This study determined the energy requirement for maintenance of purebred Nellore cattle and its crossbreds using data from a comparative slaughter trial in which animals were raised under the same plane of nutrition from birth through slaughter and born from a single commercial Nellore cowherd. A total of 79 castrated steers (361 ± 54 kg initial body weight [BW]) were used in a completely randomized design by age (22 mo ± 23 d of age) with four genetic groups (GG): Nellore (NL), ½ Angus × ½ Nellore (AN), ½ Canchim × ½ Nellore (CN), and ½ Simmental × ½ Nellore (SN). The experimental design provided ranges in metabolizable energy (ME) intake (MEI), BW, and average daily gain needed to develop regression equations to predict net energy for maintenance (NEm) requirements. Four steers of each GG were slaughtered to determine the initial body composition. The remaining 63 steers were assigned to different nutritional treatments (NT) by GG; ad libitum or limit-fed treatments (receiving 70% of the daily feed of the ad libitum treatment of the same GG). Full BW was recorded at birth, weaning, 12, 18, and 22 mo. In the feedlot, steers were fed for 101 d a diet containing (DM basis) 60% corn silage and 40% concentrate. No difference in age at weaning (P = 0.534) and slaughter (P = 0.179 and P = 0.896, for GG and NT, respectively) were observed. AN steers were heavier at weaning weight, yearling weight and had higher empty BW (EBW; P = 0.007, P = 0.014, and P < 0.001, respectively) in comparison to NL, CN, and SN. There were no interactions (P > 0.05) between GG and NT for any variable evaluated. When fed ad libitum, AN steers had higher daily MEI (Mcal/d; P < 0.001) in comparison to NL, CN, and SN. On a constant age basis, differences were observed on body composition (P < 0.05) between GG. The slope (P = 0.600) and intercept (P = 0.702) of the regression of log heat production on MEI were similar among GG. Evaluating at the same age and the same frame size, there were no differences in NEm requirement between Nellore and AN (P = 0.528), CN (P = 0.671), and SN (P = 0.706). The combined data indicated a NEm requirement of 86.8 kcal/d/kg0.75 EBW and a ME required for maintenance requirement had a common value of 137.53 kcal/d/kg0.75 EBW. The efficiency of energy utilization for maintenance and the efficiency of energy utilization for growth values were similar among GG (P > 0.05 and P > 0.05, respectively) and were on average 63.2% and 26.0%, respectively. The beef cow-calf sector accounts for 70% of feed consumed and greenhouse gases emitted for the beef industry, but there is no straightforward method to measure biological efficiency in grazing conditions. The objective of this study was to evaluate a mathematical nutrition model to estimate the feed intake and biological efficiency of mature beef cows. Data from dams ( N = 160) and their second and third progeny (312 pairs) were collected from 1953 through 1980. Individual feed intake was measured at 28-d intervals year-round for dams and during 240-d lactation for progeny. Body weights of progeny were measured at 28-d intervals from birth to weaning, and of dams at parturition and weaning each production cycle. The milk yield of dams was measured at 14-d intervals. Dam metabolizable energy intake (DMEI) and milk energy yield (MEL) of each cow were predicted using the Cattle Value Discovery System beef cow (CVDSbc) model for each parity. Biological efficiency (Mcal/kg) was computed as the ratio of observed or predicted DMEI to observed calf weaning weight (PWW). Pearson correlation coefficients were computed using corr.test function and model evaluation was performed using the epiR function in R software. Average (SD) dam weight, PWW, DMEI, and observed MEL were 527 (86) kg, 291 (47) kg, 9584 (2701) Mcal/production cycle, and 1029 (529) Mcal, respectively. Observed and predicted DMEI ( r = 0.93 and 0.91), and observed and predicted MEL ( r = 0.58 and 0.59) were positively correlated for progeny 2 and 3, respectively. The CVDSbc model under-predicted DMEI (mean bias [MB] = 1,120 ± 76 Mcal, 11.7% of observed value) and MEL (MB = 30 ± 25 Mcal, 2.9% of observed value). Observed and predicted progeny feed intake were not correlated ( r = 0.01, P -value = 0.79). Observed and predicted biological efficiency were positively correlated ( r = 0.80 and 0.80, P -value ≤ 0.05) for parity 2 and 3, respectively, and the CVDSbc model under-predicted biological efficiency by 11% (MB = 3.59 ± 0.25 Mcal/kg). The CVDSbc provides reasonable predictions of feed intake and biological efficiency of mature beef cows, but further refinement of the relationship between calf feed intake and milk yield is recommended to improve predictions. Rumen acidosis is a common metabolic disorder occurring when organic acid production exceeds clearance capacity, reducing ruminal pH. The occurrence of acidosis has been directly correlated to the ratio of concentrate to forage in the diet. However, rates of substrate fermentation and acid absorption vary at different locations in the reticulo-rumen. The objective of this study was to determine the pH and redox potential (Eh) in different locations of the reticulo-rumen using 16 ruminally cannulated steers (309 ± 43 kg) receiving different supplementation levels of quebracho extract (QT; Schinopsis balansae) within a grower type diet (CP: 13.4%; total digestible nutrients [TDN]: 70.4%; and ME: 2.55 Mcal/kg, dry matter [DM] basis). Animals were randomly assigned to one of four dietary treatments: QT at 0%, 1%, 2%, and 3% of DM (QT0, QT1, QT2, and QT3, respectively), containing about 0%, 0.7%, 1.4%, and 2.1% of condensed tannins (CT), DM basis, respectively. Animals were adapted to the basal diet for 12 d before being introduced to predetermined treatments for 4 weeks (wk), with diets provided twice daily to allow ad libitum intake. Weekly measurements of ruminal fluid pH and Eh were taken 4 h post-feeding using a portable pH meter with two probes (pH and redox) in four locations of the reticulo-rumen (reticulum, cranial sac, dorsal sac, and ventral sac). Data were analyzed using a random coefficients model with the pen as a random effect and wk as repeated measures, with DM intake included as a covariate. There was no interaction among treatments, location, and wk (P ≥ 0.882) on reticulo-ruminal pH. Overall, ruminal pH was lower for QT0 and QT1 compared to QT3 (P < 0.001). The pH in the reticulum was greater than those of the ventral and dorsal sacs (6.05 vs. 5.94, 5.89, respectively; P ≤ 0.001) but similar to cranial sac (6.00). Reticular pH was positively correlated with the ruminal locations (≥0.78; P < 0.001). The linear equation to estimate ruminal mean pH using reticulum pH had an intercept and slope different from zero (P ≤ 0.04), but CT (% DM) was not different from zero (P = 0.15), root mean square error of 0.15, and R2 of 0.778: 0.723 (±0.36) + 0.857 (±0.059) × reticulum pH + 0.033 (±0.023) × CT. The Eh was lower for QT0 in week 1 than all other treatments (P < 0.001). Various proteins or protein fractions reportedly positively affect gastrointestinal integrity and inflammation in diets providing >45% energy as fat. This study tested whether benefits were seen in diets providing 30% of energy as fat. Purified diets (PD) with isolated soy protein (ISP), dried whole milk powder (DWMP), milk fat globule membrane (MFGM), or milk protein concentrate (MPC) as protein sources were fed to C57BL/6J mice ( n = 15/diet group) for 13 weeks. MFGM-fed mice were heaviest ( p < 0.005) but remained within breeder norms. Growth rates and gut motility were similar for all PD-fed mice. FITC-dextran assessed gut permeability was lowest in DWMP and MFGM ( p = 0.054); overall, plasma endotoxin and unprovoked circulating cytokines indicated a non-inflammatory state for all PD-fed mice. Despite differences in cecal butyrate and intestinal gene expression, all PDs supported gastrointestinal health. Whole milk provided more positive effects compared to its fractions. However, ISP-fed mice showed a >370%, ( p < 0.006) increase in colonic myeloperoxidase activity indicative of tissue neutrophil infiltration. Surprisingly, FITC-dextran and endotoxin outcomes were many folds better in PD-fed mice than mice (strain, vendor, age and sex matched) fed a "chow-type" nutritionally adequate non-PD. Additional variables within a diet's matrix appear to affect routine indicators or gastrointestinal health.

This review provides an update of ecologically relevant phytochemicals for ruminant production, focusing on their contribution to advancing nutrition. Phytochemicals embody a broad spectrum of chemical components that influence resource competence and biological advantage in determining plant species' distribution and density in different ecosystems. These natural compounds also often act as plant defensive chemicals against predatorial microbes, insects, and herbivores. They may modulate or exacerbate microbial transactions in the gastrointestinal tract and physiological responses in ruminant microbiomes. To harness their production-enhancing characteristics, phytochemicals have been actively researched as feed additives to manipulate ruminal fermentation and establish other phytochemoprophylactic (prevent animal diseases) and phytochemotherapeutic (treat animal diseases) roles. However, phytochemical-host interactions, the exact mechanism of action, and their effects require more profound elucidation to provide definitive recommendations for ruminant production. The majority of phytochemicals of nutritional and pharmacological interest are typically classified as flavonoids (9%), terpenoids (55%), and alkaloids (36%). Within flavonoids, polyphenolics (e.g., hydrolyzable and condensed tannins) have many benefits to ruminants, including reducing methane (CH 4 ) emission, gastrointestinal nematode parasitism, and ruminal proteolysis. Within terpenoids, saponins and essential oils also mitigate CH 4 emission, but triterpenoid saponins have rich biochemical structures with many clinical benefits in humans. The anti-methanogenic property in ruminants is variable because of the simultaneous targeting of several physiological pathways. This may explain saponin-containing forages' relative safety for long-term use and describe associated molecular interactions on all ruminant metabolism phases. Alkaloids are N-containing compounds with vast pharmacological properties currently used to treat humans, but their phytochemical usage as feed additives in ruminants has yet to be exploited as they may act as ghost compounds alongside other phytochemicals of known importance. We discussed strategic recommendations for phytochemicals to support sustainable ruminant production, such as replacements for antibiotics and anthelmintics. Topics that merit further examination are discussed and include the role of fresh forages vis-à-vis processed feeds in confined ruminant operations. Applications and benefits of phytochemicals to humankind are yet to be fully understood or utilized. The objective of this paper was to develop the structure and concepts of a dynamic model to simulate dry matter intake (DMI) pattern and the fluxes of fat and protein in the body reserves of cattle associated with changes in body condition score (BCS) for application within the structure of applied nutrition models. This model was developed to add the capability of evaluating the effects of factors affecting pre- and postcalving DMI, daily energy and protein balances, and changes in BCS over a reproductive cycle. Input variables are average DMI, diet metabolizable energy, and animal information (body weight, BCS, milk production, and calf birth body weight) from each diet fed over the reproductive cycle. Because the depletion and repletion of body reserves in cattle is a complex system of coordinated metabolic processes that reflect hormonal and physiological changes caused by negative or positive energy balances, the system dynamics modeling methodology was used to develop this model. The model was used to evaluate the effect of the dynamic interactions between dietary supply and animal requirements for energy and protein on the fluxes of body fat and body protein of dairy cows over the reproductive cycle and Monte Carlo simulations were used to assess the sensitivity of the parameters. The main long-term factor affecting DMI pattern was the growth of the gravid uterus causing an increase in the volume of abdominal organs and a compression of the rumen, consequentially reducing feed intake. Changes in body reserves (fat and protein) were computed based on metabolizable energy balance, assuming different efficiency of utilization coefficients for fat and protein during repletion and mobilization. The model was evaluated with data from 37 dairy cows individually fed 3 different diets over the lactation and dry periods. The model was successful in simulating the observed pattern of DMI (mean square error was 3.59, 3.97, and 3.66 for diets A, B, and C, respectively), but it tended to underpredict DMI during late lactation [around 200 to 285 d in milk (DIM)] for all diets, suggesting changes in the model structure might be needed. The predicted BCS pattern had a trend similar to the observed values. Assuming that observed BCS represents actual body fat, the model tended to overpredict observed BCS during early lactation (0.125 BCS for 0 to 120 DIM) and underpredict it during late lactation (0.06 BCS for 180 to 270 DIM). A long-term simulation (5 lactations and 4 dry periods) with diet A indicated that the cows on this diet would have a net loss of body fat if all conditions were constant., (Copyright © 2013 American Dairy Science Association.
