Abstract

The article focuses on a study which examined the health-promoting composition of ostrich fern, Matteuccia struthiopteris, fiddlehead tissue focusing on its fatty acid and antioxidant content and activity. Fiddleheads were collected from several sites in eastern Canada in 2008 and 2009 and were analyzed using gas chromatography mass spectrometry. Results reveal that there were variations in fatty acid content among sites.
