Only some of the nutrients consumed with food are able to be absorbed from the gastrointestinal (GI) tract and enter the systemic circulation (blood). Because some elements are essential minerals for humans, their beneficial effect on the body depends significantly on their bioavailable amount (the fraction that can be absorbed and used by the organism). The term bioavailability, which is very often used to describe the part of nutrients that is able to be absorbed, is influenced by various factors of exogenous and endogenous origin. The main purpose of the study was to assess the relative bioavailability of Cr from selected dietary supplements in the presence of various types of diets, which significantly influence the level of bioavailability. The research was performed using a previously developed and optimized two-stage in vitro digestion model using cellulose dialysis tubes of food rations with the addition of pharmaceutical products. Cr was determined using the ICP-OES and GF-AAS methods, depending on its concentration in particular fractions. The determined relative bioavailability ranged between 2.97 and 3.70%. The results of the study revealed that the type of diet, the chemical form of the molecule, and the pharmaceutical form of preparations have a significant influence on the bioavailability of Cr.

(1) Background: Considering the limited amount of available data on the diet quality of children, adolescents, and young adults with an intellectual disability (ID) in Poland, as well as the higher incidence of nutritional disorders among people with ID in comparison to the general population, a study was conducted to assess the quality of diet in community-dwelling young individuals with ID. (2) Methods: A multiple-case study was carried out to obtain data on anthropometric parameters and food records over a three-day observation period for 18 subjects with ID. The nutritional value of the products and dishes consumed by the subjects was calculated using the commercial computer program Kcalmar.pro (Hermax, Poland), which contains the Polish database of the nutritional value of food products and dishes. The results presented here are those of a pilot study of a wider research project. (3) Results: The study group consisted of seven women (38.9%) and 11 men (61.1%) with an average age of 12.94 years (range 4.00-22.00) and an average BMI of 25.2 (range 14.5-35.4). The obtained results confirmed the suboptimal pattern of nutrition in children and adolescents with ID. Regarding energy intake and dietary macronutrients, only in 27.8% of cases, energy intake exceeded the Estimated Energy Requirement corresponding to age, sex, body weight, and height. Most of the respondents were characterized by correct intake of proteins, fats, and carbohydrates, and 83.3% showed excessive intake of saturated fatty acids. Excessive intake of vitamins B1, B2, and B6 was observed in all subjects, and that of vitamins B3 (niacin), B12, A, and C in the vast majority of subjects, while deficiency of vitamin D was observed in all individuals and folic acid in 22.2% of individuals. Excessive intake of minerals, such as sodium, phosphorus, and magnesium was noted among most of the respondents, while the intake of calcium and iodine was found to be insufficient. Compared to people with less severe ID (grades 1 and 2), people with grade 3 ID showed significantly lower intake/reference fulfillment of dietary components such as vitamin B6, potassium, phosphorus, iron, copper, iodine, magnesium, and zinc. No significant differences were noted in the nutritional reference fulfillment for various nutrients among the groups distinguished by sex, nutritional status, or the cause of ID. (4) Conclusion: Health supervision guidelines proposed for persons with ID should take into account the dietary practices of the families caring for them, with an emphasis on the prevention and correction of irregularities that may reduce the effectiveness of rehabilitation and deteriorate the health of the affected people. Caregivers/parents of each person with ID who took part in the study were given individualized dietary advice aimed at correcting the dietary abnormalities.

Background: Overweight and obesity are a problem negatively affecting human health. Besides the excess of energy from food, development of overweight can also result from food preferences, the frequency of meals and the speed of eating., Objective: The aim of this study was to analyse the effect of eating habits and physical activity on the occurrence of overweight and obesity., Material and Method: The questionnaire survey concerning eating habits and physical activity was conducted among adults aged 20-59 (n=420) in Lublin province (Poland). The subjects were divided into two groups – normal (BMI 18.5-25 kg/m2, n=250) and overweight and obese (BMI≥25 kg/m2, n=170). One-way analysis of variance (ANOVA) and post-hoc Tukey’s test as well as chi-square independence test were applied. In addition, the relative risk of overweight for groups divided according to their habits was determined., Results: The analysis of speed of eating was on the basis of subjective assessment of the subjects and as a relative speed of eating compared to family members and friends. In both methods of assessment, it has been shown that overweight and obesity facilitates fast food intake rate (p=0.0078 and p=0.0010, respectively) The relative risk of obesity and overweight increases almost twice (RR 1.79) when the number of meals consumed daily is between one and two compared to those having five meals a day. The dietary intake of cadmium, lead and nickel was determined among students from three universities in the city of Lublin in south-east Poland to assess the levels of exposure to these contaminants, compared to PTWI and TDI values. The study was performed in 2006–2010 and involved 850 daily food rations of students. The technique of 24-hour dietary recall and diet duplicates was used. Cadmium, lead and nickel complexes with ammonium-pyrrolidindithiocarbamate were formed and extracted to the organic phase with 4-methylpentan-2-one–MIBK, in which their content was measured by flame atomic absorption spectrometry. The highest intake of the elements studied was observed in 2008. The data show that in none of the cases, the level of intake reached 70% of PTWI/TDI values, and thus the risk of developing diseases related to high exposure to these toxic metals absorbed from foodstuffs was low. The parameters of methods were checked during determinations by adding standard solutions to the samples before mineralization and by using two reference materials: Total diet ARC/CL HDP and Bovine muscle RM NIST 8414. The dietary exposure to lead and cadmium has significantly decreased in recent years, whereas the exposures to nickel remains on a stable level.
