Sparkling yet still nonfermented, nonalcoholic beverages include an extensive and ever-increasing variety of products that are part of western-occidental diet patterns mainly appreciated for their stimulant flavors, different components, and convenience of consumption associated with leisure time and socially-related activities. However, they are also controversial due to their nutritional composition and potential health related problems related to excessive consumption. The aim of this chapter is to draw an updated map of the nutritional facts in the different categories of nonalcoholic beverages on the Spanish and European market based on the information available on their labels, but also to provide an overview of the impact on diet quality. In fact, increased consumption has been translated into important changes in diet quality. In general, it is evident that there is a low availability of nutritional data in food composition tables and databases, but they are also not well updated. The latter contrasts within the large number and variety of products on the market and their increasing trends. Moreover, updated nonalcoholic beverage composition data relies mostly on label information as the main source. Finally, data about innovation and reformulation practices followed in Spain are reviewed.
