Cosmos caudatus Kunth, in Indonesia it was commonly known as "kenikir" is a type of vegetable that contains highly important nutrients and provides significant health benefits to the body. Cosmos leaves are rich in essential nutrients for humans, including carbohydrates, proteins, fats, vitamins such as A, C, K, E, as well as minerals like iron, calcium, magnesium, fiber, and active compounds like flavonoids, saponins, tannins, polyphenols, and alkaloids with strong antioxidant, anti-hypertensive, and anti-inflammatory properties, which are beneficial for combating degenerative diseases. Due to its strong aroma, Cosmos leaves are not widely utilized in the food and health sectors. Therefore, this study aimed to create tablets using Cosmos leaves, assess the flavonoid content in different formulations and investigate the impact of storage on these properties. The making of Cosmos leaf tablets involves several steps and processes. The Cosmos leaves were processed to powder and formulated into three formulations of 20, 40 and 60% of Cosmos powder. Spectrophotometry and infrared analysis were employed to analyze the flavonoid properties. The results revealed that higher amounts of Cosmos leaf powder in the tablet formulation led to increased total flavonoid values, with the highest recorded at 19.21 mg QE/g at the initial day of storage. However, the total flavonoid levels in the tablets decreased with prolonged storage. This innovation enhances the feasibility of incorporating Cosmos leaves into everyday diets and may promote better health outcomes for a wider population. [ABSTRACT FROM AUTHOR]
