetivo do presente trabalho foi avaliar as propriedades antioxidantes de duas espécies de espinheirasanta (Maytenus ilicifolia e Maytenus aquifolium) sob diferentes métodos de extração e posterior separação cromatográfica e também a avaliação de sua atividade antifúngica contra o fungo Cylindrocladium clavatum em eucalipto. Os métodos de extração para o primeiro trabalho foram percolação à temperatura de 28 °C por 7 dias e ultrassom com diferentes temperaturas (50 °C, 60 °C e 70°C), por 15 minutos. Os solventes de separação cromatográfica foram hexano, clorofórmio e metanol. A atividade antioxidante foi avaliada pelos métodos DPPH, ABTS e FRAP. Para a avaliação da atividade antifúngica foi feito um conjunto de análises para que se pudesse verificar a eficácia dos extratos das espécies da espinheira-santa de diferentes modos. Primeiramente analisando os extratos aplicados no fungo de forma incorporada em meio de cultura em concentração fixada de 2000 mg L-1, seguido da avaliação da concentração inibitória mínima em 5 e 15 dias, da esporulação em 15 dias e pôr fim a avaliação em folhas de eucalipto. O extrato da espinheira-santa teve resultados semelhantes para as duas espécies analisadas. Foram encontrados elevados teores de atividade antioxidante para todos os testes feitos e isso ocorreu principalmente em extração com menor temperatura. Os extratos que mais se destacaram em atividade antioxidante foram os extratos bruto e o extratos obtido com solvente metanol na cromatografia, para todos os métodos de avaliação da atividade antioxidante. Nas avaliações da atividade antifúngica foi observado que todos os extratos em concentrações fixada de 2000 mg L-1 e posteriormente de 500 mg L-1 se faziam efetivos no controle do fungo. Na avaliação da concentração inibitória mínima o extrato obtido com solvente clorofórmio foi o que se destacou na eficácia do controle. O extrato também inibiu a esporulação gradativamente de acordo com a concentração aplicada, isso é, quanto maior a concentração do extrato aplicado, maior a inibição da esporulação. Para as avaliações nas folhas de eucalipto, os extratos também tiveram eficácia, e essa foi de acordo com a concentração utilizada, sendo as maiores concentrações as mais efetivas. E isso ocorreu principalmente para o extrato bruto e o metanólico. Foi notável também o efeito de retardamento do crescimento das colônias e esporulação com a aplicação dos extratos.

Among the factors responsible for the loss of quality of strawberries are high metabolic activity and high susceptibility to microbial attack. Therefore, studies with edible coverings or coverings are being one of the most appropriate alternatives to assist in the post harvest conservation of fruits, especially non-climacteric ones such as strawberry. These coatings have excellent barrier properties, mainly to the transport of gases and water vapor, among other factors that contribute to the maintenance of fruit quality. Therefore, the objective of this work was to evaluate the effect of edible films produced from gelatine, native starch, sorbitol and Tetradenia riparia extract (antimicrobial agent) in the post harvest harvesting of strawberries (Fragaria ananassa). The films were analyzed for thickness, solubility, opacity, colorimetry, TVA (water vapor transmission) and mechanical analysis. The films that received the addition of Tetradenia riparia extract became thicker with lower solubility and opacity, and greater luminosity. These data corroborated the mechanical analysis, in which the films with extract were more elastic, in addition, it was necessary to apply a greater force to break, that is, more resistant. Regarding the fruits, the analyzes were performed on alternate days, during 10 days of storage, under temperature and humidity of refrigerator with temperature of 8ºC at 10ºC and relative humidity of approximately 75%, being evaluated the loss of mass, microbiological analysis, analysis Antioxidant, calorimetry, vitamin C contents, total soluble solids (TSS), titratable total acidity (TTA) and the relationship between both SST / ATT. The loss of mass increased with the prolongation of the storage, that is to say, when adding the extract of Tetradenia riparia both in medium and in high inhibition the losses of mass of the fruits were superior to 10% in the 4th day of storage, for the two treatments mentioned above. As for the contents of total soluble solids and titratable total acidity the contents increased with the increase of the storage period, this fact may be related to the respiratory process and consumption of organic acids. Regarding the vitamin C content, only the treatments that did not receive the addition of extract continued to increase the contents at the end of the experiment. This proves the importance of using biofilm as a protective agent, it is also observed that these fruits that the coloration decreases, leaving the less looking less shiny. Microbiological analysis showed that the most effective treatment was the high inhibition of starch film (FAAI), that is, 500 μg / ml of Tetradenia riparia extract was enough to decrease the number of colony forming units at the end of experiment. For the antioxidant activity it was observed that the most efficient treatments were those with the addition of T. riparia extract to the films that is, when adding 500μg / ml or 1000μg / ml, they presented a decrease of the antioxidant activity, indicating that the Extract may reduce metabolic activity and delay fruit senescence. O morango é um pseudofruto não climatérico e que tem uma curta vida útil após a colheita. Entre os fatores responsáveis pela perda de qualidade dos morangos estão alta atividade metabólica e alta susceptibilidade ao ataque microbiano. Diante disso, estudos com revestimentos ou coberturas comestíveis estão sendo uma das alternativas mais apropriada para auxiliar na conservação pós colheita de frutas principalmente as não climatéricas como é o caso do morango. Estes recobrimentos podem possuir excelentes propriedades de barreira, principalmente ao transporte de gases e vapor de água, entre outros fatores que contribuem para manutenção da qualidade do fruto. Desta forma, o objetivo deste trabalho foi avaliar o efeito de filmes comestíveis produzidos a partir de gelatina, amido nativo, sorbitol e extrato de Tetradenia riparia (agente antimicrobiano) na conservação de morangos em pós- colheita. Os filmes foram analisados em relação à espessura, solubilidade, opacidadade, colorimetria, TVA (transmissao de vapor de agua) e análise mecânica. Em relação aos frutos, as análises foram realizadas em dias alternados, durante 10 dias de armazenamento, sob refrigeracão com temperatura de 8ºC á 10ºC e umidade relativa de aproximadamente 75%, sendo avaliados a perda de massa, análise microbiológica, análise antioxidante, calorimetria, vitamina C, sólidos solúveis totais (SST), acidez total titulável (ATT) SST/ATT. Os filmes que receberam a adição do extrato de Tetradenia riparia tornaram-se mais espessos com menor solubilidade e opacidade, e maior luminosidade. Estes dados corroboraram a análise mecânica, em que, os filmes com extrato mostraram-se mais elásticos, além disso, foi necessário aplicar uma força maior para que se rompesse, ou seja, mais resistentes. A perda de massa aumentou com o prolongamento do armazenamento, ou seja, ao adicionar o extrato de T. riparia tanto em média quanto em alta concentracao as perdas de massa dos frutos foram superiores a 10% no 4º dia de armazenamento, para os dois tratamentos citados acima. Quanto aos teores de sólidos solúveis totais e acidez total titulável os teores aumentaram com o aumento do período de armazenamento. Em relação ao teor de vitamina C, apenas os tratamentos que não receberam a adição de extrato continuaram a aumentar os teores ao final do experimento. Isto comprova a importância da utilização de biofilme como agente de proteção, também observa-se que estes frutos que a coloração diminui, deixando os menos com aspecto menos brilhante. A análise microbiologica mostrou que o tratamento mais eficaz, foi o filme de amido com alta concentracao de extrato (FAAI), ou seja, 500µg/ml de extrato de T. riparia foi o suficiente para diminuir o número de unidades formadoras de colônias ao final do experimento. Para a atividade antioxidante observou-se que os tratamentos mais eficientes foram aqueles com a adição de extrato de T. riparia aos filmes, ou seja ao adicionar 500µg/ml ou 1000µg/ml, os mesmos apresentaram uma diminuição da atividade antioxidante, indicando que o extrato pode reduzir a atividade metabólica e retardar a senescência dos frutos.

The gladiolus is among the most important cut flowers in the country. The application of silicon and gibberellic acid has shown positive results in some cut flowers. The objective of this work was to evaluate the application of silicon and gibberellic acid in the gladiolus cultivated in a pot in a protected environment. In the first experiment the silicon application in drench to the cultivation substrate of three gladiolus cultivars was evaluated. The experimental design was a randomized block design in a 3x4 factorial scheme [three gladiolus cultivars (White Friendship, Rose Friendship and Red Beauty) x four doses of silicon (0, 150, 300 and 600 mg dm-3)], with five replicates. Each experimental unit consisted of a pot with two plants. Phytotechnical characteristics were evaluated in addition to nutrients and silicon foliar contents. In the second experiment were evaluated high concentrations and application methods of gibberellic acid for the production of flower spikes and corms of gladiolus cv. White Friendship. The experimental design was randomized blocks with two application methods of gibberellic acid (GA3): foliar spray and corm soaking. Each application of GA3 was carried out at four concentrations (0, 250, 500, 1000 mg L-1 of GA3), and was replicated six times. The cultivars White Friendship and Red Beauty produced taller plants, with longer, larger and heavier flower stems. The order of nutrient content in the leaves of the three cultivars was the same, with K > N > Ca > Mg > S > P > Fe > Mn > B > Zn > Cu. The gladiolus cultivars were classified as non-accumulating of Si. The application of Si in the gladiolus culture did not influence any evaluated phytotechnical variables and nutrient uptake. High concentrations of GA3 are not recommended for the production of flower spikes and corms of the gladiolus ‘White Friendship’cultivar. Corm soaking anticipated spike harvest and boosted cormel-per-plant yield. Regardless of the application method, 550 mg L-1 of GA3 increased cormel yield. A floricultura é uma atividade extremamente lucrativa. A cultura do gladíolo está entre as mais importantes flores de corte do país. A aplicação de silício e ácido giberélico tem apresentado resultados positivos em algumas flores de corte. Objetivou-se com o presente trabalho avaliar a aplicação de silício e ácido giberélico na cultura do gladíolo cultivado em vaso, em ambiente protegido. No primeiro experimento avaliou-se a aplicação de silício no substrato de cultivo de três cultivares de gladíolo. O delineamento experimental utilizado foi blocos ao acaso, em esquema fatorial 3x4 [três cultivares de gladíolo (White Friendship, Rose Friendship e Red Beauty) x quatro doses de silício (0, 150, 300 e 600 mg dm-3)], com cinco repetições. O delineamento experimental utilizado foi blocos ao acaso, em esquema fatorial 2x4 [dois modos de aplicação de GA3 (imersão dos cormos e pulverização foliar) x quatro concentrações (0, 250, 500 e 1000 mg L-1 de GA3)], contendo seis repetições e duas plantas por unidade experimental. As cultivares de gladíolo White Friendship e Red Beauty produziram plantas mais altas, com hastes florais de maior comprimento, diâmetro e massa seca do que a cultivar Rose Friendship. A ordem do teor de nutrientes nas folhas das três cultivares foi a mesma, sendo K > N > Ca > Mg > S > P > Fe > Mn > B > Zn > Cu. As cultivares de gladíolo foram classificadas como não acumuladoras de Si. A aplicação de Si no substrato de cultivo das cultivares de gladíolo não influenciou nenhuma variável fitotécnica e absorção de nutrientes. Altas concentrações de GA3 não são recomendadas para a produção de hastes florais e cormos de gladíolo cv. White Friendship. O modo de aplicação por imersão do cormo antecipa o ponto de colheita das hastes florais e produz maior número de cormilhos por planta. Independentemente do modo de aplicação, 550 mg L-1 de GA3 incrementam a produção de cormilhos da cv. White Friendship.

However, studies have shown that some climacteric fruits, such as banana, did not respond to ethanol. The ability of the banana to absorb ethanol may be limited and interfere with its ethylene regulatory action. The objective of this work was to evaluate the effect of exposure time and ethanol dose on ethylene production, respiration, antioxidant enzymes and postharvest preservation of 'Prata' banana. A first sample of bananas was exposed to ethanol vapor (100 μL) for 10.0 hours. Another sample of bananas was exposed to 50, 100 and 150 μL of ethanol and then stored for 12 days. Respiratory rate, ethylene production, activities of the enzymes superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX), phenylalanine ammoniumase (FAL) and polyphenoloxidase (PPO), physicochemical characteristics and degradation were evaluated. The respiration rate and ethylene production of ethanol treated bananas (71.13 mg CO2 kg-1 h-1 and 0.009 μg C2H4 kg-1 h-1, respectively) were lower than the control fruits (101.58 mg kg -1 h -1 and 0.014 μg kg -1 h -1, respectively), but this occurred only with 4 hours of exposure to ethanol, during which time there was a peak of ethanol uptake in the fruit. Ethanol caused higher SOD and CAT activity and less APX activity of banana bark only in the first two hours of exposure, but this was not related to ethylene production or respiratory rate. Ethanol influenced changes in PPO and FAL activities after the peak of its maximum absorption by the fruit (4 hours). During storage, ethanol caused a decrease in the ethylene production of the fruits, but there was no effect of the doses. Ethanol did not influence the respiratory rate, sugar conversion, texture and loss of fresh banana mass during storage. This study showed that ethanol has an effect on the metabolism of ethylene, but that this has no reflection on some quality parameters of 'Prata' banana. On the other hand, ethanol was able to delay the degradation of the fruit, and this is commercially advantageous. O etanol tem sido estudado como um inibidor da biossíntese de etileno, o que pode ser de grande benefício para a conservação pós-colheita de frutos. Entretanto, estudos mostraram que alguns frutos climatéricos, como a banana, não mostraram resposta ao etanol. A capacidade da banana em absorver etanol pode ser limitada e interferir na sua ação reguladora do etileno. O objetivo deste trabalho foi avaliar o efeito do tempo de exposição e da dose de etanol sobre a produção de etileno, respiração, enzimas antioxidantes e conservação pós-colheita da banana ‘Prata’. Uma primeira amostra de bananas foi exposta ao vapor de etanol (100 µL) por 10,0 horas. Outra amostra de bananas foi exposta a 50, 100 e 150 µL de etanol e depois foi armazenada por 12 dias. A taxa respiratória, produção de etileno, atividades das enzimas superóxido dismutase (SOD), catalase (CAT), ascorbato peroxidase (APX), fenilalanina amonialiase (FAL) e polifenoloxidase (PPO), características físicoquímicas e degradação, foram avaliadas. A taxa respiratória e a produção de etileno das bananas tratadas com etanol (71,13 mg CO2 kg-1 h-1 e 0,009 µg C2H4 kg-1 h-1, respectivamente) foram inferiores aos frutos do controle (101,58 mg kg-1 h-1 e 0,014 µg kg-1 h-1, respectivamente), mas isso ocorreu apenas com 4 horas de exposição ao etanol, período no qual houve um pico de absorção de etanol no fruto. O etanol causou maior atividade de SOD e CAT e menor atividade da APX da casca das bananas apenas nas duas primeiras horas de exposição, mas isso não esteve relacionado com a produção de etileno ou taxa respiratória. O etanol influenciou mudanças nas atividades de PPO e FAL após o pico de sua máxima absorção pelo fruto (4 horas). Durante o armazenamento, o etanol causou diminuição da produção de etileno dos frutos, mas não houve efeito das doses. O etanol não influenciou a taxa respiratória, a conversão de açúcares, a textura e a perda de massa fresca da banana durante o armazenamento. Este estudo mostrou que o etanol tem efeito sobre o metabolismo do etileno, mas que isso não tem reflexo sobre alguns parâmetros de qualidade da banana ‘Prata’. Por outro lado, o etanol foi capaz de atrasar a degradação do fruto, e isso é vantajoso comercialmente.

O setor agroindustrial tem se expandido muito nos últimos anos, levando o país a um aumento na geração de resíduos agroindustriais, sendo que a maior parte deles ainda é descartada no meio ambiente, sem tratamento adequado, ou utilizada na alimentação animal, destinos que a priori, não geram ganhos econômicos para a agroindústria além de representarem gargalos logísticos e ambientais na sua disposição. Nesse sentido, o presente trabalho teve como objetivos otimizar o processo de extração de compostos bioativos, avaliar in vitro as atividades antioxidante, por meio da desativação de espécies reativas de oxigênio, e anti-inflamatória, bem como determinar a composição fenólica dos resíduos agroindustriais a saber: película de amendoim (Arachis hypogaea) (cultivares IAC886 e IAC505), pimenta-rosa (Schinus terebinthifolius Raddi) e pimenta-do-reino (Piper Nigrum L). O processo de otimização da extração de compostos antioxidantes foi realizado utilizando dois processos de extração, extração convencional e subcrítica, em delineamento composto central rotacional, utilizando como variáveis a temperatura e tempo e a pressão e temperatura, respectivamente, com os solventes etanol 80%, água e propilenoglicol 80%. Durante o processo de otimização a atividade antioxidante foi avaliada pelo método de sequestro do radical ABTS. Os melhores resultados foram obtidos para a extração convencional com os solventes etanol 80%, água e propilenoglicol 80%. A película de amendoim (IAC505) apresentou as maiores atividades antioxidantes (1.396,67, 580,44 e 859,89 μmol.g-1 em equivalentes de trolox, para os solventes etanol 80%, água e propilenoglicol 80%, respectivamente). A partir dos resultados obtidos para os solventes testados, utilizando a extração convencional, foram feitas outras análises de atividade antioxidante considerando o tempo e temperatura ideal de extração. Foram realizadas análises de avaliação da capacidade de redução de Folin-Ciocalteau e potencial de desativação dos radicais livres sintéticos (DPPH e ABTS) e espécies reativas de oxigênio (radicais peroxila, superóxido e ácido hipocloroso). O solvente de extração que apresentou melhores resultados em todos os ensaios foi o etanol 80%, sendo, portanto o solvente utilizado nas análises subsequentes. A partir da definição do melhor sistema extrator foram realizadas análises da composição fenólica, por meio das técnicas de cromatografia líquida de alta eficiência em modo analítico (HPLC-RP), cromatografia gasosa acoplada com espectrometria de massas (GC-MS), e avaliação in vitro da atividade anti-inflamatória. Foram identificados nos resíduos estudados procianidinas B1 e B2, ácido p-cumárico, miricetina, ácido ferúlico, ácido siríngico, ácido sinápico, epicatequina e catequina. A pimenta-do-reino diminui significativamente os níveis de TNF-α e nitritos, reduzindo assim o processo inflamatório gerado. Os resultados obtidos neste trabalho demonstram que estes resíduos agroindústrias possuem grande potencial biológico, podendo assim ser melhores aproveitados tanto pela indústria de alimentos quanto pela indústria farmacêutica. The agribusiness sector has expanded greatly in recent years, leading the country to an increase in the generation of agro-industrial residues, even though most of them are still discarded in the environment without proper treatment, or used in animal feed, destinations that a priori do not generate economic gains for agribusiness besides representing logistical and environmental bottlenecks at your disposal. In this sense, the present study aimed to optimize the bioactive compounds extraction process, to evaluate in vitro the antioxidant activities, through the deactivation of reactive oxygen species, and anti-inflammatory as well as determine the phenolic composition of agro-industrial residues namely peanut skin (Arachis hypogaea) (IAC886 and IAC505 cultivars), pink pepper (Schinus terebinthifolius Raddi) and black pepper (Piper nigrum L). The optimization process of extraction of antioxidants was performed using two extraction processes, conventional extraction and subcritical on central composite design, using as variable temperature and time and the pressure and temperature, respectively, with solvents ethanol 80%, water and propyleneglycol 80%. During the optimization process the antioxidant activity was evaluated for the kidnapping method of ABTS radical. The best results were obtained for the conventional extraction with solvents ethanol 80%, water and propyleneglycol 80%. Peanut skin (IAC505) showed the highest antioxidant activity (1,396.67, 580.44 and 859.89 μmol.g-1 in Trolox equivalents, for solvents ethanol 80%, water and propyleneglycol 80%, respectively). From the results obtained for the solvents tested, using conventional extraction, other analyzes were done considering the antioxidant activity optimum time and temperature of extraction. Valuation analyzes were carried out of the Folin-Ciocalteau reduction capability and potential disabling of synthetic free radical (DPPH and ABTS) and reactive oxygen species (peroxyl radicals, superoxide and hypochlorous acid). The extraction solvent that showed better results in all tests was ethanol 80%, and therefore the solvent used in subsequent analyzes. From the definition of the best extraction system analyzes were made of phenolic composition by means of liquid chromatography techniques of high efficiency in analytic way (HPLC-RP), gas chromatography coupled with mass spectrometry (GC-MS), and reviewed in vitro anti-inflammatory activity. They were identified at residues studied procyanidins B1 and B2, p-coumaric acid, myricetin, ferulic acid, syringic acid, sinapic acid, epicatechin, and catechin. The black pepper significantly reduces TNF-α and nitrite levels, thereby reducing the inflammatory process generated. The results of this study demonstrate that these agribusinesses waste have great biological potential, and thus can be best availed by both the food industry and the pharmaceutical industry.

Polysaccharide polymers, such as starch, pectin and cellulose have been constantly used as base to form coatings, but their physical properties do not provide proper barrier to gas and water vapor diffusion. Cellulose nanocrystals, when incorporated to edible coatings may improve their barrier properties. The addition of a natural antioxidant to the coating may improve conservation capacity of fruit. Natural antioxidants have relative instability, which may limit its reducing properties. Nevertheless, including nanocrystals may aggregate higher stability to added antioxidant. Thus, the objective of this research was assessing the effect of polymeric coatings, along with cellulose nanocrystals and vegetable extract on the physiology of Persian lime. It consisted of two experiments, the first assessed the effect of pectin (PEC), starch (ST) and cellulose gum (CMC) polymers added to cellulose nanocrystals (CN). The second differed from the first due to the addition of peanut peel extract, chosen because it has higher rates of antioxidant activity by DPPH, ABTS and FRAP methods in comparison with extracts of Persian lime and Rangpur seeds. In both experiments the assessments occurred during nine storage days under 23 °C ± 2 °C. Ethylene, CO2, fresh mass loss, firmness and chlorophyll were assessed. In the second were included DPPH, ABTS and FRAP antioxidant activity analyses, as well as total phenolic composites and ascorbic acid. In the first experiment, coatings formed by CMC, PEC and ST pure polymers with their respective nanocomposites called NCMC, NPEC and NST were efficient to reduce ethylene production until first three storage days. Among tested treatments, NPEC nanocomposite (12.01 mg CO2 kg-1 h-1) was more efficient than PEC (14.93 mg CO2 kg-1 h-1) to inhibit CO2 diffusion. PEC polymer when reinforced by NC (NPEC) was the only coating to reduce fresh mass loss of Persian lime, and it was also more efficient than PEC pure polymer when it comes to retention of chlorophyll. All tested nanocomposites and pure polymers were similarly efficient to keep fruit s firmness. In the second experiment the combination of pectin, cellulose gum, nanocrystals and extract was responsible to present lower ethylene and CO2 production rates. All tested coatings slowed fresh mass and firmness loss of fruits, but pectin and cellulose gum active nanocomposite was the coating able to contribute to the lowest rate of fresh mass loss and to highest rate of fruit s firmness retention, but the addition of extract did not influence these results. The reinforcement with cellulose nanocrystals was able to retain antioxidant activity off added coatings, which consisted of peanut peel extract. This research showed that pectin coatings, based on nanocrystals and the coatings from polymeric combination of pectin and cellulose gum, along with peanut peel extract and nanocrystals, presented better barrier properties against gases and water vapor, based on physiologic and physicochemical indicators Revestimentos comestíveis podem auxiliar na qualidade e conservação de frutos. Polímeros de polissacarídeos, como amido, pectina e celulose têm sido muito utilizados como base de formação de revestimentos, mas suas propriedades físicas não proporcionam barreira adequada à difusão de gases e vapor d´água. Nanocristais de celulose, quando incorporados a revestimentos comestíveis, podem melhorar suas propriedades de barreira. A adição de um antioxidante natural ao revestimento pode melhorar a capacidade de conservação do fruto. Antioxidantes naturais possuem relativa instabilidade que pode limitar suas propriedades redutoras. No entanto, a inclusão de nanocristais pode agregar maior estabilidade ao antioxidante adicionado. Assim, o objetivo deste trabalho foi avaliar o efeito de revestimentos poliméricos, adicionados com nanocristais de celulose e extrato vegetal na fisiologia e qualidade pós-colheita da lima ácida Tahiti. O trabalho foi dividido em dois experimentos. O primeiro consistiu na avaliação do efeito de polímeros de carboximetilcelulose (CMC), pectina (PEC) e amido (AM), adicionados de nanocristais de celulose (NC). O segundo diferiu do primeiro pela adição de extrato de película de amendoim, escolhido por possuir maiores valores de atividade antioxidante pelos métodos DPPH, ABTS e FRAP em comparação aos extratos de casca de lima ácida Tahiti e semente de limão Cravo. Em ambos experimentos as avaliações ocorreram durante 9 dias de armazenamento a 23 °C ± 2 °C. Etileno, CO2, perda de massa fresca, firmeza e clorofila foram avaliados nos dois experimentos. No segundo foram incluídas as análises de atividade antioxidante pelos métodos DPPH, ABTS e FRAP, compostos fenólicos totais e ácido ascórbico. No primeiro experimento, os revestimentos formados com os polímeros puros CMC, PEC e AM e com os seus respectivos nanocompósitos chamados NCMC, NPEC e NAM foram eficazes em reduzir a produção de etileno até os primeiros três dias de armazenamento. Entre os tratamentos testados, o nanocompósito NPEC (12,01 mg CO2 kg-1 h-1) foi mais eficiente em inibir a difusão de CO2 do que o polímero puro PEC (14,93 mg CO2 kg-1 h-1). O polímero PEC quando reforçado com NC (NPEC) foi o único revestimento que pôde reduzir a perda de peso fresco de lima ácida Tahiti, e também foi mais eficiente na retenção de clorofila do que o polímero puro PEC. Todos os nanocompósitos ou polímeros puros testados foram similarmente eficientes em reter a firmeza dos frutos. No segundo experimento a mistura de pectina e carboximetilcelulose, nanocristais e extrato foi responsável por apresentar as menores taxas de produção de etileno e CO2. Todos os revestimentos testados retardaram as perdas de massa fresca e de firmeza dos frutos, mas o nanocompósito ativo de pectina e carboximetilcelulose foi o revestimento capaz de influenciar a menor perda de massa fresca e reter a maior firmeza, mas a adição de extrato não influenciou esses resultados. O reforço com nanocristais de celulose foi capaz de reter atividade antioxidante dos revestimentos adicionados de extrato de película de amendoim. Recently, different native fruits, including jabuticaba, have been a research aim in order to investigate the best benefit of its nutritional properties. In order to arouse new alternatives for better utilization of agro-industrial by-products with nutritional and functional properties, researchers are seeking to develop innovative and functional bioactive products. By this angle, this study aimed at evaluating whether different jabuticaba juice extraction processes applied to obtain peels interfered on its nutritional properties as well as on the subsequent dehydration in order to turn a nutrient-rich residue, agro-industrial benefitted, in a food product that can be attractive to the consumer, as well as easy to be handled, stored and transported. Thus, this study was divided into three phases: the first one was divided according to the acquisition of jabuticaba fruits, from two identified genotypes as: one genotype as acquired in Clevelândia farm (25°07'20" S and 52°19'15" W) and the other genotype from Verê farm (25°53'1'' S: 52° 55' 11'' W). The fruits underwent through extraction process by crushing and forced steam to obtain peels. Subsequently, peels were submitted to dehydration process in an oven with forced air circulation at 70 °C. Then, after being dehydrated, they were ground and sieved to an 80-mesh size to obtain powder. Analyses were carried out to evaluate the influence of these processes in bioactive compounds and their variations based on samples of fresh jabuticaba peels from each genotype, since they underwent through the extraction process and then dehydration. This research was based on physicochemical analyses of hydroalcoholic extracts of samples. Centesimal composition parameters were evaluated: total soluble solids (TSS), titratable acidity, pH, ash, fiber, protein and moisture content, bioactive compounds (phenols, flavonoids and anthocyanins) and antioxidant activity (DPPH, ABTS and FRAP). The way jabuticaba peel was extracted (fresh or dried - powder) did not influence the obtained physicochemical results, or antioxidant activities measured by ABTS and FRAP. Jabuticaba peels of both studied genotypes, extracted by crushing, showed the best contents concerning flavonoids, phenolic compounds and antioxidant activity by DPPH method. Jabuticaba peels of Clevelândia genotype showed the highest antioxidant content, flavonoids, phenolic, ABTS and FRAP. In the second moment of this trial, there was some effect of storage in anthocyanin content, antioxidant activity according to three different methods (DPPH, FRAP and ABTS), flavonoids, phenolic and physicochemical characteristics (moisture content, total acidity, pH, ashes, protein and fiber) of such waste powder (to obtain jabuticaba peel powder from both genotypes, extracted by steam and crushing). They also were vacuum packed and stored for 135 days. It was observed that the extraction by crushing showed the best results for DPPH activity according to the storage time and jabuticaba peel from Clevelândia genotype showed the highest antioxidant activity when compared to Verê genotype at the start time and over 135 storage days. Likewise this time has not changed, parameters as acidity and total protein content were obtained in both genotypes and their different extraction processes of jabuticaba powder peel. For the third phase, two evaluated waste samples were selected in phases I and II, which powder peel of Clevelândia genotype was extracted by forced-steam process (GCLV) while powder peel of Verê genotype was extracted by crushing (GVRE). Then, microbiological analyses were carried out (coliforms at 45 °C g-1, Salmonella spp. 25g-1 and yeasts and molds) with natural yogurt and selected powder peels of jabuticaba. Subsequently, four formulations were prepared and two of them were for each genotype: 3.6% GCLV and 1.8% GCLV while two ratios were for (3.6% / 1.8%) GVRE samples. The formulations were submitted to sensorial analyses of acceptability, purchase intent, frequency and reason for the evaluated product consumption, with 100 untrained consumers. The quality of jabuticaba peel color (Verê/Clevelândia genotypes) in powder was also evaluated after extraction xi (steam/crushing), and a*, b*, L*, C*, H* and Δab* color coordinates were analyzed. The dehydrated product and yogurt showed a low counting for filamentous fungi, yeasts, thermotolerant coliforms and absence of Salmonella spp., which indicates some good processing conditions. The addition of jabuticaba peel powder in yogurt resulted in good acceptance for samples such as 1.8g GCLV; 3.6g GCLV and 1.8g GVRE, whose answers varied from: I liked moderately and I liked very much . These samples received results of good intention to buy samples such as 1.8g GCLV, 3.6g GCLV and 1.8g GVRE. Concerning color, there was no effect on the quality of jabuticaba peel powder up to 135 storage days. Generally, the obtained peels by crushing showed the highest contents of flavonoids, phenolic compounds and antioxidant activity by DPPH method. Therefore, antioxidants of this product in yogurt is a promising alternative, since the results showed good rates for both genotypes and extraction treatments (steam/crushing). Wherefore, this process not only provides some proper disposal for waste but also uses important nutrients and natural dyes to add value to several kinds of foodstuff. A jabuticabeira (Plinia sp.) é uma espécie nativa que se encontra amplamente distribuída em quase todas as regiões brasileiras. Recentemente, diferentes frutos nativos, entre eles a jabuticaba, têm sido alvo de pesquisa para investigar o melhor aproveitamento de suas propriedades nutricionais. Com perspectivas de trazer novas alternativas para o melhor aproveitamento de subprodutos agroindustriais que tenham propriedades nutritivas e funcionais, pesquisadores estão buscando o desenvolvimento de produtos inovadores e funcionais (bioativos). Por esse viés, este trabalho objetivou avaliar se diferentes processos de extração de suco de jabuticaba para obtenção das cascas interferiam nas suas propriedades nutritivas bem como na posterior desidratação, com o intuito de transformar um resíduo rico em nutrientes, aproveitado agroindustrialmente, em um produto alimentício atrativo para o consumidor, além da facilidade de manuseio, armazenamento e transporte. Sendo assim, este estudo foi dividido em três fases: a primeira com a aquisição dos frutos de jabuticabeira, de dois genótipos, identificados como genótipo adquirido no sítio em Clevelândia ( 25°07 20 S e 52°19 15 W,) e genótipo do sítio em Verê (25° 53' 1'' S: 52° 55' 11'' W). Os frutos passaram pelo processo de extração por esmagamento e por vapor forçado, para obtenção da casca. Na sequência, foram submetidas ao processo de desidratação em estufa com circulação forçada de ar a 70 °C. Depois de desidratadas foram moídas e peneiradas com granulometria 80 mesh para obtenção do pó. Foram realizadas análises para avaliar a influência desses processos nos compostos bioativos e suas variações nas amostras das cascas frescas de jabuticaba dos genótipos, ao passarem pelos processos de extrações e em seguida desidratação. Esta investigação decorreu a partir de análises físico-químicas dos extratos hidroalcoólicos das amostras. Foram avaliados os parâmetros da composição centesimal: sólidos solúveis totais (SST), acidez titulável, pH, cinzas, fibras, proteínas e grau de umidade, compostos bioativos (fenóis, flavonoides e antocianinas) e atividade antioxidante (DPPH, ABTS e FRAP). O tipo de extração da casca de jabuticaba fresca ou desidratada (em pó) não influenciou nos resultados físico-químicos, nem para as atividades antioxidantes medidas por ABTS e FRAP. As cascas de jabuticaba de ambos genótipos, extraídas por esmagamento, apresentaram melhores índices de flavonoides, fenólicos e atividade antioxidante pelo método DPPH. As cascas de jabuticabas do genótipo Clevelândia apresentaram maior teor de antioxidante, flavonoides, fenólicos, ABTS e FRAP. Na segunda fase do trabalho verificou-se o efeito do armazenamento, nos conteúdos de antocianinas, atividade antioxidante por três métodos distintos (DPPH, FRAP e ABTS), flavonoides, fenólicos e características físico-químicas (teor de umidade, acidez titulável, pH e cinzas proteína e fibra) do pó destes resíduos (obtenção da casca de jabuticaba em pó de dois genótipos, extraídos a vapor e esmagamento), embalados a vácuo e armazenados por 135 dias. Observou-se que a extração por esmagamento apresentou melhores resultados para atividade de DPPH em função do tempo de armazenamento e que a casca de jabuticaba do genótipo Clevelândia apresentou maior atividade antioxidante em relação à casca do genótipo Verê, no tempo inicial e ao longo de 135 dias de armazenamento. Além deste tempo não ter sido alterado, foram obtidos os parâmetros de acidez e teor de proteína totais em ambos genótipos e seus distintos processos de extrações da casca de jabuticaba em pó. Para fase três, foram selecionados dois dos resíduos avaliados nas fases I e II, cujo pó da casca de jabuticaba do genótipo de Clevelândia foi extraído pelo processo a vapor (GCLV) e o pó da casca de jabuticaba do genótipo de Verê foi extraído por esmagamento (GVRE). Em seguida, foram realizadas análises microbiológicas (coliformes a 45°C g-1, Salmonella spp. 25g-1 e bolores e leveduras) com o iogurte natural e com a cascas de jabuticaba em pó, selecionadas. Na sequência, foram elaboradas quatro formulações sendo duas para cada genótipo: GCLV ix 3,6% e GCLV 1,8% e duas proporções para as amostras, GVRE (3,6% e 1,8%). As formulações foram submetidas às análises sensorial de aceitabilidade, intenção de compra, frequência e motivo do consumo do produto avaliado, contando com 100 consumidores não treinados. Também foi avaliada a qualidade da cor das cascas de jabuticaba (genótipo Verê/Clevelândia) em pó após extrações (vapor/esmagamento), e foram analisadas as coordenadas de cor a*, b*, L*, C*, H* e Δab*. O produto desidratado e o iogurte apresentaram baixa contagem para fungos filamentosos, leveduras, coliformes termotolerantes e ausência de Salmonella spp., indicando boas condições de processamento. A adição da casca de jabuticaba em pó, no iogurte, resultou em boa aceitação para as amostras GCLV 1,8g; GCLV 3,6 g e GVRE 1,8g situando-se entre o termo gostei moderadamente e gostei muito. As mesmas obtiveram resultados de boa intenção de compra para as amostras GCLV 1,8g; GCLV 3,6 g e GVRE 1,8g. Na cor, a casca de jabuticaba em pó não teve a qualidade afetada até 135 dias de armazenamento. De forma geral, as cascas obtidas por esmagamento apresentaram melhores índices de flavonoides, fenólicos e atividade antioxidante pelo método DPPH. Portanto, os antioxidantes desse produto em iogurte é uma alternativa promissora, visto que obtiveram resultados com bons índices para ambos genótipos e tratamentos de extração (vapor/esmagamento). Logo, além de dar destinação adequada a um resíduo, tal processo aproveita nutrientes e corantes naturais, importantes para agregar valor a vários alimentos

The beneficial effect of this technique has been related to their effects on the induction of physiological responses in protection against oxidative stress and development of pathogens. Enzymes are catalysts of the reactions occurring in biological systems. However, although the mechanisms by which post-harvest treatments induce this type of response are known in the plant organs are not clearly elucidated the mechanisms induced by postharvest heat shock that may affect the antioxidant status of treated fruits. The objective of this study was to evaluate the effect of heat shock on postharvest cherry tomatoes conservation, mediated biochemical and physicochemical answers related to antioxidant enzyme activity, respiratory activity, phenolic compounds, ascorbic, soluble solids acid, titratable acidity , percentage of weight, firmness, skin color and degradation of the fruit. The cherry tomatoes were subjected to heat shock treatments immersed in hot water at 45 ± 2 ° C at times 0, 5, 10, 15, 20 and 25 minutes. After treatments, fruits were divided into two groups. The first group was stored at 20 ± 2 ° C and at intervals of 1, 3, 6, 9 and 12 days, samples were taken and subjected to color analysis, firmness, weight loss, total phenolics, total flavonoids acid ascorbic acid and total soluble solids. The second group was submitted to respiratory activity assessments, ethylene production and enzymatic activity of superoxide dismutase, catalase and ascorbate peroxidase, at time intervals of 0, 2, 6, 24 and 48 hours of storage at 20 ± 2 ° C. According to the results, the fruits treated with heat shock suffered greater respiratory stress from the sixth day of storage. There was no significant difference between treatments for firmness, maintaining the rigidity of the fruit even after 12 days, and all treatments exhibited fruits with greater weight loss compared to the control. A ação benéfica dessa técnica tem sido relacionada com seus efeitos na indução de respostas fisiológicas de defesa contra estresses oxidativos e desenvolvimento de patógenos. As enzimas são os catalisadores das reações que ocorrem nos sistemas biológicos. Entretanto, embora sejam conhecidos os mecanismos pelos quais os tratamentos pós-colheita induzem este tipo de resposta nos órgãos vegetais, ainda não estão claramente elucidados os mecanismos induzidos pelo choque térmico pós-colheita que possam afetar o status antioxidante de frutos tratados. O objetivo deste trabalho foi avaliar o efeito do choque térmico na conservação pós-colheita de tomates-cereja, mediada por respostas bioquímicas e físico-químicas relacionadas à atividade enzimática antioxidante, atividade respiratória, compostos fenólicos, ácido ascórbico, sólidos solúveis, acidez total titulável, porcentagem de massa fresca, firmeza, cor da casca e degradação dos frutos. Os tomates-cereja foram submetidos aos tratamentos de choque térmico com imersão em água quente a 45 ± 2 ºC nos tempos de 0, 5, 10, 15, 20 e 25 minutos. Após os tratamentos, os frutos foram divididos em dois grupos. O primeiro grupo foi armazenado a 20 ± 2 ºC e, em intervalos de 1, 3, 6, 9 e 12 dias, amostras foram retiradas e submetidas a análises de cor, firmeza, perda de massa, compostos fenólicos totais, flavonoides totais, ácido ascórbico e sólidos solúveis totais. O segundo grupo foi submetido às avaliações de atividade respiratória, produção de etileno e atividade enzimática de superóxido dismutase, catalase e ascorbato peroxidase, nos intervalos de tempo de 0, 2, 6, 24 e 48 horas de armazenamento à 20 ± 2 ºC. De acordo com os resultados, os frutos tratados com o choque térmico sofreram maior estresse respiratório a partir do sexto dia de armazenamento. Não houve diferença significativa entre os tratamentos para a firmeza, permanecendo a rigidez do fruto mesmo após 12º dias, e todos os tratamentos exibiram frutos com maior perda de massa, quando comparado ao controle. A aplicação dos tratamentos térmicos não alterou o teor de sólidos solúveis totais até o 6º dia, os tempos de exposição ao calor de 15 e 20 min tiveram maior efeito nos conteúdos de compostos fenólicos ao longo do armazenamento. Os frutos expostos ao calor expressaram conteúdos de flavonoides mais elevados do que o controle e não mostraram recuperação ou aumento na concentração de ácido ascórbico dos tomates-cereja em resposta aos tratamentos de choque térmico que pudessem indicar efeito supressor ao estresse. Com isso, apesar de possuir a capacidade de prolongar a vida útil do tomate-cereja, reduzindo a perda do fruto após o armazenamento, não se mostrou favorável para a sua utilização de forma a reduzir gastos para prolongar seu tempo de prateleira

The objective of this study was to evaluate the balance and efficiency of use of N, P and K, the effect on the chemical properties of soil and biometric variables of crops in grain production systems in western Parana region, encompassing different fertilization and probate cultures. The experiment was designed in randomized blocks with the treatments arrangement in divided plots with 4 repetitions. In the plots were installed the winter successions (5), wheat, oats, sunn hemp, corn second crop + brachiaria and corn 2nd harvest and the subplots fertilizers (3) organic, organomineral and mineral. The summer crop was planted to soybeans. The test was conducted for three seasons, starting with the planting of soybeans in 2013. Soil samples were collected after the 3rd growing at 0-10 and 10-20 cm. In the first crop, the use of organic fertilizer promoted increase in grain yield, mass of thousand grains, at the height of soybean plants, the bedding, the number of pods per plant, increased the leaf content and export of N by grain soybeans. In the third crop, there were no differences between the fertilizer and succession to black oat and sun hemp provided higher-yielding soybeans. The oat presented the highest dry matter yield, higher concentration of P in the shoot and greater extraction of N, P and K. Corn consortium + brachiaria reduced the yield of maize grain compared to monocrop. The application of poultry litter and the use of oat or crotalária as cover crops in winter, provide increased grain yield for the soybean crop. Using the same dose of P and K there is no difference in the yield of soybeans, corn and wheat between mineral fertilizers and organomineral. A use of poultry litter promotes increase of soil P and K soil, but does not increase the levels organic matter. P and K use efficiency is higher in soy succession - 2 nd harvest corn. The efficiency of use of N, P and K is lower in the fertilizer with organic fertilizer. There is no difference in the use efficiency of P and K between organomineral and mineral fertilizers, as for N, the mineral fertilizer has higher efficiency. ON was the nutrient with the most negative balance in the soil and the use of cover crops (black oats and crotalaria) increases the N balance in the soil. OP showed balance in the soil near zero being lower in succession with wheat and oats. The K balance in the soil was negative and was not different between the tested grain and fertilizer production systems No Brasil é possível o cultivo de duas ou mais safras de grãos por ano, porém há evidências de que o cultivo em sistema plantio direto apenas com culturas comerciais tem resultado na degradação do solo. O objetivo deste trabalho foi avaliar o balanço e eficiência de utilização de N, P e K, o efeito sobre as propriedades químicas do solo e variáveis biométricas das culturas em sistemas de produção de grãos na região oeste do Paraná, englobando diferentes adubações e sucessões de culturas. O experimento foi delineado em blocos ao acaso com arranjo dos tratamentos em parcelas divididas, com quatro repetições. Nas parcelas foram instaladas as sucessões de inverno (5), trigo, aveia preta, crotalária, milho 2a safra + braquiária e milho 2a safra e nas subparcelas os fertilizantes (3), orgânico, organomineral e mineral. A safra de verão foi cultivada com soja. O ensaio foi conduzido por três safras, iniciando com a semeadura da soja em 2013. As amostras de solo foram coletadas após o 3° cultivo nas profundidades de 0-10 e 10-20 cm. No primeiro cultivo, a utilização de fertilizante orgânico promoveu incremento no rendimento de grãos, na massa de mil grãos, na altura de plantas de soja, no acamamento, no número de vagens por planta, incrementou o teor foliar e exportação de N pelos grãos de soja. No terceiro cultivo, não houve diferenças entre os fertilizantes e as sucessões com aveia preta e crotalária proporcionaram maior rendimento de grãos de soja. A aveia preta apresentou a maior produção de massa seca, maior concentração de P na parte aérea e maior extração de N, P e K. O consórcio de milho + braquiária reduziu o rendimento de grãos de milho quando comparado ao cultivo solteiro. A aplicação de cama de frango e a utilização de aveia preta ou crotalária como planta de cobertura no inverno, proporcionam maior rendimento de grãos para a cultura da soja. Utilizando a mesma dose de P e K não há diferenças no rendimento de grãos de soja, milho e trigo entre os fertilizantes mineral e organomineral. A utilização de cama de frango promove incremento dos teores de P e K do solo, porém não incrementa os teores de matéria orgânica. A eficiência de uso de P e K é superior na sucessão soja - milho 2ª safra. A eficiência de uso de N, P e K é inferior na adubação com fertilizante orgânico. Não há diferença na eficiência de uso de P e K entre os fertilizantes organomineral e mineral, já para o N, o fertilizante mineral apresenta eficiência superior. O N foi o nutriente com o balanço no solo mais negativo e a utilização de plantas de cobertura (aveia preta e crotalária) incrementa o balanço de N no solo. O P apresentou balanço no solo próximo a zero sendo menor nas sucessões com trigo e aveia preta. O balanço de K no solo foi negativo e não foi diferente entre os sistemas de produção de grãos e fertilizantes testados

The blackberry is an excellent source of natural antioxidants, such as anthocyanins and polyphenols. It is a non-climacteric fruit and, due to their physical fragility and high rates of respiration and perspiration, its fruits are highly perishable, this fator becomes limiting your marketing fresh. The objective of this work was to evaluate the bioactive characteristics, physiological and biochemical characteristics of blackberry cultivars during maturation and storage in different packaging. Therefore, three experiments were conducted. The first consisted of evaluating the content of phenolic compounds, flavonoids and anthocyanins, antioxidant capacity and chemical characteristics of aqueous and etanol extracts of the fruits of blackberry cultivars Brazos, Tupy, Arapaho, Choctaw and Guarani. The results showed that 80% ethanol was more efficient in extracting anthocyanins in all cultivars and total flavonoid content was higher in 'Guarani'. The efficiency of sequestration of TEAC and DPPH radical was dependent on the solvent used in the extraction, with higher antioxidant capacity in aqueous and TEAC highest antioxidant capacity in DPPH etanol extracts. Regardless of the extraction solvent, 'Arapaho' had the highest antioxidant capacity. The second experiment evaluated the same parameters of experiment 1, but only in the ethanol extract of the fruit of 'Brazos' and 'Tupy' on maturation of immature, intermediate and mature. 'Brazos' and 'Tupy' showed total phenolic content higher in the immature stage. Antioxidant activity by ABTS method was higher in ripe fruits. The DPPH antioxidant activity was higher in 'Brazos' when immature, 'Tupy' showed similar values to the ABTS assay. Increases in the content of ascorbic acid as the fruit ripening of 'Brazos' and 'Tupy'. In the third experiment also evaluated the same parameters of other experiments, only in etanol solvent, together with the enzymatic activity of fruits of blackberry 'Tupy' , packaged in polyethylene terephthalate and polyvinyl chloride film, and stored for 1 , 4 and 8 days in a refrigerated environment. The weight loss was lower in fruits stored in PET packaging. There were some increases in the content of ascorbic acid in fruits from the 1st to the 4th day in both packages. The DPPH and ABTS antioxidant activity of fruit wrapped in PET was superior to fruits with PVC. Phenolic compounds increased with storage in both packaging used, with the highest levels found in fruits stored in PVC at the end of storage. The anthocyanin contentes were also higher on the 8th day of storage, especially in fruits kept in the PET packaging. At the end of the 8 days of storage the peroxidase activity was higher in fruits stored in PVC, and the activity of phenylalanine ammonia - lyase was higher in fruits packed in PET for all storage periods A amora-preta (Rubus spp.) apresenta alta qualidade nutricional, é rica em vitamina C, carboidratos, minerais, vitaminas do complexo B e A, além de ser fonte de compostos funcionais. A amora-preta é excelente fonte de antioxidantes naturais, como antocianinas e polifenóis. É um fruto não climatérico e, devido à sua fragilidade física e altas taxas de respiração e transpiração, seus frutos são extremamente perecíveis, fator este que torna limitante a sua comercialização in natura. Assim, o objetivo deste trabalho foi avaliar as características bioativas, respostas fisiológicas e bioquímicas de cultivares de amora-preta durante a maturação e armazenamento em diferentes embalagens. Para tanto, três experimentos foram conduzidos. O primeiro constou da avaliação dos conteúdos de compostos fenólicos, flavonoides e antocianinas totais, da capacidade antioxidante e das características químicas dos extratos aquoso e etanólico dos frutos das cultivares de amora-preta Brazos, Tupy, Arapaho, Choctaw e Guarani. Os resultados mostraram que etanol 80% foi mais eficiente na extração de antocianinas totais para todas as cultivares e o conteúdo de flavonoides totais foi superior em Guarani . A eficiência de sequestro dos radicais TEAC e DPPH foi dependente do solvente utilizado na extração, com maior capacidade antioxidante TEAC nos extratos aquosos e maior capacidade antioxidante DPPH nos extratos etanólicos. Independente do solvente de extração, Arapaho apresentou a maior capacidade antioxidante. No segundo experimento foram avaliados os mesmos parâmetros do experimento 1, porém apenas em extrato etanólico dos frutos de Brazos e Tupy nos estádios de maturação imaturos, intermediários e maduros. Brazos e Tupy apresentaram conteúdos de compostos fenólicos totais mais elevados no estádio imaturo. A atividade antioxidante avaliada pelo método ABTS foi maior em frutos maduros. A atividade antioxidante DPPH foi maior em Brazos quando imaturos, Tupy apresentou valores similares ao ensaio ABTS. Ocorreram aumentos no conteúdo de ácido ascórbico conforme a maturação dos frutos de Brazos e Tupy . No terceiro experimento também foram avaliados os mesmos parâmetros dos demais experimentos, apenas em solvente etanólico, juntamente com a atividade enzimática de frutos de amora-preta Tupy , embalados em embalagens de politereftalato de etileno e filme de policloreto de vinila e armazenados por 1, 4 e 8 dias em ambiente refrigerado. A perda de massa fresca foi menor em frutos armazenados em embalagem PET. Foram verificados acréscimos no conteúdo de ácido ascórbico nos frutos entre o 1° ao 4° dia em ambas as embalagens. A atividade antioxidante DPPH e ABTS dos frutos embalados com PET foi superior aos frutos com PVC. Compostos fenólicos aumentaram significativamente com o armazenamento em ambas as embalagens utilizadas, sendo os maiores teores encontrados para frutos mantidos em PVC ao final do armazenamento. Os teores de antocianinas também foram superiores no 8° dia do armazenamento, principalmente em frutos mantidos em embalagem do tipo PET. Ao final dos 8 dias de armazenamento a atividade de peroxidase foi maior para frutos mantidos em PVC, e a atividade de fenilalanina amônia-liase apresentou-se maior nos frutos embalados em PET para todos os períodos de armazenamento.

The storage conditions of the passion fruit establish determining factor for its conservation. The refrigeration and modified atmosphere have been widely used in fruits, and the yellow passion fruit appears very promising in the use of these techniques, due to high instability of its physical and physiological characteristics post harvest. Therefore, this study was conducted with the objective of to evaluate the biochemical, physicochemical and microbiological of the passion fruit during its storage in modified atmosphere and at different temperatures. The work was divided into two experiments: The first consisted of the evaluation of the effect of storage temperature, where the fruits were stored at 5 º and 24 ºC. And in the second experiment evaluated the effect of modified atmosphere during the storage of the fruits at 5 °C. In both experiments the evaluations occurred at intervals of 10 days for 40 days, being evaluated the antioxidant activity DPPH and TEAC, the content of total phenolic compounds, ß-carotene and ascorbic acid, and physical and microbiological quality of the fruits. In the second experiment were included assessments of total titratable acidity, total soluble solids and enzymatic activity for polyphenol oxidase and peroxidase. In both experiments, it was utilized a completely randomized delineation, with five repetitions. The results showed that the total phenolic compounds, β-carotene and antioxidant activity of passion fruit juice were not affected by storage temperature and the content of total phenolic compounds of the juice increased with storage time. The effects of high temperature during storage were more evident in the appearance of the fruit than at the nutritional quality of the juice. The antioxidant activity of the juice, expressed in kidnapping DPPH radical, decreased during the storage, independent of temperature. Under the conditions of storage at 5 ° C and normal atmosphere, the shelf-life of passion fruit was higher and lasted up to 20 days in good conditions of marketing. The use of modified atmosphere was not able to reduce the losses of antioxidant activity of passion fruit juice during its storage. Total phenolics compounds and ascorbic acid were not affected by the use of modified atmosphere. Up to 30 days of storage there was suppressive effect of the activity of pathogens similarly in the two atmospheres of storage, suggesting that this effect was more related to low temperature. At 40 days of storage the modified atmosphere was more effective in inhibiting the activity of pathogens. The modified atmosphere was effective in reducing fresh mass loss and wrinkling of the rind, evidencing the high sensitivity of the fruit changes involving the loss of water and the importance of the use of modified atmosphere in maintaining their physical quality. Total soluble solids and total titratable acidity decreased during the storage and the modified atmosphere did not affect these results. The use of modified atmosphere during the storage at 5° C provided great conditions for marketing the yellow passion fruit up to 20 days. This study revealed the existence of activities of the polyphenoloxidase and peroxidase enzymes in the yellow passion fruit rind, but they were not identified in the fruit juice O maracujá-amarelo é um fruto climatérico e na fase pós-colheita sofre importantes transformações fisiológicas decorrentes do próprio metabolismo de maturação e de outros estresses oxidativos. As condições de armazenamento do maracujá estabelecem fator determinante para sua conservação. A refrigeração e a atmosfera modificada têm sido largamente utilizadas em frutos, e o maracujá-amarelo se apresenta muito promissor no uso dessas técnicas, devido à elevada instabilidade de suas características físicas e fisiológicas pós-colheita. Assim, este estudo foi realizado com o objetivo de avaliar as respostas bioquímicas, físico-químicas e microbiológicas do maracujá-amarelo durante o seu armazenamento em atmosfera modificada e em diferentes temperaturas. No segundo experimento foram incluídas as avaliações de acidez total titulável, sólidos solúveis totais e a atividade enzimática para polifenoloxidase e peroxidase. Em ambos os experimentos, foi utilizado o delineamento inteiramente casualizado, com cinco repetições. Os resultados mostraram que os compostos fenólicos totais, β-caroteno e atividade antioxidante do suco do maracujá-amarelo não foram influenciados pela temperatura de armazenagem e o conteúdo de compostos fenólicos totais do suco aumentou com o tempo de armazenagem. Os efeitos da elevada temperatura durante o armazenamento foram muito mais evidentes na aparência do fruto do que na qualidade nutricional do suco. A atividade antioxidante do suco, expressa em sequestro do radical DPPH, diminuiu durante o armazenamento, independente da temperatura. Nas condições do armazenamento a 5 ºC e em atmosfera normal, a vida-de-prateleira do maracujá-amarelo foi superior e se estendeu até 20 dias em boas condições de comercialização. O uso da atmosfera modificada não foi capaz de reduzir as perdas de atividade antioxidante do suco do maracujá-amarelo, durante o seu armazenamento. Compostos fenólicos totais e ácido ascórbico também não foram influenciados pelo uso da atmosfera modificada. Até 30 dias de armazenamento houve efeito supressor da atividade de patógenos similarmente nas duas atmosferas de armazenagem, sugerindo que este efeito esteve mais relacionado à baixa temperatura. Aos 40 dias de armazenamento a atmosfera modificada foi mais eficiente em inibir a atividade de patógenos. A atmosfera modificada foi eficaz na redução da perda de massa fresca e do enrugamento da casca, ficando evidente a alta sensibilidade dos frutos à alterações envolvendo a perda de água e a importância do uso da atmosfera modificada na manutenção da sua qualidade física. Sólidos solúveis totais e acidez total titulável diminuíram durante o armazenamento e a atmosfera modificada não influenciou estes resultados. O uso da atmosfera modificada durante o armazenamento a 5 ºC proporcionou condições ótimas para comercialização do maracujá-amarelo até 20 dias. The use of fungicides has been the primary method for reducing post-harvest diseases. Accordingly, alternative methods free of chemicals must be used in post-harvest to maintain the quality and prolong the life reduce the incidence of fungi. Therefore, this study aimed to evaluate the effect of heat treatment and post-harvest salicylic acid in the response of strawberry-related activities of the enzymes polyphenol oxidase and peroxidase, the contents of total phenols, anthocyanins and ascorbic acid and the incidence of pathogens during storage of fruits. This study was divided into two experiments. In the first experiment, Dover strawberries were treated thermally in an oven at 45°C for 3 hours and stored at 5°C for 1, 7 and 14 days and analyzed. After these periods, the fruit were removed and transferred to the cooling environment at 20°C for 2 days to be analyzed again. We used a completely randomized in factorial scheme (2x6), with 12 treatments and four replicates of 10 berries per tray. In the second experiment, strawberries Dover were heat treated in an oven with forced air at 45°C for 3 hours and after immersed in a solution of salicylic acid 2.0 mM L-1 for 5 minutes; then they were stored under refrigeration (5°C) and after 1,7 and 14 days and transferred to a room at 20°C for 2 days and the be analyzed. The design was completely randomized in factorial scheme (4x3), with 12 treatments and four replications. Were evaluated the activity of polyphenoloxidase, peroxidase, phenylalanine ammonia-lyase, the incidence of fungi, total phenols, anthocyanins, ascorbic acid, pH, titratable acidity, soluble solid and weight loss. It was found that the metabolism postharvest Dover cv. strawberry has been modified by application of heat treatment, because the results showed that the activity of polyphenoloxidase, peroxidase and phenylalanine ammonia-lyase and ascorbic acid, total phenols and anthocyanins, and the incidence of fungi were lower in heat-treated strawberries. The heat treatment resulted in higher acidity, higher soluble solids and lower mass loss. The heat treatment is not provided, according to the incidence of fungi and weight loss, increased shelf life of strawberries, being limited to seven days of storage. However, the addition of salicylic acid to heat treatment was less effective than other treatments for most variables, indicating that it is disadvantageous. However, heat shock alone was more effective in reducing the activity of peroxidase, polyphenoloxidase showed lower activity compared to the control at 7 +2 days and did not differ from other treatments at 14 +2 days, was effective in maintaining high levels phenolic compounds, anthocyanins and ascorbic acid up to 7 +2 days O morango é um fruto que apresenta alta perecibilidade e, são bastante suscetíveis a danos físicos e ataque de fungos. O uso de fungicidas químicos tem sido o principal método para reduzir as doenças pós-colheita. Nesse sentido, métodos alternativos livres de produtos químicos devem ser utilizados em pós-colheita para manter a qualidade, prolongar a vida útil e diminuir a incidência de fungos. Assim, o presente trabalho teve por objetivo avaliar o efeito do tratamento térmico pós-colheita e do ácido salicílico na resposta do morango relacionada à atividade das enzimas polifenoloxidase e peroxidase, aos conteúdos de fenóis totais, antocianinas e ácido ascórbico e à incidência de patógenos durante o armazenamento dos frutos. Este estudo foi dividido em dois experimentos. No primeiro experimento, morangos cultivar Dover, foram tratados termicamente em estufa a 45°C por 3 horas e armazenados a 5 ºC por 1, 7 e 14 dias e analisados. Após esses períodos, os frutos foram retirados da refrigeração e transferidos para ambiente a 20 ºC por 2 dias para serem analisados novamente. Foi utilizado o delineamento inteiramente casualizado, em esquema fatorial (2x6), com 12 tratamentos e quatro repetições com 10 morangos por bandeja. No segundo experimento, morangos cultivar Dover foram tratados termicamente em estufa com circulação forçada de ar com 45°C por 3 horas e depois imergidos em solução de ácido salicílico 2,0 mMol L-1 por 5 minutos, depois foram armazenados sob refrigeração (5°C) e após 1, 7 e 14 dias foram transferidos para ambiente a 20 ºC por 2 dias para então serem analisados. O delineamento foi inteiramente casualizado, em esquema fatorial (4x3), com 12 tratamentos e quatro repetições. Foram avaliados a atividade de polifenoloxidase, peroxidase, fenilalanina amônia-liase, incidência de fungos, fenóis totais, antocianinas, ácido ascórbico, pH, acidez titulável, sólidos solúveis e perda de massa. Foi constatado que, o metabolismo pós-colheita de morangos cv. Dover foi modificado pela aplicação de tratamento térmico, pois os resultados mostraram que a atividade de polifenoloxidase, peroxidase e fenilalanina amônia-liase e os teores de ácido ascórbico, fenóis totais e antocianinas e a incidência de fungos foram inferiores em morangos tratados termicamente. O tratamento térmico resultou em maior acidez titulável, maior teor de sólidos solúveis e menor perda de massa. O tratamento térmico não proporcionou, segundo a incidência de fungos e a perda de massa, aumento da vida útil dos morangos, ficando limitado aos sete dias de armazenamento refrigerado. Entretanto, a adição de ácido salicílico ao tratamento térmico, se mostrou menos efetivo que os demais tratamentos para a maioria das variáveis analisadas, indicando ser desvantajoso. Porém, o choque térmico isolado mostrou-se mais efetivo em reduzir a atividade de peroxidase, apresentou atividade inferior de polifenoloxidase comparado ao controle aos 7+2 dias e não diferiu dos demais tratamentos aos 14+2 dias, se mostrou efetivo em manter níveis elevados de compostos fenólicos, antocianinas e ácido ascórbico até 7+2 dias

In the first experiment, roots and stems cuttings of Tupy blackberry were collected close to it hibernal prune and accomplished in the following times: 07/06, 22/06, 08/07, 22/07, 06/08 and 20/08 of 2009. Already in the second experiment, half of the stems and roots cuttings of Tupy blackberry were submitted to cold storage for 30 days and the other amount of cuttings were placed directly for rooting. The whole cuttings were treated with different concentrations of indolbutyric acid (IBA): 0, 1000, 2000, 3000 and 4000mg L-1 for 10 seconds. In the third experiment, roots cuttings of Choctaw , Ébano , Guarani , Arapaho , Brazos , Cherokee , Comanche , Caingangue , Tupy and Xavante blackberry cultivars. It can be concluded that the roots cuttings presents better results, owing cold storage and without IBA, but there is difference of propagation potential among blackberry cultivars. In the second chapter, the objective of the present work was to quantify the production of cultivars of black and redberry trees in the West region of Paraná. The experimental design was in randomized blocks with four blocks and twelve treatments (cultivars of blackberry trees Arapaho , Xavante , Ébano , Comanche , Caingangue , Choctaw , Tupy , Guarani , Brazos , Cherokee and the redberry tree). Brazos presented the highest yield estimated. The Brazos, Guarani and Tupy cultivars enabled the production of higher mass fruits, that is, Tupy presented good balance between the soluble solids and acidity. The red currant tree presented a high fruit yield. In the third chapter, the objective of this study was to quantify the production of raspberry cultivars in western Paraná. The study was conducted in the Marechal Cândido Rondon, PR. The experimental design was randomized blocks with four blocks and seven treatments (red raspberry cultivars Heritage , Autumn Bliss , Batum , Polana , the yellow raspberry Fall Gold , the black raspberry and hybrid between raspberry and blackberry Boysenberry ). The raspberry Rubus idaeus not adapted to the climatic conditions of West Paraná. On the other hand, the black raspberry is demonstrated excellent option for cultivation with high productivity and quality of its fruit. In the fourth chapter, the objective of this research was to evaluate the pruning time effects at season production of Tupy blackberry. The experimental design was randomized blocks with four blocks and six treatments (pruning time by fifteen days during the winter pruning). Pruning made in early July are the most suitable and late pruning can harm the productive performance of blackberry Tupy in western Paraná. In the fifth chapter, the objective of this study was to investigate the adoption of different pruning as an alternative for production of blackberries in the subtropics areas in Brazil. The experimental design was a randomized block with eight blocks and three treatments (conventional pruning, summer pruning drastic and drastic pruning in winter). The drastic pruning summer facilitates the conduct of blackberry, providing an alternative for the production of blackberries in the subtropics areas No primeiro capítulo, o objetivo do trabalho foi avaliar o enraizamento de estacas caulinares e radiculares de cultivares de amoreira-preta, coletadas em diferentes épocas, armazenadas a frio e tratadas com AIB. No primeiro experimento, estacas radiculares e caulinares da amoreira-preta Tupy foram coletadas no momento da poda hibernal, realizada nas seguintes épocas: 07/06, 22/06, 08/07, 22/07, 06/08 e 20/08 de 2009. Já no segundo experimento, metade das estacas caulinares e radiculares da mesma cultivar foi armazenada a frio por 30 dias e a outra metade das estacas foi colocada diretamente para enraizar. Todas as estacas foram tratadas com diferentes concentrações de ácido indolbutírico (AIB): 0, 1000, 2000, 3000 e 4000mg L-1 por 10 seg. No terceiro experimento, foram coletadas estacas radiculares das cultivares Choctaw , Ébano , Guarani , Arapaho , Brazos , Cherokee , Comanche , Caingangue , Tupy e Xavante na poda realizada no dia 22 de junho do ano seguinte. As estacas foram armazenadas a frio por 30 dias e não foi realizado tratamento com AIB. Pode-se concluir que as estacas radiculares apresentam melhores resultados, devendo ser armazenadas a frio e não tratadas com AIB, mas há diferença do potencial propagativo entre os cultivares de amoreira-preta. No segundo capítulo, o objetivo do presente trabalho foi quantificar a produção de cultivares de amoreiras-pretas e vermelha na região Oeste do Paraná. O trabalho foi realizado no município de Marechal Cândido Rondon, PR. O delineamento experimental foi em blocos ao acaso, com quatro blocos e onze tratamentos (cultivares de amoreiras-pretas Arapaho , Xavante , Ébano , Comanche , Caingangue , Choctaw , Tupy , Guarani , Brazos , Cherokee e a amoreira-vermelha). Brazos apresentou a maior produtividade estimada. As cultivares Brazos, Guarani e Tupy possibilitaram a produção de frutos de maior massa, sendo que a Tupy apresentou bom equilíbrio entre os sólidos solúveis e acidez. A amoreira-vermelha apresentou elevada produção de frutos. No terceiro capítulo, o objetivo do presente trabalho foi quantificar a produção de cultivares de framboeseiras na região Oeste do Paraná. O delineamento experimental foi em blocos ao acaso, com quatro blocos e sete tratamentos (cultivares de framboeseiras vermelhas Heritage , Autumn Bliss , Batum , Polana , da framboeseira amarela Fall Gold , da framboeseira negra e do híbrido entre amora e framboesa Boysenberry ). As framboeseiras Rubus idaeus não se adaptaram as condições climáticas do Oeste paranaense. Por outro lado, a framboesa negra se demonstrou uma excelente opção de cultivo, com alta produtividade e qualidade de seus frutos. No quarto capítulo, o objetivo deste trabalho foi avaliar a influência da época de poda na produção da amoreira-preta Tupy . O delineamento experimental foi em blocos ao acaso, com quatro blocos e seis tratamentos (podas quinzenais realizadas durante o inverno). Podas efetuadas no início de julho são as mais indicadas e podas tardias podem prejudicar o desempenho produtivo das amoreiras pretas Tupy no oeste do Paraná. No quinto capítulo, o objetivo do trabalho foi verificar a adoção de podas diferenciadas como alternativa para a produção da amora-preta em regiões subtropicais. The application of calcium and plant growth regulators in post-harvest may help to reduce a number of physiological disorders on fruits. In this work were verified the influence of the application in post-harvest of the five treatments: control, without heat shock; only heat shock; heat shock + Ca 2 %; heat shock + GA3 100 mg L-1; and heat shock + Ca 2 % + GA3 100 mg L-1, associated with hydrothermal treatment (45 °C) for 12 min of immersion in the response of tomato to the "chilling" and check the physical and chemical composition, the bioactive compounds and enzyme activity of the fruit. The fruits were stored at 5 °C and relative humidity of 80 % for a period of ten days. The evaluations were made ten days after removal of the fruits of the cooling conditions. The design was completely randomized with five treatments and five repetitions, each repetition being characterized by a fruit. Was applied to the ANOVA results, and when the parameter was significant, the averages were compared by Tukey test, at 5 % probability. The use of heat shock treatment was effective in reducing pathogens in tomato fruits after cold storage. Treatment with heat shock + Ca 2 % + GA3 100 mg L-1 was the best among the rest, because it provided a higher concentration of ascorbic acid, as well as β-carotene and total phenols in the fruits treated and caused a reduction in the incidence of pathogens. The use of GA3 showed better results compared to Ca, when combined with heat shock, the fruits response to the effects of cold storage, requiring further investigation in this direction O tomate (Lycopersicon esculentum Mill) está sujeito a danos causados pelo frio ( chilling ) durante o armazenamento refrigerado. A aplicação, em pós-colheita, de cálcio e reguladores vegetais, bem como do uso de tratamento hidrotérmico, pode contribuir para reduzir vários tipos de desordens fisiológicas nos frutos. Neste trabalho, verificou-se a influência da aplicação, pós-colheita, de cinco tratamentos, sendo eles: controle, sem choque térmico; apenas choque térmico; choque térmico + Ca 2 %; choque térmico + GA3 100 mg L-1; e choque térmico + Ca 2 % + GA3 100 mg L-1, associada ao tratamento hidrotérmico (45 ºC) por 12 min de imersão, na resposta do tomate ao chilling , verificando a composição físico-química, os compostos bioativos e atividade enzimática dos frutos. Os frutos foram armazenados a 5 ºC e umidade relativa de 80 % por um período de dez dias. As avaliações foram efetuadas dez dias após a retirada dos frutos das condições de refrigeração. O delineamento utilizado foi inteiramente casualizado, com cinco tratamentos e cinco repetições, sendo cada repetição caracterizada por um fruto. Aos resultados aplicou-se ANOVA, e quando o parâmetro foi significativo, suas médias foram comparadas pelo Teste de Tukey, ao nível de 5 % de probabilidade. O uso do tratamento com choque térmico foi eficiente na redução de patógenos nos frutos de tomate após o armazenamento com frio. O tratamento com choque térmico + Ca 2 % + GA3 100 mg L-1 foi o melhor entre os demais, pois proporcionou maior concentração de ácido ascórbico, bem como de β-caroteno e fenóis totais nos frutos tratados e proporcionou redução da incidência de patógenos. O uso do GA3 apresentou melhores resultados comparado ao Ca, quando combinados ao choque térmico, na resposta dos frutos aos efeitos do frio durante a armazenagem, necessitando de maiores investigações neste sentido

The application of plant extracts in order to induce resistance mechanisms is an interesting alternative to chemical control, however, besides the presence of inducers, can occur the presence of suppressors. This study aimed to partially purificate through gel filtration chromatography (GFC) and precipitation with ammonium sulfate (SA), compounds present in decoct of Adiantum capillus-veneris, capable to induce defense mechanisms in sorghum mesocotyls, including phytoalexins and peroxidase, polyphenoloxidase (PPO), phenylalanine ammonia-lyase (PAL) and chitinase. The decoct 1% was fractionated with concentrations of ammonium sulfate, 0-20%, 20-40%, 40-60%, 60-80% and 80-100% of SA and those fractions were subjected to GFC. We obtained nine protein peaks and one glucosic peak for decoct with molecular weights ranging from 0.61 to 0.01 KDa; to fraction 0-20% were obtained two protein and two glucosic peaks, with molecular weights lower than 0.01 KDa, and concentration of sugars ranging from 4.1 to 17.5 mg mL-1; to fraction 20-40% were obtained three protein peaks (0.98 to 111.5 KDa) and five glucosic peaks (11.3 to 73.7 mg mL-1); to fraction 40-60% were obtained two protein peaks (0.09 to 111.5 KDa) and two glucosic peaks (5.6 to 7.5 mg mL-1); to fraction 60-80% were obtained six protein peaks (lower than 0.02 KDa) and two glucosic peaks (16.5 to 51.3 mg mL-1); and to fraction 80-100% were obtained three protein peaks (lower than 0.09 KDa). Sorghum mesocotyl were treated with fractions from the GFC, and decoct, acibenzolar-S-methyl (ASM) (125 mg L-1 of a. i. as elicitor of reference) and sodium phosphate buffer 10 mM pH 6.0. After incubation of 96 h were measured the levels of phytoalexins in mesocotyls and the activity of defense-related enzymes in leaves. Treatment with peak II (0,09 KDa) induced phytoalexin 6.68% more than. Among the fractionn, 60-80% increased 76% compared to ASM. To peroxidase the peak IV (lower than 0,01 KDa) increased 21% the activity compared to control water, and 44% compared to ASM. For the fraction 0-20% the protein peak II (lower than 0,01 KDa) increased 39% the activity in relation to the fraction 0-20% and 19% in relation to decoct. The fraction, 80-100% increased 89% compared to, ASM. For the PPO the peak VI (lower than 0,01 KDa) from decoct decreased 88% the activity compared to ASM. For PAL the peak II (lower than 0,01 KDa) from fraction 0-20% was 91% higher than decoct. For chitinase 1% peak IV (lower than 0,01 KDa) from decoct was 68% higher than the ASM. It was possible to induce defense mechanisms in sorghum by the application of partially purified fractions from A. capillus-veneris, which can allow to obtain new molecules and development alternative methods to control plant diseases A indução de resistência envolve a ativação de mecanismos de defesa latentes existentes nas plantas em resposta ao tratamento com agentes bióticos ou abióticos. A aplicação de extratos vegetais visando à indução de mecanismos de resistência é uma alternativa interessante ao controle químico, entretanto, nestes extratos pode ocorrer além da presença de indutores, a presença de supressores. Este trabalho teve por objetivo a purificação parcial, por meio de cromatografia de filtração em gel (CFG) e precipitação com sulfato de amônio (SA), de compostos presentes em decocto de avenca (Adiantum capillus-veneris), eficientes na indução de mecanismos de defesa em mesocótilos de sorgo, incluindo as fitoalexina deoxiantocianidinas e as proteínas peroxidase, polifenoloxidase, fenilalanina amônia-liase e quitinase, buscando selecionar frações potencialmente eficientes na indução de resistência em plantas. Decocto (EA 1%) de A. capillus-veneris foi fracionado com concentrações de sulfato de amônio de 0-20%, 20-40%, 40-60%, 60-80% e 80-100% e esses cortes foram submetidos à cromatografia de filtração em gel (CFG). Foram obtidos nove picos protéicos e um pico glicídico para EA 1% com massas moleculares variando de 0,61 à 0,01 KDa; no corte 0-20% foram obtidos dois picos protéicos e dois glicídicos, com massas moleculares menores que 0,01 KDa, e concentração de açúcares redutores variando de 4,1 a 17,5 µg mL-1; no corte 20-40% três picos protéicos (111,5 à 0,98 KDa) e cinco glicídicos (11,3 a 73,7 µg mL-1 de açúcares); no corte 40-60% dois picos protéicos (111,5 à 0,09 KDa) e dois glicídicos (5,6 a 7,5 µg mL-1); no corte 60-80% seis picos protéicos (menor que 0,02 KDa) e dois glicídicos (16,5 a 51,3 µg mL-1); e no corte 80-100% três picos protéicos (menor que 0,09 KDa). Mesocótilos de sorgo foram tratados com as frações provenientes da CFG, além do decocto a 1%, acibenzolar-S-metil (ASM) (125 mg. L-1 do i.a. como elicitor de referência) e tampão fosfato de sódio 10 mM pH 6,0, totalizando 42 tratamentos. Após incubação por um período de 96 h, avaliou-se dos teores de fitoalexinas nos mesocótilos e análises bioquímicas dos folíolos. O tratamento pico II (0,09 KDa) do EA 1% mostrou-se eficiente na indução de fitoalexinas, sendo superior em 6,68% ao ASM. Entre os cortes, 60-80% permitiu incremento de 76% em relação ao ASM. Para peroxidase o pico IV (menor que 0,01 KDa) do EA 1% incrementou 21% a atividade em relação a testemunha água e 44% ao ASM. Para os precipitados 0-20% o pico protéico II (menor que 0,01 KDa) promoveu incremento de 39% na atividade em relação ao corte 0-20% e 19% para o EA 1%. O precipitado 80-100% foi superior 89% ao ASM. Para polifenoloxidase o pico protéico VI (menor que 0,01 KDa) do EA1% reduziu 88% a atividade em relação ao ASM. Para fenilalanina amônia-liase o pico protéico II (menor que 0,01 KDa) do corte 0-20% foi 91% superior ao EA 1%. Para quitinase o pico protéico IV (menor que 0,01 KDa) do EA 1% foi 68% superior ao ASM. Different rootstocks have been available in the western region of Parana State in the formation of vines, but are few scientific reports on the behavior of different rootstocks on the physical and chemical characteristics of the grapes when used under the Bordô vine. Therefore, this study aimed to evaluate the rootstocks '420A', 'IAC 766' and 'Riparia of Traviú' in three moments of physiological ripeness of grapes on the technological characteristics of post-harvest grapes of the Bordô varieties. Considering the season 2007/2008, the experiment was conducted in vine located at Missal city, Paraná State, Brazil. The maturation stages were established based on sampling conducted through the collection of three bunches per plant in three distinct periods of fruit maturity, according to the color of the shell surface of the fruits, which were the color green to slightly arroxeado (Stage 1) , the purple (Stage 2) and purple intense (stage 3). The field experiment was conducted in a split plot in 3x3 factorial design in randomized blocks with seven repetitions, three treatments for rootstocks in the plot, and in the sub-plot three stages of maturation, where each plot was composed of five plants and and observed the three plants from the center. This study determined the following characteristics: mass of the rachis, fruits and bunch; and length, diameter and number of fruits. The experiment using four year-old plants, with spacing 3 x 2 m, was carried out between July/2007 and March/2008 in Quatro Pontes-PR (24o35 42 South latitude and 53o59 54 West longitude, altitude of 472 m and Cfa Koppen climate, with annual maximum medium temperature of 28.5oC and minimum of 16.6oC). The design utilized was randomized blocks with four replicates, and the treatments arranged in a 5 x 2 factorial scheme, taking as factors number of lopping (one, two, three or four, besides the control without lopping) and number of productive branches (plants conducted with six or twelve branches). In the lopping system, after the emission of the 16th leaf, the branch was blunted (removed the apical bud), being selected two sprouting by productive branches. New lopping was accomplished later on, always after the emission of the sixth leaf. In each plot, made up of three useful plants, data concerning the cropping cycles of 2007/08 were collected. Fig production under organic system is technically viable. The highest green fig yield (2,208 g planta-1) and dear productivity (3,681 Kg ha-1) was observed in the treatment which had plants conducted with twelve branches, with three lopping. There was a prolongation of the crop in the plants were made more lopping. Besides the increase in the production and prolongation of the crop, the lopping plants presented fruits with larger diameter and uniformity in relation to the witness. That uniformity allows to concentrate the crop and to decrease like this the use of cupric products O objetivo deste trabalho foi estudar a influencia do numero de ramos produtivos e do sistema desponte sobre o desenvolvimento e producao de figos verdes Roxo de Valinhos em cultivo organico. O experimento utilizando plantas de quatro anos de idade, com espacamento 3 x 2 m, foi conduzido de julho de 2007 a marco de 2008 em Quatro Pontes-PR (24o35 42 latitude Sul e 53o59 54 longitude Oeste, altitude de 472 m e clima Cfa Koppen, com temperatura media maxima anual de 28,5oC e minima de 16,6oC). O delineamento utilizado foi em blocos ao acaso, com quatro blocos e os tratamentos arranjados em esquema fatorial 5 x 2, tomando por fatores o numero de despontes (um, dois, tres ou quatro, alem do controle sem desponte) e numero de ramos produtivos (plantas conduzidas com seis ou doze ramos). No sistema desponte, apos a emissao da 16o folha, o ramo foi despontado (gema apical removida), selecionando-se duas brotacoes por ramo produtivo. Novos despontes foram realizados posteriormente, sempre apos a emissao da sexta folha. Em cada parcela, constituida de tres plantas uteis, foram coletados dados no ciclo de producao 2007/08. A maior producao (2.208 g planta-1) e produtividade estimada (3.681 Kg ha-1) observada de figos verdes, foram obtidas quando as plantas foram conduzidas com doze ramos produtivos, efetuando-se tres despontes. Houve um prolongamento da colheita nas plantas onde se efetuaram mais despontes. Alem do aumento na producao e prolongamento da safra, as plantas despontadas apresentaram frutos com maior diametro e uniformidade em relacao a testemunha. This waste can be used for human consumption aiming to use for other purposes. Thus, this work was aimed at: 1 - To evaluate the effect of maturity stage of the yellow passion fruit on the physical, chemical and mineral characteristics of their shell, 2 - To evaluate the effect of storage of the yellow passion fruit shell on their physico-chemical and minerals characteristics, 3 - development and evaluation of sensory acceptability of the candy syrup of the yellow passion fruit shell, with the addition of its juice. It was used to completely randomized design with four repetitions for the treatment of stages of maturation and five repetitions for the treatment of storage. Were evaluated the contents of ash, pectin, total and reducing sugar, protein, fat, dry mater and loss of weight. The evaluates minerals parameters were: calcium, copper, iron, manganese, potassium, magnesium, zinc, phosphorus. Color analysis for the treatment of shell storage was held.The acceptance analysis was based on the study of aroma, flavour, overall impression and purchase intent using structured scales and participation of 50 judges not trained. Each judge received a questionnaire containing hedônica structured scale of nine points covering answers ranging from ''1 - most disliked " at ''9 - liked very much''. In purchase intent analysis to was used structured three-point scale, with "1 - certainly not buy" and "3 - certainly buy". Throughout the study was used completely randomized design. The results were submitted to the analysis of variance and the significant effects was applied to the Tukey test and the regression analyses. The advance of maturity resulted in the reduction of the contents of protein, reducing sugar, total pectin and ash, showing that the best use of the shell, to use Phitoterapic, occurs when the fruit is a green stadium, where the pectin content is higher. The low lipids content of the shell indicates a final product of low calorie, when used as phitoterapic and when consumed in full form. There was no effect of maturation stages in the minerals content. The yellow passion fruit shell is good source of manganese, followed by iron, zinc and copper. In other nutrients, the shell this fruit has proved inadequate and low supply for a diet. As for the storage of the shell, there were effective decreases in the contents of protein, lipids, total sugar, ash and pectins during the period of storage. With the exception of copper, manganese and calcium, for other minerals was effective reductions in levels of zinc, magnesium, potassium, phosphorus and iron during storage of the fruit shell. The color analysis indicated the occurrence of browning of the shell with the advance of storage time. The storage damaged the nutritional quality and appearance of shell. As the acceptance analysis of the shell candy syrup, there was good acceptance by consumers, because more than 70% of them attributed notes above 7 in all candys. Among the treatments tested, the candy with the addition of 4% of the fruit juice was the most accepted by judges in all attributes (aroma, flavor, overall impression and purchase intent). The use of the shell of the yellow passion fruit in the development of a candy syrup is an excellent choice of value aggregation A indústria de suco de maracujá utiliza ao redor de 30% da massa total dos frutos que são processados e o restante é considerado como resíduo industrial. Estes resíduos podem ser utilizados para o consumo humano objetivando o aproveitamento para outros fins. Desta forma este trabalho teve como objetivo: 1- Avaliar o efeito do estádio de maturação do fruto do maracujá amarelo sobre as características fisico-quimicas e minerais de sua casca; 2- Avaliar o efeito do armazenamento da casca do maracujá amarelo, após a extração do seu suco, sobre as suas características físico-químicas e minerais; 3- Elaboração e avaliação sensorial de aceitabilidade do doce em calda da casca do maracujá amarelo, com a adição de seu suco. Foi utilizado o delineamento inteiramente ao acaso com 4 repetições para os tratamentos de estádios de maturação e 5 repetições para os tratamentos de armazenagem. Foram avaliados os teores de cinzas, pectina, açúcar total e redutor, proteína, gordura, matéria seca e a perda de massa. Os parâmetros minerais foram: cálcio, cobre, ferro, manganês, potássio, magnésio, zinco, fósforo. Foi realizada a analise de cor para os tratamentos de armazenamento da casca. A análise de aceitação se baseou no estudo do sabor, aroma, impressão global e intenção de compra com base em escalas estruturadas e na participação de 50 julgadores não treinados. Cada julgador recebeu um questionário contendo escala hedônica estruturada de nove pontos abrangendo respostas variando entre ''1- desgostei muitíssimo a ''9- gostei muitíssimo''. Na avaliação da intenção de compra utilizou-se escala estruturada de três pontos, sendo 1- certamente não compraria e 3- certamente compraria . Em todo o estudo se utilizou o delineamento inteiramente casualizado e aos dados foi aplicado análise de variância e aos efeitos significativos aplicou-se o teste de comparação de médias de Tukey e análises de regressão. O avanço da maturação resultou na diminuição dos conteúdos de proteína, açúcar redutor, pectina total e cinzas, mostrando que o melhor aproveitamento da casca como alimento funcional ocorre quando o fruto se encontra em estádio verde, quando o teor de pectina é maior. O baixo conteúdo de lipídeos da casca indica um produto final de baixo valor calórico, quando utilizado como alimento funcional e quando consumido na forma integral. Não houve efeito dos estádios de maturação no conteúdo dos minerais. A casca do maracujá amarelo é boa fonte de manganês, seguido de ferro, zinco e cobre. Nos demais nutrientes, a casca do maracujá se mostrou deficiente e de baixo fornecimento para uma dieta. Quanto ao armazenamento da casca, houve diminuições efetivas nos conteúdos de proteína, lipídeos, açúcar total, cinzas e pectinas durante o período de estocagem. Com exceção do cobre, do manganês e do cálcio, para os outros minerais houve diminuições efetivas nos teores de zinco, magnésio, potássio, fósforo e ferro durante o armazenamento da casca do maracujá. A análise de cor indicou a ocorrência de escurecimento da casca com o avanço do tempo de armazenagem. A estocagem da casca mostrou ser prejudicial a sua qualidade nutricional e à sua aparência. Quanto a analise de aceitação do doce em calda da casca, ficou demonstrado que independente dos tratamentos houve boa aceitação pelos provadores, pois mais de 70% deles atribuíram notas acima de 7 em todos os doces. Entre os tratamentos testados, o doce com a adição de 4% de suco do maracujá foi o mais aceito pelos provadores em todos os atributos (aroma, sabor, impressão global e intenção de compra). Organic agriculture became a market in expansion, with great perspectives for the producer. The organic coffee is a differentiated product, of bigger added value, whose market has grown and if fortified throughout the years. Although the coffee to be an old culture, studies on its physical properties are limited and dispersed. The knowledge of the physical characteristics of the products harvested in Brazil is essential for the project, construction and operation of cleanness equipment, drying, classification, storage and industrialization, as well as for the existing equipment adaptation already aiming at to the biggest income and rationalization of energy use. In such a way, this work had as objective to determine some physical properties of grains of organic and conventional coffee. Sphericity and circularity, granular specific mass, porosity and terminal speed had been determined. The work was lead in the laboratories of the UNIOESTE -Cascavel. They had been used supreme of organic and conventional coffee (Coffea arabica, L.) in the stadium coconut, gotten next to the Emater. From the gotten results, it can be concluded that the measure of the ortogonals axles did not present significant difference, when comparative the varieties and the types of treatments. Fruits of coffee in the types organic and conventional and the variety, had not presented difference in the circularity determination. The found values of apparent and real specific mass had been similar to the described ones for other authors, however, comparing the organic coffee with the conventional, it did not have difference of values. The Catuaí variety organic treatment, presented greater average value of porosity, however significant difference between organic and conventional coffee in the two analyzed varieties was not observed. The organic treatments had presented, in the determination of terminal speed, values about 9% superiors to the conventionals O café é um dos principais ítens de exportação juntamente, com o açúcar e o algodão. A agricultura orgânica tornou-se um mercado em expansão, com grandes perspectivas para o produtor. O café orgânico é um produto diferenciado, de maior valor agregado, cujo mercado tem crescido e se fortalecido ao longo dos anos. Apesar do café ser uma cultura antiga, estudos sobre suas propriedades físicas são limitados e dispersos. O conhecimento das características físicas dos produtos colhidos no Brasil é essencial para o projeto, construção e operação de equipamentos de limpeza, secagem, classificação, armazenagem e industrialização, bem como para a adaptação de equipamentos já existentes visando ao maior rendimento e racionalização de uso de energia. Desta forma, este trabalho teve como objetivo determinar algumas propriedades físicas de grãos de café orgânico e convencional. Foram determinadas a esfericidade e circularidade, massa específica granular, porosidade e velocidade terminal. O trabalho foi conduzido nos laboratórios da UNIOESTE - Cascavel-PR. Foram utilizados grãos de café (Coffea arábica, L.) orgânico e convencional no estádio coco, obtidos junto à Emater. A partir dos resultados obtidos, pode-se concluir que a medida dos eixos ortogonais não apresentou diferença significativa, quando comparadas as variedades e os tipos de tratamentos. Frutos de café nos tipos orgânico e convencional e a variedade, não apresentaram diferença nas determinações de circularidade. Os valores de massa específica aparente e real encontrados foram semelhantes aos descritos por outros autores, no entanto, comparando-se o café orgânico com o convencional, não houve diferença de valores. A variedade Catuaí tratamento orgânico, apresentou maior valor médio de porosidade, contudo não observou-se diferença significativa entre café orgânico e convencional nas duas variedades analisadas.
