International audience; PD-CAAS and DIAAS are indexes that simply reflect protein quality based on protein digestibility and the amino acid composition of the protein relatively to a reference composition. The calculation of these scores raises critical points, among which the amino acid pattern of the reference protein depending on the age range. Moreover, the factor 6.25 used to convert nitrogen to protein to quantify the protein amount in the protein ingredient generally overestimates the protein content, resulting in an underestimation of quality scores. Additionally, using free or “in-chain” molecular weight to estimate amino acids content affects significantly the score. Hence, it is important to clearly specify theses parameters in the studies. Lastly, the model used to determine digestibility (Human, pig, rat) as well as the methodology (ileal vs fecal, assessment of endogenous losses vs isotopic tracers) lead to variability. This must be carefully considered in the understanding of the PD-CAAS and DIAAS and the comparison between protein sources.; Le PD-CAAS et le DIAAS rendent compte simplement de la qualité d’une protéine sur la base de sa digestibilité et de sa composition en acides aminés indispensables comparée à une composition de référence. Le calcul de ces scores comporte des points critiques, parmi lesquels le profil de référence utilisé selon la tranche d’âge. Par ailleurs, le facteur de conversion de l’azote en protéine utilisé pour quantifier les protéines dans l’ingrédient a un impact, le facteur 6,25 pénalisant généralement les scores de qualité. De même, l’utilisation du poids moléculaire libre ou « en chaîne » des acides aminés pour déterminer le profil en acides aminés de la protéine influence les scores. Il est donc primordial que ces paramètres soient renseignés. Enfin, selon le modèle (Homme, porc ou rat) et la méthodologie (mesure iléale ou fécale, évaluation des pertes endogènes ou utilisation de traceurs isotopiques) utilisés pour évaluer la digestibilité, les valeurs peuvent varier et il est important de considérer ces aspects pour interpréter ces scores et comparer les sources protéiques entre elles.

Malnutrition is a major challenge in South Africa (SA), particularly in Eastern Cape and Limpopo provinces, which are predominantly black and historically disadvantaged. This thesis aims to assess the potential of Moringa oleifera (MO) as a source of nutritional improvement in the diets of mothers and their children in these provinces. Known for its nutritional benefits, MO is a plant native to India, now cultivated in SA but not widely used for human nutrition. A two-part approach was followed in this thesis. The first part aims to understand how MO is perceived by consumers and how it can be integrated into the South African food repertory. A study of the knowledge, beliefs and consumption habits of MO allowed us to contrast two cultures, India and Africa (Nigeria, Ghana and SA). Findings from the first part revealed a difference in consumer knowledge and uses, however, no difference was observed in terms of beliefs. This implies that a positive attitude towards MO is not enough to promote its consumption. This study also showed that MO is also less embedded in the eating habits of South Africans than in the habits of the other two African countries. Observation of the eating habits of South African student mothers and their children showed a shift between their level of knowledge and what they actually do. Although they are aware of the importance of nutritional intake, they prefer to give their children foods they like even if they are not healthy. These students perceive MO more as a medicine than a food, but are not opposed to adding it as a nutrient supplement in their basic diet as long as the foods offered are good, available and easy to prepare. The objective of the second part of this thesis is to study the nutritional intakes of MO and the development of a food supplemented with MO leaves. The nutritional characterization of the MO leaf powder showed a digestibility of 75.95%. Pretreatment of the MO powder with high pressure, ultrasound and microwave processes did not improve this digestibility rate. Moreover, biscuits supplemented with MO leaves (0% to 30%) were evaluated. The 10% biscuit was characterized by the best protein digestibility while the vitamin A derived from MO was denatured during baking. The hedonic test result clustered consumers into two groups. Consumers in the first group rejected all supplemented biscuits because of the green color and hard texture. Those in the second group who are much younger compared to the first group accepted biscuits that are supplemented with MDL up to 20% and are attracted by the novelty of the supplemented biscuits. The four studies presented in the thesis led to the proposal of a snack recipe made from maize porridge (pap) and powdered MO leaves dried in the sun. This drying method preserves more protein (18.06%) than shade and oven drying (17.44% and 17.56% respectively). Pap has the advantage to be a major ingredient in the food repertory of our target population, and it is widely appreciated, well satisfying, broadly available and easy to prepare. MO powder proportions of 0, 5, and 10% will be added to the pap after cooking and when the temperature drops to 40 ° C. The analysis of the nutritional and sensory properties will take place in order to determine the best proportion., La malnutrition est un problème majeur en Afrique du Sud (AS), en particulier dans les provinces du Cap-Oriental et du Limpopo, qui sont à prédominance noire et historiquement défavorisées. Cette thèse vise à évaluer le potentiel de la Moringa oleifera (MO) comme source d'amélioration nutritionnelle dans l'alimentation des mères et de leurs enfants dans ces provinces. Connue pour ses bienfaits nutritionnels, la MO est une plante originaire de l'Inde, aujourd'hui cultivée en AS mais peu utilisée pour l'alimentation humaine. Une démarche organisée en deux parties a été suivie dans cette thèse. La première partie vise à comprendre la perception du MO par les consommateurs et comment il peut être intégré dans le répertoire alimentaire Sud-Africain. Une étude des connaissances, croyances et habitudes de consommation de MO nous a permis de contraster deux cultures, l’Inde et l’Afrique (Nigeria, Ghana et AS). Elle a révélé une différence en terme de connaissances et d’usages, en revanche, aucune différence n‘a été observée en terme de croyances. Cela suggère qu'une attitude positive envers le MO ne suffit pas à promouvoir sa consommation. Cette étude a également montré que le MO est aussi moins ancré dans les habitudes alimentaires des Sud-Africains que dans les habitudes des deux autres pays d’Afrique. L’observation des habitudes alimentaires des étudiantes mamans sud-africaines et de leurs enfants a montré un décalage entre leur niveau de connaissance et ce qu’elles font concrètement. Bien qu’elles aient conscience de l’importance des apports nutritionnels, elles préfèrent donner à leurs enfants des aliments qu’ils aiment même s’ils ne sont pas bons pour la santé. Ces étudiantes percoivent le MO davantage comme un médicament qu’un aliment mais ne sont pas opposées à son ajout comme apport nutritionnel dans l’alimentation de base à condition que les aliments proposés soient bons, disponibles et faciles à préparer. L’objectif de la deuxième partie de cette thèse est d’étudier les apports nutritionnels du MO et le développement d’un aliment supplémenté en feuilles de MO. La caractérisation nutritionnelle de la poudre de feuilles de MO a montré un pourcentage de digestibilité de 75,95%. Un prétraitement de la poudre de MO par des procédés de hautes pressions, d’ultrasons et de micro-ondes n’a pas permis d’améliorer ce taux de digestibilité. De plus, des biscuits supplémentés avec des feuilles de MO (0 à 30 %) ont été évalués. Le biscuit de 10% a été caractérisé par la meilleure digestibilité des protéines, tandis que la vitamine A dérivée de MO a été dénaturée pendant la cuisson. Le résultat du test hédonique a regroupé les consommateurs en deux groupes. Les consommateurs du premier groupe ont rejeté tous les biscuits supplémentés en raison de leur couleur verte et de leur texture dure. Ceux du second groupe, plus jeunes, acceptent jusqu’à 20% de suplémentation et sont attirés par l’originalité des biscuits supplémentés. Les quatre études présentées dans la thèse ont conduit à la proposition d’un aliment constitué de bouillie de maïs (pap) supplémenté en feuilles de MO séchées au soleil. Cette méthode de séchage préserve davantage les protéines (18,06%) que le séchage à l'ombre et au four (respectivement 17,44% et 17,56%). Le pap a l’avantage de faire partie du répertoire alimentaire de notre population cible, et il est largement apprécié, bien satisfaisant, largement disponible et facile à préparer. Des proportions de poudre MO de 0, 5 et 10% seront ajoutées au pap après cuisson et lorsque la température descend à 40°C. Une analyse des propriétés nutritionnelles et sensorielles auront lieu afin de déterminer la meilleure proportion.

In the search for new plant protein sources for human nutrition, sunflower is a good candidate. There is no study on protein and amino acid quality of sunflower protein isolate in humans. Ileal direct digestibility assessment is invasive, that is the reason why a less invasive method, called dual tracer, was developed. This method is based on the ingestion of a 15N or 2H labeled test protein and 13C labeled reference protein. Relative ratio between the two isotopes (15N/13C or 2H/13C) for a given amino acid in the meal and the plasma reflects the relative absorption between the two proteins. This thesis aims (1) to determine sunflower protein quality and (2) to validate the dual tracer method in rats and in humans.Sunflower was labeled either with 15N and 2H under a greenhouse or with 15N in open fields, and protein were isolated. Rat studies allowed to characterize sunflower isolate quality, to evaluate the use of 13C spirulina as reference protein of the dual tracer method and to challenge this method in this model.The clinical study aimed to determine sunflower protein isolate quality included in biscuits and to compare direct ileal digestibility values obtained with direct measurement with a naso-ileal tube to those from the dual tracer method.Sunflower protein isolate have a high digestibility (95%) in rats but a lower digestibility in humans when incorporated and cooked in biscuits (87%) despite a good postprandial utilization (72%). Although moderately limited in lysine (DIAAS of 0.78 to 0.94 according to the conversion factor protein/N), its use in human nutrition is interesting. The dual tracer method was hardly applicable in rats, because of the small amount of blood available sequentially. In humans, comparison between ileal digestibility and plasma 15N/13C absorption indexes shows that the dual tracer method produces physiologically relevant values but about 10% lower than digestibility values and with a high imprecision. Better results could have been obtained with the use of 2H.; En vue de diversifier les sources de protéines végétales pour l’alimentation humaine, le tournesol est un candidat intéressant. Il n’existe pas d’études chez l’Homme sur la qualité des protéines et acides aminés d’isolat de tournesol. La mesure directe de la digestibilité des acides aminés au niveau iléal est invasive, c’est pourquoi une nouvelle méthode moins invasive, dite double traceur, a été développée. Cette méthode repose sur l’administration de la protéine d’intérêt marquée au 2H ou au 15N et d’une protéine de référence marquée au 13C. Le rapport relatif entre les deux isotopes (15N/13C ou 2H/13C) d’un même acide aminé dans le repas et le plasma reflète l’absorption relative des deux protéines. Les objectifs de cette thèse sont (1) de déterminer la qualité protéique du tournesol et (2) de mettre en place et valider la méthode double traceur, chez le rat et chez l’Homme.Les protéines de tournesol ont été marquées soit au 15N et 2H en serre, soit au 15N en plein champ, et purifiées en isolats. Les études chez le rat ont permis de caractériser la qualité de l’isolat de tournesol, d’évaluer la pertinence de l’utilisation de la spiruline 13C comme protéine de référence dans la méthode double traceur et de mettre en application cette méthode. L’étude clinique visait à déterminer la qualité protéique de l’isolat de tournesol inclus dans un biscuit et de comparer les valeurs de digestibilité iléale obtenues par la mesure directe dans l’iléon via une sonde naso-iléale à celles de la méthode double traceur.La protéine de tournesol purifiée a une digestibilité élevée (95%) chez le rat mais plus faible chez l’Homme lorsqu’elle est incorporée et cuite dans un biscuit (87%), et ce malgré une bonne utilisation postprandiale (72%). Bien que modérément limitée en lysine (DIAAS de 0,78 à 0,94 selon le facteur de conversion protéine/N), son utilisation en alimentation humaine est intéressante. La méthode double traceur s’est avérée difficilement applicable chez le rat en raison de la faible quantité de sang prélevable séquentiellement. Chez l’Homme, la comparaison entre digestibilité iléale des acides aminés et les indices d’absorption 15N/13C dans le plasma montre que la méthode double traceur donne des valeurs cohérentes physiologiquement mais environ 10% plus faibles que les valeurs de digestibilité et une forte imprécision. L’utilisation du 2H n’ayant pu être testée, elle aurait peut-être produit de meilleurs résultats.

International audience; In pig feeding, the inclusion rate of dehydrated lucerne (whole plant) is limited due to its high fibre content. In contrast, the leaf fraction of lucerne has a lower fibre and higher protein content than the whole plant, which would make it a valuable protein source for pigs. The aims of the present study were to determine the energy and protein values of lucerne leaf meal (LLM) in growing pigs. In the first trial, the total tract digestibility coefficient (TTD) of energy was measured for 25 pigs (55 kg body weight (BW) randomly allotted to five dietary treatments: 0%, 5%, 10%, 15% and 20% of LLM. In the second trial, the apparent (AID) and standardized (SID) ileal digestibility coefficient of amino acids (AA) were measured for five pigs (32.4 kg BW) arranged in a 5 x 5 Latin square design with six periods and five diets containing 0%, 5%, 10%, 15% and 20% of LLM. On a dry matter (DM) basis, mean crude protein (N×6.25), lysine, threonine, sulphur AA, crude fibre and gross energy contents of LLM were 25.3%, 1.06%, 0.98%, 0.63%, 15.5% and 19.3 MJ/kg, respectively. As expected, the TTD of energy and AID of AA decreased (P < 0.05) with increasing inclusion of LLM in the diet. The TTD of energy and the digestible energy content of leaf meal were 50.8% et 9.8 MJ/kg DM, respectively. On average, the SID of lysine, threonine and sulphur AA was 70.9%, 45.4% and 47.7%, respectively. The low digestibility of energy and AA of LLM are probably explained by the presence of fibre and secondary compounds (saponins, flavonoids) at a high concentration and/or by the dehydration process used in the present study.; Chez le porc, l’utilisation de la luzerne entière sous forme déshydratée est limitée en raison de sa forte teneur en parois végétales. Le fractionnement de la plante au moment de la récolte permet de séparer les tiges riches en fibres des feuilles riches en protéines. L’objectif de cette étude est de caractériser les valeurs énergétique et protéique de la farine de feuilles de luzerne (FFL) déshydratée. Dans l’essai 1, la digestibilité de l’énergie a été mesurée sur 25 porcs d’un poids initial d’environ 55 kg qui ont été alimentés avec des aliments contenant 0, 5, 10, 15 ou 20% de FFL. Dans l’essai 2, la digestibilité iléale standardisée (DIS) des acides aminés (AA) aété mesurée sur cinq porcs. Cinq régimes expérimentaux (0, 5, 10, 15 ou 20% de FFL) ont été testés dans un dispositif en carré latin 5x5 complet avec six périodes et cinq régimes. Sur la base de la matière sèche (MS), les teneurs en N×6,25, lysine, thréonine, AA soufrés, cellulose brute et en énergie brute (EB) de la FFL étaient, respectivement, de 25,3%, 1,06%, 0,98%, 0,63%, 15,5% et 19,3 MJ/kg. L’augmentation de l’incorporation de la FFL induit une réduction (P < 0,05) de la digestibilité de l’énergie et des AA. En moyenne, la digestibilité fécale de l’énergie et la teneur en énergie digestible sont de 50,8% et 9,8 MJ/kg MS. En moyenne, les DIS de la lysine, de la thréonine et des AA soufrés sont en moyenne, respectivement, de 70,9%, 45,4% et 47,7%. Les faibles digestibilitésde l’énergie et des AA de la FFL pourraient être liées à la présence de fibres, de métabolites secondaires (saponines, flavonoïdes) mais également aux conditions de déshydratation des feuilles.

Synthèse.; Faba bean is a protein-rich seed that could partially or completely replace traditional protein sources in pig feed such as soybean meal. However, faba beans contain secondary metabolites that restrict bioavailability of the beans’ proteins. Technological processes such as dehulling and extrusion may reduce the concentration and/or biological activity of these antinutritional factors. In two first trials, apparent fecal and ileal digestibility of dietary components and energy from whole (W) or dehulled (D) faba bean, without (E0) or with extrusion at two temperatures (140°C (E1) or 160°C (E2)) were determined in growing pigs. Ileal digestibility of amino acids peaked for the W-E1 (91,5%) and D-E2 diets (92,1%). Extrusion increased ileal digestibility of gross energy of both W (+2,6%) and D (+3,0%) and fecal digestibility of gross energy of D (+2,5%). A third trial was performed to validate nutritional values obtained in trial 1 for diets W-E0, W-E1, D-E0 and D-E2. In this trial, faba bean was introduced as the main protein source in each of four diets formulated with same net energy and standardized ileal digestible amino acid contents. Growth and slaughter performances were measured in a multiphase feeding strategy with one diet per pig per week. Pigs fed the four faba-bean diets had feed intake, growth and body weight at slaughter that did not differ significantly from those of pigs receiving a diet with soybean meal. The results confirm the nutritional values calculated for the four faba-bean diets studied (W-E0, W-E1, D-E0 and D-E2).; La graine de féverole constitue une matière première riche en protéines et est susceptible de remplacer partiellement ou totalement les sources traditionnelles de protéines dans l’alimentation du porc, telles que le tourteau de soja. La graine de féverole contient cependant des facteurs anti-nutritionnels connus pour réduire la digestibilité des protéines. L’application de traitements de dépelliculage et d’extrusion permettrait de réduire la concentration et/ou l’activité des facteurs anti-nutritionnels présents dans la graine de féverole. Dans deux premiers essais, la digestibilité fécale et iléale des composants de la ration et de l’énergie de deux formes de graines de féverole – graine entière (GE) ou dépelliculée (D) – sans extrusion (E0) ou soumises à une extrusion à 140°C (E1) ou 160°C (E2) ont été évaluées chez le porc en croissance. La digestibilité iléale standardisée des acides aminés était maximale pour les régimes contenant la féverole GE-E1 (91,5%) et la féverole D-E2 (92,1%). L’extrusion, quelle que soit la température, augmente la digestibilité iléale de l’énergie de la graine de féverole, entière (+2,6%) ou dépelliculée (+3,0%), et améliore la digestibilité fécale de l’énergie pour la féverole dépelliculée uniquement (+2,5%). Un troisième essai a été conduit afin de valider les valeurs nutritionnelles obtenues lors des mesures de digestibilité, pour les graines de féverole GE-E0, GE-E1, D-E0 et D-E2. Dans cetessai, les féveroles ont été incorporées comme source principale de protéines en remplacement du tourteau de soja au sein de quatre régimes formulés à teneurs équivalentes en énergie nette et acides aminés standardisés iléaux digestibles. Les performances de croissance et d’abattage ont été mesurées en respectant une stratégie individuelle d’alimentation multiphase à la semaine. Les porcs recevant les régimes comprenant les féveroles présentaient une consommation, une croissance et des performances à l’abattage similaires aux porcs recevant un régime à base de tourteau de soja. Les résultats obtenus valident les valeurs nutritionnelles calculées pour les féveroles GE-E0, GE-E1, D-E0 et D-E2.

International audience; Although pelleting of diets is a common practice in the pig industry, nutritional values are estimated from values of feedstuffs that have often been measured for diets presented as meal. The objectives of the study were to determine effects of pelleting at a low or a high temperature (55 or 78°C at the end of the conditioner) on digestive and metabolic utilization of nitrogen and energy of diets formulated with feedstuffs differing in their response to pelleting. During the experiment, nitrogen and energy balances of 48 pigs (24 castrated males and 24 females; mean body weight: 86 kg) were measured in respiration chambers when fed two diets offered as meal or pellets produced at a low or a high temperature. Digestive utilization of nitrogen and energy was improved by pelleting (+4.0 and 2.6 points increase in digestibility coefficient, respectively), regardless of the composition of the diet. Pelleting also improved the intake of metabolizable energy (+165 kJ/kg BW0.60/d) and energy retention (+150 kJ/kg BW0.60/d), because ofincreased energy efficiency and decreased heat production associated with physical activity. Castrated males always exhibited even better reactions to pelleting than females. Pelleting at a low temperature increased dietary net energy content by 5%, while increasing pelleting temperature reduced this improvement to 2.8%.; La granulation des aliments est un procédé fréquemment employé en alimentation porcine, même si les valeurs nutritionnelles sont le plus souvent estimées à partir d’aliments présentés sous forme de farine. L’objectif de l’expérimentation était de tester les effets induits par la granulation à deux températures différentes sur l’utilisation digestive et métabolique de l’azote et de l’énergie de deux aliments formulés à partir de matières premières se différenciant par leur comportement à la granulation, chez les porcs mâles castrés et femelles. Pour cela, les bilans azotés et énergétiques de 48 porcs (24 mâles castrés et 24 femelles) d’un poids vif moyende 86 kg et recevant deux formules alimentaires sous forme de farine ou de granulés fabriqués à basse ou à haute température (température en sortie de malaxeur de 55 ou 78 °C) ont été mesurés en chambre respiratoire. La granulation a permis d’améliorer le coefficient d’utilisation digestive de l’azote (+4,0 points) et de l’énergie (+2,6 points) quelle que soit la formule alimentaire. L’augmentation par la granulation de la quantité d’énergie métabolisable ingérée (+165 kJ/kg PV0,60/j) a permis d’augmenter la rétention énergétique (+150 kJ/kg PV0,60/j), en particulier sous forme de lipides, à cause d’une meilleure efficacité d’utilisation de l’énergie et d’une baisse de la production de chaleur liée à l’activité physique. Les mâles castrés ont systématiquement présenté une meilleure réponse à la granulation des régimes par rapport aux femelles. La granulation à basse température a permis d’augmenter de 5% la teneur en énergie nette des régimes. Cette amélioration n’est que de 2,8% pour une température de granulation plus élevée.

International audience; Infant formulas (IFs) are the key nutritional source for infants who cannot be breastfed. There is currently a growing interest in these sensitive products in order to control their quality and to design their composition with regard to nutritional balance. In a context of sustainable development and increasing growth of the world population, it seems essential to search for alternative to animal protein in food today. Plant proteins offer interesting nutritional and functional benefits thanks to the latest improvement through research and development. In this context, five model IFs were developed with identical composition, except that 50% of the proteins were either whey proteins in the “milk-reference IF”, pea, faba bean, rice or potato proteins in the four “plant IFs” tested. The IFs were evaluated using an in vitro static gastro-intestinal model simulating infant conditions. The protein hydrolysis degree (DH) and the amino acid bioaccessibility (AAB) were used as indicators of protein digestibility. Results showed that both DH and AAB were very similar between the milk-reference IF, pea and faba bean IFs, but significantly lower for the rice and potato IFs. This study provides new insights into the impact of protein sources on IF digestibility.

This study examined the effects of long-term storage conditions on the chemical composition, pepsin-cellulase dry matter digestibility (PCDMD), and visible (VIS)/near infrared spectra (NIR) of forage. Eighteen samples of different whole-crop maize varieties originally harvested in 1987 were used. After drying, these samples were analyzed in the laboratory for ash, crude protein (CP), structural carbohydrates, total soluble carbohydrates (TSC), starch and PCDMD, and the remaining samples were stored frozen (at &minus, 20&deg, C) or at barn temperature (ambient temperatures ranged from &minus, 8.5 &deg, C to 27.1 &deg, C). In 2016, the samples were analyzed for ash, CP, structural carbohydrates, TSC, starch and PCDMD. The visible/NIR spectra of both storage methods were obtained. Chemical composition and PCDMD analyses revealed significant differences (p &lt, 0.05) between the storage methods for TSC but not for the other parameters (p &gt, 0.05). After sample harvesting in 1987, the analyses were compared with those in 2016. It was found that the post-harvest TSC and ash content were higher (p &lt, 0.05) and lower (p &lt, 0.05), respectively, during 2016. No significant differences were found for starch and PCDMD. Important differences between the VIS/NIR spectra of both storage methods were obtained in the VIS segment, particularly in the area between 630 and 760 nm. We concluded that storing dry forage samples at ambient temperature for a very long time (29 years) did not change their nutritive value compared to the values obtained before storage.

Background Nanofibrillation of proteins by heating at extremely acidic condition for long durations (several hours to days) is studied enthusiastically in food science. The process progresses by the unidirectional self-assembly of peptides as building units of the fibrils. Scope and approach This communication provides a review on the underlying mechanism of protein fibrillation, and various technological properties of the fibrils, followed by discussing their biological and cellular effects. Key findings and conclusions Fibrillation of proteins and addition of the fibrils into liquid foods causes a significant increase of apparent viscosity. Nevertheless, certain post-fibrillation processes such as freeze-drying may result in viscosity reduction. Fibrils form cohesive viscoelastic interfaces, bringing about high foam and emulsion stability. The presence of non-fibrillated peptides and low molecular weight surfactants influence the foaming and emulsification properties of fibrillated protein solutions. Fibrillated protein can yield cold-set gels at extremely low concentrations, which is attributed to formation of space filling networks. Reinforcing polymeric films, conferring hydrophilic character to graphene, developing drug and nutraceutical delivery vehicles such as microcapsules, microgels and fibrillosome and utilization (mostly as scaffolds) in fabrication of biosensors and bio-sorbents are the other applications of protein fibrils. Fibrillation may increase the antioxidant activity of proteins. It can also influence protein digestibility. Fibrils do not exert any major toxicity towards human cell lines and can be exploited as biomimetic cell culture platforms and cellular transport shuttles.

International audience; Feed is the largest cost in animal production, therefore improving feed efficiency (FE) is one of the main priorities when redesigning farming systems. The objective of this work was to evaluate the effects of a divergent genetic selection for FE in Romane rams [i.e. efficient (RFI-) or inefficient (RFI+)] on the feed intake and nutrient digestibility of their daughters (ewes), reared in different conditions. Different to their sires, which were fed high concentrate-diets, the ewes were fed ad libitum total mixed ration (TMR) composed of silage (65%), hay (25%) and barley (10%). A series of in vivo digestibility trials were conducted using Romane ewes (n =20; 10 RFI- and 10 RFI+) during their 2 first production cycles. The BW, metabolic BW (MBW), body condition score (BCS), DM intake (DMI) and nutrient intake and digestibility were individually monitored. All parameters were significantly affected (P < 0.05) by the production cycle. The BW, MBW, BCS as well as the feed intake and nutrient digestibility were higher in the cycle 2 compared to cycle 1. The exception was the CP digestibility, which was higher in younger ewes (cycle 1). The BW and MBW was, as expected, higher in older ewes thus increasing the feed intake capacity in cycle 2 compared with cycle 1. Slight differences in TMR nutritive composition between the years of the study were also probably responsible of differences in CP digestibility. The RFI+ ewes showed a better BCS than RFI- ewes (3.0 vs. 2.7; P < 0.0001). In the conditions used in this study, we could not demonstrate any differences in intake and digestive efficiency between the two ewe FE lines, probably because the selected rams were tested with one diet (concentrate-based diet) whereas their daughters (ewes) with another (forage-based diet). Further research is warranted to evaluate RFI testing in animals fed a more fibrous diet closer to that of ewes under range conditions whereas also assessing responses to multiple-generation divergent selection on RFI.

Jicaro (Crescentia alata) is a tropical tree native to Mesoamerica well adapted to severe drought conditions. The seeds of the fruits were analyzed for protein, fatty acid, dietary fiber, phytate, polyphenol, tannin, tocopherol, sugar, mineral, amino acid and trypsin inhibitor contents. The jicaro cotyledons contained 43.6 1.15 g protein/100 g and 38.0 0.20 g fat/100 g (d.w.), which is comparable to most protein-rich and oleaginous seeds. Among the lipids, 77.6% were unsaturated fatty acids, particularly oleic acid, and essential amino acids represented 16.0 0.9% (d.w.) of the protein fraction, which is similar to soybean amino acid contents. A proteomic analysis and SDS-PAGE electrophoresis revealed that the proteins are mostly of low molecular weight ( 10 kDa), and the storage protein 2S albumin dominated. Jicaro seed trypsin inhibitory activity was low (0.1 trypsin inhibitor units TIU/mg), which enhances the digestibility of its proteins. The jicaro seed cotyledon represents an autochthonous and high-quality food source. This study aimed to investigate the effects of growth stage and legume proportion on the nutritive and ensiling characteristics of triticale–pea–vetch intercrop mixtures. The three-species mixtures were sown at three seeding ratios to produce different legume proportions (low, medium and high proportions) and harvested at two growth stages. The six resulting forages were subsequently ensiled in mini-silos. Forage dry-matter (DM) yield, nutritive characteristics of fresh and ensiled mixtures and fermentation characteristics of silages were determined. Forage DM yield almost tripled between early-stage harvest and late-stage harvest. Nutritive characteristics of fresh and ensiled mixtures were affected by both growth stage and legume proportion: crude protein concentration and pepsin–cellulase digestibility decreased whereas NDF and ADF concentrations increased as growth stage advanced. Crude protein concentration and pepsin–cellulase digestibility were higher for the high-legume treatment at both growth stages. All mixtures ensiled well, as indicated by low pH and high lactic and acetic acids contents. However, all silages had high soluble nitrogen and ammonia concentrations. This study showed that triticale–pea–vetch silages hold good potential net energy supply value for ruminants, especially at early-stage growth and when legume proportion increases. However, protein value has to be improved by reducing protein breakdown during ensiling.

Faecal near infrared spectroscopy (FNIRS) can be a good technique to predict functional properties like intake or in vivo digestibility of forages by small ruminants. Data were collected from 108 differentdigestibility indoor and outdoor trials in Senegal and France carried out from 1993 to 2013 on sheep fed with a large variety of forage species. Faecal samples were scanned by a Foss NIRSystem 5000 monochromator. Calibrations were established on indoor trials samples and performed using the modified partial least square (mPLS) procedure to estimate dry or organic matter (DMI, OMI, g/kg metabolic weight, BW0.75) intake, in vivo dry and organic matter (DMD, OMD,%) digestibility. The derived standard errors of calibration (SEC) and coefficients of determination (R²cal) were 6.52 g/kg BW0.75 and 0.81 for DMI, 5.17 g/kg BW0.75 and 0.86 for OMI, 1.50% and 0.93 for DMD and 1.95% and 0.88 for OMD, respectively. These values confirm the interest of the use of FNIRS as a tool to manage small ruminants. The results obtained show a good accuracy with values similar to other published results for intake and digestibility. Validation on outdoor trials samples show the difficulty to extrapolate the prediction of intake with limited samples number and only one pasture quality., La spectroscopie proche infrarouge fécale (FNIRS) peut être une bonne technique pour prédire des propriétés fonctionnelles comme l’ingestion ou la digestibilité des fourrages par les petits ruminants. Les données proviennent de 108 essais de digestibilité différents en cage ou au pâturage réalisés au Sénégal et en France entre 1993 et 2013 sur des ovins incluant une grande variété d’espèces fourragères. Les échantillons de fèces ont été scannés avec un monochromateur Foss NIRSystem 5000. Les étalonnages ont été effectués avec la procédure des moindres carrés partiels modifiée (mPLS) avec les échantillons des essais en cages pour estimer l’ingestion de matière sèche ou de matière organique (DMI, OMI, g/kg0,75), la digestibilité de la matière sèche ou de la matière organique (DMD, OMD,%). Les erreurs standard d’étalonnage (SEC) et les coefficients de détermination (R²cal) étaient respectivement de 6,52 g/kg0,75 et 0,81 pour DMI, 5,17 g/kg0,75 et de 0,86 pour OMI, 1,50% et 0,93 pour DMD et 1,95% et 0,88 pour OMD. Ces valeurs confirment l’intérêt de la FNIRS comme outil de pilotage pour la gestion des petits ruminants. Les résultats obtenus montrent une bonne précision avec des valeurs similaires à celle rencontrées dans la bibliographie. Une validation sur les échantillons des essais au pâturage montre la difficulté d’extrapolation des étalonnages pour la prédiction de l’ingestion lorsque le nombre d’échantillons est limité et restreint à une seule situation.

International audience; Faba bean is a protein-rich seed that could partially or completely replace traditional protein sources in pig feed such as soybean meal. However, faba beans contain secondary metabolites that restrict bioavailability of the beans’ proteins. Technological processes such as dehulling and extrusion may reduce the concentration and/or biological activity of these antinutritional factors. In two first trials, apparent fecal and ileal digestibility of dietary components and energy from whole (W) or dehulled (D) faba bean, without (E0) or with extrusion at two temperatures (140°C (E1) or 160°C (E2)) were determined in growing pigs. Ileal digestibility of amino acids peaked for the W-E1 (91,5%) and D-E2 diets (92,1%). Extrusion increased ileal digestibility of gross energy of both W (+2,6%) and D (+3,0%) and fecal digestibility of gross energy of D (+2,5%). A third trial was performed to validate nutritional values obtained in trial 1 for diets W-E0, W-E1, D-E0 and D-E2. In this trial, faba bean was introduced as the main protein source in each of four diets formulated with same net energy and standardized ileal digestible amino acid contents. Growth and slaughter performances were measured in a multiphase feeding strategy with one diet per pig per week. Pigs fed the four faba-bean diets had feed intake, growth and body weight at slaughter that did not differ significantly from those of pigs receiving a diet with soybean meal. The results confirm the nutritional values calculated for the four faba-bean diets studied (W-E0, W-E1, D-E0 and D-E2).; La graine de féverole constitue une matière première riche en protéines et est susceptible de remplacer partiellement ou totalement les sources traditionnelles de protéines dans l’alimentation du porc, telles que le tourteau de soja. La graine de féverole contient cependant des facteurs anti-nutritionnels connus pour réduire la digestibilité des protéines. L’application de traitements de dépelliculage et d’extrusion permettrait de réduire la concentration et/ou l’activité des facteurs anti-nutritionnels présents dans la graine de féverole. Dans deux premiers essais, la digestibilité fécale et iléale des composants de la ration et de l’énergie de deux formes de graines de féverole – graine entière (GE) ou dépelliculée (D) – sans extrusion (E0) ou soumises à une extrusion à 140°C (E1) ou 160°C (E2) ont été évaluées chez le porc en croissance. La digestibilité iléale standardisée des acides aminés était maximale pour les régimes contenant la féverole GE-E1 (91,5%) et la féverole D-E2 (92,1%). L’extrusion, quelle que soit la température, augmente la digestibilité iléale de l’énergie de la graine de féverole, entière (+2,6%) ou dépelliculée (+3,0%), et améliore la digestibilité fécale de l’énergie pour la féverole dépelliculée uniquement (+2,5%). Un troisième essai a été conduit afin de valider les valeurs nutritionnelles obtenues lors des mesures de digestibilité, pour les graines de féverole GE-E0, GE-E1, D-E0 et D-E2. Dans cetessai, les féveroles ont été incorporées comme source principale de protéines en remplacement du tourteau de soja au sein de quatre régimes formulés à teneurs équivalentes en énergie nette et acides aminés standardisés iléaux digestibles. Les performances de croissance et d’abattage ont été mesurées en respectant une stratégie individuelle d’alimentation multiphase à la semaine. Les porcs recevant les régimes comprenant les féveroles présentaient une consommation, une croissance et des performances à l’abattage similaires aux porcs recevant un régime à base de tourteau de soja. Les résultats obtenus valident les valeurs nutritionnelles calculées pour les féveroles GE-E0, GE-E1, D-E0 et D-E2.

Session 45 - Théâtre 14; Diet digestibility and intake are animal traits difficult to measure in practice. Thus, several indirect methods including faecal visible/near infrared (VIS/NIR) spectroscopy, have been developed for predicting these traits. The development of this technology requires great number of samples, which are not always obtained in standardized conditions among experiments. Consequently, the lack of standardization could be associated to a loss of precision of VIS/NIR models. In order to test this hypothesis, we used 88 VIS/NIR spectra of faeces sampled on cattle beef and dairy cows from 3 different experiments (De la Torre et al., 2019; Herremans et al., 2019; Fanchone et al., 2013). Experiments included measurements of the individual organic matter digestibility (OMD) and daily dry matter intake (DI) of animals. Two calibration strategies were compared for predicting these measurements: (1) specific experiment calibration and (2) a global calibration procedure. Models were assessed by standard error of cross-validation (SECV) and coefficient of determination of cross-validation (R2CV). The SECV was separated into bias and SECV corrected by bias SECV(C). Bias and SECV(C) for both calibration strategies were compared using the procedure of Fearn (1996). Data sets gave value ranges of 0.60-0.78 for OMD and 53-181 g/kg body weight (BW)0.75 for DI. For OMD, the SECV and R2CV were 0.02 and 0.86 for both specific experiment calibration and global calibration procedure. For DI, the SECV and R2CV were 6.90 g/kg BW0.75 and 0.96 respectively, for the specific experiment calibration and 7.62 g/kg BW0.75 and 0.95, respectively, for the global calibration procedure. For both, OMD and DI, no significant differences between calibration strategies were found for bias and SECV(C). From the results of this preliminary study, we conclude that mixing data from experiments conducted in very different conditions does not degrade the precision of the obtained VIS/NIRS models to predict OMD and DI in cattle.

Introduction A major challenge in the next years will consist in producing healthy and sustainable foods with optimized nutritional quality. Food fortification to increase micronutrient intakes is a strategy currently used to overcome deficiencies. Objective Since the structural characteristics of food influence disintegration process during digestion, it appears relevant to assess the impact of food structure on micronutrient bioavailability. Methodology Four model foods have been developed and enriched in lutein and vitamin D. These products were designed such as their composition was identical but their structures and textures were different. Custard, pudding, sponge cake and biscuit were thus produced by modulating the production process. A clinical trial has been set up, involving twelve healthy male subjects for a monocentric, controlled and randomized study, in a cross experimental design. After an overnight fast, kinetics of plasma micronutrient levels were recorded for 8 hours following each product consumption. In a second phase, the model foods have been digested using the INFOGEST in vitro model. Kinetics of matrix disintegration and micronutrients release have been recorded. Main findings The micronutrient absorption curves depended on the matrix. Especially, the biscuit resulted in a significantly later peak of maximal absorption for both micronutrients, and a lower total bioavailability for vitamin D. In vitro, digestion might enable to determine which food characteristics influence matrix disintegration, thereby affecting micronutrient bioaccessibility. Indeed, markers of matrix disintegration, namely proteolysis and lipolysis kinetics, suggested differences amongst the four model foods. Conclusion The in vivo results highlight that food structure modulates the kinetics of micronutrient appearance in plasma. Correspondences might be established between the kinetics of food matrix disintegration during in vitro digestion and the kinetics of micronutrient absorption during the clinical study. Using the DIDGI, a dynamic in vitro digestion model, further studies will aim to refine the quality of the model and the results obtained.

Infant formulas (IF) are the key nutritional source for infants who cannot be breastfed. There is currently a growing interest for these sensitive products, in order to control their quality and to design their composition with regard to nutritional balance and sustainable development concerns.This work aimed to study how plant proteins influence the digestibility of IF.Five infant formulas were developed with identical composition except that the protein source were whey proteins in the “reference IF”, pea, faba bean, rice or potato proteins in the four “plant IF” tested. The five IF were first evaluated using an in vitro static gastrointestinal model simulating infant conditions. Protein hydrolysis rate (PHR) and amino acid bioaccessibility (AAB) were measured using free amino group and free amino acid analyses, respectively. The pea and faba bean IF were then submitted to an in vitro dynamic digestion model closer to the physiological conditions, and compared to the reference IF. Protein digestibility (PHR and AAB) as well as the digesta microstructure were followed.Results showed that both PHR and AAB were very similar between the reference IF and pea and faba bean IF, but significantly lower for rice and potato IF. In dynamic conditions, the structure disintegration and the PHR showed differences among the reference, pea and faba bean IF. These differences were more pronounced during the gastric phase compared to the end of the intestinal digestion. This could result from the structure of proteins obtained from the processing steps that is known to influence the protein hydrolysis.This study provides new insights on the impact of protein source on the digestibility of IF. It especially showed that some plant proteins could be appropriate candidates for the composition of IF from a nutritional point of view.

Master; L’étude développée dans ce rapport portait sur la contribution de l’azote endogène, provenant de l’autolyse enzymatique, à la digestibilité de protéines de sources végétales et animale dans un modèle de digestion in vitro statique. Cette étude a pu être réalisée grâce à l’utilisation de matrices protéiques marquées intrinsèquement à l’azote 15N permettant de différencier l’azote d’origine exogène de l’azote d’origine endogène. Les trois matrices protéiques mises en oeuvre : caséine, gluten et biscotte, ont été soumises à un protocole harmonisé de digestion in vitro et des analyses ont été menées sur la matrices brutes ainsi que sur les digestas. La composition protéique des matrices a été évalué (taux protéique, contenu en acides aminés). Au cours de la digestion, le profil peptidique (distribution de taille), le degré d’hydrolyse, les digestibilités apparente et réelle, ainsi que la proportion d’azote endogène digestible par rapport à l’azote endogène total mis en oeuvre ont été mesurés. La proportion d’azote endogène digestible (< 10 kDa) par rapport à l’azote endogène total mis en oeuvre était de l’ordre de 5,78 ± 0,31 % pour la caséine, 5,46 ± 1,27 % pour le gluten et 4,86 ± 1,01 % pour la biscotte. Pour le gluten, cette proportion diminuait sensiblement avec le taux de protéines alimentaires mis en oeuvre. Il également pu être observé que la surestimation entre digestibilité apparente et réelle pouvait s’élever à plus de 70 % et variait très largement avec le taux de protéines : 73,78 ± 4,15 % pour la caséine à 4 % contre seulement 17,68 ± 0,53 % pour la caséine à 16 %, et le constat est similaire pour le gluten. En parallèle, d’autres données ont pu être acquises notamment concernant les modifications du profil peptidique des digestas par l’ultrafiltration, l’effet du taux de protéines et du temps de digestion sur les différentes données telles que degré d’hydrolyse et digestibilité. Il a pu être observé que l’ultrafiltration à 10 kDa engendrait la perte de jusqu’à plus de 50 % des peptides de la classe de 5 à 10 kDa et donc modifiait sensiblement le profil peptidique des digestas. Le degré d’hydrolyse, la digestibilité apparente et réelle et la part d’azote endogène digestible par rapport à l’azote endogène total varient significativement selon le repas (matrice x taux protéique) et le temps de digestion. On observe systématiquement un effet de la phase de digestion (gastrique vs intestinale). De manière globale, la digestibilité apparente et réelle augmente avec la diminution du taux de protéines mis en oeuvre et la présence de fibres ne semble pas impacter ces digestibilités lorsque l’on compare les données de biscotte et de gluten.De forts coefficients de corrélation entre les digestibilités (apparente et réelle) et le degré d’hydrolyse ont également été montré justifiant le rapprochement souvent faits dans les études de digestion in vitro. CONCLUSIONS Cette étude, qui est la première à estimer l’azote endogène digestible, a permis de démontrer une contribution non négligeable de la part d’azote endogène digestible dans la part d’azote digestible totale, entrainant la surestimation de la digestibilité des matrices d’autant plus importante que le taux de protéines mis à digérer est faible. Alors que le protocole de digestion est aujourd’hui harmonisé, l’estimation de la digestibilité in vitro des protéines varient largement d’un laboratoire à un autre. Il est donc nécessaire de poursuivre les expérimentations pour connaître la nature de cette fraction azotée digestible d’origine endogène. Ainsi, bien que le modèle utilisé (Minekus et al., 2014; Brodkorb et al., 2019) soit « harmonisé », cette dernière n’est pas encore complète. Les différences observées entre digestibilité apparente et réelle ainsi que celles de digestibilité selon les quantités de protéines mises en oeuvre montrent que des erreurs plus ou moins importantes de surestimation de digestibilité subsistent encore pour ce modèle.

In order to assess food quality and metabolic efficiency of mixed foods combining different vegetable protein sources or vegetable-animal protein sources, two staple foods, pasta and dairy gels, were selected as vectors and enriched with flour or protein extracted from legumes. The protein structure of the mixed feeds was studied at a molecular level. The relationship between this structure and the in vitro and in vivo digestibility of proteins was evaluated. The effect of the formulation and / or manufacturing process of these mixed foods on protein metabolism in vivo has been studied in growing young rats and aged rats. The change of the pasta formulation, ie the incorporation of three different leguminous flours (faba beans, lentils or split peas), generates structural modifications of the protein network influencing the digestibility of the proteins. Animal studies show that the nutritional quality of pasta enriched with legumes is comparable to that of an animal protein such as casein, regardless of the type of legume used. Body protein retention and muscle protein synthesis in aged rats, consuming iso-protein diets based on legume-enriched pasta or casein, are comparable. However, they remain lower than those induced by soluble milk proteins. The use of faba bean protein-enriched milk gels has shown an effect of the formulation and gelation process on protein digestion and retention. In vivo digestibility of proteins is higher in rats consuming the mixed fermented gel diet composed of casein and faba bean proteins compared to its counterpart of the same composition but chemically acidified. Protein retention is further improved in rats fed with a diet containing fermented gel composed of casein proteins, faba beans and whey. These legume-enriched foods, rich in protein, balanced in essential amino acids are beginning to be available on the market. They could be offered to the elderly population, especially in physiopathological situations involving a loss of body proteins.; Afin d’évaluer la qualité alimentaire et l’efficacité métabolique des aliments mixtes combinant différentes sources protéiques végétales ou des sources protéiques végétales/animales, deux aliments de base, les pâtes alimentaires et les gels laitiers, ont été choisis comme vecteurs et ont été enrichis par des farines ou des protéines de légumineuses. La structure de la fraction protéique des aliments mixtes a été étudiée à l’échelle moléculaire. La relation entre cette structure et la digestibilité in vitro et in vivo des protéines a été évaluée. L’effet de la formulation et/ou du procédé de fabrication de ces aliments mixtes sur le métabolisme protéique in vivo a été étudié chez des rats jeunes en croissance et des rats âgés. Le changement de la formulation des pâtes alimentaires, c'est à dire l’incorporation de trois farines de légumineuses différentes (féverole, lentille ou pois cassé), génère des modifications de structure du réseau protéique influençant la digestibilité des protéines. Les études animales montrent que la qualité alimentaire des pâtes enrichies en légumineuses est comparable à celle d’une protéine animale comme la caséine et ce, quel que soit le type de légumineuses utilisé. La rétention protéique corporelle et la synthèse protéique musculaire des rats âgés, consommant des régimes iso- protéiques à base de pâtes alimentaires enrichies en légumineuses ou de caséine, sont comparables. Elles restent cependant inférieures à celles induites par les protéines solubles du lait. L’utilisation de gels laitiers enrichis en protéines de féverole chez le rat a révélé un effet de la formulation et du procédé de gélification sur la digestion et la rétention protéiques. La digestibilité in vivo des protéines est plus élevée chez les rats consommant le régime contenant le gel fermenté mixte composé de protéines de caséine et de féverole comparativement à son homologue de même composition mais acidifié par voie chimique. La rétention protéique est encore améliorée chez les rats ayant consommé le régime contenant le gel fermenté composé de protéines de caséine, de féverole et de lactosérum. Ces aliments enrichis en légumineuses, riches en protéines, équilibrés en acides aminés indispensables commencent à être disponibles sur le marché. Ils pourraient être proposés à la population âgée notamment dans des situations physiopathologiques impliquant une perte de protéines corporelles.

Two experiments were conducted to investigate the use of sorghum, cottonseed meal and millet in broiler diets and their interaction when they are used simultaneously. In Experiment 1, a corn-soybean meal control diet was compared with eight experimental treatments based on low tannin sorghum (S30, S45 and S60), cottonseed meal (CM15, CM40) or both ingredients included in the same diet (S30/CM40, S45/CM25 and S60CM15). Results showed that BW gain was not affected by the inclusion of sorghum or cottonseed meal. Increasing by-pass protein is one of the challenges of ruminant nutrition to both cover the protein needs of animals and reduce the nitrogen excretion in the environment. Industrial process such as heat treatment, formaldehyde tanning and vegetable extract are focused on the protection of proteins against ruminal fermentations but show some limits (low intestinal digestibility, toxicity, low or variable efficiency). The reduction of the mean retention time (MRT) by varying size and density of particle is another way to increase by-pass protein fraction of concentrates. Plastic particles of four sizes (0.5, 1, 2 and 3 mm) and four densities (0.9, 1.1, 1.3 and 1.5) were used to study the combined effect of size and density on MRT of particles without microbial fermentation interactions. The kinetics of faecal excretion of particles (17 sampling over 106 hours) were studied in a Latin square experiment including four lactating cows. Data were adjusted to a double exponential model. Density has a quadratic response with the fastest escape for densities 1.1 and 1.3 in the total digestive tract (TMRT=29.5 and 31.2 hours respectively) as well as in the compartments isolated by the model compared to densities 0.9 and 1.5 (TMRT=64.0 and 51.2 hours respectively). Size has a linear effect on the total digestive tract transit time (+12.9 hours for the 3 mm size compared to the 1 mm) and in the time of first appearance of particles but no effects were observed in the others compartments. A combined effect of size and density is observed: particle size has no effect on TMRT when density is between 1.1 and 1.3 butoutside this range, an increase of particle size induces an increase in the TMRT. In conclusion a density in a range 1.1 to 1.3 will be optimal for the by-pass of particles of concentrate. These particles will be submitted to ruminal fermentations, and their optimal size must be small enough to pass the reticulo-omasal orifice but large enough todelay the start of fermentation on their surface and thus the loss of density by fermentation gases production. Size 3 to 4 mm would be a good compromise between these two constraints to allow the shortest escape from the rumen.

Currently, energy evaluation of fish feeds is performed on a digestible energy basis. In contrast to net energy (NE) evaluation systems, digestible energy evaluation systems do not differentiate between the different types of digested nutrients regarding their potential for growth. The aim was to develop an NE evaluation for fish by estimating the energy efficiency of digestible nutrients (protein, fat and carbohydrates) and to assess whether these efficiencies differed between Nile tilapia and rainbow trout. Two data sets were constructed. The tilapia and rainbow data set contained, respectively, eight and nine experiments in which the digestibility of protein, fat and energy and the complete energy balances for twenty-three and forty-five diets was measured. The digestible protein (dCP), digestible fat (dFat) and digestible carbohydrate intakes (dCarb) were calculated. By multiple regression analysis, retained energy (RE) was related to dCP, dFat and dCarb. In tilapia, all digestible nutrients were linearly related to RE (PPP2 for trout (NE in kJ/(kg0·8×d); dCP, dFat and dCarb in g/(kg0·8×d)). In tilapia, the energetic efficiency of dCP, dFat and dCarb was 49, 91 and 66 %, respectively, showing large similarity with pigs. Tilapia and trout had similar energy efficiencies of dCP (49 v. 57 %) and dFat (91 v. 84 %), but differed regarding dCarb.

A reaction–diffusion mathematical model has been developed to predict the gastric digestion of meat proteins. The model takes into account pepsin diffusion and proton diffusion in bolus particles and the pH buffering capacity of meat. The computations show that the size of bolus particles and the change in gastric pH have a substantial effect on the percentage of protein digested in the stomach and that the pH buffering capacity of meat has to be accounted for to properly calculate the gastric digestibility of meat. The intensity of surface transfers between stomach fluid and bolus particles has a significant impact on protein digestibility, whereas the variation in pepsin content in the stomach between individuals appears to have little effect on protein digestibility. From a nutritional standpoint, the simulations show that meat protein digestibility is high under normal physiological stomach conditions. However, in a situation where masticatory capacity, hydrochloric acid secretion and gastric motor function performances are reduced, such as with advancing age, protein digestibility rapidly decreases, ultimately leading to near-zero digestibility value in the stomach in extreme cases.

Significant genetic progress has been made since the 1950s in terms of enhancing maize productivity, stalk strength, and stress tolerance. However, although yield has increased almost threefold, the energetic value of maize silage has barely improved. For more than 50 years, research has been conducted on hybrids incorporating brown-midrib mutants with a view to improving dairy cow nutrition. The bm3 mutation has shown the most promise: plants have reduced lignin content and greater energetic value. A literature review involving 44 comparisons of regular hybrids with bm3 hybrids found that, for the latter, the quantity of matter ingested and milk production were higher but yield was lower. Providing livestock farmers with hybrids whose energetic value is greater than 0.97 French dairy feed units could improve farm competitiveness by reducing reliance on concentrates.; Des progrès génétiques considérables ont été faits depuis les années 1950 en productivité, tenue de tiges et tolérance aux stress chez le maïs, avec des rendements presque multipliés par trois. En revanche, la valeur énergétique des maïs fourragers n'a que peu progressé dans les hybrides actuels par rapport aux hybrides de la génération 1970. L'utilisation de certains mutants, à nervures brunes (brown-midrib), est une des voies possibles de progrès. L'ensilage de maïs assure souvent l'essentiel de la ration de base des vaches laitières. L'intérêt d'hybrides incluant des mutations "nervures brunes", et en particulier la mutation bm3, a ainsi été testé depuis plus de 50 ans en nutrition de bovins laitiers. La mutation bm3 est celle qui est la plus intéressante des quatre mutations "nervures brunes" décrites : la teneur des plantes en lignines est réduite et leur valeur énergétique plus élevée. Une synthèse bibliographique (44 comparaisons entre hybrides normaux et bm3) montre une amélioration des quantités ingérées (+ 1,16 kg MS/vache/jour), de la production de lait (+ 1,26 kg/vache/jour) mais un rendement inférieur. La mise à la disposition des éleveurs d'hybrides de valeur énergétique plus élevée, au moins supérieure à 0,97 UFL, est une des voies possibles pour contribuer significativement à l'amélioration de la compétitivité des élevages, permettant en particulier une réduction de la distribution de concentrés énergétiques.
