2. Multimodal Cuentos as Fugitive Literacies on the Mexico-US Borderlands

- Abstract
In this article, we examine fugitivity and fugitive literacies as they are enacted by transfronterizx youth--young people who cross and experience life on both sides of the border between Mexico and the United States. Through a community-based literacy project located on the border between El Paso, Texas, USA, and Ciudad Juarez, Chihuahua, Mexico, this article focuses on storytelling and multimodal creation, what we refer to as multimodal cuentos. Findings illustrate the ways in which Chicanx/Latinx "transfronterizx" youth exhibit, build, and sustain their ways of resisting white, Western, hegemonic definitions of literacy through communication and creativity. We theorize the notion of fugitivity on the border and share potential implications for language and literacy education for Chicanx/Latinx border crossers.

The hyper-visible ways the U.S.-Mexico border becomes part of political discourse often disregard the complex histories, communities, and cultural knowledge of the people who have and continue to inhabit these borderlands. Specifically, the borderlands are rarely recognized as sites for rich forms of knowledge, practices of teaching and learning, and language and literacy. Drawing on the intersections of border(lands) thinking and Chicanx/Latinx multimodal literacies, we look at the relationship between image and texts and how the curation of zines reflects the epistemologies and lived realities of Chicanx/Latinx Pre-Service Teachers (PST) living on the border. Three themes emerged from our analysis of the PST's zines: (1) Borderlands artifacts, (2) Borderlands languaging, and (3) Borderlands identities and the borderline. We argue that zine creation is one way to deconstruct deficit narratives, reimagine pedagogical content, and highlight knowledge rooted in rich constructions of the borderlands. Examined cultural differences in preferences for conflict resolution styles using the dual-concern model with 103 college students in Mexico (collectivistic culture) and 91 college students in the United States (individualistic culture). Results suggest that independence of the self and interdependence of the self may be separate dimensions, rather than a continuum. (SLD)

Pitaya (Stenocereus griseus H.) is an exotic fruit produced in some regions of Mexico, where it is mainly consumed fresh and valued in local markets. Its pulp has an intense red color, sweet flavor, small and easily chewable seeds, and compounds with antioxidant capacity. The fruit has thorns that make it difficult to handle and cause mechanical damage. However, if the thorns are removed the shelf-life is decreased and its commercialization in distant markets is more difficult. The objective of this study was to evaluate the effects of 1-methylcyclopropene (1-MCP) and a coating prepared with chitosan (Ch) + oleic acid (OA) were evaluated over the quality of pitayas without thorns in refrigeration (11 ± 1 °C; 93 ± 2 % relative humidity (RH)) for 15 d. The quality parameters studied were respiration pattern, ethylene production, weight loss, titratable acidity, skin firmness, and total soluble solids (TSS). The refrigeration conditions minimized notoriously the weight loss of the fruit. In addition, coating of Ch+OA (CO) maintained the quality parameters and delayed the appearance of fungi, extending the shelflife of without thorns pitayas up to 15 d. However, 1-MCP alone was not capable of preserving the evaluated quality parameters. The best results were observed in (WOT)+CO+1MCP treatment, which delayed the appearance of fungi for 15 d and maintained the quality parameters. [ABSTRACT FROM AUTHOR]

Nopal (Opuntia spp. and Nopalea spp. genera) is a crop, recognized for its nutritional and medicinal properties; however, there are some underused species, despite the great genetic diversity in Mexico. The genus Opuntia spp. is the most consumed nopal, whereas Nopalea spp. has low commercial demand, possibly because their nutraceutical attributes are unknown. Additionally, the nopal pads or cladodes are little accepted by many consumers, due to their texture and flavor. The study objectives were 1) evaluate the nutraceutical content and antioxidant activity of four nopal cultivars: Nopalea cochenillifera cv. Texas (NT) and Opuntia ficus-indica cv. Jade (OJ), Milpa Alta (OMA), and Atlixco (OA); 2) develop nopal flakes, sweetened with rebaudioside A, from the cultivar with the best nutraceutical quality and sensory acceptability. Ascorbic acid, total phenolics, and total flavonoids were determined by spectrophotometric methods, individual flavonoids (quercetin, kaempferol, and isorhamnetin) by HPLC, and antioxidant activity by the DPPH assay. OA was the cultivar with the best nutraceutical quality. The sweetened nopal flakes of OA, at a concentration of 1.1 mg g-1 rebaudioside A, had the highest sensory acceptability by the panelists in intensity and sweetness preference. The addition of rebaudioside A improved the product's flavor and contributed to preserve the flavonoids and antioxidant activity. These results will contribute to the chemotaxonomy of O. ficus-indica and N. cochellinifera species, and to the utilization of nopals as functional foods, due to their nutraceutical quality. During the Pre-Colombian period magueys were used in Mesoamerica for their sap, which is named "aguamiel" (literally "honey water" in Spanish). Aguamiel is then fermented into "pulque", followed by (in order of importance): textiles, apparel, different thicknesses cords, food (sweetener, syrup, vinegar, flower buds, and cooked immature flowering stalks), firewood and construction materials. The maguey syrup is a product that is traditionally obtained by concentrating the aguamiel by means of an artisanal evaporation treatment (high temperatures, atmospheric pressure and prolonged times). The nutritional and nutraceutical value of this concentrate is unknown despite its wide consumption since pre-Hispanic times in various regions of Mexico. The objective of this work was to evaluate the nutritional value and the content of antioxidant compounds of the maguey syrup obtained from the aguamiel (Agave salmiana and A. mapisaga) through three elaboration treatments (artisanal evaporation, evaporation under reduced pressure and lyophilization). The best species for the production of maguey syrup turned out to be the aguamiel of the A. salmiana due to its nutritional and nutraceutical attributes, higher content of reducing sugars and lower sucrose compared to that of A. mapisaga. The maguey syrup is a sweetener with a higher content of protein (3320 mg 100-1) in comparison to bee honey (152.7 mg 100 g-1). The maguey syrup obtained by lyophilization (LYT) retained the nutraceutical value; but its antioxidant activity was statistically equal to the syrup obtained by evaporation under reduced pressure (RPT), and the artisanal evaporation treatment (AET) had a decrease in vitamin C content in comparison to LYT and RPT. The syrups obtained by RPT and AET presented different degrees of non-enzymatic darkening, possibly due to the formation of melanoidins (dark pigments). The darkest syrup obtained by AET had the highest antioxidant capacity (987.24 μM TE 100 g-1) associated to a higher content of phenolic compounds (593.74 mg GAE 100 g-1). [ABSTRACT FROM AUTHOR]

Background: Strict adherence to personal health recommendations is necessary to improve the clinical control of arterial hypertension.Objective: To identify predictors of the behavior to avoid the "consumption of restricted foods" in a sample of hypertensive patients from Tamaulipas, Mexico.Method: Participants were 183 patients with arterial hypertension diagnosis, who completed two self-administered questionnaires and different questions regarding adherence and self-care behaviors. A trajectory analysis was used for the interpretation of data.Results: Less tolerance to frustration, a major affective social support and a lower body mass index were behavior predictors to avoid the consumption of restricted foods (pBS= 0.294, χ2/gl= 1.417, GFI = 0.993, AGFI = 0.965, NFI = 0.934, IFI = 0.980 y SRMR = 0.040), explaining approximately 20% of the variance in the study behavior.Conclusion: The study of adherence and self-care behaviors demands to identify what and how some personal and interpersonal variables are influencing in their daily practice, which can contribute to improve the interdisciplinary interventions programs in clinical and communitarian settings for attending patients living with arterial hypertension. Prensa Cheese, also called Costeno, is made in an artisanal way from raw cow's milk in the Costa Chica region of the state of Guerrero. In order to know the characteristics of Mexican artisanal cheeses, the objective of this research was to analyze the changes in the count of aerobic mesophilic bacteria (AMB), total coliform (TCs) microorganisms, lactic acid bacteria (LAB) and coagulase-positive staphylococci (CPS), during the ripening (5, 30, 60 and 90 d) of Prensa cheeses, made by four different cheese factories (A, B, C and D) of Cuajinicuilapa, Guerrero, Mexico. A portion (25 g) of each cheese sample was homogenized with peptone diluent (225 mL) and dilutions from 10-1 to 10-6 were prepared with which 3M™ Petrifilm™ plates were sown. After incubating under different conditions, depending on the type of microorganism, AMB, TCs, LAB and CPS counts were made. The results showed that as the ripening time of the Prensa Cheese progressed, the microbial load decreased: AMB from 4 to 2, TCs from 6 to 3, LAB from 6 to 2 and CPS from 5 to 2 log10 CFU g-1. The changes in the counts of the bacterial groups studied can be attributed to the physicochemical and microbiological transitions typical of cheese maturation and to the characteristics of the microbiota present in each of the cheese factories. Eleven populations of Taxus globosa were located and evaluated along of the Sierra Madre Oriental in the States of Nuevo Leon and Tamaulipas, Mexico. A complete inventory of the individuals in all Taxus globosa populations was recorded; data of height, diameter, canopy cover and density were also evaluated. The population data were organized in databases on rank classes into six height categories, seven canopies cover categories and seven diameter categories. A χ² test indicates that all the populations showed a normal distribution. The canopy cover and diameter variables showed higher values in correlation analysis (r = 0.9). The population curve tendency on height, canopy cover and diameter shows that isolated or inaccessible populations of Taxus globosa Las Tinajas, Julilo and La Camotera are the populations with more young individuals than the rest of the northeastern populations. The watershed of the Pilón River is important for its water capture for commercial agriculture and for the conservation of the biological diversity of Nuevo Leon state. However, the magnitude of the forest and shrub fragmentation has not been determined, and the remaining fragments of higher conservation priority have not been identified. This study evaluates the vegetation fragmentation, using the fragment size and the relation between the perimeter and the fragment area (P/A) as indicators of size and shape, as well as the distance to the nearest neighbor and the intersection index and juxtaposition as connectivity indicators. These indicators were calculated in maps generated through satellite images Landsat of 1974 and 2000 interpretation (classification supervised and stratified). The results show statistically significant changes in the size and shape of fragments as well as in connectivity for all plant communities evaluated. The communities more affected by fragmentation in their size and shape were Abies and Oak forests, as well as the huizachal (Acacia scrub), piedmont scrub and pine forest. In its connectivity, fragmentation was more severe for Tamaulipan thorn scrub, piedmont scrub and desert scrub as well as huizachales. The fragments with higher priority conservation were determined considering their functions as buffer zones and as vegetation for slope stabilization, through the criteria application in a geographical information system. The conservation of 347 fragments for buffer zone and 210 fragments for slopes stabilization is recommended. [ABSTRACT FROM AUTHOR]

Introduction: H. perotensis is a plant with a high potential for ecological restoration because it yields thousands of seeds and grows under low levels of rain, poor soils and contrasting temperatures. However, little is known of the seed mass maturity (high seed germination, low seed fresh weight and low seed moisture content) in this species. Objective: Assess seed germination in the laboratory of H. perotensis during seed development and along the floral stalk (infructescence) in two sites one in rocky location and another near a lake. The hypothesis was that there is a time after flowering in which seeds have highest germination and fresh weight and that the apical, centre and base of the infructescence are different in seed germination and fresh weight in both sites. Methods: Capsules were collected in two sites one in rocky land (Frijol Colorado, Perote, Veracruz) and another near one lake (Alchichica, Puebla), in the months of August, September and November 2016 and January 2017. A repeated measure design (RMD) was used to analyze the effects of infructescence section on seed weight, moisture content and seed germination (41, 87, 152 and 215 days after flowering). Each evaluation time comprised five replicates, each one with 15 seeds. Results: Difference in seed germination, seed weight and moisture content between sections of the infructescence was not significant. However, significant differences were found not only between first and last sample dates, but mainly between first and second dates. Eighty-seven days after flower pollination seed moisture content was lower than 20 % and up to 80 % of seed germinated in both sites of sampling. Conclusions: In this study it was found that the moisture content of H. perotensis seed can be used as an indicator of the physiological maturity of the seed and it is also related to germination of the seed. This work was carried out to evaluate the effect of two silvicultural treatments on the composition and structure of forest ecosystems in the "Sierra de la Candela" {Mountain range) near Tepehuanes, Durango. The analysis was done comparing two experimental plots managed under different silvicultural practices, the first with thinning and the second using selective logging. Several neighborhood-based indices were used via the so-called "structural group of five trees" sampling method. The results obtained in the study show that the tree species mixture and diversity is greater in the plot where the selective logging was applied, compared to that treated by thinning. Both plots present a clumped spatial tree distribution. On the other hand, the size differentiation results were not significantly different in relation to the dimensional tree structure of the studied plots. [ABSTRACT FROM AUTHOR]
