Bee pollen is consumed as a dietary supplement. Its quality parameters are regulated by the Argentine Food Code (AFCode). The present study characterized 10 commercial dehydrated samples from five Argentine provinces to provide information on hygienic quality and health safety. We assessed their microbiological quality, including potential mycotoxins. We also determined their botanical origin and moisture. Results showed that seven out of ten samples presented lower counts of culturable heterotrophic mesophilic bacteria than those allowed by the AFCode. In contrast, all samples showed higher filamentous fungi and yeast counts than the level approved by the AFCode. No fumonisin or deoxynivalenol was detected; we observed only aflatoxin B2 in one sample and ochratoxin A in two. The results of the botanical origin of samples showed that all samples had a predominant pollen type, except one. The microbiological quality of all samples agreed with that required by the AFCode, except filamentous fungi and yeasts. In addition, we found variations among samples from the same province. Therefore, if pollen is intended for human consumption, appropriate hygiene standards must be applied to all bee pollen production operations. [ABSTRACT FROM AUTHOR]

The aim of this work was to evaluate the hygienic-sanitary conditions of butcher shops in Tandil, Buenos Aires Province, by estimating the risk based on good manufacturing and hygiene practices, through surveys of the establishments. The analysis was performed using a scale of 1-100, and classifying them as high risk (0-40), moderate risk (41-70) or low risk (71-100). The presence of Salmonella spp., Staphylococcus aureus and Shiga toxin-producing Escherichia coli (STEC) from both, ground beef and environmental samples such as countertop, cleaver, mincer and butcher's hands, taken at butcher shops was also evaluated. Sampling was performed only once and immediately refrigerated and transported to the laboratory for analysis. All butcher shops evaluated (100) were classified as "low risk" with good hygienic-sanitary conditions. However, 75% of the ground beef samples analyzed did not meet at least one of the microbiological criteria established in the Código Alimentario Argentino [Argentine Food Code], article 255. The microbiological quality of honey obtained from different processing points and the environmental quality within honey houses were assessed in the Pampas Region (Argentina). Mold and yeast (MY), culturable heterotrophic mesophilic bacteria (CHMB), the number of spore-forming bacteria as well as the presence of Shigella spp., Salmonella spp. and fecal coliforms were evaluated in 163 samples. These samples were taken from eight honey houses. Results showed that 89 samples had ≤10CFU of MY/g honey, 69 ranged from 10 to 50CFU/g and two reached 65.5CFU/g. Eighty one percent of the samples showed ≤30CFU of CHMB/g honey and only seven samples had between 50 and 54.25CFU/g. Thirty six honey samples were obtained from drums: in 25 samples (69.4%) CHMB counts were less than ≤30CFU/g of honey; in 20 samples (55.5%) the values of MY were between 10 and 50CFU/g honey and total coliforms were only detected in 20 samples. Fecal coliforms, spores of clostridia as well as Salmonella spp. and Shigella spp were not detected and less than 50 spores of Bacillus spp. per g were observed in the honey from drums. Therefore, the microbiological honey quality within the honey houses did not show any sanitary risks.
