Examining the microbiological characteristics of pet food is imperative to safeguard the health and well-being of companion animals, pet owners, and the surrounding environment. Domestic animals, known for carrying harmful microorganisms, pose a significant health risk, especially in close proximity to people and children. Notably, no studies have previously investigated pet food quality in the Gulf Cooperation Council countries, in particular, the United Arab Emirates (UAE). This study examined the microbiological quality of all stock keeping units (SKUs) of pet foods marketed in UAE (n = 118). Parameters assessed include Total Aerobic Microbial Count (TAMC), Enterobacteriaceae, Total Yeast and Mold Count (TYMC), Salmonella, Listeria monocytogenes, and Clostridium species. Among the 118 samples, 33 (28%) exceeded the acceptable TAMC limit of 106 CFU/g, highlighting significant variations based on manufacturers and ingredients. Eight samples (7%) surpassed the maximum Enterobacteriaceae limit of 3 × 10² CFU/g. TYMC levels exhibited variation, with 33 (28%) exceeding the limit of 104 CFU/g. L. monocytogenes was identified in 44 (37%) of the samples, while Salmonella was not detected. Clostridium contamination was observed in 28 (24%) of the samples. Statistical analyses revealed associations between pet food characteristics and microbial quality, underscoring the imperative for international standards to ensure the safety of pet food. These findings carry significant implications for pet owners, regulatory bodies, and the pet food industry, emphasizing the need for ongoing efforts to enhance the overall quality and safety of pet food products. Corn-based breakfast cereals, known as cornflakes, have become a common breakfast choice worldwide, recognized for their convenience and versatility. However, mycotoxins can contaminate these products, adversely affecting human health. This study assessed the occurrence of major mycotoxins (AFB1, OTA, DON, ZEA, and FUM) in cornflake stock-keeping units (SKUs) marketed in the United Arab Emirates (UAE). It also evaluated the effect of different independent variables (country of origin, temperature on the production day, storage time, presence of chocolate, bran, and nut ingredients) and estimated the exposure levels of the UAE population to these mycotoxins and the associated risk factors. Seventy-six distinct cornflake SKUs were identified through a market screening and tested for mycotoxins using the Enzyme-Linked Immunosorbent Assay (ELISA) technique. AFB1, OTA, ZEA, FUM, and DON were detected in 23.7, 48.7, 27.6, 9.2 and 88.2% of the samples, respectively. The mean concentrations among positive samples were 2.0, 1.0, 10.14, 584.9, and 90.6 μg/kg, respectively. Except for AFB1, the average mycotoxin levels in samples were below the established limits by the European Union (EU). Among positive samples, none exceeded the US FDA limits for all mycotoxins, and only one exceeded the CODEX limit for FUM. On the other hand, four (5.3%), one (1.3%), one (1.3%), and one (1.3%) SKU exceeded EU limits for AFB1, OTA, FUM, and ZEA, respectively. The country of origin (developing vs. developed countries) exhibited a significant effect on AFB1 presence (p < 0.0001). Furthermore, higher temperature on the production day was associated with significantly higher AFB1 occurrence (p = 0.009). Moreover, the presence of chocolate ingredient had a borderline significant effect on AFB1 (p = 0.05) and a significant effect on OTA (p = 0.002), with higher percentages observed in SKUs containing chocolate. However, no significant effects were found for storage time or the presence of bran and nut ingredients in the cornflakes. On the other hand, the HQ values were below 1 for all mycotoxins, indicating low risk. MoE values exceeded 10,000 among regular cornflake consumers, except for FUM, suggesting minimal risk. Rice is one of the most consumed staple foods worldwide and a major part of the diet for half of the global population. Being primarily cultivated in countries with warm and humid environments increases rice's susceptibility for mycotoxins contamination, especially the hepatotoxic and carcinogenic aflatoxin B1 (AFB1). Since no study was published before on the exposure to AFB1 from consuming rice in the UAE, our study aims to assess the levels of AFB1 in rice marketed in the country and determine the estimated daily exposure of the population for this carcinogenic metabolite and its associated liver cancer risk. All white, brown, and parboiled rice brands available in the retail markets in the UAE were procured twice. Using an enzyme-linked immunosorbent assay (ELISA) method, AFB1 was detected in 48 out of 128 rice samples (38%). The average contamination ± standard deviation of AFB1 among positive samples (above the detection limit) was found to be 1.66 ± 0.89 μg/kg, ranging from 1 μg/kg (detection limit) to 4.69 μg/kg. The contamination level in all the samples was below the limit set by the Gulf Cooperation Council Standardization Organization (≤5 μg/kg), while 10 (20.8%) of the positive samples had a contamination level above the maximum limit set by the European Union (≥2 μg/kg). The moisture content in all the assessed samples was ≤14%. Furthermore, there was a significant difference in AFB1 between samples in both collections ( p -value = 0.043). However, the rice type, grain size, packing country, packing season, country of origin, collection season, and packing to purchasing time had no significant effect on AFB1. The calculated mean daily exposure level of the Emirati population to AFB1 from consuming rice was 4.83 ng/kg.

Our study aims to evaluate the ochratoxin A (OTA) in rice marketed in Lebanon and the United Arab Emirates (UAE), and to determine the exposure to OTA from rice consumption. All brands available in the market were collected twice (total number of collected samples: 105 and 127 in Lebanon and the UAE, respectively). Using ELISA, the OTA in 56 (53%) samples in Lebanon and 73 (58%) samples in the UAE were above the limit of quantification (0.8 μg/kg). The average concentrations of the positive samples ± standard deviations were 1.29 ± 0.32 and 1.40 ± 0.42 μg/kg in Lebanon and the UAE, respectively. Only one sample (1%) in Lebanon had a level at the borderline of the European Union (EU) limit, and two samples (1.6%) in the UAE had a level above the EU limit (5 μg/kg). The OTA in brown rice was higher than in white and parboiled rice for both countries, yet the difference was not significant. The packing season, packing country, and country of origin did not have any significant effects. The presence of a food safety certification resulted in lower OTA in the rice, but the difference was significant ( p = 0.04) in the UAE only. Long grains had higher OTA than short grains, yet the difference was only significant in Lebanon ( p = 0.046). The exposures were calculated as 1.27 ng/kg body weight/day in Lebanon and 1.42 ng/kg body weight/day in the UAE, and no health risk was observed for both the neoplastic and non-neoplastic effects.

Background: This study was designed to determine the glycemic indices of five commonly used varieties of dates in healthy subjects and their effects on postprandial glucose excursions in individuals with type 2 diabetes mellitus., Methods: Composition analysis was carried out for five types of dates (Tamer stage). The weights of the flesh of the dates equivalent to 50 g of available carbohydrates were calculated. The study subjects were thirteen healthy volunteers with a mean (± SD) age of 40.2 ± 6.7 years and ten participants with type 2 diabetes mellitus (controlled on lifestyle measures and/or metformin) with a mean HbA1c (± SD) of 6.6 ± (0.7%) and a mean age (± SD) of 40.8 ± 5.7 years. Each subject was tested on eight separate days with 50 g of glucose (on 3 occasions) and 50 g equivalent of available carbohydrates from the 5 varieties of date (each on one occasion). Capillary glucose was measured in the healthy subjects at 0, 15, 30, 45, 60, 90 and 120 min and for the diabetics at 0, 30, 60, 90, 120, 150 and 180 min. The glycemic indices were determined as ratios of the incremental areas under the response curves for the dates compared to glucose. Statistical analyses were performed using the Mann-Whitney U test and repeated measures analysis of variance., Results: Mean glycemic indices ± SEM of the dates for the healthy individuals were 54.0 ± 6.1, 53.5 ± 8.6, 46.3 ± 7.1, 49.1 ± 3.6 and 55.1 ± 7.7 for Fara'd, Lulu, Bo ma'an, Dabbas and Khalas, respectively. Corresponding values for those with type 2 diabetes were very similar (46.1 ± 6.2, 43.8 ± 7.7, 51.8 ± 6.9, 50.2 ± 3.9 and 53.0 ± 6.0). There were no statistically significant differences in the GIs between the control and the diabetic groups for the five types of dates, nor were there statistically significant differences among the dates' GIs (df = 4, F = 0.365, p = 0.83)., Conclusion: The results show low glycemic indices for the five types of dates included in the study and that their consumption by diabetic individuals does not result in significant postprandial glucose excursions. These findings point to the potential benefits of dates for diabetic subjects when used in a healthy balanced diet., Trial Registration Number: ClinicalTrials.gov NCT01307904.

Vitamin D deficiency is common in Arab countries particularly among women. This is the result of a low dietary intake of the vitamin, limited exposure to sunlight (a paradox in view of the high sunshine figures), skin colour, obesity and high parity. Apart from its adverse effects on bone in women and their offspring, vitamin D deficiency has the potential to cause or exacerbate heart failure through a number of mechanisms including activation of the renin-angiotensin system and increased arterial pressure. Accordingly, we propose that ensuring adequate vitamin D levels in Arab women will have a much greater impact on health than just the prevention of bone disease. In particular, we suggest that prevention and correction of vitamin D deficiency will reduce the incidence of heart failure and, for Arab women with established heart failure and vitamin D deficiency, improve cardiac function.
