Golden pompano (Trachinotus ovatus) and hybrid grouper (Epinephelus lanceolatus × Epinephelus fuscoguttatus) has widely been distributed in China and Southeast Asian countries with great commercial importance. In this study, the nutritional profiles, chemical and physical parameters of back and abdomen muscles were determined. Significantly different (p <.05) proximate compositions were found in two fish muscles. The contents of water‐soluble protein, salt‐soluble protein, and non‐nitrogenous protein were higher in the golden pompano while salt‐insoluble proteins were higher in the hybrid grouper. The main minerals found were K (3700.56–4495.57 μg/g) followed by P > Na > Mg > and Ca, respectively. Fatty acids contents consisted of polyunsaturated fatty acids ranging from 29.40% to 43.09% and saturated fatty acids 28.33% to 39.61%. The muscles were rich in n‐3 PUFAs with n‐6/n‐3 ratio of 1.36%–2.96% in the back and abdomen. On the other hand, total amino acid and non‐essential amino acid contents were found higher in the hybrid grouper while essential amino acid and delicious amino acid contents were higher in the golden pompano. Glutamic acid was the most predominant amino acid. The amino acid scores (AAS) of six amino acids were close to 1.00, whereas lysine showed the highest AAS while tryptophan was the most limited essential amino acid in all muscles, respectively. These results indicated golden pompano and hybrid grouper exhibited a varied nutritional composition and offered a good nutritional profile. [ABSTRACT FROM AUTHOR]

Iron deficiency anemia (IDA) is a global health concern affecting one‐third of the world's population, particularly those dominated by plant‐based food. Fortifying staple foods with iron has been an effective strategy for preventing IDA. Pneumatophorus japonicus is an essential economic fish in China. Pneumatophorus japonicus dark meat is usually underutilized as a byproduct, though it contains bounteous nutrients, including heme iron (10.50 mg/100 g). This study aimed to investigate the iron bioavailability of P. japonicus dark meat and to evaluate its potential as an iron fortifier for whole‐wheat flour, a typical staple food, using an in vitro digestion/Caco‐2 cell culture system. Our results suggested the excellent iron bioavailability of P. japonicus dark meat in comparison with beef (a heme dietary iron reference), whole‐wheat flour (a non‐heme dietary iron reference), and FeSO4 (a conventional iron supplement). The addition of P. japonicus dark meat notably enhanced iron solubility, bioavailability, and protein digestibility of whole‐wheat flour. The flour‐dark meat mixture yielded 1.96 times the iron bioavailability compared to beef per gram. The iron bioavailability was further improved by adding vitamin C, a commonly used dietary factor, at the Vc/iron mass ratio of 2:100‐5:100. Our findings reveal the promise of P. japonicus dark meat as a significant source of bioavailable iron, providing a basis for developing fish byproducts as alternatives for iron supplementation. Practical Application: This study investigated the iron bioavailability of Pneumatophorus japonicus meat using in vitro digestion/Caco‐2 cell culture system. These results could be used to improve the utilization of Pneumatophorus japonicus byproduct (dark meat) and develop the potential of the byproduct as an iron fortifier for whole‐wheat flour. Summary: The present study investigated the effects of dry‐ageing time on physicochemical quality and protein properties of porcine longissimus lumborum within 48 h of postmortem ageing. Results showed that appropriately prolonged dry‐ageing time (24 and 36 h) had a positive effect on the tenderness, water‐holding capacity, thermal stability and gel properties of meat, as evident from the decrease of shear force, dripping loss, cooking loss, T2 relaxation time, enthalpy value and the increase in storage and loss modulus. Nevertheless, the excessive extension of ageing (48 h) increased the degree of protein oxidation and degradation by maintaining the lowest total sulfhydryl but the highest carbonyl content, and producing more small molecular weight protein chains (35.4, 20 and 19.6 KDa). Chemometric analysis further clarified the appropriate ageing time of desirable meat. In conclusion, dry ageing 24 and 36 h were suggested as the reasonable postmortem ageing time for porcine longissimus lumborum in China. [ABSTRACT FROM AUTHOR]

This study evaluated the effects of crude peptide extract (CPE) from mutton ham on the lipid and protein oxidation of mutton patties during storage. Color indices, texture, and microbiological and sensory properties were assessed. The results showed that CPE addition significantly reduced thiobarbituric acid‐reactive substance levels, carbonyl content, sulfhydryl content loss, and protein cross‐linking in mutton patties; moreover, CPE improved their color, texture, and microbiological stability. Sensory evaluation results showed that CPE significantly improved the color, flavor, juiciness, texture, and overall acceptability scores of the patties. Overall, CPE was suitable for the production of mutton patties with good organoleptic qualities. Practical applications: In China, mutton patties are one of the most popular fast and convenient meat products. They are, however, prone to quality deterioration during storage. To the best of our knowledge, few studies have explored the effect of CPE from mutton ham on the antioxidant properties and quality of mutton patties.
